School Ready

 School is going to start in the next few weeks or right now depending where you live. Are you ready with  school lunch?  while it's easy to get a fun container and bag  it's not so much fun to pack something that cylospora and salmonella free. Can school lunch ever be the same?

There are a few things that's= should cheer up any mom or student. Dollar Tree and Dollar General have some neat sandwich and Bento lunch box cases.Get the sandwich boxes that feature such a characters as Bluey, Stitch, Disney princesses and a baby Spderman. These hold a regular sandwich and keep it fresh.It's just so much fun to have too.  There are also checkered lid  food containers in pink sage and blue. (these are on my radar to get) Dollar Tree as Bento boxes that kids can use too. Other places to buy them is Amazon and Temu. Dollar General has food containers as well.Also look to Temu and Five Below for modern takes on lunchboxes. A more expensive version is the Stanley All Day Mini Lunch box for $33.75 on sale from Stanley. This looks like a designer purse and comes in a variety of different colors from deep burgundy to light aqua. You can get cheaper from Vera Bradley for $14.99 and has cute cat and dog prints along with a red quilt pattern. You could also just get sandwich bags and stas time in your kid's knapsack too.Stock up on sporks too for easy eating, whether for a cold pasta salad or pudding.

What to bring is a big trickier than what to bring it in. Cyclosporine makes it difficult to create salads and salmonella seems to be everywhere. Sometimes the best choice is the classic one. Peanut Butter and jelly should work if there are no peanut or nut allergies.A simple ham and cheese sandwich is also good . Also vary it with chicken and London Broil slices (Stop & Shop has this for a good price and it tastes like homemade)For both  big and little vegans there is plant based versions.One of the best is Tofukey's Peppered Tofurkey slices that have a nice black peppery bite and the texture of actual meat. This is one of my go to s and works well with vegan mayo on any kind of bread (rye really brings out the flavor).Try Tofurkey's turkey again good with mayo and the bologna. Have this last on white bread with a good dollop of sharp mustard.It would be tempting to add bite sized veggies like broccoli and carrots yet even these may be too risky.I would lean towards avocado , banana or orange slices . These have thick rounds that can protect the actual flesh. As for dessert get fresh apples and pears and peel the skin off . Also raisin oatlmeal cookies are great too and the occasional Hershey's kiss.

The school year is about to start. Be ready .Be smart about having a good lunch ready.

Tangy And Tasty Salsas

 Wamr weather brings out the chips and dips especially crunchy tortilla ones with bright,s sassy salsas. Nothing beats a homemade dip made with fresh ingredients. Best of all it can be made mild or very hot  or even something in the middle. Salsas are a fun addition to any Springtime party.

New contributor ,chef and author Rick Martinez gave three good salsa recipes in today's New York Times Wednesday Food section. One idea he recomends is taken from Mexican chefs is that it can be improvised. Making it should bring as much joy as eating it. Salsa is more than just a condiment even though its' name literally means sauce.I t's a quintessential part of the Mexican table - something that both tickles and gratifies the palate. A good one should add depth, poignancy and zest in spicy, sweet and sour flavors.How the salsa is ultimately made is up to its' maker.Anything is fair game. Just be sure to add tomatoes, tomatillos,garlic, white onion, herbs Chiles, and even avocados. Keep in mind that lime juice is only used in American salsa recipes ,Mexicans usually add a squeeze of limes on its own to dishes.,Another rule of thumb is use chiles that work for you.A good thing to remember is that the smaller the chile the hotter it will be.When shopping for fresh ones, look for ones with firm shiny skins., Dried chiles should be soft and pliant.

The salsa  recipes are just great for parties or even a light and fun dinner. There are tostadas de tinga de pollo or shredded chicken and salso toastadas. made with the two given recipes.This is a meaty one wit bacon and chicken (taken from rotisserie or home roasted chicken) Try one or both salsa recipes.. The pure jalapeno one is an easy but fiery one.It;s boiling them with water and kosher salt until they're softened and just holding their shape. You'll need a mortar and pestle or molcajete which can be bought at Amazon . They usually average around twenty-five dollars however there are more expensive and more authentic ones for around sixty dollars. You can also use a bowl and a potato masher too. Grind until a chunky paste forms.Add some of the reserved boiled water along with garlic powder. You could also make the aguacate ahumado This is one made with sweet Roma tomatoes, a medium avocado ,a chopped white onion and five chipotle Chiles along with adobo ones. Adobo sauce is also added. These are just chopped and mixed together. Serve right away although anything leftover (which there probably won;t be) can be stored in the fridge.

Salsas a just a great accompaniment to any Mexican dish or a big bowl of crunchy chips. Make these for the warm days ahead.They're great tfor parties or just simple snacking.

Dolmades A Tasty Treat

 The best mezzo or snack is dolmades or dolmas. These are grape leaves stuffed with rice and meat. These are a great way to be introduced to Greek and Middle eastern food.

YOu can easily make or buy them.I've found Eradanous brand grape ;eaves at my local Lidl. They also make vine leaves (Basically dolmades) stuffed with rice and pomegranate syrup.


This was a tasty snack but with a salad could make for a good, refreshing dinner.



Dolmades ca be made at home. Most stores do sell them but they also can be bought on Amazon too.A simple stuffing is rice but you can add leftover minced lamb or ground beef. Chopped onions are  another ingredient that will add more flavor to them. Uncooked rice and the other ingredients are placed atop whole grape leaves ,then rolled into little parcels. They're steamed in water for thirty to forty five minutes. They  can be eaten hot but they  r'e also good chilled , marinated in olive oil.

