EAsy Sides With An Easy Main

 The main course is sometimes the easiest part of the meal to cook. There's nothing to air fried chicken tenders or pan fried steaks. You want the sides to be equally easy as well. Keep everything simple for a quick hassle free dinner.

Salad has always been every one's go to sides for centuries. You could go traditional with simple Bibb leaf lettuce and tomatoes. Just dress it with a simple viniagrette. Do something different if you want to have a fancier side. Add some almonds or walnuts along with shredded cheddar or mozzarella. You could also add microwaved bacon or bacon bits.If you're bored with the dressing then sub in lemon, lime or fresh squeezed orange juice instead of the vinegar. A quarter teaspoon  of honey or even maple syrup can give a dressing a totally different flavor. This may not be the season for tomatoes so try a one veggie salad. It's easy to whip up an simple broccoli or string bean one. It's just taking frozen broccoli or string beans and then steaming them.Use the mocrowave to save time. Dress them with a simple oil and vinegar one .Add a dash of garlic powder for extra flavor. What's great about this is that you can have trhe leftoivers with a sandwich then next day for lunch. 

Cooked easy sides can also work too. That steamed broccoli and stringbeans? They are just as good hot as they are cold. Add some butter like the plant based Melt, and garlic powder. Broccoli is also good topped with melted cheese. Heat  Kraft's cheddar in the microwave and pour over the florets. You could even toss in some bacon bits for more flavor. Tomatoes Provencale may sound elaborate and fancy but it's simply sliced tomoates sauted in garlic, butter and olive oil and topped with spoonfuls of breadcrumbs. They're the perfect side to any kind of steak or even burger. You can't go wrong with potatoes.Instant mashe d potatoes are always a crowd pleaser. They're simple to make and you cna vary the recipe  with the addition of cheese, bacon or even minced garlic cloves. Air fryer potatoes are another tasty side that everyone will like. It's just aking the smaller ones , cutting htem in half and htne coating them in a mix of olive oil, oregano, salt and pepper.They're then air fried at 400 degrees Farenheit  for ten minutes. You could also serve microwaved baked Idaho or sweet potatoes.

If you have an easymain course then think about making easy sides. They're a snap to cook. even better they're a delicious snap to eat.

A Quick Halloween meal

 Halloween can be a fun day but it can also be nightmare for parents trying to plan lunch or dinner. It's hard to eat let alone cook between answering the door and taking the kids trick or treating. what to do? Think simple.  A simple meal is a b ig help here.

Sandwiches are the way to go for lunch. Have cold cuts and bread or rolls on the ready. Use leftover chicken or roast beef from Sunday's lunch for a delicious lunch. Make yourself a hearty one if you're planning on heading house to house afterwards. Think a hero stuffed with not only your favorite slices of ham or salami but also with different cheeses like Provolone and mozzarella. Add tomatoes and pickles too. Extras like chips or pretzels can round it out. A hot lunch on a chilly day is a boon because you'll feel warm afterwards. If you're ambitious then spend tomorrow making a homemade soup that can easily be served on Monday. A good cauliflower or potoato one is not only filling but also delicious too. Round out the lunch with toasted cheese rounds using Italian ro French bread crisped up in an air fryer and a salad. Kids may just want to skip lunch and get to the trick or treating. Don't allow this to happen. Pack a favorite sandwich and a juice box if they refuse to eat at home. Take along napkins and wet wipes so there are no grubby or dirty little fingers begging for candy.

Another meal that will be affected by the holiday is dinner.Again you could also use Sunday's leftovers for Monday's supper. Cook extra pasta or sides to stretch the meal. That way you can concentrate on handing out treats. If the family still wants a hot dinner, consider take out. The addition of pizza , Chinese or burgers only adds to the excitment of the holiday. However if you feel the need to cook something fresh, then think easy. Pasta is a snap to boil and serve with a variety of sauces. Dont go homemade. There are plenty of good commercially made ones that can fill the bill. Acme and Stop & Shop have a wide range of tasty sauces,  Get a tomato basil or a four cheese one. Again make an easy garlic bread in the air fryer to sop up the sauce. A French dip sandwich is another tasty warm meal that's easy to make.Buy sliced London Broil or roast beef and long rolls. Use already made gravy and heat it up in the miicrowave. The result is a hot sandwich that will keep you filled long after the last trick or treater has gone home.

