A Cookbook For Instant Pot Lovers

The Instant Pot is more than just a fad.Home chefs have taken it to heart, using it for everything from roasts to desserts. However there are very few cookbooks that focus on cooking with it. A new recipe book is going to change that. it is chock full of delicious dishes along with advice.

Marilyn Haugen, author of 150 Best  Spiralizer Recipes and 175 Instant Pot Recipes has written The 5 Ingredient Instant Pot Cookbook (Robert Rose Publishers 2018) Most of them do have five ingredients which makes for easy prep and cooking for busy home chefs. This is a great accompaniment to the cooker itself. The book is not overwhelming and has some great advice for Instant Pot novices. Ms. Hauger shows how to make tent style packets for streaming veggies. She also goes into great detail about the gadget's uses and functions.Her section  on one of the functions, pressure cooking is explained in great detail, dissecting the High and Low Pressure options. Another plus is her list of staples such as grains and different oils for the Instant Pot Pantry. I like the fact she includes all sorts of flavor base mixes such as the famed French,  mirepoix and the Cajun holy trinity of onion, celery and green  peppers. She also has the Italian battuto, mirepoix with fennel,parsley and garlic added   and the Spanish sofrito of  onions, bell peppers and tomatoes.These are vital for successfully recreating some of the savory  dishes. Even more important are the recommended accessories.along with ending the book with  an extensive  table  if cooking times for meats, veggies, legumes and fruits.

The recipes are satisfying and varied.Breakfast and Instant Pot lovers will enjoy Ms. Haugen recipe for classic old fashioned oatmeal and the spin, peanut butter banana. Egg stuffed bell pepper boats.spiked with Parmesan cheese and fresh cut basil will be a brunch classic.For sweet lovers there's the streusel coffee cake made with Biscuit flour. She divides the meat dishes into sections. Poultry lovers will make the Almost Rotisserie Chicken an instant favorite It's steamed in chicken stock and  butter, and seasoned with paprika, salt and pepper. A hearty dish is the beef stroganoff, cooked with spices and sour cream. Pork has many flavorful dishes too such as the tangy  pulled pork sandwich along with a fragrant rosemary and apple roast. Fish lovers will enjoy the summery tasting tomato halibut.Another plus is that she includes bone broths which are perfect bases for other soups. The Instant Pot is great for rice and pasta, and yes, there are many recipes for them. Mac n cheese lovers will appreciate the simple but delicious recipe while grain and veggie  lovers will enjoy the lemony bulgar tabbbouleh and quinoa stuffed peppers along with the beet salad with Dijon  vinaigrette and chevre. The dessert recipes are fun from the old fashioned bread pudding made with egg breads to the lush  Decadent Creme Brulee and Molten Chocolate Cakes.If they're too much , try the yogurt recipe for a cleansing bite.

The 5 Ingredient Instant Pot Cookbook is the best gift for Instant Pot lovers. The recipes are delicious,, the ingredients simple. Home chefs can have fun experimenting with them as they cook a wide variety of dishes and desserts.

Tout Les Eclairs

One of the most delicious pastries to enjoy is the French eclair. A true Gallic one, filled with delicate cream inside an airy puff of a choux shell is hard to find, non? Not anymore. There a fantastic new cookbook that has every kind of eclair from traditional to the innovative.

The eclairs themselves are in a rainbow of colors. The choux dough can even be dyed itself to create bright pink shells.perfect for strawberry or raspberry filled eclairs. There is a lemon filled one that has a gaily decorated shell complete with streusel balls and Swiss meringue dots. Apricot eclairs would be a nice treat for any Spring party. The filling is a mix of apricot puree with soft dried apricots and whole cream.Black currents are usually reserved for tarts but Chef Adam makes them an integral part of the eclair filling. The same goes for figs.passionfruit and raspberries. Of course there is the traditional chocolate ones made luxurious with the addition of whole cream and butter. It's decorated with small  squares of gold sugar dusted chocolate. For total fun, whip up the ever fun crunchy chocolate eclairs filled with ganache but topped with silver sugar coated chocolate pop rocks. Caramel , the flavor of the moment is also a filling.with a layer of caramel fondant on top. .There is even a sweet Valentines 'Day themed one where there are heart halves gracing the icing. Keep in mind that all the eclair recipes require gelatin sheets or powder.They can be found at some grocery stores , including Wal-Mart. They are used for thickening the cream so they 're a more solid,,  instead of being gooey and runny.

A Vegan's Dream Come True

Does being a vegan come with perks? Yes! The obvious answer is the health benefits but there's also another plus - a new cookbook that features vegan cheese and ice cream recipes. These are fun to make and tasty to eat. Even non vegans will turn vegan just for these recipes.

