An elegant Fall Birthday

 Having an autumn birthday means an elegant affair featuring the delights of the season.It could be a simple brunch or a lovely dinner party. It features fine wine and fine dining.

A birthday brunch usually means Bellinis and mimosas in tall flutes. Sub in the peaches and oranges with one of the fruits of the season pears. You can use fresh pears or canned halves (although using the fresh ones will give it a tangier flavor). Cut up the pears and puree them either in a blender or using an immersion blender. Pour the puree in a third of th e glass.Add a good dry champagne .Another drink perfect for a fall brunch is a tea punch.This is made with black tea and simple syrup. Most recipes call for apple cider but why not amp it up a bit by subbing in the cider with a cup of hard cider for a kick.If you're worried about the oomph or punch of it ,remember it becomes diffused when it 's mixed with the tea. You can also  add a half cup of regular apple cider to lessen it's strength.As for luncheon, think a butternut squash, pumpkin and potato quiche or one rich with leeks and feta. Bake three or four for the guests. Small finger sandwiches work well also. Sub in a chicken and grape salad on croissants and brioches. what about dessert. Think apple cupcakes with a just a dusting of confectioner;s sugar.

As for a dinner, think outside the bottle and try an apple flavored wine or one spiced with cinnamon Hard cider could also worked here but remember it's potent. You may want to  water it down with a plain or flavored seltzer. start the meal off with a fall themed charcuterie board. have cubes of rich Swiss and Gruyere cheese mixed with both sharp and mild cheddars Add ham, apple slices and grapes for variety. as for the bread, go with sliced sourdough  or artesanal rye slices. small hours and pumpkins can be added for decoration. The salad can be an arugula with diced apple and air fried prosciutto strips. Any kind of Wellington dish is always an elegant meal. Go for the original which has beef tenderloin encased in a buttery flaky pastry. You can serve with fall's root vegetable such as sheet pan cooked parsnips and carrots. This dish can be turned vegetarian just by switching out the meat for a mix of mushrooms and lemtils,Miso  , walnuts and tomato paste give it a definite meat like flavor and texture. The sides can be the same. Turnips and carrots crisped in a mix of olive oil and thyme and then oven roasted. End the meal with a pear or apple galette topped with creme fraiche ice cream. If you do want cake, think a simple vanilla one with a cinnamon icing.

A fall birthday is a time for  elegant celebration. It could be a brunch or a dinner.Either way serve sophisticated food and drink for a lovely time.

A Chef's Kiss

 What happens when a restaurant loses a master chef? It continues as best it can. The recipes carry on despite  them not being as good as the original.

I feel that way with my Mom whose birthday is today. She would have been 101  - a great age.Her years with us were  very  great learning periods.Her imprint is felt in our cooking  and baking today. She was always a big one for mixing olive oil and butter to temper the oil. It's almost a knee jerk reaction to add a knob or two of Melt plant butter (what would she have thougth of that - maybe she would have liked it). Combining the two also gives sauteed and fried dishes a better flavor along with some body. Mom also cooked rice in vegetable broth which makes for a perfect quick lunch or weekend supper, but also a good base for ratatouille.Her risotto was amazing too and her patieince in creating this tempermental dish was also nothing short of amazing either. Both it and her other signature dish polenta (which she grew up on thanks to my Piedmontese grandmother) require constant stirring. That takes a  great amount of patience especially during warm weather. Yet the end result is worth it as she always proclaimed.

My Mom also passed down her love of culinary travel and boldness in making dishes from other cuisines. We were the first family on the block to have tacos for dinner. She was the first to have a wok.One of her all time favorite dishes , the Szechuan ants climbing a tree is still made. It's what connects me to her. I've tweaked it and made it vegan , using plant based beef crumbles instead of the real thing.Her culinary sense of adventure made me try Ethiopian lentil and tomato stew with Berbere spices.I try to step put of the box as I test out new recipes or vegan versions of traditional ones. Would she have like the fact that everyone uses the internet instead of traditional cookbooks nowadays? That's a good question. It is easy to get any kind of recipe yet there is something about reading a cookbook cover to cover. You do learn about the recipes better instead of a quick glance before combining ingredients. She loved to pore over the glossy photographs and imagine that's what her rendition would look like. There's also something about a cookbook with stained pages and tweaks pencilled written in.

