Friday Fish Dinners

 Now that we have Lenten Fridays , it;s time to start thinking of fish dinners. Any seafood is versatile and can be made into a variety of dishes. They can range from scampi to tacos, from the sophisticated to the fun.

A fish dinner can be both elegant and simple. Salmon fills the bill on both . Try oven baking it  after brushing garlic butter on it. You could add  pinches of oregano and rosemary too for a more herbal flavor or try a brown sugar -soy sauce glaze for an Asian vibe. It can be served with noodles, pasta or rice along with pan baked veggies.A quicker yet just as elegant meal is a salmon salad, This is flaking the cooked fish and adding it to a variety of greens along with grape tomatoes and sliced bell peppers. Dress with a simple vinaigrette made from a mix of white wine vinegar , olive oil and oregano. Another delicate flavored fish is tilapia, This has a sweet, almost no"fishy" flavor which makes it perfect for sauce like the French Meuniere. The sauce is only tree ingredients of browned butter, lemon  juice and parsley.It's also a good sauce for asparagus too.You could also make a Parmesan crusted tilapia too with the fish coated in a mix of the cheese and paprika , the last for color and bite.

Yes ,Friday demands fish and chips too. This British classic can easily be cooked up in an air fryer.For centuries the dis as been made with cod.It's the best to work with because of the firm flesh. The filets would come apart wen being breaded or fried. A traditional batter involves beer which gives it an extra crispy crunch;If you don;t like beer sub  in seltzer just to give it the batter that bubbly texture. Usually a cup is used a long with one and a quarter cups of flour and baking soda (for more lift) Two eggs bind it all together and you can add a dash of cayenne for some zing.The filets are cooked for about twelve minutes at around 400 degrees Farenheit. Chips or fries are a must too.How do you get them crispy and perfect with malt vinegar or ketchup? Dip them into a slurry of cornstarch and water.it's taking russet potatoes and cutting them lengthwise, first into planks and then into plants. After make  a of slurry of three quarters of a cup of water mixed with three tablespoons of cornstarch. Cook them in an oil sprayed air fryer for eight minutes at 375 degrees Farenheit. FLip them over and cook for another six minutes more  or until golden brown.

Friday's are now reserved for fish. There are many recipes to choose from. ENjoy a delicate or a hearty one.

Still Up In the Air

 Christmas is a  week away and there are some home chefswho still have no clue as to what to make? Ham ? Turkey? Prime rib?  Should  it be vegan? What about the desserts? All cookies or something fancier.

It's OK to still be indecisive a week out.Plns change as do the guest list. You may have more leat lovers than originally planned or a few vegans and vegetarians were added to the list. There's also the tomec constraint. Many home chefs are working up until Tuesday next week. Between office Christmas parties and  end of the year work, there's little time to take off and go grocery shopping. Add in school pageants and tree trimming parties with family and friends and there's zero time to do a proper trip around the market. One way to look at this is to go simple. If it's only two people keep the amount  of food to four servings each. You could serve a tree pound breast which is more than adequate serinv wise. Add I stand stuffing like Stovetop or Lidl's version along with one or two frozen vegetables. It's still a festive dinner but without all the fuss.. For larger groups such a as three or four, what about a capon? This is a gelded (fixed )rooster and the bird can get as big as a small turkey. You can still have all the trimmings and add a jar of turkey dressing for the stuffing. 

What about sides? You could replicate Thanksgiving for an easy cook. There's stuffing cranberry sauce and some kind of veggie .Yams or sweet potatoes can be added too.  However you many want something fancier.Stringbeans amandine are a nice side. This Gallic classic involves toasting or sauteing almond sauces in butter and adding chopped shallots, a cousin of both garlic and onions. It's then mixing the sauce with the more tender haricot verts (if you can't find these then frozen green beans will do). This is the perfect side with any dish, from chicken to beef to fish. Another elegant side are Brussels sprouts Piedmontese style. This is from the northwestern part where butter and cheese figure prominently in cooking. The Brussells sprouts are cooked and then drenched with  melted butter(you can also use I Can't Believe It;'s Not Butter). Give them a liberal sprinkling of Parmesan cheese. What about pork or even ham as a main dish. Then try spiced apples. These are cubing apples and then cooking them in  a skillet.Add butter, brown sugar, maple syrup and cinnamon for a tasty sweet savory flavor. Cornstarch is stirred in to t hicken the sauce. This is perfect ladled by a slice of roast pork and perfect with its' dressing.

Christmas dinner menu still up in the air? Don;t sweat it. Make what you think is best. Get  the ingredients now or Christmas Eve. What matters is a tasty dinner that makes  for a good holiday dinner.

Taei Peruvian Mustard A Good Kind Of Hot

 What goes with a hot dog on a chilly day? Tari's Peruvian Hot Sauce ! This is a great condiment nor just for dogs and brat s but also for chicken and even pasta, pizza and chili.

I really like this mustard/ I enjoyed it on a tofu turkey sausage for lunch. There are two kinds of hot sauce. 

One is a more mustardy type , with a fiery bite. This is perfect on hot dogs and even hamburgers. The milder sauce (whichresembles Thousand Island dressing) has a milder creamier flavor.
Both sauces are pure Peruvuan (hence the very cute llama logo) and made with Peruvian peppers. They're unique to Peru, a bright yellow with a fruity spicy flavor. It works Wells in a sauce. I can see this on chicken tenders along with a great dip for fish and chips.You can add a few drops to tomato sauce and give some zing to pasta and pizza.I also planning on adding some to homemade chili too.

