Salad Doesn't Always HavE To Be Green

 Thanks to cyclospora green salad is off the table. Yet its a staple, especially in summer dining.Whatto do? There are so many alternatives.By the end of summer, you many not even want a traditional greens alad.

Keep in mind that frozen is usually your best friend in this case.I've found that some of my best broccoli and green bean salads come from the frozen veggies packages. These are easy.No washing,No worries if they're bad. Just steam in the microwave for six minutes or more then add the dressing. It's then chilling the greens for at least two hours.I;be even made these in the winter ,just to add veggies to a meal. You could also add some almonds to the green beans  along with crumbled feta cheese and a dash of lemon juice.Broccoli salad could also have some freshly grated cheddar to it for more flavor. Frozen bell peppers can also be made into a similar salad. So far the fresh versions of these seem to be safe so you can easily make a salad with them.Try all three colors  for something colorful along with roasting them on your grill first. You could easily add leftover grilled flank steak to make it more nutritious and substantive . A simple olive oil and red wine vinegar will do here. Asparagus may not be in season right now but the frozen kind makes for a great side dish Again use a simple vinaigrette here along with a sprinkling of freshly grated Parmesan cheese.

Tomatoes and beans will never do anyone wrong and the first is definitely safe if garden grown. There are so many tomato salad recipes that every day can have a different one. One of my favorites is my version of panzanella. This is classic Tuscan UMbrian and Tuscan salad where tomatoes and stales bread are soaked in olive oil,tomato juices and vinegar. Some add sliced or diced onions to it but I like mine with just tomatoes and good ,squishy Italian bread. The bread is torn into bite size pieces.Usually it's  left to harden for a day or it;s crisped in an air fryer . It's up to you how to have the bread. I usually add in oregano and garlic powder. This is so good that it can be eaten as a main course ,especially with a side of burrata cheese or as a side with steak or chicken.Romato and bean salad is another tasty alternative to green salad. Use white beans which work the best with them. They;re sweet creaminess is the perfect foil for the tomatoes' tanginess.  Beans themselves are the perfect base for a salad.  YOu could make three bean salad but make it the more fun cowboy caviar. This is a zingy collection of black eye peas black beans ,onions corns and peppers. The dressing is a simple vinaigrette unless you want to add salsa instead.

Forget those pesky greens. You can make  an equally delicious salad using other veggies and beans. Try any of these if you want a different spin on a summer classic.

Lightness All Around

Two aspects f Spring cooking are tightness and freshness.Gone are heavy winter stews and roasts. Gone are the root veggies that make up most of a cold weather diet. Now it's time to celebrate with lighter ingredients and a warmer weather outlook on cooking and baking.

Regular contributor David Tanis gave three seasonably perfect recipes for this kind of meal in today[s New York Times Wednesday Food section, The main course is salmon which he liberally douses with freshly ground pepper and nutty brown butter.He also does this for the side of parsley potatoes. Brown butter is an easy make .Just take a knob of butter and toss it in a hot pan.Let it sizzle for a minute and and a squeeze of lemon juice.The potatoes are just as easy to fix and go well with the fish.  They're first boiled and then simmered in a pot of well salted water They're then taken out left to slightly cool and peeled.  They;re returned to the pott be warmed. Parsley is then sprinkled on them right before serving.Of course the star of any Spring table is asparagus.Mr Tanis chooses to put it into a salad with feta cheese The tough ends are snipped off and the stalked are boiled in well salted water . After make the dressing a lemon vinaigrette with the addition of two teaspoons of Dijon mustard.Arugula,dill and feta are then added to the dressed asparagus spears.

Any Spring meal should have a fruity dessert Mr. Tanis gives a fresh strawberry tart This is a classic French tart that has a buttery pastry shell filled with a light custard. Strawberries top this off. The filling is an almond frangipane, which has a quarter cup of whole almonds that have been ground together with flour and sugar to form a rough powder two large beaten eggs are added a long with half a cup of butter (use a good one  like Kerry Gold for this and the pastry shell).Almond extract is also used to bring out the almond flavor. The pastry shell is another butter rich creation.One half cup of thinly sliced cold butter is added to a cup of flour and two tablespoons of sugar. The dough is made, pressed into a pastry pan and left to chill for two hours. The filling is then poured into it and everything is baked in a preheated 375 degree oven for thirty to forty minutes. The shell should be nicely browned by then.Let cool and then add whole or halved strawberries. Mr.Tanis dusts his tart with confectioner's sugar but it could be left plain too. Warmed apricot or raspberry jam can also be gently brushed over the berries with a pastry brush.