It's hard when a master chef leaves. Yet the restaurant goes on. The food may not be the same but the love and sense of love for food still exists.

An Old Fashioned Summer Birthday

 Summer birthday's are always special. It's a day full of sun, sand and presents. Not only that it's full of fun food , classic fare that works well no matter what age you're turning.

Of course a warm weather birthday means one thing - barbecue. Two of the most classic dishes to serve are hamburgers and hot dogs. These are perfect because they're easy to make and are always a crowd pleaser. Hamburgers could be homemade or bought in cases like the Bubba Burger. A traditional hamburger recipe starts with lean ground beef mixed with Worcester sauce and garlic powder. You can add a beaten egg along with bread crumbs for more body and chopped onion for more flavor.(this last will give it the same flavor as what you get at Mc Donald's ).Already made burgers, including the vegan Beyond Beef ones are also a good choice and an easy cook on the grill. For a birthday party, have a fixings bar that has sliced onions , tomatoes, pickles and lettuce. You could also add already cooked bacon to this and slices of cheddar cheese. Create  a special sauce like Burger King and McDonald's .This is easy blend of ketchup, mayo, swee t pickle relish and white vinegar.A tiny pinch of sugar is also added. As for the hot dogs, these are just fine grilled plain. You could brush them with melted butter before cooking for a crispier texture.

Sides should be the classic potato salad along with three bean. The first should stick to tradition, with the potatoes being mixed with  chopped celery and hard boiled eggs. Dress in mayo and season with a little bit of sea salt and freshly ground pepper. Three bean salad can be made of the birthday celebrant's favorite beans, A popular mix is kidney, garbanzo or chick peas and white cannellini beans. The dressing is a sweet and sour one, made with oil ,apple cider vinegar and a bit of sugar or honey. A fun classic barbecue treat are devilled eggs. It's not only a tasty party food but is a perfect appetizer for a barbecue. A summer birthday demands for an ice cream cake. This can be made two ways . You can bake a cake and then layer on ice cream as the filling. Frost with whipped cream. The second recipe is pure ice cream layered with a crunchy mix of Nabisco chocolate wafers crushed and mixed with melted butter.Layer this and one or two flavors of ice cream before freezing. Add sprinkles  for a more  festive touch before serving . End the party with s'mores under the stars. 

A summer birthday party should be full of good classic summer time barbecue foods. The grill should be fired,. There should be favorite and easy to make salads. Dessert should be  spectacular with large slices of ice cream cake followed by s'mores.It's a birthday wish come true,

A Birthday Full Of Clotted Cream And Scones.

 Today is Samuel Taylor Colerdge's birthday. His birthday dinner would have been a table laden with delicious dishes from his native Devon. He would have feasted on apple dumplings and an apple crumb cake (imagine a crumb cake loaded with apples) along with cider chicken. a tasty dish with the bird cooked with not only cider  from Devon but its' delicious clotted cream. Coleridge might have had  potted crab too, the 18th century still known for serving as many diverse recipes that the cooks can make. He would have washed it down with Devon hard cider or perry a kind of pear cider.

Celebrate Samuel Taylor Coleridge's birthday with his poems and also the foods  and quaffs of his beloved Devon. Like his works the recipes are amazing. Try them for a taste of the South English coast.

Celebrating Coleridge

Today is Samuel Taylor Coleridge's birthday and mine, I've always felt that the first, one of the greatest poets in the English language should be celebrated . This writer - not too much.

