Fun Snacks For Holiday Parties

It's that time of year when home parties are getting planned. It most centers around drinks yet food is vital to these parties as well. They  provide sustenance and fun  as guests enjoy a variety of punches and cocktails.

Regular contributor Melissa Clark wrote about this holiday essential in yesterday's New York Times Food section. She also contributed some tasty recipes that are perfect for any type of part thrughout the year. These can work on Memorial Day as they can work on New Year's Eve. They walk the line between filling snacks and appetizers. They can also be good before a dinner or add some cheese and olives for a fun snack tray. Another plus is that all three recipes,loaded focaccia, Halloumi stuffed sweet peppers and white bean dip with cumin chile oil in advance. The simplest is the bean dip, a blend of  white bean and a good glug of olive oil. She doesn't add the usual tahini,Olive oil makes it silkier and smoother. As for the beans use cannelini which have a lovely mild taste. You can also use white kidney beans too;.Cumin red, pepper and garlic give it a zingy sharp flavor. You can serve with pita but veggies like carrots broccoli and cauliflower also are good.

The other two dishes are perfect too.Guests will  love Halloumi cheese stuffed sweet pepper. This is a perfect marriage of salty and sweet. Halloumi is a saline cheese ,briny and sharp. The peppers are a perfect foil. These can be put into lettuce cups or on crostino (which is easily made with Italian bread drizzled with oil and then put into the oven for a few minutes).The cheese just has to be cut into sm all pieces that fit into the peppers. R=They;re roasted for twenty four minutes. A really filling and tasty  appetizer is the loaded focaccio. You can also use flatbread or pizza crust too for this.Ricotta or butter is generously spread on the tops. You can drizzle them with olive oil and honey if you want a touch of sweetness. It's then having fun with it. Top it with prosciutto, salami or salami. Add arugula or kale along with sliced cherry tomatoes for a festive look. You can also add olive or go another way and top it with blue cheese and walnuts.Capers and sliced persimmons can also add flavor and color too.

Parties deserve festive food. These recipes are perfect. Try them for a tasty table that your guests will enjoy.

Is Gorp Good For You

 All moms say if you want a healthy snack, eat gorp,It's chock full of good ingredients, right. or is it. What actually in it and is it as healthy as it's made out to be.

Gorp has been around for a long time.The name could come from an acronym for Good Old Peanuts and Raisins or to gorp - eat greedily. The mix was first made in Denmark by students as early as 1833. Then it was called studenterhavre,  a blend of oats with raisins and almonds. Even back then they added bits of chocolate but only for the holidays. It evolved into trail mix in the late Sixties or early Seventies.Yet is it healthy.In its' purest form, yes.However some like what I bought at Acme has some extra goodies

It has a wide variety of healthy ingredients.. Mixed nuts and raisins
Those  white pieces are caramel pieces wrapped in white chocolate. it would be better if they were dipped in dark chocolate which is chock full of antioxidants. It's not really healthy.even the raisins, dried fruit are filled with sugar yet it is better than  a handful of just candy.This is a fun snack if you're going hiking or on a picnic.

Is gorp good for you? If you avoid the candy and dried fruit, yes,. Try to get a mix that's full of grains and nuts. Keep the sweet stuff ot a minimum for a tasty, healthier snack.

Another Green Holiday Nowruz

 Today is Saint Patrick's Day , a holiday for green beer along with corned beef and cabbage. Yet another Spring holiday, older and more religious happens on Saturday  - Nowruz the Persian New Year.Its is a time of renewal to welcome in the season of Spring. The holiday brings all sorts of feasting and fun.

Naz Deravian , an actress who was in the CBS show "Jag" and author of the Persian cookbook Bottom of the Pot contributed Afghani recipes to yesterday's New York Times Food section.It is a New year celebrated not just by Iranians but countries in the Silk Road route.This also includes the ancient kingdom of Afghanistan.It is from the Zoroastrian tradition,  withe the religion being the oldest monotheisstic one in the world. Their beliefs have influenced Judaism, Christianity and Islam. Nowruz is Persian for "new day". The foods and even their preparations have meaning. Rinsing and soaking  fruit and nuts to be used in water symbolizes brightness and life. Sweets , of course, celebrate the sweetness of life while green ingredients like spinach mean new life . However the holiday will be subdued in cities like Kabul because of the Taliban takeover and the group does not like the Zoroastrians or their religion. Still there will be quiet celebrations where entire families will prep the food and the women will sing traditional songs.

