A Quick Colcannon

The Irish dish colcannon is one of those easy dishes made with leftover mashed potatoes and any kind of green. It;s usually fried in butter in a frying pan. What happens if you're really hungry? easy ! Use a microwave!

This is what I did Saturday night,Leftover mashed potatoes call for colcannon. I wanted to make it a bit heartier for dinner. Greens such as kale and cabbage are always used. Yet I wanted to try something different . Monstingstar Farms soy bacona nd a package of Green Giant spinach.

These were microwaved  and then added to microwaved mashed potatoes. I didn'tfeel like doing the whole frying pan route .It was taking the cooked spinach and four slices of already cooked bacon and adding them an a good scoop of I Can't Believe It's Butter to the potatoes. You can add garlic if you want or other greens such as parsley and cilantro. Canadian bacom along with sliced pork roll are other additions.

The combination of bacon, spinach and potatoes was very good. It was similar to many of the Irish recipes I've seen on the Internet. Anything can be added to create a second main course .

Colcannon is what  a home chef makes it. Add what you want.It can be a variety of greens. Add some meat if you'd like to make it more substantial. Try it and then make it your own.

Best Of The British Isles

St.David's Day, the national holiday of Wales was a few days ago. St Patrick's is next weekend. Despite what others have said the UK and Ireland does have some wonderful food. It could be Devon cream teas with rich fruity scones or a Sunday roast, with roast beef, Yorkshire pudding and thick gravy.

So here's the question  - what is your favorite British and or Irish food. I would have today I love colcannon, that flavorful mash with spinach and kale added. I love added huge blobs of plant butter too for creaminess. There's also fish and chips(the vegan version with Gardein's fish fillets)These are the perfect meal for me.

What do you like? Let us know with an answer or even a picture.

A Family Classic Redone

Every family has a recipe for leftover mashed potatoes. It could be colcannon. It could be potato puffs. Whatever it is, the mash makes a good base.

I decided to recreate a family classic with leftover potatoes. The idea of fried potatoes with ketchup sounded too good to pass up. I thought it would be a tasty way to use up leftovers.

I knew my mom and Nonna refried them with butter, I also added oil.
A mix of butter and oil is a good mix to use for sauteing and frying. To give ti more body I added about two teaspoons of  flour/

This gave the potatoes the consistency of pancake batter. I feel it needed more of this and an egg binder. It was still good. with more of a soupy quality  better suited for colcannon.

Mashed potatoes can lend themselves to a variety of dishes. Try it this way or try it in anew recipe. mashed potatoes make a good base for many tasty dishes.

St Patrick's Day Twists

Corned beef and cabbage along with soda bread are traditional St Patrick's Day dishes.Yet it's time to change it up a bit. Shake up tradition with delicious spins on these foods and others.

Corned beef sliders are a better choice than just the slices served with cabbage. You can added cabbage, just shred it. Sauerkraut can also work well here or sauteed cabbage. This is just sauteing the leaves in a mix of olive oil and butter>Leave out the salt when seasoning because the corned beef is salty as is. What rolls should you put the filling on? Hawaiian rolls are good. Their sweetness counteracts the saltiness of the corned beef and the sauerkrauts' tanginess. Regular slider rolls work too.For a fun St Paddy's Day brunch try a conred beef strata. This is made not with cabbage but tasty layers of spinach and cheese. It's like a savory egg custard with layers of corned beef ,spinach and cheese. If you want cabbage to go with it. then think a light coleslaw .If you want a quicker meal then air fry the corned beef and cabbage. Doing such will also give the meal a light crunch too.