Don't let Halloween trick you into skipping lunch or dinner. Have a full meal before trick or treating or handing out goodies. It's a treat that will keep you going all day.

Sides That Stand Out

 Meals can become a little more elaborate and heartier now that the cool weather is here. It starts with tasty sides that pop and make the main dish sing. There's a lot to try , form the simple to the elaborate.

Rice is one of the best sides. It's an easy cook that goes with any kind of meat, from beef to poultry to fish. You can just boil it in water but try cooking it in either beef, chicken or vegetable broth to amp it up flavor wise. Veggies can be added for more pizzazz. Think scallions or onions if you want a stronger taste. Carrots and peas make for a more delicate one. An easy side is cooking brown rice in chicken broth and adding chopped scallions. Finish with three or four tablespoons of soy sauce. This is a wonderful accompaniment to orange or lemon chicken or ginger glazed pork. Rice with almonds and mushrooms is another stand out side that's perfect with turkey or Cornish game hens. Noodles have always been a home chef's side go to. Egg noodles with just melted butter are perfect for every kind of comfort dish from meat loaf to stew. Zing them up a bit with some freshly milled parsley or ground pepper. Spaetzles, those delicious Swabian noodles , are also a perfect foil for pork dishes. Mix them with sauerkraut for a tart , eye opening spoonful or combine with green beans and butter for something milder yet just as flavorful. This last is perfect with roasted chicken while the first is perfect with any German sausage from bratwurst to curry wurst.

Veggies have long played second fiddle to main dishes. Yet they can be just as tasty and can even outshine them. Potatoes are the perfect side. They can be made into a variety of different dishes.Of course, many choose the mashed version and why not? The fluffy mounds can hold puddles of gravy or melted butter. Yet the plain version can be a tad bland at times.Give them some oomph with mashed garlic or ginger thrown in. Keep the skins on or sub in whole cream for milk when mashing. Scalloped potatoes are an elegant side , sure to impress the family. It's mandolined potatoes baked with cream and onions along with garlic, baked for forty five minutes in usually a nine by thirteen casserole dish. Brussels sprouts have always had a bad wrap yet are a lovely and sophisticated side. The best way is steamed and then drizzled with melted butter or margarine and sprinkled with Parmesan. Yet roasted ones are also good. They can be sheet pan roasted with the main meal, drizzled with only olive oil and seasoned with sea salt and freshly ground pepper. Brussels sprouts  can also be sauteed too. Carrots are a bright addition to any plate. Many feel that carrots have to be glazed with honey or maple syrup to accentuate their sweetness. Go the opposite way and flavor them with garlic and olive oil. Try them with a butter basil sauce for a different spin.

Make sides stand out. They can be a simple veggie infused rice dish or an elaborate potato one.  Just make them as tasty and outstanding as the main dish.

Make And Freeze

if there's ever a time to make and freeze it is now. It pays to create a few dishes ahead of time or ones that will generate a lot of leftovers. All you have to do is just pop these  into the microwave or toaster oven. Doing this will save up time for meetings and schooling.

One of the easiest make and freeze is lasagna. It can be made even easier with no boil lasagna noodles and canned sauce. You can create an easy tomato sauce using your crockpot or Instapot and adjust the seasonings to your family's tastes. As for the meats try sliced sausages or ground beef. Once the ingredients are layered and baked , then it's time for freezing. Wrap it tightly in Saran Wrap first then aluminum foil .It can be refrigerated for a day and frozen for up to a month. Remember to thaw out the lasagna in the fridge before reheating it.It tastes better reheated in the oven so bake it in a  400 degree F oven for an hour. Another easy make and freeze is spaghetti and meatballs. Since this is a popular  dish make double for dinner. Let the kids enjoy it now and have it as another dinner or even lunch a few days later. Again you can have homemade or store bought sauce. Meatballs freeze very well, which is a plus. Freeze in Ziploc bags or freezer friendly containers. Keep in mind to wait for the pasta to cool. Freezing hot or even still warm foods can cause other freezer foods to melt or thaw. Remember to put the date you froze them on the begs.