Ms Deravian gives a variety of different recipes for a New Year's celebration. There is sabzi, a lamb and spinach stew that is spiked with chili and garlic. Two pounds of spinach is used  and it, the lamb and a large yellow onion are cooked. Cilantro and chives along with scallions are added to intensify the flavor and color of rebirth . It can be served with challaw , rice spiced with green cardamon pods and cumin seeds .(you can go to any Asian food store for the cardamon pods) The rice is first parboiled and then finished cooking with the pods and seeds for three minutes. It is then simmered for another twenty minutes. One of the most important dishes is haft mewa, seven fruits in Persian. Seven is a lucky number in the culture however more can be added to the recipe. This is a collection of walnuts,pistachios and almonds rinsed and soaked with golden raisins, apricots and black raisins,Oleaster or senjed , a type of olive with a sour tomato taste and dried sour apricot are the chief ingredients however they can only be found at Afghan or Iranian markets or online. Ms. Deravian suggests using figs and dried cherries instead.All the ingredients are soaked for  to days and served chilled.

Nowruz is another Spring holiday, ancient and sacred.It is also joyous celebrating a new year full of life and promise.Its' foods reflect this.

Are You Ready

Thanksgiving is only two days away. Are you ready to handle the year's biggest day of cooking? If not, it's time to assess what you have and also take a break.

By now you should have almost everything. The turkey should be in the freezer and on the way to defrosting tomorrow. The ingredients for the sides should all be bought too. Have you thought about the vegans and variations of that lifestyle? Have you bought the almond and soy milks and whipped creams? What about the family and guests with allergies? Keep in mind that the almond byproducts may cause trouble to those with nut allergies. Stick with soy milk and coconut milk whipped creams. Do you have the ingredients for everyone's favorite dishes?Make the green bean casserole without the fried onions on top and there may be a riot.People love and even swear by tradition. Thanksgiving Day is not the day to get arty or creative with the green beans or any beans for that matter. At best a new twist on a classic recipe may be met with a wrinkled nose and a polite "No, thank you." At worst a tantrum and someone leaving the table with their plate full of just turkey and gravy. Also make sure that you've bought the right amount of wine (although someone may bring a bottle as a gift) along with soda, juice and seltzer for kids and non-drinkers.

As for yourself, use tomorrow as a day off(or at least until it's time to bake the pies). If you have the day off from work, then treat yourself. Have lunch out, whether it's at your favorite cafe or fast food joint.  Feast on the Popeye's chicken sandwich, treat yourself to Dunkin Donut's new Beyond Meat sausage patty sandwich. Go for the mani and pedi, with a huge cup of hot or cold Dunkin's or Starbucks. Hang out at Panera's with a croissant and their signature hot chocolate. Just relax and don't think about the day until the day happens. Dinner should be easy too. It's actually the night when the most pizza is ordered throughout the US. Order the double pepperoni and sauce. Or go for sushi or burgers - whatever make you and your family happy. If you're still antsy about Thanksgiving, you could bring out all the linens and steam or iron them. Doing either is surprisingly relaxing. The spouse and kids can also help by polishing the silver and making sure the crystal sparkles. Most importantly get to bed at a reasonable hour. Sleep is your best friend , especially when you have to be bright eyed and bushy tailed the next morning. End the night with a soothing mint or chamomile tea (I"m loving the Nana mint teas from Wissotzky Teas) to get you drowsy and sleepy.

Are you fully ready for the Super Bowl of cooking? If not, make yourself ready but don't  sweat it. No meal  - not even Thanksgiving itself - is worth worry and angst.