Most home bakers will be baking a loaf ro two of Irish soda bread tomorrow. Any homemade loaf is tasty but how about changing it up a bit? Try the recipe as muffins. THis makes for a great side to the corned beef and cabbage or perfect on their own with butter as a light dessert afterwards. You could also try Ballymaloe brown bread which is an easy dense loaf and slightly different than soda bread. The New York Times Food section published the recipe on Wednesday and it's an easy bake that requires just yeast, water and molasses mixed in with whole wheat flour and Kosher salt. THis is perfect for those next day sandwiches too. Colcannon that wonderful mix of mashed potatoes , spinach and garlic can also benefit from a twist. Try fried colcannon balls for a tasty spin. Add a center of sharp cheddar for a flavorful side or hors d'ouevre. They're formed int balls and dipped first in egg and then breadcrumbs. Use panko if you want,.

Update these St Paddy's Day treats with new spins. The result is tasty alternatives that make the meal sing. They're fun and perfect for a day of celebrating.

Planning For Saint Paddy's

One of the biggest party days is coming up,Saint Patrick's day is a day for tradition but also for fun. You can combine the two into a festive feast.

A new twist on the holiday is combining old and new. Yes you can serve corned beef but make it crisp and juicy in the air fryer. It;s pickling the brisket first in apple cider vinegar and then rubbing it with dry mustard. Cook it for one hour at 359 degree Fahrenheit. A tasty side is air fried cabbage steaks that can serve as a base for the corned beef.slice the cabbage thin through the middle. Brush with olive oil or melted butter and season with salt and pepper Air fry for ten minutes at 360 degrees Farenheit. They should be crisp and golden. Keep in mind this is also the perfect meal for vegetarians and vegans celebrating St.Patrick's Day. Colcannon is a must also  You can buy the potatoes now so you don't have to run out or just used mashed potatoes to make this Irish classic. Buy the greens for it the day before. Here you can use fresh baby spinach mixed with kale for a Spring-y green flavor. Minced garlic gives it a true flavor but you could add a pinch of garlic powder too. It can be fried into little rounds too ro turned into colcannon bombs. Make sure you have either vegetable oil and olive oil both for frying.

Of course Saint Patrick's Day is a drinking day too. do you just serve only Guinness or have different beers? Guinness can be strong and you may have guests that may find it so. There may be some guests that also find it too strong in taste too. You could have Smithwick's another Irish beer with a great following. It's a red ale that has a strong barley flavor. This ale pairs well with a variety of foods and perfect with a plate of corned beef.some may prefer what's known as a cream ale such as Kilkenny's It has a caramel flavor that people may like better than the more robust ales along with a creamy head. You could also throw ina few American ales such as Sam Adams Irish ale or even Yuengling . Another aspect to consider is dessert. Although it's not as important at a Saint Paddy's Day party as it is at others, there should be a sweet or two along with Irish coffee. decide what you want to make.it could be stout cupcakes or Irish cream fudge made with Bailey's. Another must buy is plenty of bottled water. You don;t want guests driving home drink. Give them water to dissipate the alcohol's effects.

Get ready for a fun day. Make sure you have the ingredients and beers to have a memorable st patrick's day. enjoy planning it and hosting it.

Thanksgiving Subs Ins

You're in the middle of creating that perfect Thanksgiving dinner. Everything seems to be going well  except you've either run out of or forgot a crucial ingredient? The stores are closed? What do you do? Sub it. Try to find substitutes that can fill in for the real thing.

The worst thing  is being out of flour . We do tend to use a lot it before Thanksgiving , especially for our pie crusts. Yet' it's also a crucial ingredient in gravy. If your gravy needs it and you've run out of it not to worry. Cornstarch can do the trick. You can also use arrowroot and tapioca powders too. however be aware that those can cause a gravy to become stringy. Another idea is roast veggies like carrots, onions, carrots, whole onions or red peppers. Puree them and use the mash to thicken the gravy (your best bet here is the onion because it will add the most to the sauce). What happens when you didn't buy enough potatoes to maked mashed? Add about a cup of potato flakes to it to stretch it. If not try adding spinach or kale to make that Irish favorite colcannon. You make be creating a new holiday tradition with this dish. Another idea is using those sweet potatoes in the recipe. It's an interesting and tasty way to make sure that everyone get a scoop of mashed. If you;ve run out of butter then sub in olive oil. It gives a silky texture to gravies and mashed potatoes.

