Those Cooling Dinner Dishes

 It is hellishly hot througho9ut the world. Europe is roasting. The US isn't far behind temp wise. What happens when even eating feels like a chore? have cold,refreshing meals. These take the edge off those steamy sinner time suppers. A bite or sip of something cooling can be revitalizing.

A cup or bowl of gazpacho is the way to go. This chilled soup is the perfect dinner on a ninety degree day. The Spanush make this flavorful soup when the summer heat becomes unbearable.This is one of my favorites and it;s only rotation two to three times  a week during the summer. It's an easy blend of tomatoes, sliced cucumbers, bell peppers, onions or onion powder combined with a bit of water , olive oil and a good red or white wine vinegar. I chill mine for at least two to three hours before serving. This leaves the afternoon free to do anything else. Vichysoisse is another cold soup,perfect for a Summer Sunday meal.Keep in mind that it can be served hot too when the cooler weather arrives. It's usually cooked over a stove top for thirty-five minutes however it's easier to cook in a crock pot during a heat wave.It;s cutting potatoes and leeks into bite sized pieces along with onions, carrots and celery Add one can of cream of mushroom soup and another can of cream of celery for thickness and richness. Evaporated milk and four chicken bouillon cubes are also added. along with butter. Cook for two to three hours on high and then chill for about an hour. Add parsley flakes for decorations.

Never discount canned meats and fish. Canned chicken breast makes for an excellent salad , especially when it'ts combine with mayo and a good sprinkling of tarragon flakes.This is perfect on toasted brioche rolls or croissants. Keep in mind that you can also stuff tomatoes with this mix too. Just core tomatoes and gill with this . You vcan add almonds for crunch and texture . This can also work for lettuce cups too. Just use any big leafed lettuce and fill. Both the tomatoes and lettuce can also be filled with seafood as well. Use canned or fresh crab  and mix with chopped celery , mayo and just the teeniest bit of white sugar. You could add a dash of Old Bay seasoning too. Shrimp, and lobster too make for luxurious fillings. If you make shrimp or lobster salad, then use either to make a great seafood roll for a fun and lush dinner. You could toast the buttered hot dog rolls in the air fryer before stuffing them. Another fun and cool dinner idea is a sushi bowl/It's a lot less work than rolling and cutting the pieces. It starts with rice which can be bought precooked  and fish. Use already cooked shrimp or crab from your grocery store or fish market.  Add a layer of nori or black seaweed, and then fill in with julienned carrots, celery and sliced avocado Cucumber is also included for cool freshness. Give the bowls  good dousing or rice wine vinegar ir sushi vinegar which is rice vinegar and sugar mixed together with salt.

It's summer. The world is on fire - almost literally. Create col suppers that are refreshing and delicious.

A Chef's Dark Side

 Chefs can be temperamental and with good reason. Ovens don;t always work . Fridges go on the fritz.Sometimes they'tr short staffed. Some times diners create a lot for trouble . Chefs have all sorts of issues to deal with in their eateries. Yet they should deal with everything with grace and compassion. That wasn't;t the case for the famed Noma's creator Rene Redzepi.

Regular contributor Julia Moskin delved into his story in yesterday 's New York Times Wednesday Food section. Chef Redzepi is back in the public eye die t a pop of restaurant now in Los Angeles. He was a innovator from Cophenhagen who foraged ingredients, a task he learned as a teenager when spending the summer with his father's family in northern Macedonia.He also introduced fermentation and dehydrated foods on his menus which were considered great innovations at the time.  The food reflected the seasons. Ocean season  featured grilled king crabs legs with seaweed and crab Roth with beeswax. The summer season had ingredients foraged from local forests such as mushrooms and fermented plants. Fall brought about wild game cooked with berries and more forest foraging and acorns. All tof these earned him three Michilin stars and made Denmark the culinary destination to go to.Young chefs begged to work there and learn how to forage and ferment.

For all of this Redzepi was not the greatest chef to work for. If one worker screwed up the entire staff was published. Sometimes they were led out into the cold Copenhagen night, to times they were punched directly in the stomach. The crime? Putting on techno music which the chef hated. Instead of just simply telling the young worker to shut it off he went ballistic and took his resentment out on his entire staff. There were more stories. he would crouch under kitchen tables and either jab legs with his fingers or a barbecue fork . He punched a female worker in the ribs so hard that she fell into a metal counter  cutting her hip during the fall. She was on the floor and bleeding  as she was basically ignored by staff.It was only when she went to the dressing room to change a sous-chef went after her t inquire of she was all right. This was only the tip for the iceberg. Unfortunately staff couldn't complain. The one woman human resources department was Chef Redzepi's mother-in law who did nothing to help. Now this reputation, despite his so called change has come back to haunt him. He and his newpop up are not wanted in LA.It's too expensive as well and is taking customers away from financially strapped established La eateries.