Dolmades are the perfect snack,appetizer or dinner. They 're bursting with flavor . Make them for a different kind of meal.

Your Fall Spice Cabinet

 The summer may have been spent cleaning out the spice rack or cabinet .Now it's time to refill with all those warming fall spices. What do get? Think richly aromatic and tasting ones,perfect for savory and sweet dishes.

Cinnamon is a must  for any autumn spice rack. It's a sweet earthy spice that can be bought in both ground and stick forms. What should you buy? Cinnamon sticks are a better choice. They're more flavorful and don't have to be refrigerated if you want to place it in the fridge. However  the powdered from is just easier to use in recipes and drinks. To be honest go for both. You can use the sticks for mulled wine and chair tea while the powdered is perfect for apple pies and streusel cakes along with sprinkling on top of foamy cappuccinos. Keep in mind that the spice can be used for savory as well as for sweet recipes.It can work well in a Bavarian pot roast adding depth and color to the meat along with adding flavor to Moroccan chicken.Nutmeg is another spice every fall spices cabinet ought to have.Like cinnamon it's sometimes better to have the nutmeg nut instead of the powdered version.The question is where do you buy the whole nuts? Some groceries will carry them. If not there is Amazon.Again it's good in both savory and sweet dishes. It;s even sprinkled onto layers of lasagna for more depth.It  is needed in the classic egg custard dish which makes for a perfect cool weather dessert.

What about pumpkin pie spice mix? Will you need it. Namely yes, especially around Thanksgiving when you bake those pies. The spice mix  can also be used for pumpkin tart and pumpkin souffle as well.Of course you can't forget pumpkin spice lattes which can easily be made hot or cold. Should you buy it already mixed or do you want to mix it at home? If you;re too buy them buy a small bottle of McCormick's if you;re too busy to mix and blend. If not it's just taking ground ginger, cinnamon ,allspice nutmeg cloves and , yes black pepper for a fiery and  yet subtle blend. Do you add sugar? You can if you want to ,Jut make sure it's the granulated kind. A homemade pumpkin pie spice blend is always a nice gift for someone with a fall birthday. You can also use the individual spices too. Allspice is a must .Its a great warming spice for such Caribbeans dishes as chicken jerk.It;s also  a must in Palestinian dishes such as braised green beans and chickpea stew. Yes it's perfect in spice cookies and gingerbread , desserts perfect on a cold October or November day. Ground ginger is another spice necessary in the fall spices cabinet.It's great in all sorts of Asian dishes and a must if you're thinking about making gingerbread cookies or cake.

Fall is fast upon us. It's the perfect time to create highly spice savory and sweet dishes. Make sure your cabinet is ready for these.

Braising ABCs

 braising is a great way of cooking any kind of meat.It adds a tenderness to it along with giving it flavor.It;s also an easy cook perfect for  those novice chefs Even better is that any meat can be braised.

To start with you need a good braising pan.Who has a good braiser? le Creuset is the best. it has a spacious cooking surface, a large lid knob for easy grabbing and easy to grip handles. Any Le Creuset surace is perfect for cooking. It is expensive with the price varying from $380  on Amazon to $290 on Amazon. A nuch cheaper one is Crock Pot Artisan.It's almost the same as Le Creuset but has a smaller cooking surface. yet it's only $67 at Wayfair and $62 on Amazon. You can also score a $50 one at Target too. Keep in mind that the cheaper ines have trouble with the enamel eroding. Braisers can be used for other types of cooking too.it's greati for browning chicken wings and thighs as well as such roasts as London Broil.The pans are not delicate. You can easily put one in your dishwasher witout any worry of scratches ro nicks.

What meats are perfect for braising? Beef short ribs and chuck work. As for pork think the shoulder also known as  Boston Butt. You could also braise lamb shoulders or shanks as well as chicken thighs or legs. You should season your meat first, usually just sea salt and freshly ground pepper will do. You could add some herbs such as thyme or oregano  along with either onion or garlic powder for flavor. Add oil to your braiser. Both Italian and Greek olive oil work the best. These are the most flavorful and will enhance the meat's taste. You can add veggies  such as carrots and peas. Braising requires some kind of liquid in the second part in the cooking.Red wine works rhe best with braising. Stock is also necessary. Beef or chicken works the best. Use beef broth for both the lamb and the pork too. The lid is then put on the the meat and veggies are cooked for a good hour to an hour and a half.

Braising is an easy way to have a delicious hot meal. All it takes it  a good braiser and a great cut of meat. Put them together for a tasty dinner.

Your Spring Baking Musts

 Spring gives us a busy baking season, almost as busy as winter. There are the holidays, Easter , Orthodox Easter Passover and Ramadan along with all sorts of showers and college  graduations. Are you ready for the baking that comes with them.

Of course ingredients should be at the ready. There should be flour for the Easter and Orthodox Easter cakes and breads. You should be stocking up on confectioners sugar for icings.As the holidays progress think about bargain shopping for eggs (still expensive) along with deals on butter and cake mixes.It's also time to get those pastel gel icings if you don't already have them. Once the ingredients are taken care of then its time to look at your molds. Thsi also includes candy and cake pop molds too. Most cake molds last decades if they're made from good aluminum or even steel. If you're a neophyte when it comes to baking lamb and egg cakes now is the time to buy the molds. You can get a cute bunny cake mold at your local Wal-Mart for under seven dollars. Michael's has the silicone molds for cookies as well as Easter themed  cupcake papers. Buy these now instead of waiting for next week. if you're planning on making a lamb cake for the frst time then head to Amazon.  They have the Wilton one for $24.00 and you can have it sent overnight. Also get ready for candy and cake pop making. Make sure you have plenty of sugar along with lollipop sticks and decoarations.

