Cooking For The Whole Week

 Weekend cooking  can be a pain but it pays off, especially if you are planning to have it for the entire week. Saturday and Sunday are perfect days  to make those frozen meals for week night dining. There's so much you can make for a full five busy days ahead.

Be ready when you want  to cook a lot.Make sure that the cutting board is clean and wiped down. Are the knives sharpened? Do you have the right ones? Are the pots , both for stove top or for the microwave also clean and ready? When the utensils and gadgets are ready then look at what you have? Jarred sauces and pasta make for good weeknight dinners. They both store and freeze easily. Have boxes of your favorite pasta along with lasagna sheets for cooking. Have both read and white pasta sauces to cook with to vary the upcoming agenda of meals.beans are a vital ingredient in soups and stews. Make sure you have the appropriate number of cans . Also have a variety too, Chickpeas are versatile and can be used in everything form soups to  curries. red kidney beans are another must. They add flavor to soups like minestrone. Do you have enough herbs and spices. Make sure there is enough garlic and onion powder along with oregano and rosemary. Do you have enough of the basic seasonings such a as sea salt and peppercorns that can be freshly ground? Most importantly  - do you have the storage containers ready to be filled and stored.

As for recipes, again a hearty pasta such as penne or bucatini work well with reheating. You can just cook the pasta and then let everyone microwave their own cup of sauce. for later eating. They can be cooked together too.Another dish that can last well into the next weekend isa bean stew. Add any kind of bean you like or a combo of them such as chickpeas and cannellini along with a veggie such as spinach . Tomato paste and vegetable broth give it a smooth texture.  Keep in mind that you can add chicken or beef to this along with stretching it out with rice. or quinoa.For easier cooking with this use your crockpot It allows you to to go about yoru Saturday chores and errands with only having to check in once or twice to see how it's cooking. A meat based stew even lets you make some dumplings for a more filling meal. These can be made either plain or with herbs for a tasty extra.Of  course soups are a good dish to make. They're easy to to store and easy to reheat in the microwave. Take advantage of the season's bounty. A good squash, cauliflower ro pumpkin soup is easy to whip up especially if you have a bof soup pot and an immersion blender.

It's so easy to devote a weekend for weeknight cooking.Decide what you want to make. Get the ingredients and cook. You;ll have delicious homemade meals for the week ahead,

Got Pasta ? Get Sauce

 What do you do with left voer pasta ? Create a quick and tasty sauce. This revitalizes any kind of leftover with fresh ingredients.It makes for a fast yet delcious hot dinner.

Tis is how I flt .I boiled plain fettucine the other night and had it with just Lidl's It' tastes LIke Butter on top. This was ok, a really simple meal for a busy Saturday. I had almost too much pasta left over. What to do? Bring out the fresh veggies, olive oil and plant butter and create a delicious sauce.

There's nothing like combining spinach with sliced baby bellas and sauteing it in the oil- plant butter mix. I just added a good amount of garlic powder (you can used fresh minced garlic in stead) and a good amount of salt and pepper.
I microwaved the pasta with more of It Tastes Like Butter for five minutes and comnined the two. Thanks to a combo of fresh and leftover I had a hot flavorful dinner. You can do the same with any veggie. Try a burst tomato sauce with cherry or grape tomatoes. A kale and garlic sauce is another easy make and goes well with any kind fo pasta from spaghetti to penne. Have leftover chicken? Mix it with some peas , heavy cream garlic and milk for an Alfredo sauce.

Plain leftover pasta is a good canvas for a quick , fresh sauce.create the spinach and mushroom one or with  any vegtables of your choosing. The nd result is a tasty hot diinner makes in minutes.

Welcome To Korean Street Fare

 One of the most tastiest and trendiest food is Korean street fare. It's big in the Koprea Towns that dot this country. There is also Yopokki which has the food and flavor in a cup/

A good freind  who is Korean gave me them for the Lunar New Year. This excited me because I do love Korean food from bulgoki to galbi. This was something different and easier to make.