Will Chef Redzepi ever overcome his past reputation Sadly no. People remember.People. resent. It doesn't;t make for good PRfor a new eatery no matter how good the food is.

A Grand Party On A Budget

 May not only has flowers but also a ton of celebrations. From Mother's Day or grad parties and those showers and engagement parties., there will be planning and cooking for the entire month. The problem is the price of food. Even at at home party can be costly. The best bet is to budget wisely.

Of course the most important part of any party is the main course. What would be an elegant dish? Cornish hens with either an orange or lemon glaze. Keep in mind , due to their tininess one whole one is enough for a single person.  These can be bought as cheaply as $4.78  for one at Stop & Shop,If you're having a dinner for twenty them comes in at $95.60 which is much better than having a catered meal at $20 dollars a person. Another elegant crowd pleaser is shrimp. Again Acme has a ten ounce one for $5.99 .Buy five rings for just under thirty dollars at $29,95  You could also go to Acme again for their shrimp and crab legs platters which are a very good price at $24.99 each. The store will prepare it for you and include a centerpiece of lemon slices and cocktail sauce.  This is perfect for showers and small college graduation parties.A great hors' d'douevre is beef tips on toast. Look to Target to have them at $13.95  a pound. these are already seasoned with bourbon and black pepper so you don't have to worry about marinating them. Serve on buttered toast squares for an class bite.

Sides can be just as elegant and celebratory. Egg prices are going down so it is possible to create several different types of quiches.Even the drugstore Walgreens has a dozen going for $4.99. An average sized quiche needs six eggs so you can buy two dozen and make four quiches, These can be filled with everything  from various cheeses which you can buy at Lidl for a good price to fresh veggies and deviled or julienned ham.Mini beef Welllingtons may be a bit expensive to make (beef tenderloin will set you back sixteen to twenty dollars just for one package.) however you can create them will the less expensive but equally flavorful portabello mushrooms. Sliced portabellas are going or $2.99 a package at Wal-Mart. Chop these for the filling along with walnuts for more protein along with onions and garlic for more flavor. The mushrooms should be seared first for a smokier taste.Another elegant side, perfect for smaller gatherings is roasted asparagus. It's at its' cheapest right now at $2.99 at Acme and $2.97 at Wal-Mart. Roast them and serve  with a buttery lemon sauce.

Any type of party can be put together with budget pricing. It;s just shopping smart and knowing what to buy. The result is a Spring gathering that's full of elegant classic  foods.

The Buffet Returns

 One of the best things pre-pandemic was the all you cna eat buffet. It went dark for the pandemic and now it's coming back with a force. People are enjoying their favorites in large quantities in a fun place.

Kim Severson wrote about this in today's New York Times Food section.Buffets have been taking  hit in th e last years but they're coming back. People want  a good value for their meal and they want flavor and choice. Lily Jan, a food and beverage lecturer at Cornell University  calls it   the Cheesecake Factory effect . She says Americans want the consistency because they are afraid to takes risks with their dollars as it trlates to food.They want to go somewhere with the kids where everyone can have what they want at a good price. They don't have to break the bank to make it an experience. Yet the pandemic helped to  winnow out the weakrer,less popular ones. Fresh Acquisitions which owned Hometown Buffet  and Oldtown Buffet along with another went bankrupt. They cited that some of their restaurants couldn';t meet the seventy-five per cent capacity to keep them going and ruen a profit.It also symbolized an end to those cheap Las Vegas buffets. Only eight remain out of the original sixteen.

Yet diners jkeep coming and enjoying their offerings, expecially in Las Vegas. The buffet was born there as a way to keep gamblers from leaving the casinos. That may be true now as well but many go for the vast array of choices. Sheri Orner  who mananged  buffets for Station Casinos where they had to close for the pandemic now works at the very popular Wicked SPoon at the Cosmpopilitan Casino. It reopned in June 2020, On a busy day they serve 1,800 (!) diners at a pricry $49 dollars a head. The price shoots up to $75 if diners want alcohol. These buffets would be unrecognizable to Frank Sinatra or other headliners of Vegas' Golden Era. There are Korean spiced chicken wings and a deep purple horchata, a milky cinnamon spiked Mexican drink. Diners can try a black garlic ramen made for order. Yes there's those gleaming piles of lobster and crab claws that are always a draw. Other buffets all over the country are following the Vegas ones. Gen Xers' who grew up in the golden age of buffets in the early 2000 's are  embracing them, heading to local Chines e buffets , the Sizzler and even Pizza Hut.For many immigrant kids like professional pianist Choo Choo Hu this was the first taste of America. Kids were told no noodles and no rice. , their parents wanting them to eat the best of what the buffet had to offer. They offer newcomers American food while offering American a chance to  have a culinary travel trip.

Buffets are here to stay. They;re a fun escape, full of interesitng and tasty dishes.People want them .