Another food to think of freezing is turkey. You may want to have it as your Easter dinner for a fancier dinner. It's great for leftovers because there's so much you can do with it. Just remember to make sure the turkey and sides are completely cooled before you put the leftovers in the freezer. The meat should first be wrapped in freezer paper or foil and then sealed in air tight plastic freezer bags. Be quick about this - all packages should be placed in the freezer right away. As for the sides like mashed potatoes and green beans put into airtight freezer containers or plastic freezer bags. One of the most versatile meals that can be frozen before and after cooking is meat loaf.In fact some home chefs believe that freezing a meat loaf before cooking increases its' flavor. For first freezing, form the loaf and then wrap it very well in Saran wrap, then place in an air tight freezer bag. It can keep up to six months in there so you may want to make a few for the weeks ahead. The loaf should be thawed out in the fridge the night before cooking. As for freezing the left over slices, put in freezer containers and store for later use.

 Making and freezing  is your best bet if you're busy with Zoom meetings and home schooling. It frees you up for the more important sides of home life these days. Create now, cook later for easier living.

A Spin On Sides

Right now there may be some nail biting about what sides to serve for the upcoming holidays. There also may be sighs about serving the same old stuff again this year. What do you do? Vary the recipe. There's nothing wrong with adding some zing to tradition.

One of the side dishes most made is a bowl of mashed potatoes. People do love them  and they are good for mopping up gravy. Yet it's the same old bland taste with a mealy texture. You could turn it into garlic mashed with the addition of five to six cloves along with some grated Parmesan. Another variation is herbed with thyme and chives. This type requires the tangy creme fraiche instead of the usual milk. For meat and cheese lovers try bacon and cheddar for a different kind of flavor. A healthier and more fun version is mashed cauliflower. Like the potatoes they need to be boiled or steamed and then mashed with vegan butter or the regular kind. Add herbs and garlic or chives for more flavor. Yams are another veggie than can be smashed as opposed to roasted or boiled. For sweetness add maple syrup but then zing it up with a tiny pinch of cayenne. A different variation is sweet potato fries , perfect made in an air fryer  and an unexpected treat for the kids.

Brussels sprouts have always been a holiday and even Sunday meal staple. Yet they can be a hard sell, with their cabbage-y tang. One of the best recipes is Piedmontese style. It's simply boiling the sprouts and then adding melted butter (or margarine) and a healthy sprinkling of Parmesan cheese. You could also make roasted ones which caramelizes the leaves, making for a sweeter taste. Garlic can be added but just sea salt and ground pepper are the best seasonings. If the younger ones and carnivores still won't eat them, then refashion them into crunchy chips. These have the crispness of potato chips but with good for you benefits.  They can be baked with the turkey or air fried. Another idea that involves all the veggies is a sheet pan of sides. Using a big sheet pan, place the yams , potatoes and any greens, whether they be Brussels sprouts or green beans, in designated quadrants. It makes for an easy way of cooking and a novel way of serving.  A take on this idea is having just plain sides and creating different sauces for them, from a honey butter to a warm bacon vinaigrette to pour on them. This works well with holiday and Sunday dinner buffets.

Sides always complement the main course. Yet compliment them with new spins that will make them memorable.Add some zing whether in flavor or in cooking them differently.

Cheating On The Side

Do you give as much time and energy to your sides as you do your main course? Or do you just whip up an easy salad? or even simpler - buy a container from your local grocery's deli counter? what 's the best solution?