How Green Is Your Kitchen

Earth Day is tomorrow and people all over the world will be evaluating what they can do to reduce their  carbon footprints. It's also time for home chefs to examine their kitchens and see if they need to make any "green" adjustments.

One of the most used resources in any kitchen is water. We need it to wash fruits and vegetables , along with our plates and utensils.It quenches our thirst  when we're thirsty and is often an ingredient in both savory and sweet recipes. Yet do we respect it? How many times do we just let it run as we seek the exact temperature? This is one of our worst habits. If you're hand washing dishes, use a small plastic basin like what you'd use for leftovers to wash the dishes. Then do a quick rinse to get the soap off. Don't let the water run. As for dealing with a parched throat, the best bet is put ice cubes in a glass before you fill it with tap water.  The ice will instantly chill it. and that way  you're not wasting water.As for cooking , get the exact measurements - not that you're throwing away any overage. washing fruits and vegetables are always a must however this also creates water waste. Use a large bowl for any kind of produce washing however scrimp on the water. Due to the pesticides used, you can't repurpose the water. It does have to be dumped down the drain.Another idea is using vinegar to clean skins and even rinds.Wipe down with a towel afterwards.

Paper and plastic are big components of a home kitchen. Our food comes in both. What to do with those boxes and containers afterwards? Any box should be put in the recycling paper bin or bags.This includes cereal and microwave foods boxes along with any cookie paper bags or pie boxes. Those paper bags from the grocery can be repurposed to hold the flattened boxes along with newspapers. Milk and ice cream cartons, made of wax coated paper do need to be thrown out with the regular trash. The plastics lids, however ,can be put into the plastics. As for plastics, whether they're bottles or cupcake holders, they all belong in the plastic recycling bins. You can repurpose  your water bottles by refilling them with tap water. Any straws can also be used for a second and even third time.. Just wash and dry them. What about those cracked plastic and glass containers? Do you just toss them or use them for a different purpose? Small ice cream bowls can hold dry snacks such as nuts pretzels or potato chips. The larger ones can be used as fruit bowls or even to hold rolls for dinner.The same principle goes for cracked glass , although this last does come with a caveat. If there are sharp edges, then you'll have to throw it out. A jagged edge can produce a nasty cut on the fingers.Just remember to toss the glass into the plastic bin. Many towns recycle the two together.

Is your kitchen as green as you want it? Use this Earth Day weekend to re-valuate your family's habits. Changing them may help save the planet in a small but very important way.

Diabetic Cooking - A Healthy Variety

One of the worst scourges of our time is diabetes. It can have terrible, life threatening consequences if not regulated and the diet not monitored.Luckily the American Diabetes Association has come out with a cookbook full of delicious and tasty recipes. Even the dessert and snack ones are flavorful and fun.

A Complete Month Of Meals Collection is a compilation of breakfast, lunch and dinner menus. The opening chapters deal with what can I eat, making healthy food choices and how to use the cookbook to your best advantage. The what I can eat section is crucial to a well balanced lifestyle.It lists the diabetic super foods such as beans, nuts,berries and fish to name a few The healthy food choices are also vital to better eating They give the best choices for fruits and veggies along with grains. Starchy vegetables are allowed and again the cookbook gives the best options. There is an excellent section on proteins, encouraging readers to try the "fake" or soy meats such as chicken , burgers and sausage.There's also a section on dairy as well as general tips about what to buy. The American Diabetes Association or ADA also parses out bad fats and what they are. Varieties of fish are divided into best, and good choices and choices to avoid. There's also sections on alcohol and what everyday beverages are good to drink.Home chefs will appreciate the pages discussing the amount of calories needed a day.It also shows how to regulate carbs as well.