A Spring meal has the lightness and flavors of the season.These thee recipes certainly have that. Try them for a nice welcoming to warmer weather,

A Lighter Bowl

 Spring doesn't;t mean giving up the foods you liked in winter,Ir dies mean however, lighter versions. One such is soup, Those hearty stew like potages can be replaced by lighter ,fresher versions.It;s just changing up the ingredients to reflect the warm weather.

Can you still make a creamy soup during Spring? Absolutely yes! Think about using the veggie of the season -asparagus. It adds a sweet earthy flavor to the other ingredients and is a perfect lunch or a lovely first course to chicken or Cornish hen. The base is a low sodium chicken broth but for a fresher ,greener flavor try vegetable stock. You will need a lot of asparagus  - about two poubnds- cut into one inch pieces. There is heavy cream but you can make it vegan by adding any nut or oat milk. Garlic and butter round out the flavor. An easy one to make only needs an already cooked rotisserie chicken from your local grocery store and Spring vegetables. This can include peas and carrots and if you can find them Spring squash sliced into coins or slices.Add Herbes de Provence to amp up the herbal green flavor>This can easily be made just by blending thyme, marjoram, oregano and tarragon. You could add a few leaves of dried lavender for a more floral notes. The base should be a chicken broth and a squirt f Leon juice can be added for more brightness.

MInestrone is a hearty winter bowl. It's a perfect dish with its' array of tomatoes, pasta and bean along with veggies. Sub in asparagus, artichoke and green peas for a fresher , straight from the garden taste. There are still onions and potatoes to  give it heftiness. Other Spring greens arte also added. These are dandelion greens (which you can forage from your front and back yards. - just wash them thoroughly before using) chard, kale spinach and arugula cut into thin ribbons. A quarter cup of pesto is also added and the base can be chicken or vegetable broth. Pecorino or Parmesan cheese is grated over each bowl for more flavor.Vegetable soup is always a year round treat. Imagine a lighter version perfect for a rainy April day. Again asparagus is the star of this soup. There are also carrots, leeks and Swiss chard along with snap or snow peas. Garlic is added for more flavor  along with yellow onion and Italian seasoning. Vegetable broth is the base and risoot or orzO can be added for more heft.A sprig of fresh dill can be added for more greenness and bright flavor.

Soup can be made all year round.Try any of these Spring soups for a taste of lightness and greenness.They're worth every spoonful.

Global Easter

Easter is celebrated all over the world. While the holiday is relatively the same, the foods to enjoy are different. The main courses are varied as are the sides. The desserts , no matter where they originate are perfect for egg hunters bfg and small. What;s fun is planning your holiday table with this international buffet.

Ham us a big Easter main course.It['s was done because pigs were slaughtered in the fall and their hams were cured throughout the winter. Come Sprtng these were ready to be cooked. Germans and British families as well as Americans love a good ham for the holiday. However in Germany there is also rouladem, those delicious beef rolls stuffed with spinach. A lot of families also serve lamb along with spargill or white asparagus with Hollandaise sauce. Asparagus is in full season right now there and it;s figures heavily in German Spring dishes. The Italians have strong food traditions too.Thye too enjoy a good roasted lamb which symbolizes the Pascal one,Spring veggies like artichokes and peas figure heavily in their side dishes. The Italians, too, love asparagus but it;s shaved and served with shards of Pecorino cheese,The Spanish go the fish route ,celebrating with cod which is also a symbol of Easter. There are also many vegetarian dihes too.There so also a bean soup that starts off the meal.

Across the Pyrennes is France. They have always had a cool style with regards to holiday cooking. They celebrate with a Pare Berrichon. This is a mix of pork veal and whole hard boiled eggs wrapped in a puff pastry crust.It is a rich bite complete with the addition of Cognac shallots.,garlic and herbs.They eschew the ham and lamb of their neighbors and go for a poulet roti or roast chicken..It is covered with butter, from under the skin to being basted with a garlic butter to ensure a crispy skin. The French influence is seen all over the world, especially in the Caribbean island of Haiti. Their griot recipe is a platter of crispy, marinated pork It;s also served with pikliz a shredded carrot and cabbage slaw, along with fried plantains. There's also white rice and beans too to round out the meal. Another Caribean island that goes all out for the holiday is Jamaica.Jamaicans love making  Escovitch fish, which can either be red snapper, or parrot fish covered in a tangy red sauce made of pickled carrots, onions, peppers and Scotch Bonnet peppers. There is also fried fish and sides of rice and operas too.

ANy of these dishes would be perfect for the Easter table. They can be sophisticated or spicy. They celebrate joy with their mix of complex flavors.

Ham Or Lamb Or Vega Easter Choices

 What should you serve at Easter dinner  next week? I'ts always a question when it comes to this holiday. You could cook a ham yet do you want a repeat of Christmas? Is lamb good? What are the vegan options. Don;t worry .A guide is here.