ANother Peruvuan who likes this is Paddington. He may have a fondness for orange marmalade but he may change his mind after tasting these sauces.

A Coptic Christmas Feast

 Tomorrow is Christmas in the Coptic Orthodox as well as in the Serbian. Ethiopian and Russian orthodox to name a few. It's a day to feast on lush dishes as well as observe centuries old traditions. 

This sect of the Orthodox Church observe the Julian calendar which predates the Gregorian one that most Christians follow.It actually starts with a fast from November 25th to January 6th and regards all products from animals. This is called the Holy Nativity Fast and it shows not only devotion but self control.At the mass before Christmas Day tonight a bread marked with twelve dots representing the apostles is presented at the church.It's called the qurban. After the fast is broken usually with the fatta -a light soup served with roasted bread vegetables and meat.iI;s usally made with  a lamb stock which can be acidic and also garlicky. There are also hardboiled eggs and cheese to eat too. This prepares families for he big feast on Christmas Day. This consists of roasted turkey or chicken and macaroni in a bechamel or white sauce There is a sesame cookie called kahk made with pistachios and honey alng with ghee or melted butter to give them a rich flavor.

Other Eastern Orthodox countries also observe January 7th Christmas. Serbians also have their take on the Christmas feast. They serve roast pork with either dried cherries or apricots or pecenica served with  sarma fermented cabbage rolls stuffed with  ground meat, rice, eggs and  old bread. They're cooled for twelve hours in a regular pot on the stove top or oven cooked in a clay pot .A fstive mimosa salad is also added to the table. This is kind of live a saovry trifle serve in a glass container so all can see its' layers.The first layer is usually a pickled fish  followed by a tier of cooked and chopped potatoes. Carrots and sliced green onions add another punch of flavor and color. It's topped with a thick layer of grated cheese and mayo. How is the meal finished? With platters of small cakes.  Serbian home bakers will make madarica or Hungarian Maids small layered cakes consisting of biscotti and caramel, They're topped with a rich layer of dark chocolate. Kids and adults alike will love peaches or breskvices  sandwich cookies that look exactly like the fruit. They're baked first, then hollowed out and filled with peach or apricot jam. The coloring comes from first dipping th ewhole cookie in diluted yellow food colring and then dipping the tops in diluted red food coloring. After they're rolled in granuated sugar.

Easy Winter Dishes

 The best thing about January is that it's a time to relax. Gone are the hectic holiday meals and harried work days leading itno parties. It's simply a month to just take it easy. That also applies to cooking.  A simple and easy meal and dessert is all you need.

Regular contributor David Tanis wrote about this in yesterday's New York Times Food section. He believes on easing up on cooking and baking yet retaining flavor.It also doesn;t have to feel restrictive either and if you want to keep it festive then do so. he offers three dishes - carrot -leek soup with miso followed by baked fish with mushrooms and ginger. Dessert is  triple sesame tea cakes. Mr. Tabis uses Asian pantry staples like miso and ginger for the savory dn toasted sesame oil for the cookies.The influence gives all three recipes oomph and elevates them from just plain winter dishes to something special despite their easiness. The soup starts with a homemade vegetable broth made from the leeks and carrots. They're  first sauteed in butter  and then simmered in salted water to create a fragrant broth.Both sare preed to gether for a creamy mouth feel and then the miso is added,It can be yellow or white however the yellow is saltier . If you want to taste te veggies then use the white instead.

As for the dush Mr. Tanis recommends eihter halibut, bass or grouper. They;'re baked in just salt and pepper. while they're baking make the mushrooms. These are shiitake ones, without the stems cooked in soy sauce and ginger. This sauce is then spooned over the fishn and put back into the oven to be baked fo twenty minutes at or an  additional twenty to twenty-five minutes. You could sprinkle on scallions and cilantro springs for color and more flavor. Make sure to pou any gingery pan juicings over the fish. End the meal with simple triple sesame tea cookies.This is an easy cookie dough enhanced with the toasted seasame seed oil along with tahini or sesame paste.Te liquids are blended first with  a mix of  flour  and baking powder slowly added in later. It's then rolling the dough into walnut sized  balls followed by rolling them in sesame seeds. Bake them for twenty minutes at 350 degree Farenheit. A nice drink for this meal would be a hot  ginger or green tea ,

Janiary should be a simple time with easy meals. Make these recipes for that simplicity  but with flavor. They're a great meal that can be easy to make and delicious to eat.

Breaded Or Battered Which Is Better

 There's nothing like a crunchy nibble. There's something satisfying about hearing that crispy sound and that mouthfeel of a crumbly bite. Yet here's the question - produces that feeling? Battered or breaded?

Many people love their food battered. It can proiduce a loud snap when bitten into along with adding extra flavor to the food it's covering. Battering can range from tempura which produces the ultimate battering experience as far as crunch and taste to beer battered which can be slightly soggy.Seafood and chicken do well with a good coating of batter;It produces a tender  juicy meat and a nice golden and sometimes flaky exterior. what makes for the best batter? One that has the basic ingredients of flour water. Milk and cornstarch are added for silkiness and a dash of baking powder for rise and puffiness. Sugar and salt is added for flavor too. You coul;d add a good heaping amount of  groundpepper as home and commercial chefs do in southern Indiana. This gives the entire piece of chicken that spicy taste. Chinese five spice mix would give the batter a whole new taste level.Anything can be battered fried. The Scots love their Milky Ways with a coating thats fried almost a deep brown. Onion rings and shrimp are also good with a batter coating.