It's shower and graduation season once the holidays are over and done. D o you have large baking pans for sheet cakes along with the tiered ones for showers and smaller weddings? If not you may want to invest in RAQK one hundred pieces cake pan set plus decorating supplies. This is a must have have for any home baker planning on supplying the cake for any shower. It comes with a large, medium and small sized springform cake pans along with icing nozzles , a cake leveler to create more layers and three scrapers to create fancy sides on the cake. It pays to buy another tin  which can also be used for muffins if you're planning on a brunch shower.  Check your supply of pie tins for baking that shower staple quiche ,Most showers usually have three different versions so it pays to have a few sturdy tins. These can be used later on to create ice box  pies or ice cream filled ones. Do you also plan on baking petit fours for shower teas.If not you can buy one or two now and try practice baking with them.

Be ready for Spring baking. Make sure you have the right ingredients and the correct molds. doign this will make holiday and baking for all t hose patrties a snap.

Table Set

 Does anyone know how to set a table? Yes you put plates in a certain way along with cutlery and glasses. Many of us, though have been doing it wrong, There is a right   and elegant way of doing such.

A basic table setting just has the dinner plate flankled by one fork on the diner's left and a knife on the diner's right.next to the knife is the dessert spoon (or soup spoon if soup is being served.) The fork is placed on a napkin, although if you want to be traditional , then place the napkin on the diner's right hand side. A water glass is also placed on this side as well. If you're planning a more formal dinner then you'll have to add salad forks and dessert spoons and forks. The salad fork is place directly to the right of the dinner fork. The dessert spoon and fork are placed on the top section of the place setting. A smaller plate for your dinner roll is placed  on the left along with a smaller butter knife.On the right hand side there should be three glasses arranged in a triagular pattern. The bottom two should be the water on the left hand side while the glass for the white wine sits opposite it. In back of these is the red wine glass. If you want to be fancy add place tags. These are placed behind the dinner plate and sometimes flanked by small individual salt and pepper shakers.

What about a buffet table? Do the rules of etiquette apply to it as well? Not really. The integrity of the food is what matters here. Hot food should be on one end, while cooler dishes like salads and cold cuts should be on the other end. The two temps should not be mixed. You can add a wooden block to the middle of the table for the chafing dishes. This highlights the main sides like gravy and stuffing. Another idea is placing the hot dishes on another table for complete separation. Doing such will allow guests to choose what they want first. The first items on the buffet table should be plates and cutlery. It's up to you as the host to decide whether to use your good china if you have enough to suit a lot of guests or  elegant plastic ones. Many choose the last and luckily they're easy to get from Amazon. At the end of th e t able are the napkins (and wet wipes if there are sticky or messy finger foods).After dinner the tables are cleared and then the desserts are put out. Again follow the same protocol but add cups and saucers for coffee and tea. Put urns of coffee and hot water where the chafing dishes were along with a basket of assorted teas and sweeteners. You can also have creamers on the table or place them on individual tables along with sugar or honey. 

A well set table reflects on the host. It's showing a level of tastefulness that will add to the dinner. The perfect place setting is the key to the perfect meal.

Good Old Fashioned Sweet Breads

 This is definitely the season for baking. There are pies and cakes galore. ovens are producing cupcakes and cookies for bake sales and Halloween parties. Yet there's one baked good that's being over looked. The sweet bread. There's nothing like a slice of cinnamon or honey flavored bread slathered with butter on a cold fall day. 

Sweet breads (not to be confused with a calf or lamb pancreas that some bold meat lovers enjoy) have been around for centuries. As long as there was honey or rose water and dough home bakers could create loaves and rolls that could be perfect for breakfast or even with the main meal. The Portuguese are famous for theirs ,made with milk, sugar and lemon zest. Portuguese workers brought them to  Hawaii where they immigrated for jobs, These evolved into the famed Hawaiian rolls that now eveyone loves. The Italians have gubana, a sweet loaf that's filled with dried fruits and nuts. Of course they also bake pannettone and pan dolce for Christmas. Sweets breads can also take the form of rolls as in England's Chelsea buns which is a lightly iced  cousin to the American sticky bun and the Dutch rasin filled  krentenbollen and the Jamaican coco bread made with coconut milk.It's up to you what you;d  like to make, whether a loaf or rolls.If you're new to baking stick with loaves. They're easier to form and you dont; have to worry about a batch of rolls' sizing. equal sizing .

A simple sweet loaf recipe just calls for  a cup of milk and a half a cup of sugar.  Eggs enrich the dough ,giving it a cake like crumb while butter gives it a higher rise and a crisper crust along with a longer shelf life.Like any other bread recipe there's also yeast and all purpose flours. You can make it an all natural one by using whole wheat flour and honey for the white sugar. Another  healthier ingredient that you can use instead of sugar is maple syrup. This gives the bread a lovely earthy flavor and is perfect for that Quebecois dessert - Tarte Au Sucre where the bread is topped with maple sugar and a fluffy mix of sour and heavy creams. Use about quarter of a cup of the  pure kind (not the cheaper version mixed with corn syrup. You won't get the rich maple flavor ). One egg and four tablespoons of sweet butter are also added for a decidedly lush flavor. One you've mastered the art of making the sweet bread loaves you can graduate to rolls. One tasty one, perfect for breakfast or a snack is the mexican concha bread baked in the shape of a conch shell. You will need a special concha tin for this .It can easily be bought on Amazon. They can be made with chocolate or vanilla topping. Another fun try is the british Chelsea bun made similarly to our cinnamon buns. They';re filled with raisins and cinnamon along with brown sugar. They;re more fruity than spicy but still so good.

