Warm Bowls Of Comfort

 The winds are blowing colder. There's stress from work,school and the upcoming holidays. yet'a frosty evening is the perfect time to hunker down with  hot bowl  of favorite foods. Change into somethign cozu, grab a spoon and snuggle in to enjoy a hot tasty mel.

Everyone thinks that pasta should be made for a crowd or at least two ir three people. yet even a bowl of penne and rotelle cacio e pepe style can work. You can just bowl up a handful of pasta to just suit your needs. A quick cacio and pepper is adding butter, freshly ground pecorino Romano cheese(Parmesan will do in a pinch) and a few grinds of freshly ground pepper. You can adjust the ingredients to how you want then, whether buttery ,cheesy or peppery. This can also be done with leftover pastina too. This is also good reheated with butter and a sprinkling of Parmesan cheese You could also make a quick salsa cruda using a few chopped Roma tomatoes mixed with minced garlic olive oil and oregano. If you have leftover French or Italian, bread and any kind of broth you can create the Piedmontese and Valdostano zuppa de montagna. Add grated Fontina cheese on bread soaked in broth  and the microwave for a couple of minutes or until the cheese melts. This is a great and comforting bowl , full of flavor and warming right down to your toes.

Ramen soup may not be considered a comforting dish but a bowl drop in an egg and that completely changes it. The egg not only adds protein to elevate it to a meal but also adds more flavor and color. The egg  can be poached or cracked onto the hot noodles. The heat will cook them right up. You can also swirl the white and the yolk around ,letting the broth cook then. up. Use the same method for a bowl of hot buttered noodle with an egg mixed in. Add a spoonful of Parmesan cheese and some parsley if you want more color and flavor.Any bowl of rice can be turned into a hot bowlful. This also applies for the small Italian pasta orzo. Drizzle some olive oil, oregano and any grated Italian cheese for a tasty hot meal or even snack. For some color, slice up grape or cherry tomatoes to add to it. If you want to give it some zing and warm your veins add a dash of hot pepper flakes for an arriabiata style bowl. Keep in mind you can do this with polenta too. The corn meal is a great base with butter and cheese or with tomatoes and oil. It's up to you how you want to make it,

A hot bowl of pasta,  polenta, rice or ramen is the perfect way to kick back and enjoy a hot bowl. Create something that;s soothes your mind and fills your stomach. This is the perfect comfort food.

Your PIcnic Hamper Guide

Mother's Day issues in the Spring picnic season.There's nothing like a day out whether at your favorite beach or park. It means fresh air and a change from eating inside. Just make sure you have some of the basics  namely a good hamper.before you hit the great outdoors

One of the most important items to have is some kind of container to haul the food and drinks.Size matters if you like to have a big, meal with sides.then splurge for an English style hamper. These come complete with metal cutlery, wine glasses (!) and pretty cloth  napkins. Salt and pepper shakers and even a bottle opener are included. The price is a good one - forty three dollars on Amazon. The hamper is made from sturdy wicker which will last for years. It's deep enough for a bottle  - or can. of wine along with a whole roast chicken and sides. Family and friends can definitely dine in style with it. A more practical one is from Scuddles which comes in a form of a large backpack. This is weather resistant and can take a few drops and dings.Like other hampers it comes complete with all the accoutrements you need for a successful picnic. It is insulated so you can bring both hot and cold foods and drinks with you. The price is reasonable -only forty-seven dollars on Amazon.One of my favorites is Igloo's Soft Cooler which is no bigger than a lunch box. It is deep and it can hold two sandwiches , two  sandwich full sandwich bags of either fruit or veggies and a sixteen ounce  can of soda. It's perfect for a small picnic and it's easy to tote around.It was around nine dollars from Stop & Shop.

If you're planning on a big picnic that requires a barbecue, then think about what's known as a hard cooler. This is a container made from a sturdy kind of plastic and come in a variety of different sizes. It's perfect for bringing marinated chicken and steaks along with hamburgers and hot dogs.These also keep bowls of refrigerated sides nice and cool too.Keep in mind that the bigger the container the higher the price. Coolers will last  for a long time if you take good care of them.Igloo also makes stainless steel ones that not only guarantee a long life but a completely chill meal. These are used for hauling drinks around and they're usually seen at tailgate parties. You can bring them to the park if you have meats to grill or to the beach , filled with water and seltzer.Another aspect to consider if you want one on wheels or a convenient carry around.If you plan big dos outdoors , then get the one on wheels. If it's  just a few sandwiches and small containers  then think about a carrier  that is half the size and weight.

A picnic doesn't start with food. It starts with the containers that bring the food. There is a wide variety to choose from. Pick one that suits your needs and will last a long time.

Kitchen Creativity

You don"t need to go to the grocery store every time you cook a meal or even throw together a gathering.Rely on your kitchen and ingenuity.The result is an easy cook that will free you up.