Monday Scavenging

 Mondays are always hard. not only are they the beiniing of a grueling workweek, they sometimes yield up nothing for dinner especially in the summer.The fridge has been raided over the weekend. There's nothing to eat . What to do ? Scavenge through the shelves. You may besurprised at what you might be able to make.

Mondays could mean barbecue leftovers. Keep in mind that leftover grilled steak can be used on lettuce and other veggies left from Sunday's cookout. You can create a tasty steak salad.  drizzle on a homemade viniagrette. Also throw in any cheese you may have whether it's blue or feta. The cheese will give it extra protein and oomph too. The same can be applied otleftover chicken. If you grilled chicken breasts Saturday or Sunday then , chop them up and trythem in a mayo or vinaigrette based salad. Serve the chicken salad on leftover hamburger or hot dogs buns. Toast will do nicely if you don't have the buns. What about those roasted baked potatoes? They  can be turned into crunchy potato skins or twice baked potatoes. for the skins , cut the baked potatoes in half, scoop out mos tof the flesh. Brush with olive oil and bake until crispy. Take out of the oven and  top with bacon crumbles and cheddar. Bake again and servew the hit skins with sour creamand guacamole. For twice baked scoop out th e flesh, mash them with milk or sour cream and butter. Refill the potatoes and bake again. serve with a nice salad.

Another way of scavenging is looking at those containers of lieftovers. The leftover pastina can be turned in a variation of cacio e pepe. It's just reheating it with butter and adding cheese and freshly ground pepper. Any pasta can be cooked and made with sauce even if you don;t have any jarred around. Try making it aglia e olio with just garlic and oil. This is toating sliced garlic cloves in oil and then serving the sauce over any kind of pasta. You could also do a burst tomato one that is a mix fo grape or cherry tomatroes sauteed in a garlic butter sauce. The tomatoes are smashed  with a wooden spoon  when they become tender.. This goes well with chunky pastas such as penne and rigatoni. You just have to get an Italian bread to go with it.Any canned meats can be used a variety of ways. Tuna  can easily be turned into a salad which cam be used for Tuesday's lunch or it can also be part of a tuna melt. salmon and crabmeat can be mashed with  beaten eggs, corn meal ro bread crumbs and then fried into crispy patites.serve as is or put on hamburger buns.

A scavenged Monday meal can turn into a delicious dinner. Be creative with what you have. The end result is soemthing the family will enjoy eating.

Delights Of Delaware

 Hopefully President Biden  will bring some of his state's foods with  him when he heads to Washington, Delaware may be a little state but it has some big flavors. There's a combination of seafood and produce, Philly influence and in state classics. It's a fun cornucopia of different tastes that will appeal to everyone.

Delaware is part of the Delmarva Peninsula, consisting of it , along with parts of  the Maryland and Virginia coastlines. Seafood plays an important part for this state that not only has the Atlantic Ocean but also the Delaware Bay. Blue crabs abound in the last. Delaware's coastal areas have a variety of different seafood eateries that feature everything from steamed to crab cakes. Another popular dish is crab dip served with Ritz crackers. The dip is a mix of the seafood mixed with Miracle Whip and sour cream zinged up with white wine and onions. Almonds are put on the finished dip for decoration. Peaches are another Delaware product, grown in the northern part of the state. Peach pie and cobbler are two desserts prized by Delawarians as well as the fruit itself when in season. Apples are another fruit grown by The Diamond State so there are plenty of pies and apple cider donuts come fall. Delaware also has a thriving corn farm industry as well. The state has a whopping 3500 acres set aside for growing ears and what goes better  with steamed crab than corn on the cob.

Of course there are two other strong influences in the Delawarian diet. The first is Philadelphia  which is only half an hour north of Wilmington. It's not surprising then that cheesesteak, that delicious meld of thinly sliced  steak , melted cheddar cheese and sometimes onions have made their ways into the hearts of everyone from the cities to the shore area.  There's even a hybrid that has crab meat topped with cheddar on a hoagie roll. Another Philly favorite is the breakfast meat scrapple. This is a mix of corn grits and pig offal however  it's heaven when fried and served with eggs. Soft Philly pretzels have also made their way to Joe Biden's state ( as he did. He was born in Scranton and moved to Delaware as a kid). Some seaside restaurants serve them with either cheddar or crab meat. Another great influence is the Rehoboth Boardwalk where there's all sorts of goodies to munch on. Many love Sno-Cones, those mounds of pebbly ice soaked in different syrups along with frozen custard, a yummy scoop of rich flavor and texture. There's also the Nico-Boli from the beach's' famed Nicolo Pizza. This is a stromboli filled with sauce, cheese and a wide variety of different fillings like chicken and anchovies.

Delaware is in the spotlight now. Take time to discover the amazing and varied cuisine of the state when it's safe to travel.  It's a wonderful array of land and sea, Philly and Boardwalk, all perfect for White House cuisine.