What happens when that salad isn't going to be enough for the Thanksgiving meal? How do you stretch a bowl of greens and tomatoes? Add anything. Nuts like almonds and walnuts work. You can easily make croutons by air frying any bread. Just cube the slices , coat in olive oil and season with either garlic or onion powder. Air fry for about five minutes at 350 degrees Farenheit. Also if you have any jarred veggies, add them. Any salad can benefit from peppers , olives or artichoke hearts. Another troubling thought is running out of whipped cream at dessert time. Many love a big blob of it on their pies. Yet what happens when everyone wants a lot and it runs out? Not to worry. You can use ice cream as a side or if you want a fresher take. try Greek yogurt if you have it.It;s just whipping cream with the addition of vanilla and sugar.Use a hand mixer  and whip the yogurt and vanilla until soft peaks start to form. Gradually blend in the sugar. Continue to whip until the peaks are very stiff.

Don;t worry if you run out of something on Thanksgiving. There's always a substitute to fill. You'll still have a great holiday meal.

Irish Classics Updated

Saint Patrick's Day is Friday and with that comes an array of Gaelic dishes . They are classic recipes  yet can be updated for a zingy and fun holiday meal.

One of the easiest and tastiest is colcannon. This is taking either fresh or leftover mashed potatoes and adding veggies to them. Green onions are added along with butter and cream. Many home chefs use left over green cabbage  but for a more buttery flavor try Savoy cabbage instead. This is a rich yellow colored one  that doesn't have a strong flavor like the greey variety. Another update is adding kale and spinach for a deeper jewel color along with adding more nutrients. You could also add sauteed yellow onions or scallions. If you want it to be vegan, then add almond milk and Melt butter to it.Irish stew is another Gaelic treat. It's usually made with lamb but you can vary it with beef and even vegan beef crumbles. It has carrots parsnips and turnips however you can easily switch ip up to sweet potatoes and onions.Tomato paste is also put in but you can used roasted tomatoes as well for a smokier taste. It's flavored also with a good stout but you could experiment with pale ales or other brews.

Of course one of the most famous Irish recipes is Irish soda bread . This is a quick bread that receives its' leavening from baking soda instead of yeast. The other ingredients are pretty simple and classic, buttermilk, raisins , a pinch fo sugar and a pinch of salt. To change it up a bit use Craisins , drired cranberries for a sweeter , tangier flavor or currents. Some home bakers use thinned yogurt instead of the buttermilk or kefir - a fermented milk drink for a tarter flavor. For a sweeter one  think  chocolate chips, yes chocolate chips. You can also add rolled oats ( a staple in an Irish breakfast) along with brown sugar. This would be the perfecr bread to have on St Patricks' day morning with a steaming cup of coffee or tea as you watch the parade. A hip dessert served by many home and professional bakers is stout cupcakes. These are a heady and rich mix of the thick foamy ale with cocoa powder  and chocolate chips. These can be served without icing or a buttercream one laced with Bailey's Irish Cream or coffee .

Celebrate St Patrick's Day with updated recipes. You can still have your soda bread and Irish stew. Just zing it up a bit for some flavor and fun.

Sunday Dinner Monday Leftovers

One of the best aspects of a Sunday dinner is that it can stretch into Monday. Tose roasts and sides can d double duty on a busy first day back to the office. It's amazing what a little stretching can do.

Of course one of the easiest leftovers is a hot sandwich. This is great if you have turkey or roast beef. It's just slicing what's left  and serving it with gravy on any kind of bread. You could even get  fresh dinner or kaiser rolls and split them. This makes for a satisfying meal , especially on a cold night. The same is true if you have leftover stuffing.Keep in mind any meat chopped up , which includes leftover ham or chicken can go into a salad too. This is even easier and quicker  than  sandwich , but just as satisfying. Another idea is chopping  up the roast and serving it with pasta. Many make turkey tetrrazzini after Thanksgiving but it's also good on a Monday night. This is simply blending the leftover bird with mushrooms, cream cheese and chicken broth and already cooked spaghetti ( you could also try fettuccini or angel hair for different textures). It's then baking i the tettrazzini in a greased casserole dish for a good forty five minutes. Another idea is devilling ham or chicken It's shredding the meat in a food processor ro chopper and then  adding a tablespoon of  mayonnaise to get that creamy texture. For the ham you could add some celery salt for more flavor while the chicken gets a pinch of tarragon. Serve on toasted bread for sandwiches.