Birthdays now are hollow to me. No matter how much I celebrate, with all the dinners out and cake in , it's not the same without my Mom. I miss those days when she would make my favorite  - risotto Milanese , the creamy Milanese dish of arborio rice, mushrooms and, of course, saffron. Nothing will ever come as close as her delicious pot of sunny yellow rice. Imagine molten sunshine and that's what the dish looked like. One day I will make it. My cooking and baking is getting to be as good as hers - I am trying - not to brag. It's a tough legacy to handle and surpass.Yet  I am trying, Some of it is coming out good and I can imagine her saying "What a good cooker" a phrase  she took her her aunt, my great aunt who knew a  thing or two about Piedmontese cooking and was an excellent cook herself.  However back to Coleridge who , unlike his latter Romantic counterparts, Byron, Shelley, and Keats never went to Italy. They probably dined on risotto, Mr Coleridge may have had only a rice pudding. the closest he'd ever get to anything with rice.

 He did come from Devon which had excellent dairy and beef along with lamb and mutton.Maybe soon I'll celebrate STC with a proper cream tea. There's clotted cream to be had, this I can easily get from either Amazon or Myers of Keswick in New York's West Village. It's a thick cream created by heating full cream cow's milk over a hot water and steam bath. The result is a lovely, thick, yogurt , (its' origins may have come from yogurt, the Phoenicians ate during their trips to ancient Britain. They traded goods for tin mined from Cornish mines).It's mild tasting and delicious on hot English muffins and then topped with any jam or jelly. A variation of it is "Thunder and Lightening" , bread topped with it and a layer of honey. I'd go with the jam, preferably blackberry or the cherry one I bought from Cherry Republic, in Traverse City Michigan. That to me is the perfect way to celebrate this famed Devon author.

Another birthday for Coleridge and myself. I've celebrated him for years, with cream teas and clotted cream. It's time to bring out the last again and slather it on a hot , toasty English muffin.

Recipes Past , Recipes Best

This is my Mom's second birthday without her. I think the best way to pay homage is by posting one of her best recipes and my all time favorites - tomatoes Provencale. This is a great way to use vine ripe tomatoes. Just be sure to have a whole (!) loaf of Italian  bread to sop up all that delicious tomato infused oil when you've polished off the tomatoes..

Ingredients
Olive oil
two finely chopped garlic cloves
1 cup breadcrumbs , preferably plain
5-6 vine ripe tomatoes
salt and pepper to taste


Pour enough olive oil to cover the bottom of a medium frying pan. Mince garlic and add to bread crumbs along with sea salt and freshly ground pepper. Slice tomatoes and lay them side by side in the frying pan.Spoon large heaps of the breadcrumbs over them and cook them over a medium flame. Put a glass lid over the tomatoes to steam them. Doing this will give a more tender flesh. Cook for about ten minutes or until tomatoes look wilted and breadcrumbs are browned.

Usually tomatoes provencale are served with a roast chicken or barbecued or grilled steak. You can do  this or better yet, just have the tomatoes on their own with a good iced hard cider. Dip hunks of Italian bread into the olive oil and enjoy!!!

Sweet Cold Desserts

There's something about ending a summer meal with a cold dessert. A slice of ice cream cake or pie tops off a supper or late lunch of spicy ribs or chicken. It's a cool way to finish, especially on a hot , humid day.

One of the coolest treats is the simple icebox cakes. These came about in the 1930s' when iceboxes became a fixture in American kitchens. Often these are a mix of cookies , pudding, sometimes fruit and whipped cream. One of the easiest is the famed Nabisco chocolate wafer log. This is also known as the zebra cake for the fun black and white stripes. It's just lining up chocolate wafers and mortaring them together with Cool Whip or homemade whipped cream. This forms a log which can be left alone or dressed up for birthdays and parties. A simple decoration of shaved chocolate is fine  but you can also sub in colored sprinkles for a more festive cake. A more elegant decoration is a scattering of strawberries and blueberries on the plate. The cake can also be made Magnolia Bakery style. New York's most famed bakery creates a cake shaped one with four layers of the chocolate wafers sandwiched between whipped cream. Nilla wafer cake is another icy treat that's easy to make. Layer the cookies in any kind of pan - glass or foil - and then layer with vanilla pudding, peaches, strawberries or blueberries and a layer of whipped cream.

