Help!! What Do I Cook?

 Every chef and home chef hits it - the culinary wall. What happens when you run out of ideas for what to cook? Ot when you haven't gone to the store to pick up supplies?Ingenuity helps.

We all have hit that wall.We look into the fridge and think "What am I going to make?" You read about those food writers and chefs who can whip up a hot tasty meal using just polenta, cheese and spices. This does work if you happen to have polenta in your pantry. What happens of you don't? What you can do is sub in rice or a small pasta like orzo or ditalini and cook in any kind of broth. After it's done, toss in some butter and top with cheese for a warm filling lunch or Sinday night supper. Keep a container of either beef, chicken or vegetable broth handy. They're great for cooking up pastas but also for whipping up a quick soup. Add veggies and even leftover chicken or beef and you have a quick minestrone. If you have bread and cheese you have a meal. You can easily grill the combo in the toaster oven or air fryer . Fry it  in butter and you have a croque monsiur without the bechamel sauce. Try to have slices of American or cheddar cheese or a good wedge of Brie or Gruyere in the fridge. These are also great on just plain Saltines too and these make for a light but satisfying lunch too. Add little squares of ham for mini sandwiches.

A loaf of French or Italian bread is a plus. Any of them can be used in a variety of different recipes. One of my new favorites is sliced Italian ro french bread cut in rounds  and slathered with layers of Melt plant based butter, Parma vegan cheese and garlic powder. The rounds are put into the air fryer for five minutes at 370 dgree Farenheit. These crisp, buttery cheesy bites were perfect with a premixed salad that I bought at Stop & Shop.It was a no brainer dinner but it was delicious and filling. I plan on making the rounds again with pasta . In the summer the loaves can be torn up and mixed with tomatoes , onions , olive oil and red wine vinegar for a panzella salad. This is just a great lunch but also a good side with barbecued chicken or beef.Take your leftovers and stuff them inside a loaf of French or Italian and you have a hero. Another multi tasker is the tomato. It can be made into hot or cold recipes. Slice them , top with bread crumbs and saute in a mix of olive oil and butter and you have tomatoes Provencale. Get the bigger tomatoes , scoop out the inside and fill with tuna salad for a refreshing mid day meal. Tomatoes are also perfect in a sandwich with toasted bread and mayonnaise.

Every hoime chef and eve chef has hit that culinary wall. what to do? Climb over it with using some basics creatively.

TikTok Treats

 Tik Tok is just more than dance offs and book reviews. IT's providing the inspiration for holiday baking. It;s giving the world excellent cookie and candy  ideas. Best part is that you can even add your own recipes and favorites to the mix.

If you want to see some of the latest trends , first download the Tik Tok app and then go into baking. It's an amazing amount of fun recipes done within just a few seconds. I love the holiday pumpkin rolls one, a tiny film of ingenuity and thread. Then there are the pizookie videoes which feature that clever marriage of pizza and giant cookie. These are easy to make and would be great for any Christmas tree party. Another fun Christmas party treat is the Christmas tree bread, made only and simply with chocolate ganache, what looks like store bought puff pastry and some clever twisting. The dough is cut into a tree shape with some stars cut from the extra dough and then the tree branches are twisted. The stars then are placed onto the tree's middle then the entire bread is baked.For the truly ambitious there are Tik Tok videos on homemade gingerbread houses build with scratch gingerbread. You could even try hot chocolate bombs for an interesting gift. The candy videos are also fun and there are some interesting recipes like crockpot candy one or the treat made with Saltines!