Sweet breads are a perfect fall baking project Start a chilly morning with a warm sweet slice and coffee. They're easy to make and even easier to eat.

A Vegetarian Mother's Day

 Mother's day is full of good homemade meals and treats. Yet what happens when Mom eschews those yummy strips of bacon or that great chicken dish? Not to worry of you have a vegetarian or vegan mother. There are plenty of substitutes that you can use for  tasty and delicious dishes throughout the day.

Nothing beats a Mother's Day breakfast.One of the best sub ins to serve is Morningstar Farms Bacon strips.

This is like the real thing, especially when it's microwaved crisp. It has the same crunch and flavor as the real thing and goes great with any of the Vegg products.
These can be bought on Amazon and both the power scramble - which resembles scrambled eggs when cook and the egg yolk are great. One of my favorite any time meals is bowl of the yolks which are easily cooked in the microwave, and the Morningstar Farm bacon strips. I love dipping the bacon in the "egg' yolk". Make a side of toast buttered fingers also for fun dipping. Add a mimosa and it's a great brunch.

As for lunch and dinner, you cannot go wrong with the Gardein soy meat products. I love their teriyaki chicken strips.

They're a quick fry in the air fryer while the sauce is heated in the oven. Serve with white rice and a Japanese salad with a carrot ginger dressing for a nice dinner in. Gardein also has turkey cutlets with gravy which tastes like the real thing. Serve with steamed asparagus for a lovely Spring dinner for Mom. For a more fun meal, definitely grill up their burgers for an old fashioned barbecue or serve their chicken sliders with air fried French fries.Finish with soy or almond milk shakes in chocolate, vanilla or strawberry.

Don't worry about cooking your vegan or vegetarian mom a meal. There are so many ways and so many products to give her memorable meals. She can have brunch , lunch  and dinner with a whole host of meatless products.

Time For Summer Treats

It has been a strange summer with restrictions on both coasts along with shark sightings off of New York's Long Island. Yet we can still celebrate summer with the foods and treats we love so well.

August is the time of so many harvests.Tomatoes are still in abundance. Nothing says summer than a tomato and mayo sandwich on white bread. You could give this classic a Mediterranean twist by replacing the mayonnaise with olive oil and a good sprinkle of oregano. Of course this calls for a heartier bread such as Italian or French.Another summer favorite is Neopolitan bread salad  or panzanella which calls for tomatoes , cucumbers and onions. Another summer favorite is corn. Grilled corn with seasoned butter is a summer staple and one of the best sides. Lemon or herbed butter works as does honey butter. Add some flaky seas salt and fresh ground pepper for bite. Unfortunately most of the peach orchards are closed to families right now. You can still buy baskets of them at local farms and your supermarket. A plain one is good just on it's own but you can also slice and peel them for crumbles and pies. You could also make a peach sundae by splitting one in half and pitting it.Add vanilla ice cream and top with honey and toasted oats.

Boardwalk foods have always been a summer must.Some are open and take advantage of what they have to offer. A typical favorite is fried clams. You can make these at home using corn flour and cayenne pepper.Sausage and pepper sandwiches are another seaside must eat, especially in New Jersey. Use fresh green peppers and any kind of sausage from sage to vegan and fry up together. Core and julienne the peppers and then saute in oil. Add the sausages along with salt and pepper. Generously heap onto hoagie rolls. Cotton candy and candy apples are what really make those Boardwalk trips memorable.If you can go just for those however you can easily get them at home. Amazon has the best array of them , ranging from $57.00 to $400 in price. Get the most affordable along with the flavored sugars and cones. If you have qualms about making it, watch the many YouTube how tos on how to use the machine and swirl the floss onto the cones. Candy apples can be bought on line at Nandy's Candy's  of Jacksonville ,Mississippi if you can't make it to your favorite boardwalk. You can also make the coating at home using light corn syrup, granulated sugar and red food coloring.It's boiling  all three into a syrup and then dipping the apples into them. You could add coconut flakes the way the boardwalk stands do.

It's the summer and despite it all , it's a time to enjoy hot weather favorites. Grab that buttery ear of corn or chomp into that candy apple. It's all part of the fun that's the season.

A Feast For A Few

June has traditionally been a time for weddings and grad parties, showers and engagements. We can still have these celebrations but now for much smaller groups. We can still have our feasts and fetes but with a much smaller menu.

Mostly this is the time for weddings and they're usually big, lavish affairs held at wedding palaces. However an old fashioned reception of twenty  or thirty is also a very nice idea. You can even cater it yourself. Years ago, a reception might have only offered sandwiches, something to drink and a slice of the wedding cake. It may seem sparse by today's standards yet it works. No one really wants to fill up on slabs of beef and Hasselback potatoes along with an all you can eat shrimp or sushi bar. Delicate finger sandwiches filled with olive cream cheese and shrimp salad will work just fine. Add roast beef, turkey and ham  for the heartier eaters. If you want salads, then have a chef salad, filled with cold cuts and different veggies and cheeses. As for the cake , you can make one yourself. Amazon sells the Wilton five tier pan set.  The Internet has dozens of recipes for that special cake along with frosting recipes  (try the Two Sisters blog. They have the best flavored frosting recipes). As for decorating , check You Tube or just go with  simple mixed berries or flowers cascading down the side. Bridal showers can also be  in this vein. Simple sandwiches, followed by a cake or better yet  - fancily decorated cupcakes.