Ham is always a good choice for any  sit down dinner or buffets.It;s an easy prep and cook as well as being a crown pleaser.It's also fun to create a tasty glaze whether from ginger ale ale or pineapple juice and brown sugar. A large one, around ten to fifteen pounds can feed a whopping twenty to thirty people. It;s perfect for a large family gathering and there could even be leftovers for guests to take home. Sides with it are also simple Spring asparagus with butter and Parmesan on top ios always a good side as are baked beans and a simple potato salad. Keep in mind that these can be used for an Easter Monday picnic the next day.If you want a more traditional Easter main course then think lamb.The deep mineral rich flavor is perfect with such flavorings as lemon and oregano.Is lamb easy  to cook? Yes it's a nother easy roast like lamb.It only takes fifteen to twenty minutes per pound. You could have Greek sides such as stuffed grape leaves or a garlicky spinach dish as sides along as a fresh salad with feta.

What about the vegan options. You actually could serve ham - seitan ham which is a form of  wheat gluten (this si not good for anyone with celiac disease).It;s basically combining yeast with white beans along with other ingredients such  the binder a cup and a half of white wheat gluten.This is what sticks everything together and it forms a stick dough  - not unlike bread dough.It's glazed and cooked. You could save yourself the trouble and just buy a stuffed tofurkey loaf at your local grocery store.This is a  one hours and twenty minute roast in a  350 Farehneit degree oven. Another option is risotto. This is a wonderful change up from a meat dish and is satisfying. It can be made with asparagus for a Spring-y green flavor or it can be made with portobello mushrooms.If you;re pressed for time then  get Lidl's risotto mixes where all you add is the flavoring and water. Other ingredients can be added later. It;s a perfect Spring dinner especially when it;s served with a nice salad.

Don;t worry about next week. There are so many options for your Easter dinner. Go with meat. Go vegan.It;s up to you.

Brunch Or Sit Down

 With Easter a week away , there's an important question looming - which is better a formal holiday dinner or brunch where you can pick and mingle?

I'm kind of torn between the two. I love the formailty of a sit down dinner with the different courses however there's something about a brunch that is more relaxed and informal. YOu can eat what you like and talk with whomever you like.Anoher plus is sitting with people you already know and not having to deal with someone you've met for the first time.Although a formal dinner CNA offer a delicious sliced ham and elegant platters of asparagus.

What Is Your Dream Garden March Madnes

March madness is here and it also refers to planning the perfect dream garden. There's questions about where to put the plants.Will they get enough shade ? Enough sun? Will they produce a lot / that's the questions and uncertainties facing home chefs wanting a proper kitchen garden.

Alliums are on my to plant list. I love them,from onions or garlic to scallions. they elevate everything from,salads to sauces to marinades. It would be wonderful to walk outside and grab some for that night's dinner. Luckily I have a kind of hydroponic scallion garden (read scallion stalks in a glass half filled with water). I can cut the tips and use them for my Fire Horse Noodle recipe. Fresh scallions will definitely elevate the dish and infuse it with more flavor. The problem  is the onions, The plants need to be transplanted in early Spring or fall.They do require constant moisture meaning they need to be soaked daily along with a high nitrogen fertilizer, They also require a lot of space between three to six inches apart. Do I have enough room for them? Can I only plant one or two onions? They also have to be completely weed free. Will I have enough to time to constantly maintain an onion patch? These are questions that any home gardeners has to ask.

Wanting a garden ,I now realize is different than planning garden. I have to really scan my back yard and see what areas have constant sun and constant shade.There are also areas where there are equal amounts of both. There's also soil testing for the right pH, If your soil has a high pH then think about planting asparagus , beets,broccoli and cabbage. Other veggies include cauliflower, kale and spinach, all perfect veggies for a nutritious and tasty diet.Root crops are best for a low pH garden, Think potatoes, radishes and sweet potatoes. Radishes are great for young gardeners.They produce a crop relatively fast and they 're easy to take care of. Then there's the problem of those little visitors. Veggies will attract all sorts of wildlife.  Deers will be drawn to yards sprouting lettuce ,corn broccoli and kale. To be honest the best bet is to let them be. Feed them extra lettuce that you can buy cheaply from your local grocery.This should keep them well fed and satisfied. Raccoons eat everything from tomatoes on the vine to potatoes. Keep them at a distance and try to have sturdy fences build around the patches.

Planning a garden can be crazy. Yet with careful plotting you can have a successful garden with thriving plants. It'd just  a matter of know what to plant and where.

Summer Must Have Chicken

 What is the meat you should have this summer? According to a new study it's chicken. it has so many benefits and there are so many ways to make it. It is a definite warm weather must.