What about the recipes? They're divided into breakfast lunch and dinner cards along with sections
on them and  on desserts located at the end of the book. All the recipes are tasty and based on regular classic ones. A Spanish omelet is modified to just use egg whites instead of the whole egg.There is baked fried chicken which is a great comfort or even party food. The lunch section tends to lean towards soups and salads. These, too, are tasty with such as cauliflower rice and chicken soup, loaded with veggies and flavor. A chicken and spinach salad is not only perfect for lunch but could also be made for a Saturday or Sunday night supper Vegans will appreciate the recipe for bean burger, made colorful and flavorful with kidney beans and ketchup (!) Kids will love the veggie pizza and the English muffin pizza melt. made with fat free mozzarella.  The dinner recipes are simple but elegant Home chefs can try  the chicken with sun dried tomatoes made special with a dash of white wine along with veal Italiano. People are curious about the desserts. There are many such as a healthier spin on the famed Sally Lunn cake and rice pudding Young and old alike will enjoy the sweet potato raisin cookies and graham pudding sandwiches. Drinks are also in here. Low sugar punches and shakes are the perfect thirst quenchers for those with insulin problems.

Valentine's Day Candy Anytime

Valentine's Day is known for its'  lush boxes of chocolate cremes, caramels  and nuts.. They're wonderful to nibble on but there's that "Aww " moment when you run out.  Yet ,you can have them any time of the year.It all starts with a bag of chocolate chips.

Many home chefs balk at candy making and understandably why. It does require a candy thermometer  and it's tough to discern when the candy goes from the soft ball. to hard ball stage.It can also be dangerous because sugar burns can be serious enough for a visit to the ER.  Some recipes , though, don't require a lot or any cooking. Chocolate covered cherries is just mixing and blending.It's blending butter and corn syrup together , and then adding confectioner's sugar.It's kneaded until it becomes a kind of dough and then chilled. A teaspoon of it is wrapped around a maraschino cherry and then each is enrobed or dipped in either melted milk or dark chocolate. You could use chocolate confectioners; coating but the chips are also acceptable too. What about those luscious caramels? Those, too, can easily be whipped up in any home kitchen. You could make your own which would be a mix of butter, brown sugar cooked with corn syrup and condensed milk. If you're still leery about making it , buy caramel sauce, sea salt and again, chocolate chips,It's making chocolate cups first, then filling them with the sauce and salt , Afterwards, pour more melted chocolate on top as the cover.

The marriage of peanut butter and chocolate, light or dark is heavenly. Many love Buckeyes,, those peanut butter filled bonbons, named after the nuts from Ohio's state tree. Creamy can be used, but for more texture and fun, use the crunchy kind. The recipe involves mixing peanut butter, butter and , vanilla together as a paste. These are then rolled into marble-like balls to be chilled in the fridge. The coating is chocolate chips with shortening added to ensure a satiny, glossy finish. The balls are then dipped into this and left to harden until firm.  You can also chocolate dip nuts too, such as peanuts, or cashews as the candy companies do.The highlight of any candy box are the coconut cups. These are nothing more than molded haystacks, those tasty domes of toasted coconut and chocolate. It's just toasting shredded coconut on a cookie sheet for five to ten minutes in a 325 degree F oven . Melt the chips in the microwave or in a saucepan, then thoroughly blend. Instead of using a spoon to drop onto a greased cookie sheet. , spoon into a greased candy mold.Coconut can also be used in a coconut creme candy. It's mixing it with confectioner;s sugar and condensed milk to form a paste. As wth the other cremes, form into small marbles shaped balls and chilling for twenty minutes. They can be then dipped in melted milk or dark chocolate  mixed with shortening for glossiness.

You can have Valentine's Day candies all year round. Make the entire box or just the ones you love. Either way , it's a sweet treat not just reserved for the day of love but for every day.

The Future Of Our Imports

What will the  new administration be like for food importers and overseas growers? It's going to be a tough time however long it lasts. What should we do? That's a good question and there's not a solid answer.

This blog has stayed away from all things political - that's not my direction with it. I write about trends and recipes, nutrition and new products However with the new American administration, Americans are going to be hurt by certain bans, Our fruits and vegetables that come in from Mexico will now be higher in price thanks to our president wanting to build a wall on our border  with the Mexicans paying for it. How does that affect us?  Mexican farmers will charge more for the vegetables they grow. That means tomatoes and avocados will cost more and to many families that means going without. Some fruits such as strawberries will also be in the crossfires along with bananas and raspberries. The Chihuahua region gives the US most of it' pecans, contrary to the popular belief that they come from Georgia. Pecans are usually used in pies around the holidays so many  home chefs and bakers won't be that affected by them. Restaurants, however, do use them, namely in salads and some chicken dishes. This will increase in pricing. with the larger chains and smaller, privately owned ones.