It's sort of similar to remane, with rice "cakes(which resemble penne) anda liquid  flavoring. (there's also a humectitant to kepe the rice cakes moist).Its' filling the cups with water then the seasoning packet. Like any instant cup food it only takes a few minutes to cook.The flavoring were done in the tteokbokki .I also received jajang flavor or black bean. 
The flavors were intense and spicy.This is true Korean street fare

It's an interesting mix, especially the tteokbokki . This reminded me of General Tso's chickn , a powerful sweet flavor cooked with chili crisp.

Try Yokkipokki if you want the inreresting Asian fare that is a breeze to make. It's a great introduction  to Korean street fare. Try it and discover the delight.

Polenta, Pasta or Risotto What's Your Choice

 What is a nice accompaniment to a tomato sauce or grilled chicken ro steak? Do you go for a side or base of  polenta, pasta or risotto? or do you eat these on their own? What works best with various sauces and sides?

Out of all three polenta is the most versatile. The ground corn meal can be perfect on its' own, as a base or gracing a plate as a side.It can be labor intensive if you want to cook it.It does require a lot of stirring after a basic mixing of finely ground cornmeal, water and salt.It can also be lumpy however the best way to beat this is to pulverize the meal before cooking.An easier method  would be buying the already made polenta logs and grilling them until they're crispy and golden yellow. A simple cacciatore sauce with chicken is the best main dish with it. The thin tomato sauce works well with the polenta. Another good sauce is a simple mushroom and spinach one. This is an easy make with simply sauteing spinach with baby bellas in a mix of garlic olive oil and butter. Can you serve polenta with grilled or roasted meats. Only if there's a sauce. On it's own , without any sauce ro even butter and cheese polenta can be somewhat dry. There should be some kind of sauce there.

If you want to serve a good side with steaks or chicken then think either pasta or polenta. Pasta can accompany  achicken in the form of noodles. Again with any kind of sauce it's a great side. You can even cut up a rotisserie chicken or a flank steak and add it to a tomato or spinach  sauce to make a heartier dish.Any kind of pasta is good on its' own. Just add butter or to make it more flavorful cook it in the broth of your choice. Unlike polenta there are so many different types that work well with any type of ingredient.  Penn can work with a chunky tomato sauce while linguine is perfect  as a base for clams or chicken cutlets. Risotto is a diffrent matter.Risotto is a phenomenal , especially the saffron infused risotto Milanese. This is perfect as a main course or as a side with any protein form lamb chops to shrimp. A plus about this addition is, like pasta, anything can be added to it while cooking. The miost popular add ins are mushrooms and asaparagus. You can also mix in chopped tomatoes too along with a variety of cheeses.

What's the most versatile and best? Use polenta for sauces. Try pasta as a side and use risotto as a main dish.

It's Crockpot Season

 It's January and that means one thing :time to get out  the crockpot or start using the one you received for Christmas. There's so much you cna make using it. Be rady for , easy, ribsticking meals  that warm you from yoru head to your toes.

I got mine out after a few seasons of not using it.I love it, from Classic which I bought at Target six years ago./ The handle is broken and it's seen better days after six years but it still works beautifully.

I spent a rainy , snowy Sunday making homemade vegan chili.It's my Mom';s recipe that I tweaked. It  has a cuo of both kidney and cannellini beans, a cup of vegan soy crumbles, crushed pepper infused tomatoes and tomato sauce. A mix of cumin, chili powder, along with onionand garlci powders were added. You can add real meat and just the tomato sauce. A bowl of it was perfect on a frosty, chilly day. You can jazz it up your own recipe by adding a layer of mixed Mexican cheeses, and sour cream or a dollop of guacamole.

