New Diet New Spin

 Sometimes your body tells you to go on a diet. Kidney stones, gallstones, stomach issues, they all gently dictate that maybe we should eat healthier  and better.  THe foods have to get better.The old habits have to be replaced by new.

I'm discovering this as I found out I'm plagued by kidney stones.These are not little grains of sand..They're huge , honking rocks that are causing blockages. They have to be blasted out of me in what's known as a ureterscopy where a laser is inserted and used to destroy the offending stone. I've had kidney stones for years but they didn't;t become troublesome until some urine tests came back abnormal. Further investigation led to a giant stone in the ureter the tube that takes the urine form the kidney to the bladder. Stones are caused by a number of bad food and drink choices. After all ,like the liver ,the kidneys are filters, filtering any liquid we ingest. I quickly found out my diet soda habit had to be quit.Dark colored colas like Coke and Pepsi (along with other brands) are full of phosphoric acid .This acidifies the urine which produces crystals which eventually become stones.I 've switched to lighter  ro clear colored sodas like Poppi which is lower in sugar along with Fresca. It also helps to try to drink as much water as I can to let the stones flow out (although this can be hard, especially if you're not a water drinker like me)>

Salty foods are also off the table. I can still have chips but they have to be the lightly salted kind. Some fast foods are allowed but only in moderation. Burger King's Impossible Burger is ok to eatbut only once or twice a month.The fries should be the kid portion size. Even taco Bell is allowed with such options as been soft and crunchy tacos.My favorite ,the veggie power bowl with chicken is a fine dinner thanks to the chicken , fresh veggies (just go easy on the tomatoes) and beans. At home I find forgoing the Gardein nuggets which are high in  damaging sodium.Their chicken strips ,made with pant based meat are healthier,especially when dipped unflavored olive oil and then so air fried they resembled chicken fries. Surprisingly the usually healthy veggies like spinach and kale are definitely off the table. Both contain high amounts of potassium . LUckily there is my other favorite  broccoli which I can eat just steamed  and plain. Certain fruits are now forbidden too. Bananas are off the table along with avocados. Coconut is frowned upon too. However I can eat as many strawberries and blueberries  as I want which I love with coconut cream  (which is weirdly allowed.)

Keeping kidney stones at bay requires a new diet.Some foods are old friends. Some old friends have to be forgotten. It's a new world navigating what right and what's good for me.

Congo Plaintains - The Perfect Holiday Snack

 Thunk Congo Plantain chips when you want something different and tasrty for your holiday party. These fun chips are a nice change up from the usual holiday party bowl fare. There are three different type that  are fun to mix with theother flavors.

I LOVE these chips!!!! I'm a big plantain fan and these are far better than any regular potato chip. They're really a first for Congo a food company that sells such exotic fresh fruit as fresh plaintains,. dragon fruit (!) and cassavas. They also sell coconut water in a coconut with a straw (somehow perfect for ringing in the New Year!)dark chocolate and coffee.

It's the chips that stand out (although I do want to try their chocolate, coffee and cassava) . There are three types, the salted which has a slightly potato tastes. Then their are the maduros or  fried ripe ned ones that have a sweeter flavor (TRy this with ice cream ro in a trifle for an exotic taste)and a garlic flavor that's sooo addictuve.Keep in mind that plantains are rich in potassium and fiber. They're great energy boosters and another plus during these times - low in cholesterol. 

Have Congo Plantain Chips in your party bowl this holiday season. They're a great addition to any gathering. They're also jst a great snack on their own. Try them for something tasty and different.

Ultimate Veg The Best Vegetarian Cookbook Ever!

It is still hard to cook for vegetarians, despite the explosion of the Beyond Meat and Impossible Burgers phenomena. You can't serve these for every meal. You have to come up with different dishes with different flavors  Thankfully Jamie Oliver comes to our rescue with a new cookbook. There's nothing but meat free dishes in it.

Ultimate Veg: Easy and Delicious Meals For Everyone (Flatiron Books 2020) is the must have recipe book for those home chefs cooking in a vegan and vegetarian household. The book is written in Oliver's in your face style and it's refreshing to see the first pages begin with recipes. There are help pages and guides but they're at the end of the book, not at the beginning. Chef Oliver gives good hints and tips as well as urging to grow our own veggies. Vegetables lose their nutritional values as soon as they're picked. Having a garden, whether it 's a plot of land, bucket, pot or even a grow bag.He also delves into what is a portion along with how much should we eat.(about five portions of fruit and veg per day according to UK standards.) he also urges to eat the rainbow which is reflected in all his recipes. He explains why  as in eating purple veg and fruit is good for maintaining healthy blood pressure and muscle function. why, purple produce  is full of  life saving potassium. There's also a section on fats and Chef Oliver explains the differences between the various oils. He also recommends using organic butter and staying away from margarine because it is hydrogenated.