Science journalist  Isabel Whitcomb wrote about it in today's Tuesday's Science Times. it's a surprise that it's not in tomorrow's wednesday's food section,There is a lot of info about it and what makes it's so desirable. what's great about chicken breast is that ti has no carbs and little fat if the skin is removed according to Heidi Silver, director of the Diet <Body Composition and Metabolism at Vanderbilt University.There's only 160 calories and thirty-two grams of fat. It;s much less that salmon, known for its low calories and almost zero fat.Chicken also contains poleic and linoleic acids which support heart health. It won;t stop a heart attack but will lessen the risk.It's also full of B vitamins, eat it and get a quick ingestion of vitamins B6 and B3. They help the body make dopamine and melatonin,important for sleep, and even our attention spans. Keep in mind that the dark meat - wings and tihghs are also good for you too. These parts have higher levels of mineral and vitamins like B12 , zinc and iron. Keep in mind that organic chicken is slightly better than the others. according to Dr Dave Bridges. a biochemist and associate professor of nutritional science at the University of Michigan.

How should chicken be cooked? Try grilling poaching, air frying or baking. Air frying is the best be during these hot days .Grilling is another choice.A tasty dish is air fried chicken with a lemon marinade. Don;t  be stingy on flavor however. Lemon juice mixed with minced  garlic is a tasty marinade, complete with a citrussy brightness.  Another good flavor mix is ginger and soy. Grilled chicken is good with these same flavorings. Don't  slather with barbecue sauce that's full of sugar. A homemade one consisting of vinegar and ketchup works. If you want sweetness to it then think of honey or agave syrup. Other add in are hoisin sauce and pepper flakes. for some spice. This is also good on those wings and legs  before they're grilled. What you serve with the chicken is also important. Grilled or air fried veggies are the perfect side. Again serve these with a lemon. vinaigrette  to be put on afterwards. Skip the mayo drenched salads and just serve a simple green one with it.

Chicken breast, thighs and wings  are the summer meats of choice. Have a healthier season by grilling or air frying it .It makes for a tasty good for you lunch or dinner.

A Grand Party On A Budget

 May not only has flowers but also a ton of celebrations. From Mother's Day or grad parties and those showers and engagement parties., there will be planning and cooking for the entire month. The problem is the price of food. Even at at home party can be costly. The best bet is to budget wisely.

Of course the most important part of any party is the main course. What would be an elegant dish? Cornish hens with either an orange or lemon glaze. Keep in mind , due to their tininess one whole one is enough for a single person.  These can be bought as cheaply as $4.78  for one at Stop & Shop,If you're having a dinner for twenty them comes in at $95.60 which is much better than having a catered meal at $20 dollars a person. Another elegant crowd pleaser is shrimp. Again Acme has a ten ounce one for $5.99 .Buy five rings for just under thirty dollars at $29,95  You could also go to Acme again for their shrimp and crab legs platters which are a very good price at $24.99 each. The store will prepare it for you and include a centerpiece of lemon slices and cocktail sauce.  This is perfect for showers and small college graduation parties.A great hors' d'douevre is beef tips on toast. Look to Target to have them at $13.95  a pound. these are already seasoned with bourbon and black pepper so you don't have to worry about marinating them. Serve on buttered toast squares for an class bite.

Sides can be just as elegant and celebratory. Egg prices are going down so it is possible to create several different types of quiches.Even the drugstore Walgreens has a dozen going for $4.99. An average sized quiche needs six eggs so you can buy two dozen and make four quiches, These can be filled with everything  from various cheeses which you can buy at Lidl for a good price to fresh veggies and deviled or julienned ham.Mini beef Welllingtons may be a bit expensive to make (beef tenderloin will set you back sixteen to twenty dollars just for one package.) however you can create them will the less expensive but equally flavorful portabello mushrooms. Sliced portabellas are going or $2.99 a package at Wal-Mart. Chop these for the filling along with walnuts for more protein along with onions and garlic for more flavor. The mushrooms should be seared first for a smokier taste.Another elegant side, perfect for smaller gatherings is roasted asparagus. It's at its' cheapest right now at $2.99 at Acme and $2.97 at Wal-Mart. Roast them and serve  with a buttery lemon sauce.

Any type of party can be put together with budget pricing. It;s just shopping smart and knowing what to buy. The result is a Spring gathering that's full of elegant classic  foods.

Fish For Easter

 Many will be baking ham or lamb this Easter Sunday. However for something different try fish. There is the religious symbolism of it but there's also a fresh flavor to it .It's also easier to prepare and cook than the other two traditional meats. It's a different spin fitting in with the lightness of Spring.