The Best Summer Cookbook Ever

This is the season of easy and tasty cooking. Even though the temps can be tropical at times, it's still fun to get into the kitchen and create something tasty. Now there's a great new cookbook that celebrates the best of grilling and farming. It''s definitely going to be the go to for any hot weather recipe.

The Complete Summer Cookbook: Beat The Heat With 500 Recipes That Make The Most Of Summer's Bounty (America's Test Kitchen 2020) is by the cooks and chefs at America's Test Kitchen, that great PBS TV show. As with any of the America's Test Kitchen cookbook it has great advice, suggestions and tips scattered throughout. It starts with how to cook, drink and eat when the weather gets steamy along with a complete pictorial of summertime cooking equipment.  Everything from strawberry hullers to grill gloves. A plus, and hallmark of the show is the different menus you can choose from. Overworked home chefs can try the No Cook Light Dinner which has absolutely no cooking in it whatsoever to Kebabs On The Grill for those who love a dinner out in the backyard. Again, as with their other books the editors don't have definitive chapters. There are Small Bites for those who want nibbles and Keep Cool with Countertop Cooking where the food is cooked in either a slow cooker or electric pressure cooker.Of course there are also desserts, namely Summer Fruit Desserts that feature the season's best bounty and Icebox and Frozen Treats which even features a sundae bar with homemade toppings. Anyone want a frosty drink will enjoy the chapter on drinks. An unusual one is all about canning and preserving along with one on Farmer's Markets and the bounty it offers.All the recipes are broken down into calories  and carbs along with sodium and cholesterol amounts.

I love this book and plan on making many of the recipes. Their gazpacho recipe is intriguing because it has tomato juice and hot sauce added in. There's also a variation with avocado and crab. The summer vegetable gratin , a casserole loaded with all kinds of veggies, from zucchini to tomatoes and topped with herbed white bread and Parmesan cheese is perfect for those rainy days inside. There is even a recipe for the perfect tomato sandwich that everyone should try. Barbecue enthusiasts will love the recipes for barbecued baby back ribs and grilled Mojo marinated skirt steaks. For those who love using their smokers , there is the smoked London Broil which would go well with any of the salads or foolproof boiled corn. The pickle and canning recipes are definitely worth trying especially the chow chow and tomatoes.The drink recipes are must tries also. want the perfect ice tea. Then try theirs, made with room temperature instead of boiling hot water. America's Test Kitchen offers variations such as mint and fruit flavored ones. Of course there is old fashioned lemonade but there's also agua fresca made with watermelon and lime along with the centuries old switchel , drunk by Amish farmers. There's also the boozy aperol made with the fizzy Italian wine Prosecco olives and orange peels.There is baking from on the grill pizza to a tomato galette that just might replace it. Fruit galettes and cobblers are also part of the sweet treats. Yet it is the homemade vegan and dairy ice creams that really catch the eye.I also want to try their dark chocolate avocado pudding , a perfect end to an outdoor Sunday lunch.

The Complete Summer Cookbook :Beat The Heat With 500 Recipes That Make The Most of Summer's Harvest is the book to have this summer. There's a wide variety of different recipes perfect for the grill or the kitchen. Best of all they're a snap to make and bake, especially during these hot days.

Little Luxuries

These days deserve treats. We all need to reward ourselves with something delicious and even lush. It could be a cupcake, it could be a flavorful meal. Just have something that's lifts you and brightens your day.

One of the best ways of jazzing up any dish is a sauce. One of the most luxurious is Hollandaise sauce. It is a fancy sauce used to grace asparagus spears and Eggs Benedict. This silken concoction is a combination of egg yolks , melted butter, Dijon mustard and lemon juice. I made a vegan version for my Easter dinner asparagus. Instead of yolks, I used The Vegg Vegan Egg Yolk, a mix of fortified yeast , black salt and beta carotene. It was then mixing in a tablespoon of lemon juice, a small dollop of Dijon mustard and half a cup of melted I Can't Believe It's Not Butter.It was just as rich as the ones I've had at restaurants in the city. It was the perfect lift for the holiday and I plan on making a vegan version of Eggs Benedict - another luxury bite. Another little luxury is homemade Mornay sauce. This is a simple Bechamel sauce enhanced with Gruyere and sometimes Parmesan. Fancy eateries usually serve it over chicken breasts and sole and you can do the same. If you can't find sole , then use tilapia. The base is easy , Just use milk and flour along with an onion, cloves and bay leaf to flavor it. A pinch of nutmeg is added at the end.

Another luxury  that might perk you up is a shrimp cocktail. You can buy what's known as a shrimp ring at the seafood section of your grocery store. Sometimes there's a cup of cocktail sauce in the middle although you can make it at home. It's a simple mix of ketchup , horseradish, Worcestershire sauce and a dash of lemon juice. You can add a dash of hot sauce for bite. Lobster and crab are other luxuries that can be a real boost. Buy them frozen or at Omaha Steak Company. Another idea is supporting your local seafood restaurant and ordering a complete dinner. This will also include a side like cole slaw and fries along with melted butter. It's just a fun way of celebrating getting through this  and a take out dinner nowadays is a big deal.Sweets can be a luxury too. There is time now to bake fancy tortes such as Black Forest cake. This decadent bite is homemade chocolate scratch cake  soaked with cherry liqueur and frosted with whipped cream. Fresh cherries and chocolate bark decorate it, upping the flavor a notch. Want something equally rich? Try baba rhums. These are small homemade cakes that's sopped up rum. They  can be garnished with whipped cream and raspberry too.