Keep in mind that most of the TikTok videoes do not give measurements , cooking times or oven temps. You have to look on the web for the recipes which, luckily there are many. The app does have some really great cake decorating videos. The cupcake ones are really fun and easy to replicate. However if you want a more detailed video then go to Youtube. As we all know the videos are much more detailed and can give you recipes with exact measurements and show  how to decorate every baked good with precision. Remember all this if you want to make your own Tik Tok clip. You only have a few minutes to create a cohesive clip. Get everything you need together. The bowls, measuring cups and spoons along with whisks and beaters should all be laid out. It helps to measure out everything before hand, like  what's done on You Tube and cooking shows. A good idea is having the treat already baked and decorated. You don't have the time to include the baking and decorating time together. Decorating is another thing. You can show how you added whorls and faces on your creations. The last is picking out the music. Go for a holiday theme background. wear an apron if you want to,

Tik Tok is a great way to get inspiration for your holiday table/ There are some neat ideas you can try. It could be a pizookie or a pan of fudge. Take a look at the app and have fun.

Crumbing It

One of the essentials of any kitchen is a container of bread crumbs. They're not only good for coating fried foods but also acting as a filler and a topping for many dishes,.Breadcrumbs are one of the easiest things to create along with helping to repurpose  leftover bread and rolls.

Breadcrumbs are a pantry must have. They can be easily bought but also can be easily made. If you don;t have the time to take out the food processor , then buy the Progresso brand. They even have jumped on the panko bandwagon, producing the lighter,cruncher Japanese style ones. You can use their plain or for more flavor , their herb laced Italian style or  their Parmesan flavors. These last would be good for chicken Parmesan, however both flavors may be too overpowering for soups and meat loafs. Home made crumbs are another choice, and a better one. You can leave them plain or add a dash of dried oregano or rosemary. The best breads for this  are Italian and French  They produce a fine, almost sawdust like crumb that makes for excellent coating. I usually make my crumbs from Saltines or oyster crackers. Cracker meal has a richer flavor and also fries up nicely. It's usually half a sleeve of Saltines plus oregano, sea salt , and pepper ground together.It's my go to for when I make fried artichoke hearts. It also keeps well in the fridge and, since I always have crackers in the house, I 'm never at a loss.


Breadcrumbs are great for frying any kind of meat and fish. Many home chefs love to make breaded pork chops. This is an easy cook and the crumbs are great for absorbing the fat.Use cracker meal for a lighter fry up. Their flavor will compliment the rich earthy sweetness of the pork. Breaded chicken cutlets are another way to go. If you want a crisper bite go with the panko .Remember to first dip the cutlets into beaten egg and then dredge in the crumbs.You can make these a few days ahead like on a weekend when there's more prep time available .Store the cutlets  in resealable freezer bags and then they can be frozen up to one month .As easy as it is t buy a box of Mrs. Pauls' or Gorton's  homemade fish sticks or fillets taste so much better. You do have to debone and cut the fish into manageable pieces  before the dipping and dredging. For a softer "crunch' use regular breadcrimbs, for more crunch try the panko. Breadcrumbs also make an excellent filler for soups. My family recipe for the Piemontese pane pesto or panpiest calls for a cup of breadcrumbs to be added to a mix of egg and broth. It really is the backbone of the soup, give it a comforting smooth texture along  with toning down the 'egginess"/ Breadcrumbs can also be used as filler for meat loaf too. Use about one cup of dried breadcrumbs. For more zing sub in the Italian style ones.

Always have a container of bread crumbs or cracker meal in the kitchen. They're versatile and can be used in a number of recipes. Buy them or make your own for a tasty coating for meats or as a thickener for soups.

Riffs On recipes

Some of the best chefs are the most creative ones. They can take a basic recipe or basic ingredients and turn them into something special.Is it magic? Alchemy? No, it's just thinking outside the culinary box.

