Turning Dishes Into Soup

Can a favorite dish enjoyed as a snack or a summer favorite be turned into a hearty winter soup? Surprisingly yes. Hummus, bean salad and pasta pesto can be transformed form forkfuls to spoonfuls. It 's an easy change and perfect for the weather right now.

Regular contributor Melissa Clark created these dishes and wrote about them in yesterday's New York Times Wednesday Food section. All are great on their own. Hummus makes and excellent lunch or snack while the other two are usually summer barbecue favorites.Ms Clakrs inspiraration,. for using these were favorite dishes with big flavors. These are not usual soup ingredients(well, may be the pesto is) but have great potential to be made into them. Ms Clark takes the pesto which can be homemade or s tore bought has pasta and turkey in it,.There is also garlic in it for pungency. Like regular soups the base can either be vegetable or chicken stock. Orzo or macaroni CNA be used a long with five ounces of baby spinach. Ground turkey is used for heartiness. Lemon gives it brightness and a summery sunny taste while the addition of ricotta gives it a creaminess.

Three bean salad , the perfect summer dish is now a delicious soup for a frigid day. Yes there are beans.Ms. Clark uses white, chickpeas or kidney ones and green beans. It give a more veggie flavor thanks to an onion chopped up into it along with chopped celery , carrot  and tomato paste. Again the stock CNA be veggie or chicken (stick with veggie this time Coriander and ground pepper give it a spikiness that's perfect for a cold day soup. The hummus soup is a fun one, combining the same ingredients as the dip with three to four cups of veggie or chicken stock (for a truer hummus flavor go with the vegetable stock).Unlike the dip Ms Clark uses a teaspoon of whole cumin seeds along with cilantro or dill. A large pinch of crushed red pepper gives it the heat to make it perfect for a chilly mid winter day.  Home chefs can add pan fired chickpeas for crunch on top as well as extra tahini to drizzle in.Lemon is added for zing and the dish can be served with , hot toasted pita chips.

These dishes are perfect as for full of goodness. They're even better as a good spoonful or a frosty day. Try them for a different spin on winter soups.

Oscar Nibbles

Tomorrow is Oscar night and that means parties. You can still have treats if it's just you and your TV set.Whether it's for a big party or a cozy sit on the couch ,bring on the bites.

Pizza in any form is always a fun nibble during this classic awards show. Make one with a different twist.Use Middle Eastern lavash bread  for a truly crispy crust. Two flat breads can fit n one large cookie pan.You can have one loaded with meat while the other can be pure veggie. If it's just yourself or another person, then think that kid classic English muffin pizzas. Again you can have fun with the toppings and put evertyhing on from anchovies to olives You can do the same with everything bagels too. For even crispier crusts and even quicker cooking use an air fryer. Both types can be baked in under a few minutes. You could also buy a bag of Totino's pizza rolls and air fry them for  a tasty hors d'ouevres.  Of course popcorn is de rigeur for this ultimate movie night. Your best bet is popping kernels in a Colonel Popper for a healthier pop. These can be popped in olive oil and then flavored with Kernel Season;s popcorn seasonings. This  brand is neat with all these different flavors. Try the movie corn one which os a blend of butter and salt along with their ranch. They also have caramel along with chocolate and sugar cookie for a sweet bite.

If you're having a party or just have a appetite, then think appetizers.PF Chang's has some interesting ones like their vegan egg rolls which come with a sweet duck suace and their Kung Pao cauliflower. These are perfect bites to watch as favorite movies and actors wins. If you want something a bit more sophisticated then then think spinach cups. These are puff pastry cups filled with a spinach -cream cheese and feta cheese mix, spiked up with sauteed onions, lemon zest and dill. Egg binds the filling together and gives it a custardy feel. These only take twenty -five minutes to bake up in muffin tins and the filling can be made well in advance.Serve these along air fryer crab cakes for a lovely sophisticated bite. Crabcakes are an easy make , using lump crab meat, egg for binding galric powder and chives Panko crumbs give them body and a golden hue when fried in an air fryer. Wash these down with a good champagne to celebrate. If you want something heartier, then think small French dip sandwiches with individual ramekins of gravy for guests. If it's just for you then, soak the sandwich  in a big bowl and enjoy.

Oscar night means Oscar nibbles. These can be  homey English muffin pizzas or sophisticated crab cakes.Make it a fun food night no matter what you serve.

Turn Those Leftovers Into Gold

Black Friday usally means shop til you drop. It also means dealing with yesterday's leftovers. What do you do with them or the overage from ingredients? Turn them into yummy dishes.