Treat yourself to little luxuries during these hard times. It could be as something like a sauce or a slice of decadent cake. Enjoy them making them and eating them.

A Glamping Cooking Experience

Glamping has been a vacation choice for quite some time now. It's a glamorous take on camping - think a Downton Abbey picnic stretched out for a few days. What do you bring to eat? Glamorous food - what else.

Usually camping cooking  and cuisine consists of wienies on a stick If you're lucky,it's a fish caught in a nearby lake or stream , steamed in a foil packet.Cooking gear can be any of the  twigs you can find along with tin cups and plates bought at the local sporting goods store..  Put all those away. Glamping demands fine food eaten on non paper plates .Most glamping sites have some kind of canteen however there are some with  outdoor kitchens for campers. There is usually a small two burner stove and a microwave.Some sites have a communal fridge with only enough space for one group of campers. Other glamping sites offer refrigerators with freezers for two glamping groups. You will have to bring your own plates and utensils as well as some cooking gear. Glam plates and glasses can be found at Amazon . They have a Picnic At Ascot-Surrey willow picnic basket,  complete with a coffee service for two. It comes with sturdy melamine plates and glass wineglasses. There are also metal knives and forks along with salt and pepper shakers. What else to take? Camping cookware. There are sets that contain kettles, pans for frying along with spatulas for flipping filet mignon burgers.

What foods to take on a glamping trip?Treat yourself to the good stuff. Start the day with eggs Benedict on slices of brioche bread. The bread can later be used for sandwiches., whether for lunch or  dinner. You can also treat yourself and crew to French toast with fresh fruit from the nearby farmer's market and maple syrup if you're near any maple farms. Lunch can be an easy mushroom pate, served on crackers or the brioche bread. A salad is also a good choice , along with it being an easy make. Again, take advantage of any of the farmer's markets and farms you passed on the way to the campsite.A  bowl of mixed , organic greens dressed with a homemade blueberry vinaigrette is always a good choice.  You can buy already roasted chicken  to cut up and put into it. Another idea is the Provencale sandwich, pain bagnat . This a a demi loaf of French bread stuffed with sliced hard boiled eggs, Genoa tuna (tuna in olive oil), tomato and red onions. A simple red wine vinaigrette give its its' flavor. As for dinner. if you're glamping by the coast, then take advantage of the seafood. Boiling lobsters can be messy - and traumatic. Buy the meat already cooked. Serve on toasted , buttered rolls or as a cold meal mixed with crab and shrimp. Dessert can be s'mores but use Valrhona dark chocolate and gourmet marshmallows in coffee or strawberry flavors instead of the usual fare.

Glamping is a fun spin trip out of the ordinary. It requires sophisticated cooking and foods. This is what makes the experience even more unique.

Summer Seafood

One of the joys of the summer season is the abundance of seafood. There's nothing like grilled scallops or a chowder made with clams and fresh vegetables. Take advantage of the sea's abundance.

Most home chefs  love working with shrimp and scallops. There's very little work, save for the shrimp deveining and they're versatile for both cooking on the grill and on the stovetop. David Tanis  had  a recipe for Thai curried shrimp in his A City Kitchen column in Wednesday's New York Times.They are marinated in a fiery rub of cumin and  coriander to spike it along with turmeric, garlic and grated ginger for ten minutes. The shrimp are then added to a sauce of coconut milk and curry leaves. That sound good but how amazing would they be if they were grilled and served on fire toasted naan? Cajun shrimp is another barbecue treat.Marinate them in a blend of olive oil, honey, paprika, sand soy sauce. Herbs such as thyme, oregano and parsley add to the complexity while cayenne pepper gives it a sharp bite. Scallops can also be grilled. Again, like shrimp , they're amenable to a variety of different spices and herbs.Unlike shrimp, they have a sweet,briny flavor that can be  enhanced with just a squeeze of lemon and lime. Think of brushing them with a lemon butter before tossing on the grill. You can even alternate them with shrimp on skewers too.