Use your crockpot to make all sorts of warming dishes. My next big recipe with it will be homemade tomato sauce. This is bascially the chili recipe sans the cumin and chili powder. I can see  it on top of penne or spaghetti with vegan meatballs. I can also just serve meat balls and sauce over Italoan bread for a hot hearty, hero. Keep in mind that crockpots can also be used to make Swedish meatballs and a variety of homemade soups. Imagine a good leek and potato one being simmered in it. If you have apples, cut them up with some granulated sugar, lemon juice and cinnamon for a chunky applesauce. 

It's crockpot season. Use yours to make hot , tasty meals. It's such an easy cook that produces warming dishes for cold winter days and night.

Spring Light

 One of the best aspects of Spring is that there will be a wealth of green ingredients. It makes for not only fresher eating but also healthier eating too.All those newly sprouted veggies hold the promise of more nutrition along with flavor.

Asparagus is big right now. It's a sure sign of Spring and warmer days ahead.It also makes for a great light eating. One spear is only three calories!!!! One way to have them is grilled after being marinated in olive oil and dusted with sea salt and fresnly ground pepper. A more decadent way is Piedmontese style. It's serving steamed asparagus with  a butter sauce and having the spears topped with grated Parmesan and sliced hard boiled eggs. A healthier spin is using Melt instead of butter and vegan cheese. Nix the eggs.Peas are another Spring veggie thar's light in taste and calories One cup  is only one hundred eighteen calories. A tasty recipe is the Italian risi bisi. This is a delicious marriage of the peas and arborio rice. Chopped onions are also cooked in , first in  olive oil with the rice and then vegetable broth. It's a refreshing change up from the usual tomato risotto. Of course mushrooms are abundant during this season too. You can easily make a risotto with cremini and portobellos. On warmer days, grill them on the barbecue for a flavorful alternative to beef or turkey burgers.

Spinach is also a Spring veggie. This is one of the best green ingredients you could have. It's great for eyes, and skin along with helping in weight loss and reduces hypertension.It is also the most versatile too.  You can easily turn it into a tasty and chic salad. Think of combining it with salmon and hard boiled eggs in a low calorie but protein packed salad. An herb laced vinaigrette is the best dressing for this. Of course there's nothing like a crispy spinach frittata, a take on the classic spinach omelet. Add sliced cherry tomatoes and vegan Parmesan for a tasty and quick lunch.Mix the greens with another Spring classic - mushrooms for a pasta sauce that's different and unique. Saute sliced baby bellas in olive oil and garlic and then add washed and dried baby spinach leaves. Cook until leaves turn dark green and wilt and serve with any kind of pasta. It 's wonderful with angel hair or spaghetti but you could also mix it in with rotelli or penne. Celery and carrots are also Spring veggies that come in the latter part of the season. These are great gracing salads but think of them in light vegetable soups.

It's Spring. It's a time for fresh and lighter eating. Use the bounty of spring for this greener, healthier way of cooking.

A Good Basic Pasta Sauce

One recipe every home chef should have in their arsenal of recipes is a good  homemade tomato sauce. It should be robust  enough to support any pasta and delicate enough to let the various
ingredients shine through. It should be one that also can be altered to fit the home chef's whims. In other words - the perfect sauce.

The basic sauce recipe is usually made in a large sauce pan. This creates a quick cook which can be frenetic especially when you're cooking pasta at the same time. This is why I prefer my crock pot sauce  - my version of my Mom's. A sauce should start with a good glug of olive oil such as Bertoli's extra virgin. It gives the sauce body and silkiness.  You can start off with sauteing diced onions for it. This is one of the flavor support that give the pasta sauce sweetness. If the onions are too strong sub in a teaspoon of onion powder.Garlic is the second support thrown in. Usually two minced or crush cloves will do it. Again, if you're not big on it, add one minced small clove or sprinkle in garlic powder or garlic salt.Now it's time for the tomatoes. Many feel that crushed  tomatoes add more flavor and texture. I prefer a plain, organic base  such as Tuttorosso plain sauce and tomato paste.It creates a smooth, satiny textured sauce that works with every kind of pasta from spaghetti and angel hair to gemelli and penne.Salt and pepper are necessities for a good sauce. The controversy comes in the sweeteners. Many put in sugar or carrots. These can give the sauce a candlylike taste. Use a dark honey. I prefer Carmel Honey Company's California Wildflower. Just a dollop or two give balances out that tomato -y tang.You can add basil  - dried or fresh if you want.