The recipes are divided such sections as soup and sandwiches, salads,,pasta, and the very fun Friday night nibbles to name a few. I love this book and plan on using it a lot. What is great is that that there will be leftovers which can be served the next day or later on in the week. There are so many recipes I want to try.I especially love the curries and stews section because it has such mouth watering dishes , perfect for the cold days - and nights ahead. The super comforting gumbo is on my radar. This is melange of chickpeas , and plum tomatoes cooked with celery , peppers and cayenne pepper. Another must cook  is his mushroom stroganoff, spiked with whiskey and made creamy with the addition of sour cream or creme fraiche. I do like the Friday night nibbles which can easily also make for a weekend supper. His polenta chips look heavenly , These can easily be made with leftover pulse too. it's roasting polenta pieces for fifty minutes in a 350 degree F oven. There's also a tasty tortilla dip that has cherry tomatoes and red chili mixed with cream cheese. The ploughman's nachos are another must make.It's sliced bread like sourdough, slathered with a mix of butter and HP sauce baked with sharp cheddar on top  and topped with pickled onions. Yum!!! There's also simple pickle recipes I want to try too. Every recipe from the pastas to pies parcels and bakes , along with soups, sandwiches and salads will be created in my kitchen.

Vegetarian home chefs must get Ultimate Veg :Easy And Delicious Meals For Everyone. There are dozens of delicious and fun recipes to make and try. There's no need to have faux beef every night once you have this book.

Nectarines A Nice Summer Treat

Ask people what are the fruis of summer and they'll probably mention strawberries, and blueberries, definitely peaches. Yet another summer harvest is coming in right now Nectarines are also ripening. These wonderful fruits are a nice change from the usual fare and work well in many recipes.

What is a nectarine? A peach without the fuzz.The Chinese first planted them over 2,000 years ago and then the seeds were cultivated in ancient Persia, Greece and Rome, They were popular during the medieval era , growing in England and Spain. The Spanish brought them over to the Americas in the late 16th and early 17th Centuries. Nowadays California is their chief grower, with 95 percent of all nectarine harvests coming from there. Some peach seeds may turn out to be nectarine trees and vice versa.Many growers graft nectarine branches onto peach trees to guarantee a crop of then. The fruit's name means full of nectar.It's the perfect dessert or snack for dieters. Each piece of fruit only has sixty two calories. Surprisingly it's one of the few fruits that has protein in it as well.. Nectarines are also high in Vitamin A and beta carotene (hence the bright yellow flesh).It also has Vitamin,C, potassium and most importantly fiber.The fruit can be kept out for two to three days before they develop brown spots. As with other fruits, nectarines are better stored in the fridge Besides nothing beats the taste of a chilled one on a sweltering day.

Since they're basically peaches, nectarines can be made into the same dishes as peaches. Try them in a cobbler laced with brown sugar.They'd also be tasty in a crisp, either made with oatmeal or Bisquick. A more elegant dessert is a nectarine tart with a hazelnut crust.The fruit works well in cakes too. Try a buttery scratch one laden with slices and a hint of nutmeg.Fruit can be roasted over the grill so why not roasted some nectarines along with plums and peaches. Top the hot fruit with vanilla ice cream for a truly decadent summertime dessert.Another fun dessert idea is trifle with the fruit layered with store bought yellow cake or pound cake and whipped cream. You could even douse it with peach schnapps for a boozy, fun way to end an evening. You could also turn the fruit into a homemade nectarine liqueur. This last is just taking a pound of the nectarines and letting that ferment with three cups of vodka and a cup of sugar. The process takes about three months then before the drink is ready so it will make a nice addition to fall drinking and dining.Nectarines can also be cubed and used in salads for color and sweetness. Add them to a grilled chicken salad along with almonds.  It can also be pulverized and added to apple cider vinegar for a sweet dressing or even marinade.

Make nectarines part of your summer diet. They are a sweet, healthy treat on their own along with being wonderful in a variety of sweet and savory dishes. Get a basket of them at your local market or farm stand.
