Turning Dishes Into Soup

Can a favorite dish enjoyed as a snack or a summer favorite be turned into a hearty winter soup? Surprisingly yes. Hummus, bean salad and pasta pesto can be transformed form forkfuls to spoonfuls. It 's an easy change and perfect for the weather right now.

Regular contributor Melissa Clark created these dishes and wrote about them in yesterday's New York Times Wednesday Food section. All are great on their own. Hummus makes and excellent lunch or snack while the other two are usually summer barbecue favorites.Ms Clakrs inspiraration,. for using these were favorite dishes with big flavors. These are not usual soup ingredients(well, may be the pesto is) but have great potential to be made into them. Ms Clark takes the pesto which can be homemade or s tore bought has pasta and turkey in it,.There is also garlic in it for pungency. Like regular soups the base can either be vegetable or chicken stock. Orzo or macaroni CNA be used a long with five ounces of baby spinach. Ground turkey is used for heartiness. Lemon gives it brightness and a summery sunny taste while the addition of ricotta gives it a creaminess.

Three bean salad , the perfect summer dish is now a delicious soup for a frigid day. Yes there are beans.Ms. Clark uses white, chickpeas or kidney ones and green beans. It give a more veggie flavor thanks to an onion chopped up into it along with chopped celery , carrot  and tomato paste. Again the stock CNA be veggie or chicken (stick with veggie this time Coriander and ground pepper give it a spikiness that's perfect for a cold day soup. The hummus soup is a fun one, combining the same ingredients as the dip with three to four cups of veggie or chicken stock (for a truer hummus flavor go with the vegetable stock).Unlike the dip Ms Clark uses a teaspoon of whole cumin seeds along with cilantro or dill. A large pinch of crushed red pepper gives it the heat to make it perfect for a chilly mid winter day.  Home chefs can add pan fired chickpeas for crunch on top as well as extra tahini to drizzle in.Lemon is added for zing and the dish can be served with , hot toasted pita chips.

These dishes are perfect as for full of goodness. They're even better as a good spoonful or a frosty day. Try them for a different spin on winter soups.

Salad Ready

These next two days are going to be spent cooking and grilling up a storm. It's a lot of work  however it can be reduced if you make the sides  - namely the salads beforehand.

One of the  first jobs to do is getting the ingredients salad  ready. Did you get the right spuds for potato salad? Waxy ones are the best because they hold their shape but really any can do. Boil them the night before and let them cool overnight in the fridge. If you're making the traditional version now is the time to hard boil the eggs and even cut the celery. its' then just mixing everything together. what about if you;re adding bacon. That's a last minute thing that can be done in the microwave and added after everything else is mixed in.If you;re really pressed for time on grilling day then make the salad the night before. It should be OK and not become too watery.. What about that other barbecue classic - three bean salad? Can that too be made in advance? Yes!. In fact it would be better made the night before because all the flavors meld together then. If you want to add leafy greens do so right before serving so they retain their crispiness. Storing them with the bean salad overnight make make them limp and soggy.

Every barbecue will have a bowl  of macaroni salad. Many home chefs will be making ti the night before. why is it a good idea? LIke bean salad kept overnight , the flavors will meld together. The pasta, vinaigrette and veggies will have time to mix and create a more complex and layered flavor. also the pasta will absorb the dressing , making it softer and moister in texture. It won't dry out then in the fridge. To keep it from becoming too soggy.only pour in half the dressing for overnight. add the other half right before serving. You could make half the macaroni salad the night before. Cut up whatever veggies you'll be using and store them. Cook the pasta  the day of the barbecue for a fresher taste.Cole slaw is also a popular picnic or barbecue side. Can the entire salad be made ahead? Yes and no. Slice the cabbage and carrots the night before and then add the mayo or whatever you want the day off. Cole slaw is notorious for becoming so slimy an soggy after time int he refrigerator,. A too soggy slaw would definitely put a damper on an other wise delicious dinner.

Make tomorrow easier by assembling and prepping your salad early. It give you more time to concentrate on the meats. This makes for a better time for grilling.

An Old Fashioned Summer Birthday

Summer birthday's are always special. It's a day full of sun, sand and presents. Not only that it's full of fun food , classic fare that works well no matter what age you're turning.

Of course a warm weather birthday means one thing - barbecue. Two of the most classic dishes to serve are hamburgers and hot dogs. These are perfect because they're easy to make and are always a crowd pleaser. Hamburgers could be homemade or bought in cases like the Bubba Burger. A traditional hamburger recipe starts with lean ground beef mixed with Worcester sauce and garlic powder. You can add a beaten egg along with bread crumbs for more body and chopped onion for more flavor.(this last will give it the same flavor as what you get at Mc Donald's ).Already made burgers, including the vegan Beyond Beef ones are also a good choice and an easy cook on the grill. For a birthday party, have a fixings bar that has sliced onions , tomatoes, pickles and lettuce. You could also add already cooked bacon to this and slices of cheddar cheese. Create  a special sauce like Burger King and McDonald's .This is easy blend of ketchup, mayo, swee t pickle relish and white vinegar.A tiny pinch of sugar is also added. As for the hot dogs, these are just fine grilled plain. You could brush them with melted butter before cooking for a crispier texture.

Sides should be the classic potato salad along with three bean. The first should stick to tradition, with the potatoes being mixed with  chopped celery and hard boiled eggs. Dress in mayo and season with a little bit of sea salt and freshly ground pepper. Three bean salad can be made of the birthday celebrant's favorite beans, A popular mix is kidney, garbanzo or chick peas and white cannellini beans. The dressing is a sweet and sour one, made with oil ,apple cider vinegar and a bit of sugar or honey. A fun classic barbecue treat are devilled eggs. It's not only a tasty party food but is a perfect appetizer for a barbecue. A summer birthday demands for an ice cream cake. This can be made two ways . You can bake a cake and then layer on ice cream as the filling. Frost with whipped cream. The second recipe is pure ice cream layered with a crunchy mix of Nabisco chocolate wafers crushed and mixed with melted butter.Layer this and one or two flavors of ice cream before freezing. Add sprinkles  for a more  festive touch before serving . End the party with s'mores under the stars.

A summer birthday party should be full of good classic summer time barbecue foods. The grill should be fired,. There should be favorite and easy to make salads. Dessert should be  spectacular with large slices of ice cream cake followed by s'mores. It's a birthday wish come true,

Pomodori e uovi
Butter or margarine for sauteing
six to eight large eggs
four to five sliced vine ripe tomatoes
two cloves garlic finely minced.
salt and pepper
loaf Italian bread

Melt about two to three tablespoons of butter or margarine in a large pan
Beat eggs as if you're scrambling them. Add to pan along with the two cloves of finely minced garlic. Mix in tomatoes until they and the eggs are cooked and form curds. Season. Serve with large slices of Italian bread (although you may need two loaves to sop up the juices)

These were some of my Mom's favorite dishes to make and to eat. We always enjoyed them, especially for her birthday.,