This had been nagging at me  all last night. I had extra Just Egg egg substitute and vegetable broth left over from yesterday's vegan French bread stuffing. It dawned one me what I can make with them  -. pompiest, that Piedmontese comfort food , breadcrumb soup.

I used these leftover ingredients with a cup and a half of breadctumbs, cooked and combined to create a soothing potage. It was a stomach calming  respite from yesterday's filling meal. It also made for a hot tasty lunch too.

Thanksgiving provides us with all sorts of leftover.  Melissa Clark wrote about using leftover  turkey in a number of ways in Wednesday's The New York Times Food section.  It's best in a soup where you can spice it and add pearled barley as Cristiana  N> de Carvalho did , using her native Brazilian mother's recipe. There are also turkey enchiladas and pot pies, the last made with left over veggies too. Keep in mind other leftovers can be totally transformed.I may turn those sweet potatoes into air fried wedges. Brussels sprouts can also be crisped up again in the air fryer. f course the best is just turkey reheated with stuffing and gravy to continue with the holiday.

Those leftovers are culinary gold. They can be turned into any savory lunch or dinner. Be creative with them to create a tasty meal.

Your Own Holiday Party

The one aspect of the holiday everyone is missing right now is the holiday party. It could be a lavish office affair or a tree trimming bash. There are no more family gatherings or Hanukkah parties. Yet we can still celebrate - at home among ourselves.

Sit down office parties were always full of good drink and good food. You can still have a lush night in, including getting dressed up. Think about serving small filet mignons to make at home with a side of Hasselback potatoes. The meat can be enhanced with garlic or herb butter or a bagna calda sauce of anchovies garlic, butter and olive oil. Hasselback potatoes are accordion sliced russet potatoes brushed with melted butter and different herbs. Another lush meal would be Cornish game hens with flavored rice and/or mushrooms. Corporate Christmas parties are also known for their many hors d'ouevres. Whip up a bowl of fresh made bruschetta to be piled on toasted and sliced Italian or French bread. Cheese and mushrooms puffs are a must. You can make these at home using already made puff pastry but you can also find trays of both at your grocery's freezer section. The same goes for spanokopita, the miniature Greek spinach pies. Since you're not going to be driving, you can make dinner as boozy as you want. Serve champagne or make a packed

punch with rum ,orange and pineapple juices. You can also create individual drinks like Cosmopoitans and martinis too.If the kids are involved, then make a non alcoholic one with a variety of juices and seltzer.

Hanukkah parties are special times that can still be celebrated. Homemade latkes are a must but these can have different spins. Try making them in a waffle iron for an all over crispiness. Add sweet onions and horseradish for some zing and heat. Veggie laced latkes are a different and flavorful twist. Think about adding in chopped leeks or scallions along with carrots and onions. A true treat is a brisket and latke sandwich, made with melt in your mouth brisket and hot crisp latkes. A fun dessert is sufganiyot , the holiday jelly doughnuts. Also have some chocolate coins for the dreidl games later. A family tree trimming party can still occur. You could give it a Mexican spin with fresh made guacamole and salsa or a plate of loaded nachos. The last are tortilla chips topped with pulled chicken or ground beef  and smothered with cheese, sliced jalapenos and black olives. You can also toss in diced tomatoes and peppers too. Another tree trimming party idea would be a plate of English muffin pizzas. Everyone can put on whatever toppings they want like pepperoni and extra sauce. You could even include garlic knots too and extra pizza sauce for dipping. Finish with a platter of homemade cookies and hot cocoa , tea or flavored coffee.

You can still have delicious food and drink. Just do it at home. It may not be the same as those parties you're used to but it could easily be tastier. Celebrate this holiday season however you want. It's your party.

The Three Pronged Meal

It's always challenging to come up with a good dinner and/or supper seven days a week. What do you make as the main dish? What would make good sides? Will they go with whatever meat you cook? The best way to create a tasty balanced meal is to take the three pronged approach. This is a great way for novice home  chefs to learn about putting together a meal.