Clam, too,are big during the warmer months.Of  course there is both Manhattan and New England clam chowder. Nothing beat the Manhattan, especially if it's made with the harvests of the season. Fresh picked tomatoes are perfect for this thick soup. Celery , onions and potatoes give it its' heartiness. Make sure that it's rich with thyme, which give the chowder its' distinctive taste. You can also make the  denser New England style (although it's better during the wintry months).It's a creamy blend of clams  and potatoes, flavored with celery and onions. Whole cream is added for that thick potage mouth feel. Another summer  shellfish to enjoy  is  crab. This is the time to go crabbing in many states, especially New Jersey. It can be grilled  and served with melted butter. Just remember to pull off the tough , outer shell and clean out the insides. This will make for better tasting meat. If you have many of them , think about a crab roll sandwich which is a take on the classic lobster roll one. Mix the cooled crab meat with mayonnaise and chopped scallions. You can add a squeeze of lemon to cu the intense flavor if wanted. Pile on a hot dog bun and serve with a side. potato chips.

Summer is here and with it comes an abundance of seafood. Enjoy the ocean's harvest, whether grilled, or turned into soups and salads. They''ll make  warm weather eating that much more delicious. delicious.

Planning The Perfect Spring Brunch

Spring is the perfect time for an airy brunch, full of good food and good friends and family. It's also a great time to appreciate the abundance of  Spring harvest, full of freshness and flavor. Create a Saturday or Sunday one that reflects the season.

One of the first things to do is decide whether it's going to be an indoor or outdoor one. The temps are rising. It would be a shame to stay indoors when there are balmy breezes outside.  However keep in mind that the weather is iffy. There could be rain - or even an April snow shower - or the  opposite. -  a hot, sweaty day, Be ready for these last minute jabs  from Mother Nature. The next is the guest list. Do you want an intimate grouping of just four or a much larger one of fifteen or twenty. A smaller brunch doesn't require  the variety a larger gathering would. Larger brunches will require more structure. There may be a savory first course and salad followed by a light dessert. Also  a more intimate gathering can be held in the dining room or the patio. A bigger one, like a baby or bridal shower brunch needs seating plans. Can it be held in the garage if it's too hot a day or the yard? Do you borrow tables or rent them?  Another question is can you handle it yourself, or will you require the spouse and kids to help out? Or enlist a few friends to help with the cooking, serving and cleaning up. Then there's the plates and utensils. Hosts can get away with using their  regular luncheon plates and knives and forks. Paper plates and plastic utensils is a must for groups of five or more.

Since brunch is a combo of breakfast and lunch, think eggs as the star of the meal. A Spring frittata is the perfect main course for entertaining your cadre of friends. Make it rich with asparagus , tomatoes and onions. Serve it sliced with toasted and oiled or buttered Italian bread Set out a  sparkling wine or better yet, champagne. Of course Bloody Mary's and  mimosa's are always welcome. After all, it's a relaxing get together. You could even serve a tomato and mozzarella salad on the side.For a different kind of dessert think the Italian fried pastry twists - crostoli. - a staple at many Italian bakeries.These are light and airy , made from fried pie dough and dusted with confectioner's sugar. . The meal can also end with bougies, a Piedmontese pastry stick,  a denser version of the crostoli, but still just as delicate. For a bigger gathering quiches, especially the mini variety a,re always welcome. You can have the classic Quiche Lorraine but also think of a  shrimp or crab one, Vegetarian friends can enjoy   spinach or again the veggie of the season, asparagus ones.Serve with  nice, crisp Spring greens salad and crusty French rolls. As for dessert, think, small, The British fairy cakes are perfect for an outdoor gathering. They're smaller than cupcakes and just have a drizzle of glaze on the top. Bakery made petit fours are another nice ending, also with candied almonds in pretty pastel colors.

Spring is brunch season. Start planning your perfect one. It could be big or small.It's the perfect way to celebrate warmer weather and balmy - hopefully - seasons.

An Easy Summer Birthday

Everyone loves a home cooked meal for their birthdays.Even summer babies are excited over a favorite dish that's been lovingly made. Unfortunately the season brings about hot days when no one wants to be in the kitchen. The solution? Keep it cool!

If the honoree wants a home cooked meal, then think  barbecue.Grilled chicken or salmon with grilled vegetables is a nice treat. If you have a Weber egg  grill, you can roast an entire chicken. A birthday party needs a festive dish so why not grill beer can chicken? This is easy to make.It's taking the chicken , rinsing it and then patting dry with paper towels. Sprinkle with sea salt and freshly ground pepper and any kind of rub.It's then plunking the bird down on an open beer can . The can and the legs will act as a tripod as the bird is being cooked.It usually takes about an hour and fifteen minutes. Serve with a fiesta salad that has cooked corn niblets mixed with diced red and green peppers along with halved grape tomatoes. Sirloin burgers are another celebratory  meal. To grind the meat, first cube the steak and grind in batches in your food processor or meat grinder. You can add egg for richness or butter. The burgers can be served Piedmontese style with bagna calda  sauce on them. Use flattened toasted Italian bread instead of the usual buns for this. Grilled salmon Oriental style with soy and ginger or Mediterranean style is also a lovely birthday lunch or dimmer.. The last can be served with a fancy couscous studded with almonds and raisins.