Regular contributor and chef Genevieve Ko gave this recipe in yesterday's New York Times Food section.It is a refreshing turn from the over saltiness of ham and the sometime dryness of lamb. It may be hard for some to switch. Ham for Easter has been the mainstay ofr many German and American families. Pigs were slaughtered din the fall, Their haunches were brine cured and ready around Easter. Lamb also is a hard meal to give up.It has religious significance and baby lambs were sacrificed in the Spring. Yet these are also labor intensive to prepare and cook. Fish isn't. salmon is a good choice,It's low calorie and light, perfect for a warmer weather meal.Ms. KO recommends using wild salmon which works well with the butter honey glaze. Home chefs can also use fatty farmed salmon which will give the meat a richer flavor. as with steak season  with salt an hour before cooking. This will draw the moisture out of the flesh as the fish chills in the fridge , giving a firmer texture.It can be salted four hours before cooking or even a few minutes before.

What would go with this? Ms. Ko has pickled Persian cucumber which sits a top of the fish. after an hour the cucumbers still maintain their crisp freshness. Keep in mind that the longer the cucumber marinate in salt and the honey mustard marinade  the soggier they'll become which actually works to their favor.They become tangier in taste while the mustard seeds plump from the honey-vinegar brine. The brine is first put on the cucumbers. Use rice wine or white wine vinegar   for a lighter flavor. Lemon zest is added to it as well for zing and brightness. What to serve with it? Roasted potatoes work along with asparagus. Ms. KO throws a sheet pan of the stalks  in the oven as the salmon roasts at 425 degrees  Farenheit. A arugula salad works here as well along with other fresh greens to welcome Spring. As for a starch think white or even brown rice. It is the perfect side for the fish and cucumbers.

Try salmon for Easter. It's a refreshing flavor that anyone will enjoy. Start a new tradition  with this fantastic dish.

Tastes Of Spring

 Spring brings with it a freshness.It happens in fashion, weather and cooking.Cooking and baking brings a plethora of natural ,refreshing tastes that liven up any meal.

Mint is a lovely addition to any meal. It can be grown in the back yard and bloom sometime in May if you live in the Northeast.Another Spring ingredient lamb is perfect with this herb.Add garlic to a lamb chop sauce rich with mint and soy sauce.  The English have perfected English sauce creating one that also has apple cider vinegar boiling water and just a tablespoon of sugar and a pinch of salt. It's just cooking all of this to two cups of fresh mint(which you can also buy at your local grocery store),It's a ten minutes cook and pureeing when the sauce cools. You can also use this brightly flavored sauce on leg of lamb too.Surprisingly enough chicken and mint pair well together. The sweet herbiness can bring out the bird's earthiness and take it up a level.MInt pairs wonderfully with peas. Add two tablespoons of mint sauce  to mushy peas if you;re making this side dish with fish and chips. Mint tea is also a perfect drink for warmer spring days. Use a mint infused simple syrup for this. It's easy to make and store. It;s boiling a half a cup of sugar with a cup of water and half a cup of mint leaves. Strain to remove mint leaves and cool.

One of the most Springtime flavors is fresh asparagus. It's abundant as we head into April. It;s delicious Piedmontese style steamed and dressed with melted butter,sliced hard boiled eggs and Parmesan cheese. However you can make  a vegan version by using plant based butter and cheese and omitting the eggs. The taste is still the same with the asparagus' earthy greenness shining through.The grills will be getting fired up once warmer weather arrives and it's a good time to try grilled asparagus. This is an easy cook.It 's coated in olive oil and then simply seasoned with sea salt and freshly ground pepper. Cook on a preheated grill, lightly turning the spears.They will be done in anywhere from three to five minutes. Keep in mind you can add them to a salad too for more flavor.Peas are also a tasty Spring veggie and make for a perfect side to any main course. Sauteed petit pois in butter sauce make a good accompaniment to Cornish hens. A pea salad is a great early barbecue dish. You can just dress cooked and cooled with  a simple vinaigrette or the traditional pea salad dressing. This is am mix of mayonnaise, , bacon ranch dressing and red onion. This is the perfect dish for a Spring barbecue.

This Steak's Secret - Butter

 What makes for a good , well cooked and well flavored steak? Butter.It's been a long used ingredient in cooking up any meat .Not only that it adds such sweet flavor, melding well with the juices and the taste of the meat.