Sides can also get a make over and even turn into the main course itself. Salads can be revitalized with more veggies added or evne cheese rounds or croutons. Leftover Idaho potatoes can be sliced and turned into air fryer chips . Spike them with some lemon juice and oregano for Greek style fries . These would be perfect if you're having hamburgers. If there are a lot left over then mash them. It's just adding milk or cream along with butter and seasonings. Again these are good with any leftover gravy. As for mashed potatoes themselves. think colcannon. It's taking the mash and frying it up with any leftover spinach , scallions and leeks plus a mashed up clove of garlic if you want more flavor.  You could also make another traditional Irish dish -, boxtie or potato pancake. This time combine the mashed potatoes with flour , one egg and a tablespoon of milk. The pancakes are just seeasoned with salt and pepper but you could add chopped onions or scalllions to them for color and taste . The pancakes are then fried in olive oil or butter. These can be made large and served like a crepe with mushrooms or tomatoes inside and a mushroom gravy on top.

Yes you ca stretch that Sunday supper into Monday's dinner. It's a quick and economical way of repurposing delicious food. Try it and create an enirely new meal.

Irish Classics Updates

Saint Patrick's Day is next week and that means the usual corned beef and cabbage along with green beer. However it's a bit different on the Auld Sod and many classic Celtic dishes have been updated. It;'s a fresh way of celebrating the holiday.

Of course there's corned beef. You can easily make your own, considering it's not that hard. You need to brine it now if you want it for Saint Patrick's Day.  It's taking a beef brisket and marinating it in a salty and spicy brine for five to six days. There are also pickling spices such as mustard seed, allspice berries, coriander seeds and peppercorns. The brisket is marinated in these and water for at least five days and then simmered in a bath of more pickling spices and water for several hours or until tender. You can use for tacos as Sam Sifton of The New York Times Food section did, topping it off with a tasty slaw of cabbage and carrots.Mayo and sliced jalapeno peppers are also added for creaminess and zing. Another updated idea for the corned beef and cabbage is using them as filling for egg rolls. You will need wonton wrappers which any grocery store has. These can be fried or air fried and served with a mix of fresh ground peppercorns and soy sauce.

Colcannon or Irish mashed potatoes is another Saint Patrick's Day standard. It's homemade or boxed mashed potatoes usually cooked with kale. I've made this with spinach which give it a richer flavor along with a pretty green tint.Green scallions can also be added for bite along with plenty of butter and cream. To make it vegan friendly, just add Melt plant butter and almond milk. Also don;t be afraid to give it a tiny dash of turmeric for color and flavor or hot pepper for an exciting bite. Keep in mind that colcannon makes an excellent topping for shepherd's pie.If there's any left over you can make a patty or croquette with them . You just need a cup of flour and an egg to bond them and then fry them either in a skillet or air fryer. To make them really tasty shred some corned beef into the batter. Homemade Irish soda bread is a must to bake. Raisins have been the traditional add in but try subbing in chocolate chips and hazel nuts for a newer, fresher spin. This makes for a great breakfast  bread , especially warmed with butter. The recipe can also be turned into muffins, which are perfect for a brunch.

Irish  classics don't have to be the same old stodgy  standbys. Update them to create a tasty , fresh new flavor. It'll make for a fun Saint Patrick's Day.