Graduation and even engagement parties don't have to be as formal as a wedding. Both can benefit from a table set up with a charcuterie board. This may cause concern for some because of the sharing. The solution is simple. Hand out latex or plastic gloves as guest arrive or put them on the table, next to the plates and utensils.As for the board, arrange slices of prosciutto, Genoa salame and ham. Offer cheeses such as Provolone, Swiss Asiago and Brie with slices of Italian or French bread. Make sure there are extras such as green and black olives along with sun dried tomatoes, marinated peppers and giadiniria, the tart Italian salad. As for dessert, a simple homemade sheet cake would work along with bowls of fresh fruit. You could also go for a barbecue .  Again have a variety of different choices , from beef to veggie. If you have trouble finding beef burgers or your grocery set a limit on how much you can buy, switch to turkey and Beyond Burgers. They taste just like the real deal, especially if they have all the fixings. As for sides, keep it simple, Don't have salads. Think sliced tomatoes and pickle spears instead. You can also grill veggies such as eggplant , zucchini and even tomatoes and serve with a balsamic vinaigrette. As for the dessert, again go for cupcakes, They can be decorated with little 2020 toppers and for the engaged couple, ice their initials into the cupcake's frosting.

There can be feasting and celebrating again, even if it's on a smaller scale. Think simple. It can be a feast but a pared down one.

There's Always Online Stores

It's a pain and a chore to go grocery shopping these days. There's shortages galore and you have to be savvy when a particular store stocks up. If worse comes to worse  there is online shopping and the various stores that can offer salvation.

One of the best places is Amazon. There has been some negative criticism regarding how the company treats their workers during this time and the heavy amount of  work  allotted to them. Yet it has a wide array of foodstuffs and items for any home chef and kitchen.I have been buying kitchen wares from them for years. The company has a very good selection of silicon bakeware .There's a wide variety of that , from loaf pans to smaller ones for decorative cakes and candies.  The company is also great for appliances. Air fryers are big and a godsend. Amazon has a wide assortment of different brands and they have their choices as to what's the best. You can always something that suits your needs. The same goes for toaster ovens - which they have many , from simple ones to ones with convection ovens included. If you want fancier gadgets like sous vides and immersion blenders, them Amazon, is the place to go for them. (but you can  also go to Target and Wal-mart too)  Another plus about Amazon is that they do have a wide variety of hard to find and unusual foods. I recently bought Berbere spice there, something I know I couldn't get in my local grocery store. I've also bought clotted cream from them, something I can only get at British specialty stores in Manhattan.

There are other places to go to for specific foods. The Carmel Honey Company is one of my favorites. I buy their wildflower honey for my tomato sauce and chili (yes, I use it for those. It's better than sugar). it was started by teenager Jake who wrote about honey bees for a school project. He became so involved that he started his own honey company  - lucky for us. It's a great source of natural honeys that can be used for everything from sauces (yes again) to cakes and muffins.  For vegan, Vegan Essentials has all sorts of foodstuffs from faux seafood to Beyond Burger if you can't get those at your local supermarket. The company also has Miyoko's  vegan cheeses and butters. These taste like the real thing and the website has a variety of different cheeses like scallion flavored cream cheese and cultured butter. It's hard to get any fancy loaves for family celebrations but Vegan Essentials does have tofu loaves like Field Roast squash stuffed tofu.  Flour is supposed to be up next when it comes to shortages. Not to worry. King Arthur has a wide variety of different flours (along with bakeware and baking gadgets). They also sell gluten free flours which is great for those with celiac disease.  Another good site for flours is Bob's Red Mill which also has nut flours as well along with all natural sugars.

If you can't find it in your local store, then go on line. It's an easy way to shop with out all the worry and the fretting.It';s just point, click and buy without the hassle.

2020 Trends

Now that a new year - and new decade is about to start people have started to wonder what will be the trends? Will we give up meat entirely? Will global warming affect our diets? What will be the latest gadget? The latest must have foods?

To be honest it's hard to predict what this decade will bring. It will possibly have something to do with climate change and us being more aware of our carbon footprint. We may be embracing more local farming by 2025 and much more locavore dining. Seasonally grown foods such as cabbage and potatoes in the winter and tomatoes and squash in the summer may replace us buying avocados and apples in January and cauliflower in July. Amazon may play a part in how we food shop and eat. There's supposedly talk and plans from the company itself that it will build big box stores throughout the US. As we all know you can buy almost anything on the site. An Amazon store will probably do the same. That means we can buy clotted cream from the United Kingdom and rice noodles from China in the store. It also means we can hopefully choose from a plethora of cooking and baking items and gadgets,Hopefully this doesn't mean the end of such local groceries like Piggly Wiggly and Stop & Shop.

As for the upcoming trends, I think more and more fast food chains like Wendy's and Mc Donald's follow in Burger King's footsteps and sell Beyond Meat, Beyond Burgers and Impossible Burgers. It's been successful for them as it has for Dunkin (formerly Dunkin Donuts),and KFC bringing in more customers and dollars.This may spread to college and university cafeterias as more and more students turn vegan or go vegetarian.Will high schools and grammar schools adopt this trend?Maybe in Canada and Europe. I can't see it happening it here until the end of the decade.More households may try either the Beyond Meat or Impossible Burgers for a healthier , greener lifestyle.Will international trends impact how we eat in this new year? Foodies have run the gamut internationally, from Nouvelle Scandinavian where moose and lingenberries were served over lichen to Vietnamese pho with American add ins like pepperoni and sliced hot dogs. Maybe there will be a trend towards Latin American food? Or possibly more Mediterranean foods. This was the decade of za'atar, the lovely mix of green spices and harissa, the spicy blend from North Africa.