Regular contributor and chef Eric Kim wrote about this in yesterday's New York Times Food Wednesday section.He was inspired by Twelve, a waterfront restaurant in Portland Maine.everyone sits by the plancha station where the New York strips are prepared and cooked. The meat is first seasoned with salt and then the fat cap(Or fatty area on top) is seared holding it up with tongs perpendicular to the plancha.The fat bastes both sides of the meat before it's put in the oven.Butter  - usually two tablespoons of it (and here Kerry Gold is recommended) can give the same effect. Herbs such as thyme are used  a long with avocado or canola oil (again this is a personal choice olive oil also is good). The French have long used this method, calling it arroser or to baste. why use butter to cook a steak? Chef Kin states there are a lot of pluses.Butter basting helps the steak maintain an even rosy interior along with a mouth watering juiciness.Not doing this will create a distinctive red line in the middle along with undesirable hot and cold spots in the strip's interior. Another plus is that' it makes for a good sauce mixed with the juices for the asparagus Mr. KIm recommends  as a side.

What steak will work. Try to get a good boneless one pound New York strip steak with a fat cap or strip of fat along the top.The butter itself should;d be hot and foaming.If's its too watery, according to Twelve's chef de cuisine Hannah Rider, It needs to elevate the temperature within the steak. Another tip Chef Kim strongly recommends is hiding all the home's fire detectors You'll need a high heat to cook the meat and as Chef rider puts it "anything can set off." As for the thyme leaves you can add garlic which will be a good foil for the meat's flavor . Ginger also works here.Ginger leeches out the meats sugars giving the exterior a nice crusty edge, making the pan sauce shiny and sticky. You could also add a splash of soy sauce too. Reserve the pan sauce to cook the asparagus in. For the plancha effect , heat up a skillet and using tongs hold the cooked steak over the skillet's bottom. Carefully lay t down and search one side without moving. A nice golden crust should appear. Flip and brown for two to four minutes. Serve with the asparagus or better yet on long slices of crusty baguette.

A steak cooked in butter  is the best kind of meal. Baste and search for a perfect cut  inside and out. It;s worth the time.

Asparagus Three Ways

 It is still asparagus season which means they can be turned into lovely sides to accompany any man meal.Most home chefs opt for just simple steaming yet there are a number of ways to prepare these verdant stalks.

Regular contributor Melissa CLark wrote about these ways in Wednesday's New York Times Food section. All of these methods bring out the veggie's  sweet, earthy flavor. Ms. Clark has fallen for roasting them. Doing such actually brings out their flavor even more. Roasting caramelizes and sweetens the stalks while the tips get crisp.It's just simply roasting them anywhere between 375 to 450 degrees Farenheit, Use a good olive oil and then sprinkle with sea salt before throwing a pan of them into the oven.She adds a drizzle of yogurt or more olive oil. A sprinkle of fresh ground black pepper wouldn't;t go amiss here either. Chopped herbs or scallions can add more flavor along with a sprinkling of lemon zest or a squeeze of lemon juice. Another method she recommends is broiling This is similar to roasting however roasting surrounds the stalk with a gentle and even hear. Broiling full on blasts them until they are blackened on the outside, with a tender sweet interior. Since it has an intense flavor, she pairs the stalks with a pungent sauce, This is a simple miso glaze flavored with sake, mirin and sesame oil.

Pan searing is  is another suggested method. here Ms. Clark cut the spears into bite sized pieces . She also pan toasted cashews, coconut flakes and sunflower seeds until they were fragrant.Bore adding the asparagus garlic is sauteed in a moisture of coconut and sesame oils.the asparagus bites are cooked for six to seven minutes. Soy sauce and lime juice are then added red pepper flakes. She suggests serving this over rice which would work the best or with a fried egg on top. It would also work well with air fried tofu cubes glazed in the same sauce as the asparagus. The third method is sauteing.She used butter for this to mellow out its grassiness and bring out the plant's sweetness. I would top this with sliced hard boiled egg and Parmesan cheese Piedmontese style but Ms. Clark mixes it with peas, mint Parmesan cheese and cream for a pasta primavera style dinner,Red pepper flakes can be added for zing and color too.

Spring Veggie Time

 It's Spring and that means a plethora of fresh spring veggies to eat. We're curious here.What's your favorite? Do you love fresh peas that can be made into everything from soups to salads? Helping Other Help Themselves

 It is tough to be on your own or in a new country. That's where being a neighbor comes in. Sometmes a cooked meal can do more than anything else. Food is always a good way to connect.