Comforting Dishes From The Times Pantry

Comfort food is going to be big this season. We're going to need dishes that soothe and help our troubled souls and minds. Luckily the New York Times has gathered some of the best recipes from  From The Pantry, a series of recipes that helped home chefs during the pandemic. Sadly, it's ending its' run soon yet home chefs can enjoy the many recipes it still offers.

Melissa Clark curated these in today's New York Times food section. She offers the highlights of it and what the recipes can do.  They're confident and flexible along with being versatile to stretch to two or even three meals. They represent the best of pantry cooking, which done right can help you adapt your favorite recipes to what's in the pantry. Ms. Clark also shows how to get past all those panic bought beans and boxes of pasta and create comforting meals for the entire family to enjoy. She starts with the recipe for baked polenta. This is the perfect dish for fall and for a weekend supper. It starts with corn kernels, whether canned, frozen or right off the cob sizzled in a pan with butter. Polenta grains are added. Then throw in anything you want, Alliums like shallots or scalions, greens, like kale . You could add some cheese like feta ,blue or Parmesan. She suggests my favorite, adding eggs along with a lot of freshly ground pepper and sea salt. Another pantry dish is the famed Irish dish colcannon. She up the flavor with crispy fried leeks and add some sliced garlic cloves. Cabbage or kale is traditional but you can use broccoli rabe too. Add milk or vegetable broth and lots of butter for a truly creamy taste.

Comfort meals got us and are still getting us through this pandemic. There are recipes for tuna casserole and roasted chicken. Ms. Clark's take on the tuna casserole?  Zing it up with garlic and white wine! There's also a pinch of red pepper flakes for heat. You can use tuna in water but use the one in olive oil for a richer flavor. It'll be mashed into white beans , giving the dish a chunky texture. It's topped with Gruyere, according to the original recipe by Diana Henry, a British based food writer. her recipe was a Breton  tuna and white bean gratin. Ms. Clark gives it an American spin by adding potato chips to the topping. Roasted chicken is another dish that's not only comforting but versatile too. The bones can be used for stock while leftovers can be turned into chicken salad for lunchtime sandwiches. The stock though is the best. It's just taking the bones, and  cooking them with aromatics such as ginger or onions , carrots or herb stems. Cover with cold water and simmer for two to three hours. How does she end these meals? With a comforting dessert, the classic chocolate cake made with mayo! This is a rich cake anyway, made with Dutch cocoa and chocolate chips. The liquid used is hot coffee although you can use tea too. Vanilla can be used but so can bourbon or brandy if you don't have the first. Ms. Clark recommends just dusting it with confectioner's sugar although you can add a cream cheese frosting or chocolate glaze for more decadence.

There's nothing like comfort food, especially during these crazy times. Make what you want. Then enjoy these good for the soul, good for the mind dishes.

Getting ReadyFor St Patrick's Day

Tomorrow is St Patrick's Day and it's the day when most people get their yearly dosage of corned beef and cabbage. Yet Irish cuisine is much more than that. There are some phenomenal potato and turnip recipes along with interesting combinations that celebrate Ireland's love of both the land and of the sea.

You should already have your cabbages. What to do with them? Make a buttery dish of colcannon, a mix of mashed potatoes with cabbage and kale. Fry this up in butter and sprinkle with sea salt and cracked pepper. Some Irish add bacon (usually the streaky kind ) along with garlic and onions to give it more oomph. Serve this with lamb or mutton, which are traditional meats. You can get the ingredients tonight for a hearty lamb stew for tomorrow's party. Seafood has been popular since the Vikings ruled the island and the Irish love a good oyster stew too. Buy your seafood this evening and get it shelled for tomorrow.

If you're going to go a more Irish American route then you should be starting to bake your soda bread tonight. Remember this is made with buttermilk instead of regular milk . It also is made with currents and raisins so if you want more authentic , then make sure you have the correct ingredients. Bake two breads because everyone loves a fresh slice of the stuff for tomorrow.

Tomorrow is the festivities but get ready for them today. You'll have more time to down that Guinness and enjoy whatever Gaelic treats you decide to make.