I sometimes wonder this as I put in everything into the main course. Take the vegan turkey dinner. Granted these are Gardein's slices of faux turkey and they're just cooked in a pan. Yet there is a lot to do with them, namely in thawing  them out along with the  gravy with hot water.It's  then banging out the ice chunks to make for a skillet ready gravy. As much as I would love to make the family recipe for homemade stuffing, rife with sage and onion, I have to stick to the easy  yet still tasty Stovetop Stuffing. I know it's loaded with preservatives along with salt and fats yet it's saves me time for other dishes . Luckily family and friends like it and it does go with Gardein's turkey gravy. I would love to make an elaborate side, something complicated, served in a ramekin however that takes time. An elaborate side cannot fit into a busy day or a meal where the main course needs a lot of prep time.Stouffer's has sides that can fit into any dinner.Their cheddar potato bake could work with steak or pork chops while their famed spinach souffle - good on its' own - is a nice side for Cornish game hens or roast chicken.

Luckily there are vegetable steamers that can easily be cooked  and cooked quickly in the microwave. I don't feel so guilty serving these. There's a wide variety to choose from, from Brussels sprouts to green beans.They have a nice fresh flavor and can be jazzed up any way. The Brussels sprouts usually get a coating of melted butter and Parmesan cheese while the green beans are turned into a summery salad with a dash of onion powder and an apple cider vinegar based dressing. One of my favorite sides  - especially in the winter - is that or a broccoli salad. It's like a taste of a July picnic in the middle of a snowstorm.Canned veggies are also  kitchen time saver and ones that I embrace. Canned corn is one of the most versatile. It can be put into a cold salad with minced red and green peppers or it can be cooked in a buttery cream sauce.Toss a can into cornmeal batter for a more flavorful and texture corn bread.The golden niblets work well supporting roast pork or roast turkey.Of course in hot weather a simple yet nutritious side is any salad. No time? Then go to your local deli for a few different ones or make a super simple cole slaw.

Is it cheating to buy sides or pick up a couple of packages of frozen ones? No. There should be no guilt.They've done their job if they complement the main course and everyone enjoys them. Don't feel guilt, just glad that they're such a convenience.

Your PIcnic Hamper Guide

Mother's Day issues in the Spring picnic season.There's nothing like a day out whether at your favorite beach or park. It means fresh air and a change from eating inside. Just make sure you have some of the basics  namely a good hamper.before you hit the great outdoors

One of the most important items to have is some kind of container to haul the food and drinks.Size matters if you like to have a big, meal with sides.then splurge for an English style hamper. These come complete with metal cutlery, wine glasses (!) and pretty cloth  napkins. Salt and pepper shakers and even a bottle opener are included. The price is a good one - forty three dollars on Amazon. The hamper is made from sturdy wicker which will last for years. It's deep enough for a bottle  - or can. of wine along with a whole roast chicken and sides. Family and friends can definitely dine in style with it. A more practical one is from Scuddles which comes in a form of a large backpack. This is weather resistant and can take a few drops and dings.Like other hampers it comes complete with all the accoutrements you need for a successful picnic. It is insulated so you can bring both hot and cold foods and drinks with you. The price is reasonable -only forty-seven dollars on Amazon.One of my favorites is Igloo's Soft Cooler which is no bigger than a lunch box. It is deep and it can hold two sandwiches , two  sandwich full sandwich bags of either fruit or veggies and a sixteen ounce  can of soda. It's perfect for a small picnic and it's easy to tote around.It was around nine dollars from Stop & Shop.

If you're planning on a big picnic that requires a barbecue, then think about what's known as a hard cooler. This is a container made from a sturdy kind of plastic and come in a variety of different sizes. It's perfect for bringing marinated chicken and steaks along with hamburgers and hot dogs.These also keep bowls of refrigerated sides nice and cool too.Keep in mind that the bigger the container the higher the price. Coolers will last  for a long time if you take good care of them.Igloo also makes stainless steel ones that not only guarantee a long life but a completely chill meal. These are used for hauling drinks around and they're usually seen at tailgate parties. You can bring them to the park if you have meats to grill or to the beach , filled with water and seltzer.Another aspect to consider if you want one on wheels or a convenient carry around.If you plan big dos outdoors , then get the one on wheels. If it's  just a few sandwiches and small containers  then think about a carrier  that is half the size and weight.