This is Alison Roman's advice in her first New York Times Food article of the New Year.Her inspiration came from an invitation from a friend with an active toddler.Ms. Roman and a friend , knowing, that this fellow cook, was strapped for time.How could she shop and create dishes with her busy schedule.They offered to  do both for her.No,the friend demurred.There was shock and awe as they saw what awaited them.She had smoked fish from Barney Green grass,a well known breakfast eatery and shop.She also whipped up jammy  eggs, vegetables tossed with scallions and a bowl of greens dressed with lemon.There was even the requisite yogurt dip and crackers.

The take away from this is that the host had set out several tiny bowls that didn't require cooking.This no nonsense approach gave the friends time to graze and catch up.Their host didn't have to run to the stove every ten minutes to check up on dishes.She didn"t have to fret about having enough or worry about  the taste.It's all about flipping the ratio of time spent working to time spent with friends and family. What would this entail? Always have ingredients that can be turned into a meal at a moment's notice.Use whatever veggies are in the crisper.These can be sliced and easily pickled,Jarred and tinned foods should also be used.Purchase something special like a roast chicken or ribs.Grains should always be at hand too.Buttered rice with just a sprinkling of salt and pepper is a nice side and can be mixed with both raw and cooked before..Also have bread handy.It can be toasted and used as a base.

Easy cooking relies not only on the cook but also on the ingredients at hand.Have a kitchen filled with the basics.Then get creative for a tasty meal or get together with family and friends..

Just A Bowl Of

One of the easiest meals is one involving a bowl and a slew of good for you ingredients. It's not only an easy lunch or dinner to whip up but also a nutritious one.it can be made fresh or with ingredients. Another plus is that even novice chefs can create something delicious and complex.

Bowl meals are not new. Most of Asia have some form of this.One of the most famous and one that's gaining speed here in the States is bibimbap. It's a mix of fresh stir fried veggies and rice,topped with a fried egg. what is good with this is that it can be customized. Cabbage lovers can add both savoy and bok choy . Those who enjoy crunch can add some raw peppers and carrots. Meat lovers can tip it in their favor with extra chicken, beef, or pork, while veggie lovers can add extra greens such as kale and fiddlehead ferns,Bibimbop also gets some zing from Korean hot pepper paste or gochuchang. Rice is the base ,of this melding the flavors all together while being the grain requirement. For the dish, the veggies should be julienned however if you want to chop everything in bigger chunks you can. The same idea for the gochuchang. If it's too fiery then sub in soy sauce. It's still make the dish flavorful but won't have that mouth numbing bite. You can also get rid of the eggs as well and sub in rice noodles for the rice.

For a simpler bowl you can't get much simpler than polenta mixed with butter and Parmesan cheese. It's tasty, and filling, an easy hot meal for after a hard day's work. Again it can be varied. Sliced sausage can be added along with grape tomatoes and mushrooms.Shrimp goes surprisingly well with the grain and you can easily add it to cooked polenta. Chicken is another meat that can give the corn meal a boost.Even  left over polenta can be transformed into a tasty bowl , being reheated in the microwave with tomatoes, butter and/or cheese.An American spin on it is a grits bowl. This can even be made for breakfast with the addition of cheddar and butter. Like bibimbap, it can be topped with fried eggs for more protein.Breakfast sausage or bacon can also be tossed in. A grits bowl is also a good lunch or dinner bowl. Chicken and gravy could also work with it,. One of the simplest bowls to make is just taking plain white rice, topping it with beans and then build on it with meats, tofu and/or veggies. Black beans in sauce , topped with shredded cheese is  a tasty dinner. Stir fried steak and veggies , soaked in soy sauce would be a great topper for any wild rice variety.

A bowl meal is a filling one. It's also fun because favorite ingredients are added to create something unique. It's a chance to get creative with a simple container and just grains, proteins and veggies.

Just The Simple Things

Sometimes all it takes is a simple sandwich to satisfy a foodie. I found that out yesterday when all I wanted for dinner was just a peanut butter sandwich . Nothing fancy , nothing elaborate . Just something comforting , tasty and easy to make. I'm not alone . A lot of foodies just prefer something easy yet delicious.

Let's face it how many of us have come home and only ate a bowl of cereal and milk. It may not be the best dinner but it's still satisfying. Or how many have just had a baloney and mustard sandwich after a hard day's work. I can't even recount the number of times friends have just eaten nothing but a yogurt and coffee or fried up a couple of burgers to be put on white bread. Even a dish like mashed bananas and chocolate syrup makes a simple treat. Skip the iced cream, skip the whip cream and sprinkles. Just the fruit and sweetener will do it.

It's always good to have easy stuff in the pantry.Now is the time to stock up on Spaghetti-os along with Ramen soups . Have a large jar of peanut butter on the ready along with crackers. You can make mini sandwiches with these two if you need a quick dinner or snack.Even cans of deviled chicken and ham can be made into pates with just a dash of spice and some mayonnaise. Spread this over roils or croissants. for lunch. Keep extra eggs because you can make egg salad for sandwiches.

There;s nothing like eating something uncomplicated that doesn't require a lot of prep time. it could be a sandwich or even just a bowl of oatmeal. Whatever it takes to satisfy, then go for it.