Elderly neighbors or shut ins can appreciate having their grocery shopping done for them. Volunteer when you go on your own shopping trip. Sit down with them to write out a list that should include nutritional foods like fruit and veggies. Yes, they can have treats within limits but also make sure they get a wide variety of good produce too. Ask them also what their allergies are along with restrictions too. They may be diabetic which means restricting sweets and even some fruits or have hypertension issues which means buying low sodium products and staying away from some processed and canned foods. Also include necessities like toilet paper and paper towels. If you have newly arrived neighbors in your neighborhood ask if they'd like to visit the local groceries and markets. You may also benefit when they introduce you to ingredients and spices that are native to their cuisine. Another big help is looking on like for specific shops that sell food they're familiar with. There are always Asian ,  AfricanSouth American and Caribbean markets that are within walking and driving distance

Cooking brings everyone together. Always keep older friends, fmaily and neighbors in mine when you have a Sunday dinner or a late season barbecue. Even an invitation to an at home tail gating party will be fun. A plus is asking them if they have any favorite dishes or desserts and then creating them for them.If they want to help let them. You can also use a pair of extra hands however make sure that they don't do anything too strenuous or that can do them harm. As for new neighbors, co-workers and classmates  treat them to a dinner featuring the best of either American or your own ethnic cusine. They 'll appciate the work that went into it and enjoy both the food and the company. Keep in mind  that there may be dietary restrictions. You could try making Impossible Meat or Beyond Beef hamburgers or Gardein's plant based chicken nuggets. Roasted veggies like eggplants, tomatoes, ,peppers and asparagus make for a tasty barbecue. You can even grill fruit such as pineapple and peaches. Introduce them to that great American dessert s'mores. It's a fun treat for adult and kids alike.

Today is a day for remembering. Remember the elderly and the newly arrived  when you shop or plan a dinner or party. They'll like that you kept them in mind  as they enjoy good food and good conversation.

Until The End Of Asparagus Season

 Foodie pantry will be taking a short break - probably until the end ofasparagus season - or maybe this week.

I am having , yet and yet again - surgery this time  yet again on my arm. COoking will be hard for now. Baking is out of the question. This is my last night to really cook so it's asparagus again  -yum - and plant based fish sticks from Good Catch.

I plan on writing about Good Catch as soon as I can. This is an intriguing company and I'm looking forward to try their products.

Add Veggies Make Sauce

 You don't have to spend time to make sauce for pasta.Nor do you need just tomatoes. You can use anything to create a great sauce for any kind of pasta.It just takes some creativity and whatever in the vegetable crisper.

Tomatoes have always been the basis of Southern Italian sauces. This wasn't always the case until the Sixteenth Century when the Spanish introduced these Mexican beauties into the Italian diet. They taught the Italians how to fry them in a pan along with onions, squash and eggplant , a sort of prototype of ratatouille. The ingredient caught on because it could flavor other foods without having to use spices which were  costly and rare at the time. Tomato sauce can be good, especially homemade but it does take time to make. You can make a crockpot version if you want. I feel this is fine during the fall and winter when you need a heavier sauce for spaghetti and even gnocchi, The Spring and summer call for a different , much lighter sauce. I am a big fan of Sam Sifton's burst tomato sauce. This is a fresh take and I've add a twist to it. Fresh spinach leaves not only give it color and flavor but also much needed iron and folate. The recipe is super easy.It's just sauteing grape  or cherry tomatoes in a mix olive oil and butter (I use Melt) Add some chopped and washed spinach leaves. About ten minutes in start bursting or popping the tomatoes. The juices will mix with the oil and butter and create a wonderful tasting sauce.There's a light ness and freshness.

You don;t have to have tomatoes  to create a great sauce. One of my favorites involves baby bellas and spinach. This sauce is a nice change up from the traditional tomato sauce. Again this starts with sauteing washed and chopped spinach leaves in an oil and butter mix. Baby bellas are added and cooked until there's a crispness to them. Add about half a cup of either chicken or veggie stock to give it that saucy quality. You could add chicken breasts if you want to give it more heft. You could also go the arriabiata route and give it a dash of red pepper. A Spring primavera sauce is always a nice change up. This has a whole slew of fresh veggies that can compliment any kind of pasta. The basic sauce is a mix of red onions, carrots,  broccoli, bell peppers, squash and zucchini. Tomatoes and garlic are also added but you can omit the tomatoes if you want. The veggies are sauteed in olive oil (but add a knob of butter for more flavor) and mixed into the cooked pasta. Another fresh idea is asparagus and peas. Both are sauteed in olive oil with shallots and garlic. The sauce is ready when the asparagus turns a bright green.

All you need is veggies, garlic and olive oil to create the perfect pasta sauce. See what's in the fridge and run with it.Be creative. You'll wind up with a tasty, fun sauce for any type of pasta.

Gearing Up For Holiday Cooking

 Three major holidays happen this month and that means prepping the kitchen for holiday cooking. Ramadan, Easter and Passover happen within weeks of each other. it means planning and shopping along with scanning over recipes to see what works.