Ice cream cakes are another frosty way to end a summer meal. They're easy to make at home, thanks to silicon cake and bread pans. I bought a silicon loaf pan which works perfectly in creating a two layer cake. I also have a smaller one that makes a cute mini cake. Again the Nabisco chocolate wafers are the perfect cake layer. DO NOT sandwich cookies. The creme filling will make for an over sugary , lumpy layer. Pulse the wafers in a food chopper and mix with melted butter or margarine to create a cake like layer. The first layer can be this or Hershey's hard shell which gives the top a nice crunchy, ganache look. Before you add the ice cream and crumbs ,brush a thick layer of it first onto the bottom of the mold. Then layer with your favorite ice creams. Add a second layer alone or with caramel  or the seasonal fruit. I recently made a vanilla and sea salt caramel loaf, using Soy Delicious vanilla coconut ice cream and Smucker's Salted Caramel. Keep in mind that the caramel does get the texture of salt water taffy when frozen. You can sub in pureed or chopped strawberries or raspberries for the caramel. Ice cream pie is another cool ,sweet dessert . Get a pre made pie shell and then fill it with whatever you want. Decorate it with puffs of whipped cream, hard shell or even candy. It's a nice alternative to a birthday cake for something different.

A summer meal deserves a sweet, cold ending A  slice of ice box cake or ice  cream cake or pie is the perfect dessert. It cools you off while you enjoy the end of a delicious warm weather, lunch , supper or dinner.

Happy Birthday Disaster

I had such high hopes for the cake I was going to bake for my friend's birthday.It started out good.Unfortunately I can't even upload the pictures regarding this. It's like the whole project is against me!!!!!

It is blurry  but you can see it's the Duncan Hines butter cake, along with sprinkles and butter. I did everything according to the instructions (well except for the sprinkles) I added half a cup which I thought would be fine. It wasn't.

The butter part was fine. I diced it to make for easier blending. This is the batter
The batter looks fine. It was fine as I poured it into the two inch eight inch round cake tins The problem was that the batter super rose and got all over the oven floor. Could it be that I whipped too much air into the batter, thanks to my new Proctor-Silex beater? Maybe? The batter didn't set on one layer. That went directly to the birds when cooled.
I made a traditional butter cream for the remaining layer, 
As you can see the cake is in the pan and is too soft to be lifted out of it. Just a plain icing graces it, hiding the mistakes in the upper right side. I used Wilton's Sparkle Gel icing to write happy birthday. If it had come out OK, , it would  have been a blue and green ombre, but alas it wasn't.

Will I use Duncan Hines again? Maybe. Maybe not. Will I bake butter cake again? Probably not  but never say never. This has been an eye opener in a usually idyllic and problem free baking season. I will try again - but not so soon. I think I need to get the bad taste of a flop out of my mouth.

It's Coleridge's Birthday!

Today is Samuel Taylor Coleridge 's birthday, born in the romantic and dairy rich shire of Devon in Southwestern in England. What would he have eaten for his big day? Pasties, buttery and flaky pastries filled with beef, pork and possibly chicken. Maybe a slice of the fish intense Stargazey Pie , with the little heads of pilchards. It would have been washed down with a delicious cup of scrumpy - a strong, slightly carbonated cider made from the county's famed apples. He may have finished with a Dittisham plum tart smothered with clotted cream.

To him, a toast  - not with scrumpy but with a modern American treat - the German chocolate cupcake!

An Easy Summer Birthday

Everyone loves a home cooked meal for their birthdays.Even summer babies are excited over a favorite dish that's been lovingly made. Unfortunately the season brings about hot days when no one wants to be in the kitchen. The solution? Keep it cool!