Nachos are always a fun party food no matter what time of year. The dish outside is extra fun, especially at a pool or even beach side party.Make it really luxurious  with  layers of steak and chicken or fresh roasted pork. For color have both black and green olives along with extra helpings of  guacamole, sour cream and pico de gallo. If  you're hosting a large crowd you may want to try a taco or quesadilla bar where guests can pile on a variety of toppings. A cool idea is a salad loaded with tasty bits and pieces. A taco salad can be fun, It's just a quick cook of and then the meat or soy fake meat can be added to iceberg lettuce along with crumbled tortilla chips and shredded Monterey jack cheese. Buffalo chicken salad is a nice birthday lunch or dinner meal. Making the chicken is the most labor intensive. It's just creating a spicy , chili infused marinade and letting it marinate for a few hours  before cooking and adding it to  a salad , full of  diced celery and Romaine lettuce. Serve with a cool blue cheese dressing.One of the most luxurious and perfect for a birthday lunch or dinner is a seafood salad, chock full of lobster crab and shrimp.Use butter lettuce as a base and also toss in cherry or grape tomatoes. Dress with a simple vinaigrette which will accentuate the sweet flavors of the shell fish. Serve with crusty rolls and  chilled champagne.

Cooking for a summer birthday honoree is actually a cool and easy idea. Try a lush salad or a rich sirloin  burger for a sumptuous meal. It's a great way to celebrate a summer baby's special day.

A Little Bit Fishy Adding Seafood To Your Meals

It's always  treat to have seafood for lunch or dinner. Unfortunately it can be an expensive meal, especially at some of the four star restaurants.The better idea? Go to your local fish market or even supermarket and make your own lush dishes. Most crustaceans and fish are easy to cook up and they pair well with everything from pasta to veggies.

Lobster is always considered for a special meal.Remember there are two kinds , spiny and Maine. The first is from the Caribbean and doesn't have claws, the Maine variety does ad is somewhat bigger.It is often the more preferred, thanks to having sweeter, firmer meat. Lobster can be turned into everything from salad to a great ingredient for Lobster Fra Diavolo. Of course the best way is having steamed or boiled  with a cup of melted butter or a lemon wedge. This is not recommended for animal lovers because you have to plunge it in a large pot of boiling water,Some fish markets, and this is where you should buy your seafood for the freshest,- do sell lobster meat that has already been boiled or steamed. You can make yummy lobster rolls for lunch or an elegant lobster salad for a fancy brunch. Crab legs can be bought precooked s well. Crab is versatile, going from picnic to lux in different dishes Try a picnic crab salad with  the meat blended  with elbow macaroni, diced green peppers and onions . Add a dash of cayenne for some zing. It can also be the base for Crabs Benedict, a take on the classic brunch dish, Eggs Benedict.

 Another seafood  treat is shrimp..The best bet is buying it deveined and shelled Shrimp  too can be made several different ways, Kabobs are fun and tasty, a perfect dish for the first barbecue of the season. Marinate them  first in Italian dressing and then grill with  mushrooms , tomatoes and onions ,Shrimp sauce is delicious on spaghetti or angel hair and is a fun topping on homemade pizza.Fish are always a welcome change. Salmon is popular right now and it's not only versatile but healthy for you,It is heart healthy and chock full of Omega-3. Try steaming it with garlic and ginger for an Asian vibe. Another way is with lemon and  herbs such as dill, parsley and chives. Serve with brown rice and a healthy veggie mix of carrots and broccoli. One of the most blendable is tuna.Try the Italian tonno en olio or tuna in olive oil in a Salad Nicoise.This is a blend of another tasty fish, anchovy with romaine lettuce, tomatoes, capers, and sliced hard boiled eggs dressed with a simple vinaigrette. Tuna stuffed tomatoes are a great luncheon plate for a small bridal or baby shower.A tasty low calorie meal or even snack is flaked tuna on crackers.

Any fish or seafood dish is  treat. Make it an affordable one by cooking it at home. There are many different kinds to experiment with along with many different recipes. Try  a few to enjoy the rich , briny taste of the sea.

The New Hors D' Oeuvre

Not that long ago hors d'ouevres and appetizers used to be bland nibbles. It was either bacon wrapped around pineapple or something smeared on Melba toast. Nowadays there seems to be a revolution in cocktail party foods. They can reflect certain ethnic influences or new trends in foods.

One of the biggest movements in appetizers is foods that reflect a particular group. Empanadas are big right now and they're served in various flavors and  sizes. They can have  spicy black bean or creamy spinach fillings while also being stuffed with various meats. Some are regular size (thin tow or three bites) or tiny (think one bite).Other hors d'oeuvres include spring rolls and gourmet egg rolls.These can be vegan, filled with minced bits of bok choy, cabbage and carrots or meat and seafood stuffed ones. Both are about the size of a thumb . Mini bruschettas are also being passed around these days. These can be the traditional with chopped tomatoes on finely cut prosciutto and cheese topping almost wafer thin rounds of Italian breads.