Beer drinkers will also be affected. Corona and Dos Equis both come from there as does tequila. These along with drinks made with them, across the US will also go up in price thanks to the building of this "wall". Agave syrup, now popular with hipsters and health, will also be affected. Organic agave is expensive enough with prices ranging from eleven  dollars to fifteen may go up  in pricing starting at sixteen at the cheapest and twenty at the most expensive. If all this occurs what can we do? Luckily the US has some great summer harvests with fruits and vegetables coming in from all areas of the US. The winter will be a little more trickier. We'll have to rely on Hawaii, California, and Florida for produce. Americans will probably be returning to  using Georgia raised pecans. Since New Mexico and Arizona have the same kind of desert conditions as most of Mexico, they can be the producers of both agave syrup and even tequila.  We can also protest the wall and stop all this nonsense too.

Hopefully, this new president  will renege on his pledge to "build that wall". It will not only create animosity with the Mexicans but also hurt our trade and eating habits. He should come to his senses and realize a wall is not the answer.

Eating On The Go

Spring is one of the busiest times of the year. There are games to attend , cleaning to be done  and events to be planned,That means that there will be times when a meal or snack will be eaten in transit. There is a problem in that. Most people tend to grab anything and everything to satisfy those munchies. Don't . The best bet is eating healthy  - even on the go.

Spring Saturdays are spent more on the road than at home thanks to all sorts of sports activities. Instead of you and the kids grabbing a quick burger at the local fast food joint., think stuffed pita pockets. These can be customized to suit everyone's tastes. Try to include some form of protein because it helps to stave off hunger longer. Try some leftover chicken or turkey as the main part of the stuffing. If you have to get cold cuts then try Boar's Head because they're low in fat and sodium. You can also use hummus, whether bought or homemade too. Sliced tomato, baby spinach leaves and bean sprouts all could be added as well as some spices and herbs for zing. Mix together cubed tomatoes and low fat mozzarella cheese along with olive oil and oregano Fill pita pockets with this for a kind of inside bruschetta. If you're home and want a quick hot meal , then put this in the toaster oven until the pockets  start to puff out and crisp up. Another yummy quick meal is a quick cold taco, filled with guacamole, tomatoes, lettuce and chopped lettuce. Add a tiny bit of sour cream or a big blob of salsa to round it out.

Snacks on the go can be trick too. It's all too easy to pick up a bag of chips or a pack of snack cakes  Yes, these are tasty and thy satisfy but they're full of empty calories. For a healthier nibble think nuts or seeds. These are filling and tasty  without all that artificial stuff like, transfat and sugar. Most companies such as Planters sell sleeves of different nuts and these are easy to pack. Also think whole wheat crackers or even Triscuits to munch on.Crackers smeared with peanut butter is a great way to satisfy hunger pangs between meals.Try cashew and almond butter for variety. It's tempting to pick up Hostess cupcakes or Twinkies for a  sweet snack along with quick energy, however resist. Save them for a rare treat. Instead have fruit. Most supermarkets have containers of already pineapple and watermelon which can fit perfectly in a lunch bag. Not only are they packed with vitamins and fiber but they're also refreshing, especially when chilled. Apples are still being sold and they too can be easily stored for quick munching.If you do crave cookies then stick with the all natural kind such as Kashi, The brand has some good ones like chocolate chip and oatmeal raisin. What about protein bars? They're good for quick energy but just be alert as to whar's in them. Some do have a lot of sugar and preservatives. Read labels before you buy,.


Spring brings a variety of activities and a non stop schedule. Keep up your strength by eating healthy meals and snacks while you're on the go.You'll feel better and ready for whatever comes your way.