The much more healthier choice is breading, Bread crumbed fish doesn't soak up as much oil as its' battered counter part.it's because it's consdiered a "dry" coating while batter is considered a "wet". Breading takes an extra step The food is first dipped ina beaten egg and then dredged in either regular or panko breadcrumbs. The main problem with the technique is that breading can easily come off. There can be "bald" spots where the meat or veggie is exposed. The coating should be thick to ensure a nice crunchy exterior. What's a good breading recipe? A simple one combines one cup of flour with one cup of breadcrumbs along with teaspoons of paprika, salt and pepper. You could add tumeric ro chili peppers for more color and flavor. Another choice is panko which is lightly baked coarsely ground crumbs. Keep in mind that you can also get breadcrumbs Italian style which have garlic powder and oregano added. Veggies, like cauliflower are excellent with a bread crumb coating. You can also do the same with broccoli and shrimp.It gives both a nice crunch. 

What's better? Battered or breaded? That 's up to you. If you're going for healthy , then breaded.If you want more crunch and taste, then battered.

Have Kitchen Will Travel

 Many home chefs love nothing more than a vacation. They also love to cook too, which proves a quandary. Do they bring their gear with them? Or see what awaits them at their vacation home?

Some holiday going  home chefs  are thinking about bringing their air fryers with them. This can be great because there's a familiarity with the controls. There's no learning about a new stove and adapting from gas to electric or vice versa.It also cooks food quicker too.Shrimp can easily be cooked up in less than ten minutes.Home made crab cakes can be air fried in just minutes. It's also good for making bacon and even cinnamon rolls for breakfast. There are smaller air fryers that are perfect to bring on a holiday. Try the Vortex Four In One which can also roast and broil. This is perfect for steaks and chicken pieces tooIt can also reheat, great for all those restaurant leftovers. There;s also the Cosori which is  sleek three to seven quart one.It also tells you when to shake the food too for even browning. You many want to bring a grill instead. Cooking out can be better because you're not messing up the kitchen where you're staying (although some motels and campsites do have barbecue areas). A portable, folding grill is perfect for cooking easy vacation foods like hot dogs and hamburgers.

What about other kitchen basics? Should you bring your knife set with you? Yes, if you feel like you'll need it , especially for deboning fish and chopping veggies. Don't bring the entire set. Good bread, paring and fish knives are all you need for a week or two of holiday prep and cooking.Keep in mind that you're never far from a Target or Wal-Mart where you can also buy these if you forget any of them. If you're barbecuing , plan on bringing tongs and a barbecue fork. Other items are containers for leftovers and raw ingredients. There are even egg containers where you could bring a dozen eggs safely and without any breakage. If your rental has a microwave, it doesn't hurt to pack some microwave plates and pots for cooking and reheating. You can even tote along your microwave corn popper for a healthy snack to enjoy at night. Should your favorite mugs get packed with the beach towels and sunscreen?If you want to , yes. They can not only hold coffee and tea but soup if you're craving it. They can also be used for making mug cakes too, if you're craving a homemade baked treat.

Yes, you can bring your kitchen or part of it with you on vacation. It can make for easier cooking  in a strange space. Just pack and go - that's it.

A Spin On Spaghetti

 Spaghetti is always good whether it's with a  traditional marinara sauce or just con burro with butter. yet they go to a new level with an Vietnamese - American spin on them.It's a tasty and  relatively easy way to enjoy this classic pasta.

Regular contributor and chef, J. Kenji Lopez Alt wrote about them in yesterday's New York Times Food section. They were the creation of Helen An at Thanh Long Restaurant in San Francisco and have become a much beloved classic of the city. It all started with Ms. An's family the Trans fleeing North Vietnam in 19955 and settling in the South Vietnamese city of Dalat. Twenty years later she was forced to flee again, this time with her husband and three daughters to San Francisco. It was here where they arrived penniless to live with her mother-in-law Diana, a small deli owner. Thanh Long's history is murky. Elizabeth An, Helen's daughter claimed her grandmother bought an Italian deli however there is an ad from 1971 promoting it as a Vietnamese one. Ms. An who had experience in both Chinese and French cuisine  felt the restaurant would have more success if the dishes appealed to a local clientele. A disappointing dinner at a Nob Hill Italian restaurant  gave birth to the garlic noodles.It a mix of whole wheat  noodle sauteed with fistfuls of garlic and a blend of fish oyster, and soy sauces. 

Chef Kenji Lopez puts his own spin on it. He uses spaghetti instead of  the whole wheat noodle  - a nod to its' Italian roots. and another innovation, cooking them in a skillet. Gone is the big pot filled with quarts of boiling water. It also means more concentrated pasta water which provides for a tasty plate. He cooks it for two minutes shorter than recommended for a chewy al dente texture and then transfers it to a wok or saucepan. The flavor comes from the addition of four tablespoons of butter (or a plant based one like Melt). There is a lot of garlic  - namely twenty cloves, mashed in a mortar and pestle . You could lessen it by half if it's not to your liking. It's then time to add the sauces. Keep in mind this will have a briny , fish flavor, thanks to the fish and oyster sauce. Chef Lopez-Alt uses four teaspoons of the oyster and two for the fish and soy. However you can adjust the amounts depending on your taste. It seems like a dish that can constantly be adjusted with each make,Scallions are added for color and flavor and Pecorino Romano cheese for more flavor.