If the honoree wants a home cooked meal, then think  barbecue.Grilled chicken or salmon with grilled vegetables is a nice treat. If you have a Weber egg  grill, you can roast an entire chicken. A birthday party needs a festive dish so why not grill beer can chicken? This is easy to make.It's taking the chicken , rinsing it and then patting dry with paper towels. Sprinkle with sea salt and freshly ground pepper and any kind of rub.It's then plunking the bird down on an open beer can . The can and the legs will act as a tripod as the bird is being cooked.It usually takes about an hour and fifteen minutes. Serve with a fiesta salad that has cooked corn niblets mixed with diced red and green peppers along with halved grape tomatoes. Sirloin burgers are another celebratory  meal. To grind the meat, first cube the steak and grind in batches in your food processor or meat grinder. You can add egg for richness or butter. The burgers can be served Piedmontese style with bagna calda  sauce on them. Use flattened toasted Italian bread instead of the usual buns for this. Grilled salmon Oriental style with soy and ginger or Mediterranean style is also a lovely birthday lunch or dimmer.. The last can be served with a fancy couscous studded with almonds and raisins.

Nachos are always a fun party food no matter what time of year. The dish outside is extra fun, especially at a pool or even beach side party.Make it really luxurious  with  layers of steak and chicken or fresh roasted pork. For color have both black and green olives along with extra helpings of  guacamole, sour cream and pico de gallo. If  you're hosting a large crowd you may want to try a taco or quesadilla bar where guests can pile on a variety of toppings. A cool idea is a salad loaded with tasty bits and pieces. A taco salad can be fun, It's just a quick cook of and then the meat or soy fake meat can be added to iceberg lettuce along with crumbled tortilla chips and shredded Monterey jack cheese. Buffalo chicken salad is a nice birthday lunch or dinner meal. Making the chicken is the most labor intensive. It's just creating a spicy , chili infused marinade and letting it marinate for a few hours  before cooking and adding it to  a salad , full of  diced celery and Romaine lettuce. Serve with a cool blue cheese dressing.One of the most luxurious and perfect for a birthday lunch or dinner is a seafood salad, chock full of lobster crab and shrimp.Use butter lettuce as a base and also toss in cherry or grape tomatoes. Dress with a simple vinaigrette which will accentuate the sweet flavors of the shell fish. Serve with crusty rolls and  chilled champagne.

Cooking for a summer birthday honoree is actually a cool and easy idea. Try a lush salad or a rich sirloin  burger for a sumptuous meal. It's a great way to celebrate a summer baby's special day.

Scones, The Way Coleridge Liked Them

Today is Samuel Taylor Coleridge's birthday and surely he must have celebrated with a Devon cream tea. One of the components of any tea are scones, those mouth watering biscuits.They're an easy bake for novice home chefs along with being versatile with their ingredients. They can be just plain or filled with everything from nuts to berries to even candies.

Scones have been baked since the early 1500's and were surprisingly the size of a luncheon plate in their early days. Their origins were not England as you'd might suspect but possibly from Scotland and Holland. The Scots have something similar, called a bannock and it could be from this that our modern day ones originate from. They  could also come from the Dutch schoonbrod  translated into fine white bread. The Dutch ones were smaller , spoonfuls of dough were dropped onto a hot griddle and cooked. Even the Germans made them and also contributed to their name by calling them schoenbrod.Most foodies  as well as Coleridge himself, knew the British variations of them. These are the ones that are  chock full of currants, raisins, dates and cheese. The Scots and Northern Irish mix potatoes in with the dough and then fry them. These tattie scones are a big part of the Ulster fry up, the sumptuous breakfast full of streaky bacon, pork sausage and eggs.The US embraced scones thanks to the recent coffeehouse culture , and we probably have Starbucks to thank for that. They're mostly cinnamon and blueberry flavored here .In Utah, they're a variation of the Indian fry bread with buttermilk and baking soda.