Ramadan starts tonight and ends on May 1st.There is fasting from dawn to sunset but that doesn't mean there can't be tasty dishes. The fast has to b broken each night with iftar the traditional meal. Of course the fast is usually broken by eating Medjool dates but there are other dishes that can be enjoyed by the family or by a crowd.Samosas are perfect, They're fun , finger foods and can be filled with either meat or potatoes. Think chicken or potatoes highly spiced with a variety of different spices like cumin and turmeric.Another tasty and quick to make dish are kabobs. A good choice is lamb or again chicken interspersed with onions, tomatoes and bell peppers.You could have stuffed veggies too or stews like one with lentils and beef. Sweets could be lokaymat, sweet dough balls fried and soaked in honey. Passover also begins this month and with it comes traditional recipes along with new spins on the classics.Of course there will be matzoh ball soup, highlighted by fluffy matzoh balls lightened a splash of seltzer. Brisket is always served. This savory cut can be seasoned with brown sugar, rosemary and a dash of paprika. What to serve with it? A vegetable kugel would work .it's a host of different veggies baked into a savory cake held together with potato starch and egg. A different dessert would be flourless chocolate cookies instead of the traditional cake.

Easter , itself, brings tradition and new spins.Most families serve ham with some kind of glaze. Southerners love one made with a good splash of Coke or Dr. Pepper. This cuts the meat's saltiness. Martha Stewart offers one with a cognac and brown sugar glaze. For a light  Spring-y meal Cornish hens will work. They have a more delicate taste than chicken and are perfect with an orange based glaze. Asparagus are a must , whether at a Seder or Easter meal. As for desserts, a cake would be nice. Think a bunny one, with  coconut frosting and jelly bean eyes. For all the holidays, make sure you have all the ingredients and the gadgets to prep them. Do you have enough pans for roasts along with plastic bowls and containers for left overs? What about linens? Is it time to get a new Spring tablecloth along with linen napkins. If it's warmer weather then what about having an outdoor holiday feast. Do you have enough outdoor chairs and plastic tablecloths? Now is the time to start buying for it all, along with planning. 

This is a month for holidays. Make sure you're ready with your recipes and ingredients.Planning and prepping will ensure a smoothly run holiday meal.

Spring Food Musts

 Spring is the time of longer and warmer days. Gone are heavy winter days and heavy winter food. It's time to celebrate with classics like lamb, asparagus and rhubarb , perfect for dinners and desserts. Think light. Think delicious.

Lamb is usually served all year round but it's most popular in the Spring thanks to Easter and Greek Easter. You could easily make a lamb stew with Spring vegetables. Use a boneless lamb shoulder and cook with, tomatoes carrots and petite pois or pearl onions. Red wine could be added along with the beef broth. The good thing about stew is that it can be made in an Insta Pot or crock pot  which leaves you free for a few hours.Another idea is cooking the meat in  herbs. Garlic and lemon are added for more flavor with such herbs as tarragon, dill and cilantro. Cumin and coriander seeds are also used. Greek Orthodox Easter is next week and there will be lamb served at almost all Greek homes. Try their version which is roasting a leg of lamb. Its first studded with garlic cloves and then generously sprinkled with a mix of  sea salt, pepper and paprika. Olive oil and lemon juice are then drizzled on it and then it's first braised and roasted.if the cut is too much then think about lamb chops. They can be marinated the same as the shoulder and sprinkled with oregano. You could easily serve these with crunchy and lemony Greek style roasted potatoes, 

Of course the best side is asparagus. This is a Spring must have and can be made a variety of ways. The best is with  the classic Hollandaise sauce. Home chefs always feel that this is hard sauce to create but it's really not. It's just combining egg yolks, lemon juice and a dab of Dijon mustard. Cayenne can be added for some heat but it's mot necessary. Melted butter is them streamed into the sauce and it's blended with an immersion blender. (you can use a regular one for it too).Another is Piedmontese style with the spears drenched in melted butter  and topped with sliced hard boiled eggs and Parmesan cheese. You can also grill them as well. Grilled asparagus is perfect with chicken or steak. Rhubarb is another culinary star of Spring. It's usually paired with strawberries but it's great on its' own. Stewing it into a compote is easy and it's a nice topping for vanilla ice cream.It;s slowly cooking chopped stalks with sugar and water. You can add a dash of cinnamon for more flavor. This veggie, similar to celery also makes for a good crisp or cobbler. These are easy desserts with mixing oatmeal, flour sugar and topping to form a tasty crust on top of the rhubarb. Strawberries can be added too for a variation. Serve any crisp or cobbler with freshly whipped cream for a down home but still fancy dessert.


Lamb, asparagus and rhubarb are the stars of the Spring table. They make the season even brighter and sunnier with their distinct flavors. Plan a dinner, make a dessert with these gems for a warm weather treat.