What is the three pronged approach? Pick out a main.It could be meat or tofu. Then choose  veggie and grain side dishes  to go with it.It's the classic dinner ,some kind of roast surrounded by sides.  The main dish .doesn't have to be a grand roast - chicken or turkey breasts will do just fine, especially after  a busy , tiring work day.Even hamburgers or  hot dogs work. For a fancier or special meal, think filet mignon or a juicy T-bone steak.Of course you could also pan fry skirt steaks, with some chimichurri or salsa verde  - green sauce .Fish and seafood are another choice. Both tilapia and shrimp are amenable to spices and herbs and you can create a filling yet low calorie meal with both. For a Sunday dinner at home, think a nice roasted chicken with rosemary and lemon or even Cornish game hens. The star of the dinner table doesn't have to be a roast It can also be a tangine -rich with lamb. What's good about it is that it includes the second and third prongs veggies and grains. This Moroccan and Algerian classic is rife with fruits, olives, carrots and rice.Another choice is good old fashioned stew, full of potatoes , carrots and onions. Vegans and vegetarians also have some good main dish choices.Morningstar Farms and Gardein have excellent meat substitutes. Try Gardein's beef tips in a stew or just with rice or veggies as a hearty supper.Morningstar Farms has chicken strips that are tasty in fajitas, and tacos.

Now that the main prong has been chosen, it's onto the sides.Rice or noodles are always good and they're  popular with kids. Zatarain and Goya have delicious rice dishes that can be combined with any meat or seafood.Zatarian's red beans and rice are great with beef, the real deal or Gardein's beef tips. It's spicy and full, with an extra kick of protein thanks to the beans. They also have a Caribbean rice mix along with rice mixes that will go well with chicken and shrimp.Goya also has excellent sides such as yellow rice and rice primavera. Buy their paella Valenciana , add some shrimp and create a fun Saturday night or Sunday supper.Noodles are always a great foil to poultry and pork. Make them from scratch or buy a package of that kitchen classic - Mueller's. What about the third prong? The veggies. Sometimes just plain steamed ones are the best.. A fresh ,bright flavor is like a palate cleanser, especially if the main or grain is heavily spiced or sauced. Since the stove top or oven will be used  for the meat or seafood and rice or noodles., use the microwave for the veggies. Stop and Shop's in house steamers are great for this. Their peas are perfect with a just from the garden taste. The same goes for their green beans, and broccoli. In the summer replace these with fresh picked tomatoes and/or corn.

The three pronged meal is the best way to plan a satisfying and nutritious dinner. Use it for a week night. Try a fun one for the weekend. It will help tremendously in planning a week - a month - even a year of meals.

Wild About Rosemary

One of the most used summer herbs is rosemary. It's a great addition to salads, sauces, marinades and even some desserts. One of the most ancient of ingredients is a warm weather must have, whether garden grown or market bought.

Rosemary has been used for centuries, starting in kitchens in old Rome and Athens. It is part of the mint family, first growing in the Mediterranean and Asia. The plant thrives in coastal areas and it's name means dew - ros- of the  sea - marinus. lady Elizabeth kent first mentioned it in her 1823 study Flora Domestica. The famed botanist , Carl Linnaeus solidified the name later on  in the Nineteenth Century. (although you don't have to live by the ocean to grow it. It can thrive in any backyard garden)Rosemary is an aromatic evergreen shrub. It is hardy surviving droughts and long rainless periods. It's a fuzzy kind of plant, with short, dense woolly hair. Its' flowers are white, pink, purple or deep blue.It 's notorious for flowering outside its' growing season. Blooms have been reported in December and February. If you are thinking of growing it, remember it does well in loamy soil. Don't over water it  which can water log it. It can be propagated from an existing plant by clipping a shoot and planting it directly into the soil.

Most know rosemary from homemade tomato sauce which it does play a vital role .With its' cousin, oregano, it tempers the sauce with a fresh , aromatic flavor. The herb can be used in focaccia where cut sprigs are added to the dough and then sprinkled on top for decoration.Think about using it when creating grissini or Italian breadsticks. A tablespoon of fresh , chopped leaves will definitely add to the recipe. To make more herby also add thyme, another herb rosemary shines with when blended together.Another idea is rosemary infused olive oil - a nice appetizer when paired with breadsticks or slices of Italian and French bread. It's just cooking a cup of oil and five to six sprigs over a medium low heat for five minutes. Transfer to a cruet where it will keep for a month. Rosemary is also very good in soups. Try it in a hearty veggie or a delicate onion one.One of the most famous dishes using it is rosemary chicken. Chicken meat is mild and the rosemary brings out its' subtle flavor. A great recipe is chicken breasts cooked in oil  with two sprigs along with garlic and lemon For the more daring home chef, there is rosemary ice cream , where it melds with honey and cream for a unique flavor.

Rosemary is an ancient herb  that can be used in any modern dish.It will add to any recipe from savory to sweet. Try it in your summer cooking for a nice boost of flavor.

Making Those Dogs Bark

Memorial Day kicks off the barbecue season and that means a season of hot dogs. What's so great about this summer standard is that they can be zinged up with all sorts of extra. They're not just plain dogs anymore. They're something special.