A picnic doesn't start with food. It starts with the containers that bring the food. There is a wide variety to choose from. Pick one that suits your needs and will last a long time.

Pace Your Christmas Cooking

One of the craziest Christmas tradition, at least here n the States is cooking and baking for just one day - Christmas. Everything has to be made for December 25th;A better and less frantic idea is pacing yourself. No one can make a ton of food for just one day. Spread out the feasting to two or three days.

That's the philosophy I'm following.As I pointed out yesterday I was going to bake two different kinds of premade cookies. Then on second thought  it seemed kind of crazy, We'd be inundated with them and they'd lose their specialness. Plus I have a mess of other things to do between wrapping presents and the usual household chores.To spend an entire Sunday afternoon in the kitchen would seem too much. The chocolate chips can be made when the sugar cookies get all gobbled up.After all the holidays are supposed to last for twelve days until Three Kings or Tre Re day, January 6th. I have enough time to create all sorts of sweet treats, from cookies to maybe a cake or a giant sharing cookie for the New Year's. I do not want to go crazy with baking. It could lead to all sorts of disasters  from under baked to burnt.Another reason for pacing the desserts is the pan d'oro I bought. I will be dressing it up in the Italian tradition where this airy brioche type bread is sliced horizontally and filled with vanilla cream pudding.The cake is a foot high and will be more than enough for three people.

Cooking should be treated in the same light.There are many who cook huge meals on Christmas Eve followed by a second banquet Christmas Day. This is taxing even for the most experienced home chef. There are usually two roasts, sides and salads. Sometimes two or three main courses share
 the spotlight.Families spend the days before preparing sides. Then comes the letdown on St. Stephen's Day, or Boxing Day, December 26th. This day can be celebrated  not with leftovers but with fresh cooked main courses and sides. My Christmas Eve will be making gemelli - those twisty pastas with homemade sauce. I could have saved it for our Christmas Day dinner but one, it would definitely be too much and two,it wouldn't go with a vegan turkey dinner.It would also be a day of nothing but cooking and a night of washing up. St. Stephen's Day is going to be when  I take panettone the Italian fruitcake and turn it into French toast. This is the perfect "day after" lunch, just a lazy day to enjoy a long brunch y meal, and go over the gifts.Whatever wasn't made during these three days will be baked or cooked in the ensuing ones.

The holidays can drive anyone crazy, especially the home chefs and bakers. Pace yourself. Stretch out the holiday kitchen scene before you stretch out yourself.

Your Choice Of Holiday Sides

One of the treats of the holiday table is the vast array of sides. From jewel toned cranberry jelly to home bowls of stuffing, holiday feasters can enjoy a wide range of flavors and textures,Best of all most holiday roasts can go with a wide variety of sides.These could be healthy or decadent, yet all delicious.

Sweet sides work well with poultry and pork. Cranberry jelly or chutney goes well with both turkey and capons. For more adventurous home chefs. you can make your own cranberry jelly.This is an easy mix of fresh cranberries cranberry juice, lemon and maple syrup (!) first cooked over a high heat and then a lower one for only ten minutes  or until the mixtures thickens into a jelly. Chutneys also work with fowl and they can be ladled over the meat too for added flavor. Try an apple mango one with a melange of cubed Gala apples and mangoes ,blended with dried apricots  and spiced up with mustard, cloves and black pepper. Pork and hams always benefit with the addition of sweet sides. Grilled , unadorned pineapple rings work with both these meats. You can add a very small sprinkling of sea salt to give it a boost of savory. Apples are another excellent accompaniment. You can try homemade applesauce  to go with a pork loin roast or better yet , a warm apple and onion salad with the addition of freshly fried bacon and a tablespoon of brown sugar. Apples can be sliced into a stir fry, cooked with kale, cabbage and Brussels sprouts. Add some apple cider vinegar for tartness and walnuts or pine nuts for crunch. Sweet potatoes are the ultimate sweet side. Instead of layering them with marshmallows, turn them into tasty fries for the kids or a creamy , buttery mash with a drizzle of maple syrup on top.