Garlic noodles are an interesting spin on spaghetti. Try them for a different type of pasta dinner.It's a nice change up from the usual.

Healthy And Delicious Instant Pot Recipes

 The Instant Pot has become a large part of a home chef's arsenal. There's a million recipes you can make with it. Now there's a new cookbook that features the healthy side of Instant Pot cooking, America's Test Kitchen Healthy And Delicious Instant Pot Inspired Meals With A World Of Flavor.(Penguin Random House 2021)

America's Test KItchen, PBS's highly informative cooking show has come out with another of their cookbooks, this time featuring healthy recipes cooked in this wonderful device.What is great about this compilation of recipes is that combined with the Instant Pot , you have healthier recipes made easier. The machine will brown and simmer. It also cuts the long cooking times of such food as black beans to a fraction of the  hour needed. There's also less clean up time too. The book also has tips for using older models as well as what other tools to use.  The authors point out that older Instant models have what's known as a moat at the pot's bottom. any oil used has a tendency to draw away from the center and get stuck in the sides. They recommend stirring to get a well blended sauce or gravy. They also explain the differences in release techniques and why it's important to adhere to the recipes.There are also pages demystifying the Instant Pot for beginners and a troubleshooting page.There are pages featuring how to create a tasty bowl from the base to the crunchy toppings.There are also tips for cooking proteins and how to present them, Home chefs should definitely follow the suggestions for adding flavor to the braising liquids and browning.

These recipes are great for eating healthy. The book starts off with healthy salad dressings and sauces with such recipes as pomegranate vinaigrette, pesto and harissa. There are also recipes for crunchy toppings like an everything bagel blend to quick pickled vegetables. The main recipes are not your typical healthy food fare. They are divided into the different meats and fish along with an extensive vegetarian section. There are shredded beef tacos made with chuck and spiced with ancho peppers and lager. It's served with a jicama slaw, Chicken lovers will enjoy soy sauce chicken cooked with Shaoxing wine and star anise. For a different change up try abgoosht , the Persian rustic stew of lamb and chickpeas. It also has the Persian add ins of Persian limes and tamarind. The only hard part is brining the chickpeas for eight hours. This is the perfect dish on a chilly fall day, as its' rife with a variety of flavors from saffron to turmeric.  The Instant Pot fish dishes are tasty as well. Mussels with red curry would be the perfect Saturday night meal while Salad Nicoise would make a nice Sunday lunch. Vegetarians will appreciate the braised tofu and lentils zinged up with Thai curry paste and the Korean influenced sweet potato glass noodles with portabellos and spinach, There's also a fiery chana masala too. The book ends with nutritional values for every recipe.

Leni sorensen A Food Historian

 We need food historians. They are the ones that connect us to our culinary past. They show us where our recipes, likes and dislikes come from.Leni Sorenson is one of those who brings history to life through eating.

Regular contributor Kim severson wrote about this amazing woman in today's section of New York Rimes Food. Ms. Sorenson is a seventy-nine year old firecracker with a salty mouth and sweet foods of the past. she is also the star of Netflix's show High On The Hog based on the book of the same name by culinary historian Jessica B. Harris. she was the one who recommended Dr. Sorenson for the program. The good doctor has had an interesting life. she dropped out of  san Diego High when she was sixteen to become a folk singer. she did return, earning a PhD at age sixty in american studies from The College Of William and Mary. she learned about cooking from her step dad who was from Louisiana and took her to barbecue stands and taught her southern Creole recipes. she also jumped into the  hippie California cooking scene , along with hosting dinner parties and teaching informal classes on vegetarian cooking and sprouted grain bread. she moved to Canada met her second husband through a personal ad in Mother Earth News. she move to his south dakota home where she learned canning and how tot urn milk into cheese and yogurt.

It was her time at a historic site where she got into the history of black cooking. she could also spin wool , butcher hogs and can venison. Her house , Indigo House is a now a place for those to eat historic dishes and discuss them for eight-nine dollars. she also teaches canning. The historical dinner Ms. severson recently attended had the theme of three centuries of female chefs. The first course was a simple cold tomato soup adapted from the 1770 book Receipt Book of  Harriott PInckney Horry, a South Carolina cook. The second course was fish fricasseed in stock cream and butter. It was a recipe from Malinda Russell's 1866 cookbook A Domestic Cookbook COntaining A Careful Collection of Useful Receipts for the Kitchen. This is the oldest known cookbook by an African American woman. Dr. sorenson served it  with a salad and  one of Tom Jefferson's favorite tarragon dressings. dessert was Edna Lewis' custardy bread pudding taken from her 1977 book The Taste of Country Cooking.Ms. Lewis was the only black woman  who wrote cookbooks back forty years ago.

Dr. Sorenson is a gem, full of good history and good recipes. She will not let the past die. Thanks to her , the history of African American history will go on

The Perfect Stew

 January is a notoriously cold month. What better than to chase that chill than with a good, well made stew. There's something about the blend of veggies and meat with a good gravy. It's the perfect meal for these bone numbing days.