The basic sauce can be varied. Melissa Clark had an interesting spin on it in last Wedneday's New York Times Food section. Her A Good Appetite column features a kind of lamb ragu. Her sauce has the usual ingredients : crushed tomatoes and paste, onions and olive oil. Then it veers off. She adds not only lamb but also anchovies.Both bring a sweetness to the sauce and balances out the sometimes metallic taste of the tomatoes. She suggests omitting the fish if you 're not a big anchovy fan but they do add to it. She also recommends varying the recipe with pork. This definitely will add flavor. Many Napolitano home chefs add a good amount of pork to their sauces. Another variation to Ms Clark's recipe is marjoram - which is stronger tasting herb than oregano. It's up to you if you want to add that..Beef or even beef strips are a great addition if you're going for a stick to your ribs sauce. Chicken can also be added. Many love a sauce rife with seafood. Use this basic one and then add whatever strikes your fancy - shrimp, clams , tuna.

Every home chef should have a good tomato sauce in their repertoire. It a kitchen basic that highlights any pasta. Best  of all it can be varied at the cook's whim.

Those Macgyver Kitchen Moments

We all have them, those times when we forgot a vital ingredient or wound up short with measuring.It's going to be even rougher for us East Coasters, thanks to the monster blizzard that will be crippling the entire Eastern Seaboard. We won't be able to get to the store, not a good thing,especiallyy if there's you've forgotten something from your grocery list.

This is where Macgyver thinking kicks in.Remember Macgyver? That Eighties TV action hero that could turn a twig into a Swiss Army knife. He's currently enjoying a reboot on CBS and this new millennial inventor still probably can turn a can of beans into a full meal and a weapon of mass destruction. Do the same when you're faced with shortages.If you've run out of eggs for baking,then turn to fruit. Applesauce and bananas make excellent sub ins for them Use a 1/4 cup of either unsweetened applesauce or mashed banana. Aquafaba or bean water can also be used because it has similar proteins and enzyme to egg whites.That can of beans Macgyver could turn into a weapon can also actually be used as meat if you forgot to get burgers or there was a run on them. You can use a variety of different beans.Black beans have an earthy flavor, while kidney beans impart a more milder one. Chickpeas can be made into burgers too,giving off a Middle Eastern vibe.They can also be made into falafel for something a little out of the ordinary.

What happens when the kids want pizza and you have no or little flour in the house? Head to the crisper and get out the cauliflower. This is a true Macgyver moment. It's taking the veggie's florets and shredding them in a food processor. You will need some kind of binder such as egg and processed cheese to bind it. The principle can be applied to making cauliflower bread too which can be used for breakfast and sandwiches too. Cauliflower can even be turned into breadsticks too, perfect if you're having spaghetti.Out of macaroni for baked mac? No sweat. Spaghetti can stand in ,creating a dish the whole family might enjoy.It's layering the pasta and cheese with a creamy roux  and then topping with pats of butter and paprika for color. Penne can also be used along with angel hair pasta too. If the kids are clamoring for ice cream, despite the freezing temps, don;t despair.Freeze banana slices over night  and then mash them in a food processor for a creamy, tasty banana flavored treat. Yogurt can also be turned into a frozen treat. It can be poured into an ice cream maker along with one teaspoon of  vanilla flavoring. It could also just be frozen too,for thirty to forty minutes.