Scones are the perfect bake for the novice home baker. You can easily make the ones that ST Coleridge probably enjoyed with his Devon cream tea.There is the Bisquick kind made with that baking mix.These are the closest to what Starbucks sells, with a confectioner's sugar glaze and stuffed with blueberries.A more authentic version is the English recipe which calls for mixing white flour with baking soda.Butter is added to this and the dry ingredients are cut together similar to what is done with pie crust.Once the mix resembles course breadcrumbs, eggs and milk are added to give it a  more doughy quality. It is then rolled out to a one inch thickness and then cut with a biscuit cutter or can be cut into triangles.They're baked in a very hot oven at 425 degrees Fahrenheit   for only ten to fifteen minutes . If you want them to have a shiny top then brush them with a beaten egg before baking.If you want to have a sweet crust then, just sprinkled granulated sugar on top after egg /butter washing and before baking. For cinnamon flavored ones just add four teaspoons of the spice to the dough.Serve them the true British way with clotted cream (which you can get on Amazon) butter and any jam, such as raspberry or red current.

Celebrate Coleridge's birthday with a batch of freshly made scones, butter, jam and , of course Devon cream tea. He would have appreciated this tea, as you will. Savor the taste of a butter and jam covered one washed down with hot milky Earl Grey.

A Vegan Birthday

Can vegans have a tasty food filled birthday?After all nothing beats a pepperoni pizza or cheeseburger followed by an egg and butter laden  cake. Yet - suppose you're a hardcore animal lover who eschews any animal products or you have allergies that prevent you from eating dairy and meat? Can you still have a fun party? Of course you can! It's easy with a wide variety of choices.

Barbecues aren't  limited to just meat lovers. Vegans can celebrate their special day , thanks to companies like Morningstar Farms who make a variety of burgers and dogs . They have twelve (!) different kinds of patties to choose from, like a spicy black bean to a quinoa and mushroom one. They also have added soy turkey burgers and there are yummy chicken patties. Their hot dogs are just as tasty and even meaty as the real thing and they are delicious roasted over a fire. If you're looking to have a meat free party then buy their soy crumbles to turn into a hearty pot of chili or taco stuffings.If you're throwing a birthday brunch, you can easily use Morningstar's soy bacon strips for the base of Eggs Benedict. As for the Hollandaise sauce that goes over it. you can make it without the eggs, using avocado and lemon pureed to make a creamy sauce. Pepperoni pizza is a snap to make too , especially when you just add soy pepperoni on top. Also everyone loves a build your own pizza bar too.There are also soy meatballs and sausages for a tasty, and healthier marinara sauce.

Birthday desserts can be tricky.Most do have egg and butter in them as binders.Melissa Clark had a recipe for dairy free ice cream in her A Good Appetite column in Wednesday's New York Times Food section.It's taken from the Van Leeuwen Brothers cookbook on ice cream. The brothers have a small chain of ice cream shops featuring both dairy and non dairy cold treats. To create a milk free scoop sub in  cocoa butter and coconut oil  to replace the necessary dairy and egg. It creates a smooth, creamy texture that is exactly the same as milk and cream based kinds.Cakes are another vegan conundrum. How do you get a perfectly light creation without the use of vital ingredients? You can use substitutes  for the eggs and milk such as Ener-G - Egg replacer  along with soy, almond or cashew milk. Trying to make a vegan frosting has always been the hardest but now you can , thanks to using coconut oil in place of butter.  Arrowroot powder can be used to make it thicker but it does result in a  fluffy topping that can be dyed pretty colors for variety and fun. Of course if there's a vegan bakery nearby, take advantage of it because they can create some awesome treats and even favors.

Yes , vegans can have a tasty, treat filled birthday. Use soy products along with stand ins for creating a no cruelty party .It's not only healthy but kind too!

Summer Birthday Fun

One of the best thigns about a summer birthday is that it can any way you want it to go.If you want a outdoor soiree  then so be it. If an indoor brunch is your dream party, then go for it. Another facet is the food, Unlike cooler weather dos , you can have a grilling good time too.