There are many savory sides to try as well. Stuffing is always in demand, especially if you have turkey. Make it interesting by using nothing but pretzels for a tastier side. Eggs  and sour cream bind together three cups of pretzel sticks that have been soaked soft in hot water. Onion powder is then added to the mix for more flavor. You can also make it in the traditional stuffing way, with sage and onion being first cooked with celery and then adding in the pretzels. Mind , this has to be cooked on it's own and not in the bird. Another fun side is Yorkshire pudding, perfect with any roast beef or London Broil. It's an easy recipe.It's four eggs, and equal amounts of milk and flour. What makes these tasty popovers sing are the meat drippings. mixed into the batter. They're wonderful, loaded with roast beef slices and gravy. For something a bit more healthier, try the classic string beans almondine.You can use fresh if you can find them or frozen green beans along with almonds browned in butter or margarine. Brussels sprouts are another emerald gem, perfect for the holiday table. Simmer in hot salted water until tender but firm. Drain and then dress with melted butter and a liberal sprinkling of Parmesan cheese. Of course no meal would be complete without potatoes. You could have them in a mash but enrich it by adding sour cream and chives or the skins for added nutrients. Scalloped ones are a supremely elegant addition to any dinner or holiday lunch.its just taking sliced potatoes and baking them in a creamy roux.

Sweet and savory sides will add oomph to any holiday meal. They're good ,complementing the main roast or just wonderful on their own. Make one or make them all for a special treat.

CHanging Sides

Any holiday dinner is about the sides. Yes, the main dish is the star but the sides either make or break the entire dinner.  Sometimes these need an added zip to make them more interesting.It just takes a dash of this or a pinch of that to elevate any Thanksgiving meal to the next level.

One of the easiest dishes to change and glam up is mashed potatoes. The homemade kind is good on ts own, especially if you add in milk and butter. However if you have the instant    jazz it up to get rid of that processed taste. Add some bacon bits for a salty smoky twist. Pepper flakes or even a liberal dash of fresh ground pepper can turn a bland dish zingy.Baked potatoes are another blank canvas. You can do restuffed potatoes which is baking them first, and then taking out the  middle. This is then mashed with milk and put back into the potato skin. Paprika or cheddar cheese is then sprinkled over it and the whole thing is placed under the broiler for a few more minutes. Yams can be dressed up too. Most home chefs over sugar them, mixing them with marshmallows and even coconut. This is kind of silly because the yam is a root veggie, not a dessert. They can be turned into fries and sprinkled with pepperoncini as a fun side to usually staid holiday meal. Yams can also be turned into puffs that can be dipped into gravy.

What about the usual suspects? Carrot coins are always served at the Thanksgiving meal.Mix it up by serving them mashed in a nice buttery sauce.Another idea is shredding them and    serving them a cold dish  in the form of a slaw.Make it refreshingly light with just an oil and lemon dressing. Brussels Sprouts, one of the most traditional Thanksgiving veggies is usually served with butter  cheese. Yet they can be made crunchy and fun by turning them into chips.Peel each sprout and put the leaves on an oiled cookie tray. Use olive oil for this and also for drizzling over each leaf. Sprinkled with sea salt and bake for three to four minutes.These also make a neat appetizer.Another idea is a hot salad with Brussels sprouts kale and onions. A Dijon mustard dressing is the best topping but you could also have a lemon lime one as well.

Sides are the scene stealers in any dinner. Make them even more appealing by zinging and zesting them up with different spices or cooked in an entirely different way . If you loved them already changing them up will make you love them even more.