What makes a good stew? It starts with the meat if you're making a meaty one. Get cuts that are very tender and flavorful.If you can't, use a meat mallet to tenderize the beef. The end result is a tender forkful of melt in your mouth goodness. Chuck meat makes the best stew meat which comes from the cow's shoulder. You could use rump meat too even though it's not as tender. It is flavorful though which is a plus for any stew. Some home chefs prefer a good chicken stew during these frosty days. Use only thighs and breasts because they're the most meatiest. Fish stew is a bit different. Several different kinds of fish make for the most flavorful blend. Think a firm white fish like cod or halibut. if you can;t get these, then use tilapia or  red snapper. Steer clear of delicate fish such as sole and oily fish like tuna. You can also throw in some shrimp, clams and scallops for a brinier flavor.  All good stews need vegetables to round out the mix. Try different amounts of onion, chopped celery, carrots and waxy or boiling potatoes. Peas can be added for color and more nutrition. Herbs and spices can also bring out the flavors of veggies and meat. Oregano and bay leave are the most popular but you can also use parsley , basil and rosemary. It's up to you.

There are two ways to cook stew - with a reduction of  gravy  - sort of like au jus or thick like turkey or roast beef gravy, You can add red wine such as with the fancy beef bourguignon. A thin sauce starts with water and beef broth. A thicker one begins with a slurry made from a teaspoon of flour with a little cold water. How to cook the stew is another matter. The old fashioned way is on the stove top for about one and a half hours for beef and only half an hour for chicken. Fish stew is the quickest for only ten to twelve minutes and three to five for a really quick dish. Beef and chicken stews lend themselves to crockpots and Instapots and you can easily cook them in them as you can with another traditional stew  - lamb. What to serve with stew? A  simple green salad with a few grape tomatoes thrown is your best bet. It's a nice side and doesn't take away from the stew.A must is either a crusty bread like a baguette or sourdough. These are perfect for sopping up the gravies. Another idea is making dumplings to cook on top of the stew. These are a mix of flour baking, powder , sugar and butter or margarine. You can add herbs for a more flavorful one. They're cooked on top of the veggies, meat and gravy, producing a tender and fluffy bite.

This is the coldest time of the year. Warm it up with a good hearty stew. Enjoy the savory blend of meat , veggies and hebs.It will warm your heart as well as your stomach.

The Vegan Explosion

If you haven't noticed there's a vegan movement out there that's taking hold on the way we shop and eat. More and more people are going meatless, dairyless and eggless. Why is this phenomenon happening?Are people getting smarter?Or are companies jumping on the bandwagon.

Eating vegan has never been easier. Some of the most beloved fast food chains are going meatless, Burger King introduced its' Impossible Burger to rave reviews and it's still one of the best selling. KFC also has Beyond Fried Chicken  which has all the herbs and spices of the original recipe. It's selling and becoming just as popular as a bucket of real chicken and the company's famed pot pie. The taste for all of these are the same as actual meat. The only complaint about Burger King's Impossible Whopper is that it's too big to eat and can be shared.It wasn't always this way . Years ago vegan burgers and hot dogs were vile tasting, vile colored soy chunks. The only way they were appetizing was if a lot of mustard and ketchup was poured on them. The taste was a strange taste  reminiscent of the smell of rubber. The texture for the hot dogs was slimy. Even splitting them and frying in margarine or butter didn't help. There's still a lot of room for improvement but they have come a long way since thirty years ago.

Luckily the hamburgers fared much better. Boca was the gold standard of veggie burgers back in the day. They were OK, being filled with mostly peas and carrots. Morningstar Farms came along and they improved them along with satisfying vegetarians' needs for bacon and chicken nuggets. The burgers were now coming in flavors like pizza with basil and tomato added and the Tex-Mex burger, spiked with chiles and jalapenos. The company now has breakfast sandwiches, with vegan patties however with real eggs and cheese. Gardein's Burgers come the closest in taste and texture and the ones I recommend for both air frying and outdoor grilling. Now the company has come out with their own version of the Beyond and Impossible Burger with their Ultimate Burger, a doubly "meaty" patty that's just great on its' own. They also have their fried "fish" fillets which again, taste like the real thing and pasta bowls filled with faux chicken or Italian sausage. Vegans and vegetarians are also getting their day with vegan only bakeries and cafes. Vegan cakes are just coming into their own and they and vegan cupcakes  are usually hits or misses. Some have a dense crumb and a heavy frosting. In a few years,they'll be bound to be improvements too.

The vegan movement is truly picking up steam. Don't be surprised if there is no more need for meat, dairy or eggs. Things are changing and changing fast.

A Vegan Rosh Hashanah

Rosh Hashanah is the period of reflection in the Hebrew calendar. For those thinking about their impact on the world and its' future, this may be a good time to ponder how your diet affects the planet.. Going vegan can be considered a mitsvah, a good deed stemming from religious duty. Will you miss the traditional brisket?  Not really. There are plenty of good meatless  recipes for the holiday.