Some hors d'oeuvres are stylized versions of traditional recipes. Shrimp, that party favorite , has been transformed into a shot, Small plastic shot glasses are filled with individual pieces of the crustacean. dipped in a swirl of shrimp sauce and sour cream.Another updated classic are pigs in blankets.Usually just mini franks in a soggy crescent roll, they've been revised to  being blanketed in  actual mini croissants or vol au vents. Plain mustard was usually served with them however now they can be dipped in honey mustard or a spicy barbecue sauce. Pate was a cocktail party or pre dinner  staple, usually quickly and sloppily on a stale piece of Melba toast. Now the paste has been updated to heart healthy hummus and the Melba toast has been replaced with a elegant flaky cup.

Hors d'oeuvres have undergone a stunning transformation in the last few years. They are more global and  more fun. Even the classics have evolved into true gourmet treats.These little bites are still party classics but they've become the life of the party as well.

The Most Perfect Dumplings

New York City is known for it's big Chinese community. The community has given the city some of the best recipes and dishes from Beijing duck to dumplings. It's the last that making waves again. Dumplings are becoming hot again  -although they never went out of style.There are some new variations as well as traditional dumplings too.

New York Times Dining regular, Jeff Gordonier has  the lucky assignment of tasting and rating some of New York''s best dumplings.He has found traditional ones in Queens' Flushing where there is the second largest Chinese population in the world. Here dumplings are made the old fashioned way but with a spin - lamb is used. The ingredient, more suited to Mongolian tables, are a big draw at Mission Chinese Food on Manhattan's Lower East side. These were so popular that the restaurant;s chef and recipe's creator, Danny Bowien has made close to 1,000 on some days.

The dumpling takes on a funky New York neighborhood twist too. Mr . Gordonier was also fortunate to try the pretzel dumpling which has a funky inside and a chewy pretzel like outside. The inside can be made of a tasty pork a d scallion or a variation on chicken parm. There are also fillings such as pad Thai, cheesesteak and barbecued pork. Another restaurant, the trendy Brooklyn Red Farm creates dumplings that look like small golden crabs,complete with black sesame seed eyes. Dumplings are easy to make at home as well and you can try these with any number of ingredients.

Dumplings are definitely hot right now however there was never a time when they weren't popular. Go to Manhattan to sample these tasty treats. If not make them yourself, whether with the traditional or new trendy ones. Either way ,it makes for some good eating.

Summer Seafood Dishes

Now with the warm weather here, everyone's mind and palate turns towards the briny deep. Summer usually means the beach and with it a taste for fresh seafood. There are so many different types of it, from lobster to shad that a foodie can spend an entire season just enjoying fish as the main dish. There are also a variety of ways ot enjoy it as wellfrom salads to barbecue. Each way is fun and flavorful, the perfect way to start the season.

The most popular seafood , without a doubt is lobster. Everyone enjoys a fresh cooked one dripping with melted butter. This cousin of a spider (yes spider, it's part of the arachnid family)is best served steamed (if you're an animal rights activist, please don't read on)as New Englanders and lobstermen did. It then should be served with freshly melted butter. However you can also chill the lobster meat and mix with mayo and celery. Serve this on a hot dog bun for the quintessential lobster roll. This is popular through the Hamptons and there are roadside stands featuring it with a side of potato chips and a Coke. if you're feeling more adventurous then try making lobster thermador which is steamed lobster with a richly spiced bechamel sauce. This does take a lot of work and ingredients plus a hot oven to create and you make want to stick with an easier dish. Lobster salad is always good. Just prepare a regular tossed salad with an oil and red wine vinegar dressing and add the cooked lobster chunks. It makes a light but elegant dinner.

Another summer seafood favorite is shrimp. With this you can grill it, turn it into a salad or just eat it boiled with a homemade or prepared hot sauce. You can also fry up popcorn shrimp which is simply the fish dipped in egg and breadcrumbs. This is a great dish for any out door party because it can be the main meal too. Serve it with three or four dipping sauces along with some fresh veggies. Remember that in preparing you have to devieln the shrimp. Most stores such as Williams and Sonoma along with Target sell shrimp deveiners but you can also use a small paring knife for this task. First peel off your shrimp's back and legs and then slice into the exposed portion. Carefully lift the vein that resembles black thread running through the meat and discard. Put deveined shrimp on ice until ready to prepare.Crab is another warm weather favorite.It can be used in salads or just boiled and served with melted butter similar to lobster.

If you're thinking of making fish dishes this summer then try grilling .You can get fresh seasonal fish at your local market. Don't opt for the whole fish however. Buying fillets would be a better choice. You can marinate them and then grill later. Try lime or lemon with oregano for a tasty and flavorful marinade.

Summer usually means heading to the beach and enjoying the ocean. You can also enjoy its' fruits the next time you make a warm weather seafood feast for yourself and friends.