Don't worry if you run out of ingredients or have forgotten to buy them. Go Macgyver and sub in whatever.It's amazing what you can do wit what's in your kitchen,

An Easy Summer Sauce

We are in the middle of tomato season. This versatile fruit that masquerades as a veggie can be made into everything from a sandwich to a bowl of salsa. However it is best made into a tasty pasta sauce. The garden taste comes through, tangy and sweet, perfect for any pasta when made this way.

David Tanis believes this and wrote about it in his column  City Kitchen  in today's New York Times Food section.. One of the best aspects of homemade sauce is that you can make it and use it months from now. There will be that ripe taste in the middle of a cold winter. Even if you don't; have them in your backyard you still can get beauties at your local grocery store and get them cheap. According to Mr Tanis, this is another reason to make sauce. He suggests looking for ugly, cracked and large ones that are slightly bruised. These are cheaper due to these imperfections yet still  have a sweet, dense blood red flesh, perfect for sauce. Another suggestion is using plum tomatoes if you like their taste(slightly sweeter than the beefsteaks).The one standard he demands is that they be sun ripened. (remember home growers can also use the less than perfect ones from their gardens too instead of tossing them onto the mulch pile)

Prepping them  for sauce is easy. This is not the kind of recipe where home chefs don't; blanch and peel the tomatoes. What it does require is the surprising hand held grater, a gadget not necessarily associated with sauce making., Cut the tomatoes in halves or quarters and then squeeze out the seeds if you don't like a few in your sauce. Now place the cut side against the grater's large holes and gently rub until there's only tomato skin  left. Now add a pinch of sea salt, two tablespoons of olive oil along with a sprig of basil and a halved garlic clove. You can add tomato paste to thicken it for a more traditional textured sauce. Cook it in a low wide saucepan over a high heat. Once it starts to boil the lower the heat and let it simmer.It can be kept in the fridge for five days afterward or just frozen for later use down the line. . Mr Tanis recommends serving it with farfalle or penne, textured pasta that will hold the sauce but I can also see  it with bucatini,the thick tubular spaghetti.Serve with a sprinkle of pecorino or Romano  for the best summer dish  of the season.

Take advantage of tomato season and make this easy and delicious sauce. It's a great way of enjoying the harvest right now. Freeze some for later to have the taste of sun ripened tomatoes on a cold winter's night.

Outdoor Pastas

Pastas are usually thought of as winter dishes. However they can also be served as outdoor summery ones and a complement to grilled meats and veggies. Any pasta can be turned into a tasty warm weather dish, perfect for hot days ahead.

Most people only associate elbow macaroni with summer dishes. This is true, yet it's not the only pasta that can be served beside the outdoor grill. Orzo can also make a great base for outdoor salads. Add some artichoke hearts along with broccoli and grape tomatoes for a tasty side to barbecued lamb or beef kabobs.You can also add sliced salami to it for a hearty brunch main dish. Another good salad base is tubettini  which are the  small tubes used mostly for soups. You can easily make them for a tasty salad involving olive oil , sundrued tomato and grilled chicken breasts Tortellini, another favorite used in soups can also be made into a salad, using tomatoes , pine nuts and mushrooms.

More traditional pastas can also be used as a base for meats and veggies. Try spaghetti or angel hair with freshly grilled zucchini slices along with tomatoes and mushrooms. Add a hot sauce made out of olive oil, butter and garlic on top.Angel hair pasta is the perfect foil for freshly grilled chicken or even fish . Add a sauce of alia olio and then top with sun dried tomatoes. You can also wilt spinach and /or broccoli rabe and again add it to any pasta from cavatelli to  penne. Try this dish next to some superbly grilled steak or chops.

Pasta at an outdoor grill doesn't  have to be soggy  with mayo. It can be a tasty salad with veggies or a hot side , perfect with grilled chicken, fish or beef. Any kind from orzo to spaghetti, from tubettini to angel hair can be turned into a tasty and different outdoor dish.