What will these Roaring Twenties bring to the table? Will they bring us more sustainable foods? Or more home grown? We shall only see.

The Straw Controversy

Hard to be believe a simple plastic tube like this is at the heart of so much controversy.
Yet it is. Plastic straws are being vilified and with good reason. They are seriously harming marine life across the globe and damaging underwater ecosystems. As an environmentalist and veteran of many a beach sweep, I have picked up dozens of these. They range from the regular sized ones people use in their sodas to the tiny juice box ones.Americans throw away a whopping 500 million a day while an ecology conscious Europe tosses out about 25.3 billion ones a year. They, along with other non biodegradable plastics are contributing to the Great Pacific Garbage Patch located halfway between California and Hawaii. The worst problem with straws contributing to this is that a straw is made from polypropylene which is derived from polypropylene gas. The real damage comes from when the plastic degrades into microscopic bits. Fish eat it. We eat the fish. It's not good.

There are alternatives and many restaurants are embracing them. Atlantic Highland's  Bahr's and its' sister eatery, Moby's has long embraced biodegradable paper straws. The family who owns these ocean front restaurants know first hand the damage these tubes can do. However paper straws do have their downside as well. They can be ingested by marine life which can ruin the animals' digestive systems. Paper straws do decompose more efficiently and quicker, by almost two hundred years. Other restaurants such as Feroce's in Manhattan use bucatini, those wide, sturdy long pasta tubes. These can be great  except for two problems. They can't be used by those with gluten allergies and they dissolve during use. Another idea is bringing your own  glass or metal straws. Amazon sells a pack of borosilicate ones in pretty colors. These are highly heat and cold resistant and also come with their own cleaning brush. A set can cost about ten dollars. They also sell metal ones with silicon mouth tips, also in pretty colors. A pack of ten goes for $9.99.

What should you do about the straw dilemma? Protect the planet by just going strawless. If you have to use them, then settle for paper, metal or glass. It's a small way to help lessen a big problem.

The May Facets Of Nigerian Cooking

Nigerian cuisine is as multifaceted and diverse as the nation itself. There is street food, and celebration dinners.All reflect the country's different groups and history. It is  history full of flavor and taste.

Recipe writer and Nigerian born Yewande Komolafe wrote an interesting and extensive article - really a guide - in today's New York Times Food section. It has every aspect of Nigerian cooking and it's exciting to read it. Chef Komolafe has been here since she arrived at the age of sixteen, bewildered by such American staples as fried chicken sandwiches and the classic Slushie. She has created and cooked in such prestigious restaurants as Momofuko Milk Bar as well as testing recipes for The James Beard Foundation and Bon Appetit magazine. She had been questioning whose culture was being reflected in her cooking. She realized she hadn't included her heritage. That's changed. She shows us how truly dimensional Nigerian cooking is. The country is three times the size of Italy  and has just as many different cuisines. The dishes in the north is influenced by the availability of cattle and other livestock. Coastal regions are more into seafood than their inland counterparts who prefer smoked or dried fish. Red palm oil is a staple in the south. The dishes featured are from the country's southwest  where she's from. Some of the ingredients  such as selim pepper, calabash nutmeg and uziza seeds may be hard to find but you can find  most of them on Amazon.Make it now to combat the heat.

The recipes are just plain exciting. There are so many I'd like to try. What is surprising is that she doesn't include fufu, a staple like rice in many central African cuisines.It may be because she included the recipe for jollof rice which could be made as a side or as a main. The recipe includes a Nigerian basic obe ata which is a kind of spicy tomato  - pepper sauce spiked with ginger and a
habanero pepper. Keep in mind that this sauce can also be used in the braised goat leg recipe. Braising is quite common in the cuisine. The meat usually comes bone in and skin on. Goat is the most used in stews however Nigerian home chefs also use beef pork chicken or fish when available.If you can't find goat then use lamb,beef or pork cubes. As a side you could use Chef Komolafe's Umani Rich greens recipe. This is sort of like the Caribbean and Southern callaloo recipe. Again obe ata is the base while amaranth greens or mature spinach is cooked with dried crayfish and green peppers. She also includes street food - beef suya - which is generously seasoned thin strips of meat. What gives them their kick is yaji a dry rub mix of ground ginger , cayenne and roasted peanut powder. Tomato slices and raw onion is added to it in its' newspaper wrap. Another recipe is the pepper soup, rich with fish such as mackerel , red snapper and black bass. Exotic and familiar spices are added to it for kick and heat.

Nigerian cooking is as diverse as the country itself.Try any of Chef Komolafe's recipes and experience the rich variety of flavors and textures. It is a trip into a diversity of different veggies and meats blended with an array of exciting spices.

A Glamping Cooking Experience

Glamping has been a vacation choice for quite some time now. It's a glamorous take on camping - think a Downton Abbey picnic stretched out for a few days. What do you bring to eat? Glamorous food - what else.

Usually camping cooking  and cuisine consists of wienies on a stick If you're lucky,it's a fish caught in a nearby lake or stream , steamed in a foil packet.Cooking gear can be any of the  twigs you can find along with tin cups and plates bought at the local sporting goods store..  Put all those away. Glamping demands fine food eaten on non paper plates .Most glamping sites have some kind of canteen however there are some with  outdoor kitchens for campers. There is usually a small two burner stove and a microwave.Some sites have a communal fridge with only enough space for one group of campers. Other glamping sites offer refrigerators with freezers for two glamping groups. You will have to bring your own plates and utensils as well as some cooking gear. Glam plates and glasses can be found at Amazon . They have a Picnic At Ascot-Surrey willow picnic basket,  complete with a coffee service for two. It comes with sturdy melamine plates and glass wineglasses. There are also metal knives and forks along with salt and pepper shakers. What else to take? Camping cookware. There are sets that contain kettles, pans for frying along with spatulas for flipping filet mignon burgers.