Healthy Picnics

Warm weather is here and with it the urge to pack a picnic basket. The problem is some  picnic foods can be bad for you ,laden with fat, sugar and salt. The best idea is create a healthy outdoor meal that's good for you as well as being tasty .It;s pretty simple with good results.

Sandwiches have always been a picnic staple. They re easy to make and easy to pack. However most people load them up with all sorts of bad ingredients, from the bread to the condiments. Start with whole wheat or any of the grained breads. They're just as tasty as the white and better for you. Most people usually like ham or bologna as a filling. Rethink your sandwich with leftover chicken or turkey. Even left over roast beef can be a tad healthier than any processed cold cuts. Mustard is one of the best and healthiest spreads. If it;s a bit too strong then think a lower calorie mayonnaise, perhaps mixed with cumin or rosemary. Another idea is try  drizzling olive oil on your sandwiches especially if you're using a whole wheat baguette as a base.

What makes good picnic? Sides. As fun as they are on any picnic , ditch the chips. Sub in homemade kale chips or try baked potato chips like Pringles.Another fun crunchy to bring along is sliced pickles or even gherkins. Fresh veggies such as grape tomatoes, slicked cukes and carrots are another good nibble or side . Dip them in a mix of plain Greek yogurt and your choice of spices.If you still want to bring salads, then make them healthier. Use whole wheat macaroni for your pasta salads and sub in olive oil and lemon for mayo. Add herbs and scallions to give it some zing and zest. Healthy Tailgating

Healthy and tailgating usually aren't used in the same sentence however it can be done. You can create healthy football fare that's both tasty and good for you. The best part is that you won't be sacrificing favorites or flavor. Another good thing is that they're easy to make.

Most parking lot parties start out with a grill.After all there's nothing like the taste of a well done burger or dog. However these can be bad for you with all that cholesterol and nitrates added. Switch to turkey or vegan substitutes. They taste the same yet provide you with lower calories and less preservatives. Also there is so much variety with veggie burgers these days you can bring four or five different types. Flavors range from the spicy Southwestern to the mushroom lovers to the tomato and soy cheese Italian. Serve on either rye or pumpernickel rolls for a healthier alternative to white bread.

Sides can be made just as healthy too. Cole slaw , always a favorite, can be pared down . It can have added crunch by introducing carrots and both red and green pepper strips to it. Also cut out the mayo and sub in a vinaigrette. Potato salad, long a tailgater standard, can be made with less mayo as well,or even with just oil and red wine vinegar. Add some onions and celery for flavor and texture . If your crew demands a macaroni salad, again make it healthier with spelt or whole wheat pasta and splash it with a low cal Italian dressing.

Tailgating is fun. Yet it doens't have to wreck havoc with your diet or health concerns. You can create a tasty, healthy party that's sure to create fans!

What Sides Are You On?

Thanksgiving is the time of sides. No, not the faction that you;re with family or friendwise but those extra little side dishes that had flavor to the dinner. Everyone has their favorite from the rich green bean casserole to pearl onions.

What makes a good side? It's a dish that complements the main one, in this case turkey. Green veggies are always a good choice. They are perfect for those watching their weight and aren't filled with calories or fat. You can make everything from collard greens to snow peas. Usually the best way to prepare a holiday side is to just sauteed with some butter or margarine, sea salt and some cracked pepper. You can add a little minced garlic or shredded thyme or oregano. Don't have a side dish that's too overpowering otherwise it will eclipse the main one.

As for potatoes, yes they make wonderful sides. Yet ask yourself do you want to serve them with stuffing and rolls. Homemade mashed ones are 237 calories a serving while baked ones are 290. Add on hefty desserts and you've got yourself a holiday fat explosion. If you;re looking to eat healthy then , stick to cooked carrots or string beans. Still craving taters? Then go with the much healthier sweet ones that come in at only 157 calories without the butter or marshmallow covering.