As any one will tell you there is nothing like a brisket.It 's usually the star of the holiday table and a substantial one at that. Luckily Beyond Beef, the closest vegan thing to actual ground beef has come out with Beyond Meat. These are crumbles that can be molded into a loaf.What's the binder? A water soaked loaf of bread. You could make it as a regular meat loaf and then slice it. For a more symbolic meal mold the "meat" into the traditional fish head symbolizing prosperity and fruitfulness. Use almonds for the scales and olives for the eyes.This brings up the traditional fish dish. Some more progressive home chefs may want to think about serving a seaweed salad. Seaweed, itself, could symbolize abundance and life - considering it does sustain in times of famine.Another idea is filling individual acorn squash with the Beyond Meat crumbles mixed with pomegranates and chickpeas for more meatiness and sweetness. For a more savory vibe, nix the pomegranates and add a drizzle of tahini sauce to each squash.

What about sides in a Rosh Hashanah  vegetarian dinner? You could try concia, fried zucchini coins taken from the Roman Jews. These are marinated first in a mixture of vinegar, garlic, and mint , then set to soak for two hours to overnight. They're then fried in a light neutral oil. Use extra virgin light olive oil for the best results. Another flavorful side is braised leeks with thyme and pomegranate. The leeks are baked side by side with thyme sprigs  tucked between the stalks. A sauce of  olive oil, dry white wine and pomegranate syrups is drizzled over the whole dish and then baked for forty-five minutes. Keep in mind that leeks come from sandy soil so make sure that they're are soaked in salty water to draw out the grit. It may take a few rinses to get them completely dirt free. A fun dish that will definitely have family and friends talking is mock chopped liver. It's a mix of walnuts and button mushrooms to get that dark liver color, and it's zinged up with onions, balsamic vinegar and garlic. Serve on fancy crackers or even challah bread.As for the dessert, a traditional honey cake that uses applesauce as a binder for eggs.

Have a thoughtful Rosh Hashanah dinner by going vegan. It's a small but important gesture to save the planet. It's also a chance to enjoy vegetarian food with family and friends.

The Safe Side of Barbecuing

As much as we all love a summer barbecue we should be aware of the dangers. The one big threat is that it can be a catalyst for serious health conditions. What to do?Have a mindful cook out.

Sophie Egan wrote about the potential   risk of cancer from barbecued foods in today's New York Times Science section. It was a piece that definitely caught my eye and it needs to be put out there.Ms Egan, who writes extensively about health and eating for The Times points out there are ways to have a healthier cookout. Barbecued foods do not directly cause the disease. What happens is that compounds  called polycyclic aromatic hydrocarbons and heterocyclic amines get generated when food, especially, meat  - namely  beef - is cooked on the grill.Lab studies have shown that they alter DNA in a way that eating grilled meats could cause cancer. How are these compounds formed? The first, polycyclic aromatic hydrocarbons are formed when any kind of organic matter- namely meat fat that drips off meat and onto the grill grates. The carbon inside gets combusted in the flames and then gets carried off in the smoke that's breathed in.The other , heterocyclic amines or HCAs is the black char that happens when high temperatures meet muscle meat such as red meat, poultry and even fish. Cooked amino acids react with another substance and creates creatine.It's not found in veggies which are the safest to grill.

You can dial down the risk. Grill fish which doesn 't take as long as red meat or chicken, along with plant based burgers.Even hot dogs are at risk. What to do if you cook out a lot? Try Beyond Burgers or Gardein's meatless ones. Both taste like the real thing and are better for you than red meat patties.
Another way is marinate.Even if you marinate for just thirty minutes you can reduce the formations of HCA. A layer of oil or sugar  creates a barrier that becomes seared instead of the meat. If you feel that a marinade may take away the flavor, then try a simple one of olive oil with lemon or lime squeezed in. Another suggestion is focus on more produce. Make kabobs that feature pepper chunks and cherry tomatoes. Try chicken with onions or for a sweet twist ,peaches and pineapples.It also reduces the surface area of meat being grilled. Cooking your steaks and burgers with spices, herbs and even tea- ingredients with phenolic compounds - antioxidants - quenches the formation of those carcinogenic compounds. Also cut down on grilling times and pull the pieces off when char starts to appear.Reduce fuel too and flip often. Another important factor is the wood. Use pine instead of hickory and maple. Definitely nix the charcoal.

You can still have a barbecue but make it a mindful one. Take the extra steps, from changing to pine chips for fuel, to marinating your steaks. It'll present less of a risk and you can enjoy your favorite grilled foods.

Spring Cleaning Your Diet

Now that Easter and Passover are over , it's time to Spring clean your diet. There are no more heavy calorie laden meals, desserts and treats. It's the season for lighter fare,not to mention lighter cooking and baking.

One of the best aspects of Spring is foraging. There is a wealth of healthy greens right outside your back door. Think about adding some of  your local woodland's best in a salad.One of the most traditional and most widely used is the dandelion. The slightly prickly leaves can be eaten on their own or with other greens. Dress with a tangy lemon -honey vinaigrette and serve with grilled chicken or scallops. Another woodland green to consider is the tongue tingling garlic mustard which can be made into a pesto or cooked with pasta similar to broccoli rabe.Mushrooms can also come from the parks and forests.Many home chefs are leery about foraging them and with good reason -half are poisonous.Buy a book on foraging (your best bet is Amazon) and read it cover to cover. Think about making your bounty in a light mushroom sauce spiked with garlic and onions. The mushrooms can also be pickled and served as a side to grilled chicken, steak or fish. Those dandelion greens can also be pickled and would be a light and interesting side.

