Ham Or Lamb Or Vega Easter Choices

 What should you serve at Easter dinner  next week? I'ts always a question when it comes to this holiday. You could cook a ham yet do you want a repeat of Christmas? Is lamb good? What are the vegan options. Don;t worry .A guide is here.

Ham is always a good choice for any  sit down dinner or buffets.It;s an easy prep and cook as well as being a crown pleaser.It's also fun to create a tasty glaze whether from ginger ale ale or pineapple juice and brown sugar. A large one, around ten to fifteen pounds can feed a whopping twenty to thirty people. It;s perfect for a large family gathering and there could even be leftovers for guests to take home. Sides with it are also simple Spring asparagus with butter and Parmesan on top ios always a good side as are baked beans and a simple potato salad. Keep in mind that these can be used for an Easter Monday picnic the next day.If you want a more traditional Easter main course then think lamb.The deep mineral rich flavor is perfect with such flavorings as lemon and oregano.Is lamb easy  to cook? Yes it's a nother easy roast like lamb.It only takes fifteen to twenty minutes per pound. You could have Greek sides such as stuffed grape leaves or a garlicky spinach dish as sides along as a fresh salad with feta.

What about the vegan options. You actually could serve ham - seitan ham which is a form of  wheat gluten (this si not good for anyone with celiac disease).It;s basically combining yeast with white beans along with other ingredients such  the binder a cup and a half of white wheat gluten.This is what sticks everything together and it forms a stick dough  - not unlike bread dough.It's glazed and cooked. You could save yourself the trouble and just buy a stuffed tofurkey loaf at your local grocery store.This is a  one hours and twenty minute roast in a  350 Farehneit degree oven. Another option is risotto. This is a wonderful change up from a meat dish and is satisfying. It can be made with asparagus for a Spring-y green flavor or it can be made with portobello mushrooms.If you;re pressed for time then  get Lidl's risotto mixes where all you add is the flavoring and water. Other ingredients can be added later. It;s a perfect Spring dinner especially when it;s served with a nice salad.

Don;t worry about next week. There are so many options for your Easter dinner. Go with meat. Go vegan.It;s up to you.

Home bakers would appreciate a pretty jar filled with cinnamon and vanilla sugar.

The recipes themselves are just as flawless.Imagine a party graced with her vegan caviar (!) and squash truffles. The first is made with flaked seaweed sasoning to give it that briny,salty flavor. Mme. LaForet uses this a lot in creating faux seafood dishes such as tofu gravlax canapes and fisherman rillettes. Main dishes are a vegan's dream Try the porcini mushroom risotto, chock full of button and porcini mushrooms.A great opener for a Christmas lunch could be the ravioli in flavored broth that's been zinged up with the fiery Chinese five spice powder.A tree trimming or Hanukah  party can be made cozier with the tasty seitan pot pies filled with meaty cubes of seitan -or a meat like wheat gluten.Another Hanukah treat would be the potato pancakes loaded with kohlrabi. Another big plus is that Ms. Hutchings and Mr. To have a list of tools that are divided into three categories - critical, important and helpful.  There is also a very detailed list of pantry staples that all novice vegans should have. Every meat free cookbook has egg, meat and dairy substitutions and this one is no different.These can be bought or made at home.Some are versatile such as aquafaba - bean water from chickpeas along with coconut milk.Tofu and seitin are musts . They are the backbone of any kitchen as Ms. Hutchings points out. Another plus is that there is an opening chapter devoted to basic recipes. You can learn how to make four types of yummy vegan bacon along with pizza dough and simple neat - yes neat - balls.She has recipes for such basic sauces as Hollandaise and Bearnaise along with eggless mayo and non dairy sour cream.

I  absolutely love this book and the fun recipes in it.It's divided into such  cheekily named chapters as Souper Natural, The Main Squeeze and Thirsty Girl. MY favorite chapter is MUnchies which has  crunchy golden samosas and even movie popcorn with four different flavorings ,from dill to chili cheese to salted chocolate. They include a yummy Buffalo cauliflower seven ways that would be the perfect Saturday night dinner/snack. Of course there is main and side dishes too, and they are from around the world , including recipes that honor Mr. Aita's Syrian background.A vegan home chef could easily impress guests with their steaks with Bearnaise sauce or impress family with a cauliflower version of General Tso's Chicken.Pair it with the Edgy Roasted Veg ,a tasty mix of various veggies zinged up with hot pepper and lemon juice. Comfort foods are also here, There is tomato bisque served with non cheese grilled cheese along with a French dip sandwich and Easy Cheesy Fondue made without any cheese! There is a chapter on power drinks like the eye opening ginger shot and the tasty mint chocolate chip smoothie. Of course there are desserts and they feature the elegant and the cozy. A Second Take On Tofu

Mention tofu to anyone and at best you"ll just get a head shake no.Most people are against it, both hating to cook and eat it.Yet it is tasty and versatile.It's time to take a second look and another bite of tofu. Mark Bittman certainly did and wrote about it in his column in today's New York Times Dining section.It's actually becoming more embraceable thanks to many people going vegan for dietary or even ecological reasons. Tofu is not anything new.The Asians have been fermenting soy for 2000 years and been popular since the Fifth century.The given recipes are varied and tasty,ranging from scrambled to marinated.To be honest if done right, tofu can fool the most dedicated meat lover.Not only that , home chefs don't have to resort to the pre pressed kinds like burgers and tofu pups to win over family and friends.A brick of it can be transformed into so many different ways.One day it can be turned into a jerky while the next it could be sauted and served over rice like a tofu scampi.Any way will draw more fans and more people curious about it. Mr. Bittmen has a cornucopia of different recipes.He introduces readers to the Mediterrean dish escabeche.This is a Spanish or Southern French meat dish ,usually made with chicken ,rabbit and pork and marinaded for twenty four hours.You can use the tofu for this in a marinade in olive oil, white wine ,Dijon mustard and shallots.You could also make it Provencale style with the addition of chopped black olives and tomatoes.This would work well on a weekend night ,with a good bottle of white wine.Another tasty recipe is Mr. Bittman's take on chorizo, tofu mixed with onion and garlic.To give it color and bite is the addition of cumin and paprika along with cinnamon and cider vinegar.Another recipe is scrambled tofu ,done with tomatoes and scallions in a soy sauce bath.For the more adventurous,Mr Bittman throws in a vegan mayo made with the silkily fluid seitan, This is great for those watching their cholesterol and weight.You can add basil or even tarragon or celery seeds to amp it up.seitan cal also be used in desserts such as mousse and puddings as well as in savory dishes such as soups. Tofu should not be hated or even feared.It is a versatile alternative to meat ,eggs and even dairy try making it in a flavorful dish .Done right it's a dream everyone will enjoy.
