Hard to believe it's Oktoberfest already (although it should really start in actual Oktober)>There are celebrations around the country,featuring steins full of foamy craft beers and warm giant pretzels.The problem is that these can be expensive. The best bet - have your own.
What makes a good Oktoberfest? Wursts and plenty of them. You can create a wunderbar sandwich with some tasty sausages. Most have bratwurst which are great on a grill. There are so many different types, some loaded with finely cut pork ,others with finely cut veal (Brat means finely minced in German)Brats or bratwurst are also filled with egg, nutmeg, white pepper and even lemon for some kick. Any bratwurst is best with a roll and a small puddle of Dijon mustard.Of course hots dogs or frankfurters are a well loved wurst, known the world over. Again keep the grill out for them.There's nothing like roasted and even slightly charred dogs with a good long hard roll, sauerkraut and mustard.If you want something that's beyond delicious there's teawurst.This is more of a creamy meat pate or paste of pork or beef mixed with minced bacon.It;'s initially smoked over beech wood to give it more flavor. This is phenomenal, smeared on a simple Saltine cracker or generously slathered on a Kaiser roll.You could also have liverwurst, a staple in many delisT.his is a ,spreadable sausage made from pork or beef liver and pork trimmings.Marjoram, allspice nut Meg and white pepper give it its' unique taste. Try it on a Kaiser roll with a sliced white onion.
For a more elegant dinner try roulade. Every German family has their own take on this rolled bee dish.My Swabian and Bavarian relatives made it stuffed with a creamy spinach filling. It's then bake din the oven so that the meat is crisped. It is one of the most delicious meals to be made and is excellent with spaetzle and a brown gravy. Of course a good side too is kartoffelglace. These are potato balls stuff Ed with small piece of gingersnap inside. They're similar to gnocchi in how they 're made, with water egg and flour . The cooked mix is then mashed rolled into balls and then stuffed with a quarter piece of gingersnap. cookie. A plate of them is perfect with sauerbraten. This is a beef dish made with rump roast that is first marinaded with red wine such as a Merlot red wine vinegar and beef stock along with onion s celery,leeks raisins and juniper berries (which are in any grocery spice area).The marinade is simmered and and the meat is placed into it. After it;s been marinated, pat it dry and dredge in flour.It;s then cooked in a Dutch oven with the marinade for three hours.The marinade is made into a gravy with the addition of the gingersnaps , used for both thickening and flavor.. Serve with the kartoffel glace and warm crusty rolls to sop up the gravy.