With the weather growing warmer, it's time to get out the grill. This is chance to have delicious meats and veggies simply cooked. Don't stop at the proteins. Try a light meal of grilled asparagus with peppers and eggplants. Ramps from foraging can also be grilled . Spritz them with olive oil and cook on a grill pan until ready. A fun way to welcome in the warm weather is kabobs. Think cherry and grape tomatoes with scallops and shrimp. Or try marinated mushrooms skewers for something light and different. Climbing temps usually mean the taste for grilled burgers. These too can be lightened up. Portobello caps are a great sub in for beef patties.Marinate the caps in canola oil - which is lighter than even virgin olive oil - along with  chopped onions, balsamic vinegar and garlic.Instead of plopping it on a heavy bun, think an open faced sandwich on Italian and French bread. Gardein also has veggie burgers that taste like the real thing. Instead of the usual burgers and potato salad - just have the patties plain with grilled veggies .As for desserts, we're heading into blueberry and strawberry season. Finish the meal with a bowl of mixed berries, sweetened with dark honey and topped with Reddi-Whip's coconut or almond milk whipped creams.

It's Spring. Lighten up your diet. Go for fresh picked greens and kabobs. Get rid of the greasy burgers and try the ethereal portobellos or soy burgers. Invest in the fruits and veggies of the season. You'll feel better- and lighter.

A Cookbook For Instant Pot Lovers

The Instant Pot is more than just a fad.Home chefs have taken it to heart, using it for everything from roasts to desserts. However there are very few cookbooks that focus on cooking with it. A new recipe book is going to change that. it is chock full of delicious dishes along with advice.

Marilyn Haugen, author of 150 Best  Spiralizer Recipes and 175 Instant Pot Recipes has written The 5 Ingredient Instant Pot Cookbook (Robert Rose Publishers 2018) Most of them do have five ingredients which makes for easy prep and cooking for busy home chefs. This is a great accompaniment to the cooker itself. The book is not overwhelming and has some great advice for Instant Pot novices. Ms. Hauger shows how to make tent style packets for streaming veggies. She also goes into great detail about the gadget's uses and functions.Her section  on one of the functions, pressure cooking is explained in great detail, dissecting the High and Low Pressure options. Another plus is her list of staples such as grains and different oils for the Instant Pot Pantry. I like the fact she includes all sorts of flavor base mixes such as the famed French,  mirepoix and the Cajun holy trinity of onion, celery and green  peppers. She also has the Italian battuto, mirepoix with fennel,parsley and garlic added   and the Spanish sofrito of  onions, bell peppers and tomatoes.These are vital for successfully recreating some of the savory  dishes. Even more important are the recommended accessories.along with ending the book with  an extensive  table  if cooking times for meats, veggies, legumes and fruits.

The recipes are satisfying and varied.Breakfast and Instant Pot lovers will enjoy Ms. Haugen recipe for classic old fashioned oatmeal and the spin, peanut butter banana. Egg stuffed bell pepper boats.spiked with Parmesan cheese and fresh cut basil will be a brunch classic.For sweet lovers there's the streusel coffee cake made with Biscuit flour. She divides the meat dishes into sections. Poultry lovers will make the Almost Rotisserie Chicken an instant favorite It's steamed in chicken stock and  butter, and seasoned with paprika, salt and pepper. A hearty dish is the beef stroganoff, cooked with spices and sour cream. Pork has many flavorful dishes too such as the tangy  pulled pork sandwich along with a fragrant rosemary and apple roast. Fish lovers will enjoy the summery tasting tomato halibut.Another plus is that she includes bone broths which are perfect bases for other soups. The Instant Pot is great for rice and pasta, and yes, there are many recipes for them. Mac n cheese lovers will appreciate the simple but delicious recipe while grain and veggie  lovers will enjoy the lemony bulgar tabbbouleh and quinoa stuffed peppers along with the beet salad with Dijon  vinaigrette and chevre. The dessert recipes are fun from the old fashioned bread pudding made with egg breads to the lush  Decadent Creme Brulee and Molten Chocolate Cakes.If they're too much , try the yogurt recipe for a cleansing bite.

The 5 Ingredient Instant Pot Cookbook is the best gift for Instant Pot lovers. The recipes are delicious,, the ingredients simple. Home chefs can have fun experimenting with them as they cook a wide variety of dishes and desserts.

Crumbing It

One of the essentials of any kitchen is a container of bread crumbs. They're not only good for coating fried foods but also acting as a filler and a topping for many dishes,.Breadcrumbs are one of the easiest things to create along with helping to repurpose  leftover bread and rolls.

Breadcrumbs are a pantry must have. They can be easily bought but also can be easily made. If you don;t have the time to take out the food processor , then buy the Progresso brand. They even have jumped on the panko bandwagon, producing the lighter,cruncher Japanese style ones. You can use their plain or for more flavor , their herb laced Italian style or  their Parmesan flavors. These last would be good for chicken Parmesan, however both flavors may be too overpowering for soups and meat loafs. Home made crumbs are another choice, and a better one. You can leave them plain or add a dash of dried oregano or rosemary. The best breads for this  are Italian and French  They produce a fine, almost sawdust like crumb that makes for excellent coating. I usually make my crumbs from Saltines or oyster crackers. Cracker meal has a richer flavor and also fries up nicely. It's usually half a sleeve of Saltines plus oregano, sea salt , and pepper ground together.It's my go to for when I make fried artichoke hearts. It also keeps well in the fridge and, since I always have crackers in the house, I 'm never at a loss.