A hot dog has a relatively bland taste that can go with any other flavor. Bacon lovers should think about wrapping the slices around them to create a salty,  crunchy treat. You can even dunk the dogs in barbecue sauce and then put the bacon on.To really elevate them, add some sharp cheddar. You can buy Sargento's to sprinkle or just buy a block and grate at home. If you want a fancy cheese dog then spread Brie on them and put on a toasted croissant (you'll have to break the dog in half  so it fits better on the crescent shape)Vegans can also enjoy this treat by using the Morningstar Brands veggie dogs and their fake bacon. In order to get it pliable and bend-y just microwave the soy strips thirty seconds less . If you want crunch then microwave it according to directions and just crumple it on the dog. You can also have a dairy free cheese dog too. There are several brands of vegan cheese that can top your hot dogs. One of the best is Ciao, This is a buttery tasting faux fromage that would off set the vegetarian dog's saltiness.

Chili and hot dogs are meant for each other. A pot of homemade chili would go well with grilled dogs. If you have to spend more time at the barbecue then just make it in a crockpot. In fact it will be better because the slow cooking time allows for the spices and chilis to mellow .If there's no time, then buy a can of chili. Again, vegans can also enjoy this taste, thanks to vegetarian meatless sort. Put as much as you want on your dogs. Some famed hot dog hang outs like Rutt's Hut in Clifton New Jersey also puts onions in their chili sauce. You can do this for both the homemade and canned chili. Just add a small chopped  white onion to the chili and cook up.Since  hot dogs are essentially German, think about adding sauerkraut as a topper. The homemade is popular right now , thanks to foodies and hipsters jumping on the fermented food bandwagon. It's just taking shredded cabbage, pounding it to extract the juice and brining it with salt and the juice for a few days.. This is much more flavorful than the canned kind however if you don;t have the time, use the store bought.Zing it up with some freshly ground pepper. Of course relish is a must.If you''re ambitious think about making it. Relish is a mix of red and green peppers  mixed with cucumbers and onions. These are then cooked with a brine and a paste made with granulated sugar, cornstarch and vinegar. Everything is poured into pickling jars to ferment,

Think of your hot and veggie dogs as blank canvasses. Add bacon or relish, cheese or sauerkraut or combine these to create a unique flavor. Be creative and come up with a new kind of hot dog.

Piggy Days

One of the easiest Monday meals a home chef can make is pigs in blankets. So simple, yet so tasty. Any novice or kid chef can make these.

I did.
I used Pilsbury crescent rolls wrapped around Sabrett  all beef hot dogs and Morningstar Farms veggie dogs. I had three  extra rolls which I left as crescent rolls.
It was just thwack against the sink, unroll, wrap and bake.
All it took was fifteen minutes at 350 degrees Farenheit. These can be served with any dipping sauce or stuffed with cheeses for a really festive dinner or hot snack.
These will be saved for later with some yummy jam for a nice, munch with hot tea, along with a good TV show.

Pigs in blanket are the perfect Monday meal. They're  a snap to prepare, a snap to make and a snap to eat.

Hurricane Cuisine

Thanks to Hurricane Sandy, most of the East Coast will experience hurricane cuisine  tinned food and bottled water mixed with whatever is in the freezer. Anyone can get creative with whatever is in their kitchen, providing they have gas and/or electricity. It's also a time to take out the grill again if need be.

Usually a freezer can keep its 'temps until the second day without power. Don't keep opening it otherwise you'll lose the food inside. Instead concentration what's in the refrigerator part. If you're lucky you 'll have eggs. Paired with almost anything, from meats to cheese to veggies, you can create a nice omelet that the family can enjoy. Cheeses can be melted and made into a Welsh rarebit or fondue.Again bread can be dipped into this as well as boiled potatoes. You can also use the extra veggies along with tinned tuna  or any meat as a hearty salad.

What happens when the freezer goes? Again try to be creative.TV dinners may be hard to cook because they may require the microwave. You can cook some in your oven if you do have a gas stove. For some of the other frozen foods, you;re going to have to get creative and possibly drag out the grill. Frozen burgers can be thawed and cooked , if you have a gas grill. If you have an electric try to use a neighbor's hibachi of there is one. Freezers also keep all that extra sauce you made with your tomato harvest. Thaw it out and make either soup or sauce.Ice cream melted down can be mixed with milk for a malted.

Hurricane cuisine can be much like the phenomena itself, wild daring , outrageous. Yet out of that can come substantial and, yes, even nutritious food, Don't fear it. work with it.