Summer parties can have all sorts of theme. If the celebrant is a big seafood lover you can throw a backyard clambake for them. Lobster , tilapia , salmon and even oysters can be roasted over hot coals.  Whip up a big batch of old fashioned cole slaw (the kind with mayo and carrots) along with grilled ears of corn as sides. A nice extra is old fashioned easy to make scratch biscuits and serve them with lemon butter. The birthday cake doesn't have to be a cake , instead serve  a peach pie or blueberry crisp with fresh whipped cream. For the Paleo types have a traditional meat cookout. Start with tasty sausages and peppers and end with steaks and ribs. What to serve with all this protein? Tomato salad with fresh tomatoes, garlic and basil or a  grilled Caesar salad. This last is easy to do- simply  brush oil on  Romaine lettuce leaves and then place on the grill until they are slightly charred and wilted. The dessert should be the perfect warm weather treat -ice cream cake. You can have your favorite ice cream shop make it or make it yourself.

Theme parties can be fun  too. Hot weather begs for a luau and a birthday one is extra special. You can always roast a pig although this is labor intensive, especially for novice barbecuers. Think about a suckling pig which is usually twenty five pounds compared to an adult that can reach two hundred!An alternative is grilling ham and serving it with a pineapple barbecue sauce or char sui, a Chinese dish popular on the islands. This is roasted pork tenderloin brined in a sweet spicy sauce and served with fresh pineapple on those yummy Hawaiian sweet buns. Feature island fruits such as papaya and mango in salads. The birthday cake can be the traditional haupia cake which features a filling of  coconut cream.Another sweet treat is Hawaiian shaved ice which just requires a block of ice , a scraper and  different syrups.You can go completely opposite and have a summer tea , much like the Crawleys would do on Downton Abbey. Start with serving a variety of different teas, from the citrusy  Lady Grey to the the robust Irish breakfast. You can even make a  tea punch  using strong black tea , lemonade and seltzer or ginger ale. Sandwiches can be the traditional watercress or chicken salad. For variety you can also have thin shaved ham or minced shrimp. The birthday cake can be a series of petit fours that have lettering spelling out "HAPPY BIRTHDAY"  or cupcakes doing the same thing. If you do want alcoholic drinks then think about mimosa, a light bubbly mix of champagne and orange juice.

The best birthday is a summer one. There are so many ways to go to celebrate, whether with a clambake or an English tea, or a luau  or a good old American cookout. Any way is a fun way to  party, enjoying good company, good food and good gifts!

Easy Summer Birthday Cakes

Summer birthdays are always fun.There's barbecues, sangria, and of course cake.The only problem with the last is baking is not fun even in air conditioning.The best idea while keeping it homemade is easy to make no bake cakes.These are fun and just as yummy as the baked and iced kind. One of the easiest and tastiest are the Jello No Bakes.These consist of a quick crust or base, a mousse like center and creamy toppings.There are easy cheesecakes ,including a home style and cheryl one.You can customize them by adding either melted or solid chocolate chips along with adding slivered or ground almonds to the crust.There's also a fun peanut butter cup cake and and Oreo flavored one too.These are wonderful ends to any party and take fifteen minutes at best to just whip up and assemble.These can also be made into cupcakes by making the dessert in muffin tins. Jello itself has a slew of no bake cake recipes that would make the perfect birthday cake.Try layering different varieties of Jello to create an airy but flavorful confection.Cream cheese plays a big part in creating a no bake treat.You can blend it with Cool Whip and other flavors such as chocolate or citrus to create an airy and light slice.Start with either a simple Graham cracker or ground cookie crust as the first layer, then add the cream cheese and cream mix.Decorate with fruit slices or chocolate curls depending on what you ,'ve made. Refrigerator cakes are another fun summer birthday treat.One of the most easiest and the most elegant is the chocolate wafer log.This is a no brainer to create.Just take those famed chocolate wafer cookies and layer them on their side, using the topping as "mortar"to glue together.You can use chocolate Cool Whip for pure decadence .You can even add a side of bananas or cut strawberries to cut the intense flavor.Another icebox cake is the classic Nilla wafers with a custardy cream.The original recipe calls for raw eggs but if you're having qualms about this omit them and just used whipped topping mixed with pineapple and any kind of nut meats.A variation of this is a dessert loaf made with condensed milk and the addition of raisins .Icebox cakes can also be made with crushed graham crackers.Layer the crackers and then heap on layers of CoolWhip and fresh fruit such as sliced peaches.For a quick spin on the classic Brown Derby cake, alternately layer chocolate Graham crackers, whipped topping and slices of bananas and strawberries.Reserved some crackers to be crushed and sprinkled on top of the cake.You can also do a home made ice cream cake this way too.Layer the crackers with softened ice cream for a really special treat. Summer birthdays need a summer cake.Whip up a cool airy creation ,perfect for a balmy nice.It's not only a greatbway to end a special birthday meal but also to celebrate a summer baby.