Breadcrumbs are great for frying any kind of meat and fish. Many home chefs love to make breaded pork chops. This is an easy cook and the crumbs are great for absorbing the fat.Use cracker meal for a lighter fry up. Their flavor will compliment the rich earthy sweetness of the pork. Breaded chicken cutlets are another way to go. If you want a crisper bite go with the panko .Remember to first dip the cutlets into beaten egg and then dredge in the crumbs.You can make these a few days ahead like on a weekend when there's more prep time available .Store the cutlets  in resealable freezer bags and then they can be frozen up to one month .As easy as it is t buy a box of Mrs. Pauls' or Gorton's  homemade fish sticks or fillets taste so much better. You do have to debone and cut the fish into manageable pieces  before the dipping and dredging. For a softer "crunch' use regular breadcrimbs, for more crunch try the panko. Breadcrumbs also make an excellent filler for soups. My family recipe for the Piemontese pane pesto or panpiest calls for a cup of breadcrumbs to be added to a mix of egg and broth. It really is the backbone of the soup, give it a comforting smooth texture along  with toning down the 'egginess"/ Breadcrumbs can also be used as filler for meat loaf too. Use about one cup of dried breadcrumbs. For more zing sub in the Italian style ones.

Always have a container of bread crumbs or cracker meal in the kitchen. They're versatile and can be used in a number of recipes. Buy them or make your own for a tasty coating for meats or as a thickener for soups.

One of the worst scourges of our time is diabetes. It can have terrible, life threatening consequences if not regulated and the diet not monitored.Luckily the American Diabetes Association has come out with a cookbook full of delicious and tasty recipes. Even the dessert and snack ones are flavorful and fun.

The opening chapters deal with what can I eat, making healthy food choices and how to use the cookbook to your best advantage. The what I can eat section is crucial to a well balanced lifestyle.It lists the diabetic super foods such as beans, nuts,berries and fish to name a few The healthy food choices are also vital to better eating They give the best choices for fruits and veggies along with grains. Starchy vegetables are allowed and again the cookbook gives the best options. There is an excellent section on proteins, encouraging readers to try the "fake" or soy meats such as chicken , burgers and sausage.There's also a section on dairy as well as general tips about what to buy. The American Diabetes Association or ADA also parses out bad fats and what they are. Varieties of fish are divided into best, and good choices and choices to avoid. There's also sections on alcohol and what everyday beverages are good to drink.Home chefs will appreciate the pages discussing the amount of calories needed a day.It also shows how to regulate carbs as well.

Cereal's Other Side

Cereal has always served as THE breakfast food for one hundred and forty years.It's  a great starter for sure, yet cereal can be used in a variety of other recipes, both sweet and savory. It's not just for breakfast  but for lunch, dinner and even snacking.

Every American kid has memories of their mom making Rice Krispies treats. It was our first time in thinking outside the cereal box.Who would think that what we had for breakfast would make an awesome dessert? Even though you can buy these low cal treats, they're super easy to whip up.The basic recipe is melting three tablespoons of butter and one package or about forty marshmallows and melting the two ingredients together in a saucepan. Add six cups of Rice Krispies, mix until cereal is completely coated and pour into a buttered  13 by 9 two inch pan. Wait until completely cooled and cut into squares.  The fun thing about this recipe is that it can be varied. They can made gourmet by increasing the butter to half a cup or one stick. If doing this, then up the amount of cereal by ten cups. Vanilla is added for a richer flavor.  Marshmallow creme can also be used instead of the puffs. Go wild with additions. Most just toss in sprinkles and chocolate chips but there are some who would toss a handful of crumbled bacon into the mix.The recipe isn't exclusively that cereals' You can also make them with Cheerios, Fruity Pebbles and even the diet driven Special K. Any of these can also be turned into holiday shapes.  You can mold them into chocolate dipped footballs for a Super Bowl party or cute red sprinkled laced hearts for Valentine's Day.,

Cereal can have a savory side too.Rice Krispies can easily be used in breading chicken or fish. It's taking one cu and a quarter of coarsely crushed pieces mixed with flour and seasonings such as salt and pepper, dried parsley and a kick of cayenne. You can also use cornflakes - usually one and a half cups for three pounds of various parts. The recipe can either be deep fried or a healthier baked.. The chicken is first dipped into melted margarine first then rolling them into the crumbs. The result is a crunchier texture that works well with the bird. Fish can also be coated in the cereal. It's actually healthier because the coating doesn't absorb as much oil, creating a lighter, less greasier piece. Cormflakes can also be used. Both have to be mixed with flour to get that exact texture or the batter could fall off during frying.Cereal can also be used in other recipes as well.The ancient grain version of Cheerios (this has quinoa and millet along with amaranth) can be turned into a croquette. Asparagus , zucchini,carrots and pepper are added along with goat cheese to the ground up rings. They're then coated in bread crumbs and fried to create a tasty and unusual dinner.

Cereals aren't just for breakfast. They can be turned into savory and sweet meals and desserts everyone will like.  Just think outside the cereal box.