What foods to take on a glamping trip?Treat yourself to the good stuff. Start the day with eggs Benedict on slices of brioche bread. The bread can later be used for sandwiches., whether for lunch or  dinner. You can also treat yourself and crew to French toast with fresh fruit from the nearby farmer's market and maple syrup if you're near any maple farms. Lunch can be an easy mushroom pate, served on crackers or the brioche bread. A salad is also a good choice , along with it being an easy make. Again, take advantage of any of the farmer's markets and farms you passed on the way to the campsite.A  bowl of mixed , organic greens dressed with a homemade blueberry vinaigrette is always a good choice.  You can buy already roasted chicken  to cut up and put into it. Another idea is the Provencale sandwich, pain bagnat . This a a demi loaf of French bread stuffed with sliced hard boiled eggs, Genoa tuna (tuna in olive oil), tomato and red onions. A simple red wine vinaigrette give its its' flavor. As for dinner. if you're glamping by the coast, then take advantage of the seafood. Boiling lobsters can be messy - and traumatic. Buy the meat already cooked. Serve on toasted , buttered rolls or as a cold meal mixed with crab and shrimp. Dessert can be s'mores but use Valrhona dark chocolate and gourmet marshmallows in coffee or strawberry flavors instead of the usual fare.

Glamping is a fun spin trip out of the ordinary. It requires sophisticated cooking and foods. This is what makes the experience even more unique.

Persian Best

Persian cooking is one of the oldest in the world, yet the flavors are vibrant and fresh.It's a cuisine of color and brightness, texture and flavor. It incorporates a multitude of herbs and even flowers to create different and unique tastes.

The ultimate Persian-American chef, Samin Nosrat gave the New York Times Food section a wide array of the different dishes she grew up on.Ms Nosrat who writes regularly for The Times and Sunday magazine also has a Netflix show "Salt Fat Acid Heat" where she deconstructs cooking. She and her brothers embraced all things American yet they came home to a strictly Persian home. There were Saturday lessons in Farsi,setar music and celebrating the Persian New Year Nowruz. The biggest influence were the recipes her mother brought with them. For the article which contains a cross section of the best of their recipes Ms. Nosrat relied on family recipes along consulting with Iranian cooks .(Iranian and Persian can be interchangeable although there are differences). Ms. Nosrat's family comes from the northern part where herbs are a mainstay. They're treated like a vegetable which explains the huge amounts in the recipes. One kuku sabzi -  a Persian herb frittata - has a pound of cilantro and Italian parsley . A yogurt dish has a wide variety of parsley , dill, tarragon and basil.

This is my favorite issue . I was excited to see the recipes and plan on making a few.The first on my list is the kuku sabzi.It's an interesting mix of herbs with eggs, butter and even baking soda.Some ingredients such as barberries ,I'll have to get through Amazon. There are also leeks and fenugreek added. The greens are cooked first , cooled and then added to egg mix. Another must cook is the polo ba tahdig ,a giant rice cake - which comes with some fun instructions. Ms. Nosrat writes on flipping it by first gathering up your courage and praising your ancestors.A dish for a cool Spring night is the khoresh-e ghormeh which is a Persian herb bean and lamb stew.Of course it has a pound of cilantro and Italian parsley but also has a pound and a half of lamb shoulder along with turmeric and kidney beans. It is a lengthy cook, taking three hours . Ms. Nosrat also gives us a chicken stew that's sweetened with both pomegranate juice and molasses.Ground walnuts are also added. As a side there is mast-o khiar a Persian cucumber and herb yogurt that  is a mix of herbs,raisins, and dried rose petals.

Persian cooking is must have experience for any home or professional chef. It is a whirl of colors and flavors, textures and tastes. Make some of these amazing recipes now.

Your PIcnic Hamper Guide

Mother's Day issues in the Spring picnic season.There's nothing like a day out whether at your favorite beach or park. It means fresh air and a change from eating inside. Just make sure you have some of the basics  namely a good hamper.before you hit the great outdoors

One of the most important items to have is some kind of container to haul the food and drinks.Size matters if you like to have a big, meal with sides.then splurge for an English style hamper. These come complete with metal cutlery, wine glasses (!) and pretty cloth  napkins. Salt and pepper shakers and even a bottle opener are included. The price is a good one - forty three dollars on Amazon. The hamper is made from sturdy wicker which will last for years. It's deep enough for a bottle  - or can. of wine along with a whole roast chicken and sides. Family and friends can definitely dine in style with it. A more practical one is from Scuddles which comes in a form of a large backpack. This is weather resistant and can take a few drops and dings.Like other hampers it comes complete with all the accoutrements you need for a successful picnic. It is insulated so you can bring both hot and cold foods and drinks with you. The price is reasonable -only forty-seven dollars on Amazon.One of my favorites is Igloo's Soft Cooler which is no bigger than a lunch box. It is deep and it can hold two sandwiches , two  sandwich full sandwich bags of either fruit or veggies and a sixteen ounce  can of soda. It's perfect for a small picnic and it's easy to tote around.It was around nine dollars from Stop & Shop.