Happy Birthday , Julia!

Today would have been Julia Child's one hundredth birthday.She changed American cooking for the better ,offering Americans the chance to improve and widen their tastes and culinary skills.It's only fitting that today's New York Times Dining section honors her.

There are two great articles paying homage to one of the world's best chefs since Auguste Escoffier. One is by Times regular Julia Moskin who was named after Ms. Childs.Ms/ Moskin not only gives us her best recipes such as the buttery and fruity dessert clafoutis but also the robust and flavorful coulis de tomates a la provencale.but also her memories of her parents creating Ms Childs. recipes. This former OSS agent gave everyone around the US the chance to expand their culinary wings. (including my mom who made her spinach torte, stuffed with fresh spinach , bacon and mushrooms in a melt in your mouth buttery crust).Even today a whole new generation is enjoying her rich , recipes that say the heck with diet and health recipes, bring on the eggs , butter and alcohol.

The second article is a lovely memoire from the great French-American chef Jacques Pepin. Monsieur Pepin gives us how he met Ms Childs.It was the early Sixties thanks to Helen McCully who reviewed Ms, Childs cookbook for House Beautiful. "She had called the great chef "that really tall woman with the really terrible voice."Yet she and Chef Pepin had a long lasting beautiful relationship that even saw them on a PBS cooking show together. They even cooked together as friends, making delicious but surprisingly simple meals at Ms. Childs' house in Boston.They had an excellent rapport , especailly between two chefs.

Julia Child got Americans thinking about good cuisine again. Not since this country's Golden Age of the Late 1800's has food been so revered. She changed that - allowing us to appreciate good cooking and good food. Happy Centennial Birthday , Julia!

Diners Not Just Short Order Anymore

Live in New Jersey and you eat at a lot of diners. My state has the most of these eateries than any other state. Almost every town has at least one. Some even have three or four in the bigger cities and towns. What makes them so much fun is that they're diverse. Diners here serve everything from breakfast to cordon blu, from hearty stacks of pancakes to just cottage cheese filled melon halves.. That's what makes for varied eating here in t he Garden State.

One of my favorites is the Coach House in North Bergen The Coach House has been there seventy years and always has a busy crowd. I love spending my Sundays and even a few holidays here. (it's perfect for Christmas Mass service brunch).What I love about it is its' diversity of different dishes. One week I'll just have a filling appetizer , the next week , one of their tasty homemade soups and salad bar. Like other diners, it has a wide range of steaks, roasts and pastas. It's also known for its' Greek specialties too. Another plus about diners is that they can serve these dishes at any time. Order a dinner at 3 AM and or a brekfast at noon. A diner is there to cater to you!

Another great thing about Jersey diners is that most of their pastries are homemade. The Coach House is known for it's cupcakes, large muffins like creations topped with a dollop of butter cream frosting. Other diners throughout the state are well known for their melt in your mouth fruit topped cheesecakes as well as their seven layer cakes. Many of them even bake their own cookies and they're just as good as any bakery's . A little known fact - some diners can even make birthday and special occasion cakes for you if you ask. After all, a diner's bakery is located in the basement and it's responsible for all the rolls , buns and other baked items that are served.

New Jersey diners are not just onion rings and burgers along with an egg cream or a Coke. They can provide you with delicious homemade soups, top of the line sirloins and roasts and fresh baked sweets. They can cater to your every whim every day all day through rain and snow; any season, or holiday. That's what makes them great to visit.