One Meal One Pan

Nothing beats a hot meal with all the trimmings on these frigid days. Yet cooking a full meal can be daunting. There's so many pots and pans to deal with  along with trying to have all the dishes ready at the same time. Not to worry. There's a great new cookbook centering on sheet pan meals.It's an easy way to make the main dish and sides without fuss or worry.

Dr. Camilla V Saulsbury  gives us "200 Best Sheet Pan Meals" (Robert Rose Press 2016) and it's a great Valentine's Day gift for any home chef.  It's a wonderful recipe full book of simple and fun meals anyone can make. For those who have qualms about this type of cooking,not to worry. The books starts out with a guide on what type of pans to use, along with the technique's history ( it comes from the British where the meals are known as tray bakes, simple yet filling dinners and desserts that require little prep and little clean up afterwards. Dr Saulsbury , who has a PhD in  Sociology  with a specialization in food studies from the University of Indiana, also explains the different types of ingredients as well as dealing with the  different cooking times of meats and vegetables.Beginners will love her chapter on easy sheet pan meals such as  broccoli cheddar no crust quiche along with yummy desserts like coconut macaroons and frozen chocolate bananas. The book is then divided into different chapters revolving around  brunch and breakfast meatless meals, for vegetarians  along with  recipes for various meats,.There's an extensive chapter on all sorts of desserts, that would be great for bake sales and parties.

The recipes are amazing. I love the wide variety of different dishes and how they encompass all tastes.There's a tasty sunnyside up pizza, perfect for a family brunch .It's an easy bake with the crust being frozen pizza dough layered with ricotta, olive oil and eggs.Non meat eaters will love roasted broccoli rabe with gorgonzola or a vegetable paella , ripe with saffron, artichoke hearts and onions.Those meat and veg lovers will gobble up such filling meals as roasted chicken with butternut squash and apples and the thyme and pork tenderloin with charred corn salad. There are plenty of beef and fish recipes too, such as  roast beef with potatoes, green beans and blue cheese mayo and garlic salmon and green beans. Kids will love the .meatball, burger and breakfast roll recipes that would be perfect at birthdays or pajama parties.The dessert recipes are fun and varied too,, under the cute Sheet Sweets title. A great cake for a dinner party would be the scratch  chocolate ganache cake or decadent carrot cake with cream cheese frosting. There's even a cheesecake recipe, one without all that fuss and some tasty variations such as chocolate chip , lemon and brown sugar. The cookie bar and even candy recipes would be excellent at any bake sale or kid's party.

Simply Vietnamese Cooking SImply Delicious

Vietnamese cooking is a delightful mix of meat and vegetables , Asian and French flavors and sweet and savory. It is a cuisine not to be missed.Luckily there is a new cookbook that brings the best of this interesting country'srecipes right to your kitchen.

Food writer and chef Nancie McDermott wrote a phenomenal cookbook that will appeal to both experienced and novice home chefs alike, Her Simply Vietnamese Cooking (Robert Rose Press) is an excellent guide for those wanting to cook Vietnamese cuisine. Chef McDermott became an expert on cooking it when she lived there for three years during a Peace Corps stint. She also has travelled extensively throughout Asia and has written several cookbooks with four focusing on Asian cooking. What is so great about the book is that she takes the mystery out of Vietnamese cooking. along with providing helpful tips and interesting stories on both dishes and drinks.  She includes a whole page  centering menus  on meat or vegan dishes , northern Vietnamese or southern, a fun beach party one  centered on seafood along with a menu for cooking cool and light on hot , steamy days - like now.There's also suggestions for a  Vietnamese tailgate party and even a campfire cookbook. Chef McDermott includes a glossary of ingredients with emphasis on Vietnamese herbs use. These are vital in creating the exact flavors for several dishes.The photos showing the dishes are amazing, and mouth watering.

Vietnamese cooking is an interesting mix of different flavors and various ingredients.Fish sauce, made from anchovies, is a vital ingredient in many dishes. It gives meat and veggies dishes an earthy saltiness and rich caramel brown color. Viet Nam is a tropical country so coconut figures heavily in many savory and sweet dishes.One of my must make  recipes is Chef McDermott's coconut ribbons , a  crunchy sweet usually made for the holidays,,There are tasty recipes for the Vietnamese classic pho, noodle soup as well on another favorite  salads. The  people are big on beautiful  lush bowls of mixed greens, full of vibrant herbs and there are recipes  featuring these. They could be used as palate cleansers when  serving other dishes such as sizzling savory pancakes or pho noodles with chicken. Both dishes are redolent with a mélange of sweet and salty flavors that dizzy the palate. Since Vietnam was also a French colony at one time, there are Gallic influences  in pate chaud a meat filled puff pastry, crème caramel and Vietnamese coffee, a take on café au lait.