If you're planning on a big picnic that requires a barbecue, then think about what's known as a hard cooler. This is a container made from a sturdy kind of plastic and come in a variety of different sizes. It's perfect for bringing marinated chicken and steaks along with hamburgers and hot dogs.These also keep bowls of refrigerated sides nice and cool too.Keep in mind that the bigger the container the higher the price. Coolers will last  for a long time if you take good care of them.Igloo also makes stainless steel ones that not only guarantee a long life but a completely chill meal. These are used for hauling drinks around and they're usually seen at tailgate parties. You can bring them to the park if you have meats to grill or to the beach , filled with water and seltzer.Another aspect to consider if you want one on wheels or a convenient carry around.If you plan big dos outdoors , then get the one on wheels. If it's  just a few sandwiches and small containers  then think about a carrier  that is half the size and weight.

A picnic doesn't start with food. It starts with the containers that bring the food. There is a wide variety to choose from. Pick one that suits your needs and will last a long time.

A Fancy Barbecue

Could a barbecue be  elegant? Can  lobster and London broil replace dogs and burgers?The answer is yes. It's just a matter of elevating the menu and adding a fancy spin on backyard dining.

First of all establish some sort of dress code for the guests. The best bet is looking to beach weddings for inspiration. A semi formal look would be fine. It's not overly formal, and comfortable enough to relax in. Think slacks and a button down shirts for men while any summer dress and sandals will do for women. As for the host's end, if you're doing the grilling , grill in old clothes, then change.If it's too much serve food that can be made in advance.What do you serve at this sort of gathering?Good food , but not the usual messy fare. The best way to decide on a menu is think of what you would have at an indoor party. One of the easiest paths to take is having a buffet.It's a no brainer to set up tables at your yard's parameters , leaving the space in between for tables and chairs. Have chilled bruschetta topping just warmed Italian and French bread slices.You can do a different spin on it , by putting swirls of basil or kale pesto on the slices.Polenta rounds  topped with sauteed cremini and shiitake mushrooms are another lovely opener.  Try cherry tomatoes stuffed with minced mozzarella - a perfect warm weather treat, especially when paired with champagne.

What about the main fare? Serve spiral ham and London broil along with roast turkey.  All can be grilled, the turkey  does need to be tented with aluminum foil when cooking outside. Another idea is barbecued shrimp which can be put on mini skewers for easy  no mess handling . Want to add another level of elegance? Then think of serving barbecued lobster tails. Surprisingly , they're easy to cook on the grill. Start with a lemony marinade of lemon juice, zest and olive oil - or canola oil for a lighter touch. Best of all the tails are a fast cook - only taking ten to twelve minutes . They can be cut into nuggets for easier, no fuss eating. Scallops are another elegant choice. Soak them in a lime marinade for something different. As far as sides, think classic yet simple.An avocado mousse, made with cream and spiked with chili peppers is a good choice,perfect with chicken or seafood. A Spring greens salad is also an ideal foil for any red meat main dish. As for ending the meal, place plates of petit fours and fancy homemade shortbreads on the table.Confectioner's sugar dusted cupcakes are another lovely way to end. Serve coffee and tea in fancy plastic cups that you can buy from Amazon. These come in silver or gold and provide a classy touch.

Yes, a barbecue can be classy and elegant. It starts with smartly dressed guests dining on fancy food on fancy plates. What a great way to start the summer grilling season.

Spring Cleaning Your Diet

Now that Easter and Passover are over , it's time to Spring clean your diet. There are no more heavy calorie laden meals, desserts and treats. It's the season for lighter fare,not to mention lighter cooking and baking.

One of the best aspects of Spring is foraging. There is a wealth of healthy greens right outside your back door. Think about adding some of  your local woodland's best in a salad.One of the most traditional and most widely used is the dandelion. The slightly prickly leaves can be eaten on their own or with other greens. Dress with a tangy lemon -honey vinaigrette and serve with grilled chicken or scallops. Another woodland green to consider is the tongue tingling garlic mustard which can be made into a pesto or cooked with pasta similar to broccoli rabe.Mushrooms can also come from the parks and forests.Many home chefs are leery about foraging them and with good reason -half are poisonous.Buy a book on foraging (your best bet is Amazon) and read it cover to cover. Think about making your bounty in a light mushroom sauce spiked with garlic and onions. The mushrooms can also be pickled and served as a side to grilled chicken, steak or fish. Those dandelion greens can also be pickled and would be a light and interesting side.

With the weather growing warmer, it's time to get out the grill. This is chance to have delicious meats and veggies simply cooked. Don't stop at the proteins. Try a light meal of grilled asparagus with peppers and eggplants. Ramps from foraging can also be grilled . Spritz them with olive oil and cook on a grill pan until ready. A fun way to welcome in the warm weather is kabobs. Think cherry and grape tomatoes with scallops and shrimp. Or try marinated mushrooms skewers for something light and different. Climbing temps usually mean the taste for grilled burgers. These too can be lightened up. Portobello caps are a great sub in for beef patties.Marinate the caps in canola oil - which is lighter than even virgin olive oil - along with  chopped onions, balsamic vinegar and garlic.Instead of plopping it on a heavy bun, think an open faced sandwich on Italian and French bread. Gardein also has veggie burgers that taste like the real thing. Instead of the usual burgers and potato salad - just have the patties plain with grilled veggies .As for desserts, we're heading into blueberry and strawberry season. Finish the meal with a bowl of mixed berries, sweetened with dark honey and topped with Reddi-Whip's coconut or almond milk whipped creams.

It's Spring. Lighten up your diet. Go for fresh picked greens and kabobs. Get rid of the greasy burgers and try the ethereal portobellos or soy burgers. Invest in the fruits and veggies of the season. You'll feel better- and lighter.