One of the most versatile mediums to work with is rice. It's good on its' own, but cook it in any kind of stock, add butter or margarine and it's a light meal . Add some veggies such as peas and broccoli some herbs and voila - a great side with chicken.It can also  be part of a main dish , soaking up stews and chiles. Rice also is a tasty filling in stuffed peppers. Try mixing it with ground beef, and tomato paste, two other basics. For zip  add chile powder or ginger that's been grated. Rice can also be deep fried for a real treat of a lunch or dinner. Throw in chicken or beef  along with some water chestnuts and broccoli. Pasta is another simple ingredient that can be made a variety of ways. Everyone knows spaghetti, It's usually served with meatballs and either a marinara , Bolognese or butter sauce. However , it can turn up in a soup. Try it with a beef based vegetable one or have it as the surprise ingredient in a minestrone. Fried ravioli is a new spin on a very traditional dish. They're easy to cook up that way, Use olive oil or even vegetable oil to deep fry them in a fryer or skillet.. Serve with a side of hot marinara sauce.

Basic meats such as chicken and beef can lend themselves to a variety of different and unique dishes. Chicken cutlets can be turned into something exciting such as pulled chcken. Try cooking it with a smoky barbecue sauce and serve on potato buns. Cutlets can also be oven fried, It's first dredging them in melted butter and mustard mix and then coating them with crushed Saltines. Bake at 400 degrees Farenheit for only twenty minutes.Everyone loves legs and wings.Marinate them in a mix of pinapple juice , orange zest and garic along with such spices as ginger and crushed red peppers for a fiery twist onBuffalo style wings.. Every loves any cut of beef. Suppose it's added on top of a pizza for extra oomph? It's a nice way of marrying two classics and making them even better. A steak salad is a nice alternative toa regular one.Use a hearty greens like romaine or spinach along with deep red grape tomatoes. Salt and pepper almonds are a must to add crunch and more flavor.Steak strips can also be subbed in for roast beef in a chef's salad for surprise and flavor. It can also be turned into a club sandwich with lettuce  and,tomato served on toasted pumpernickel or rye bread.


A good chef is a creative one. Think outside the culinary box.It will result in more delicious dishes, using just basic ingredients.

The Sweetness Of Crab Cakes

It's good to keep hold of summer favorites as the season slips away from us.One of them is the simple crab cake. This is a wonderful treat, perfect for either a weekend lunch or even an outdoor dinner. It reminds us of all those waterside shacks that serve crab cakes with a side of freshly made slaw. Biting into one is kind of like holding on to warm sunny beach days.

Crab cakes are pretty easy to make. You can use fresh or canned  lump crab meat to start.Remember to check for cartilage because this can render your cake overly  chewy. Some recipes called for dried bread, others call for Saltines,What you use is your decision however the crackers will produce a lighter and crispier texture.If you want the traditional Baltimore or Maryland kind then mix in the Japanese panko breadcrumbs. Again they will give your cakes a lighter ,airier kind of texture. All recipes call for the famed Old Bay Seasoning. This is a blend  of various spices and red pepper flakes.Most of it you can replicate yourself, especially with the addition of celery salt, bay leaf, cardamon, ginger and black pepper (along with cloves, allspice and ginger).Crab cakes also  require one egg for binding.You can use an egg substitute  for a healthier recipe if you want.

.The most important step is mounding them into patties. Too much crab meat  and they could fall apart .Too little and they'll crisp up when frying. Try not to pack them too tightly.Think hamburger with a width of 1 inch wide.Crab cakes  can be made in various sizes however remember that the smaller ones don't require the amount of  frying time as their bigger counterparts. The frying itself also is varied. Some chefs swear by canola oil. Others prefer vegetable oil.For a richer flavor try cooking them in butter or the healthier olive oil. All recipes use a primed skillet. Serve them either on a hamburger bun or just with a side of a oil and vinegar cole slaw.Have both ketchup and hot sauce on the table along with a tartar sauce to bring out their flavor.

Eat crab cakes and savor what's left of the glorious  summer. Having them is like a day at the beach for your palate. It's a  fun romp in the sea with all its' briny goodness.

The Healing Power of Food

We all know that food can cure a broken heart or the blues. We're also all well aware of the vitamins and antioxidants all the good foods contain to make us live longer and how our organs can benefit from them. However certain food can actually work at calming an upset stomach and soothing a cold. These are worth keeping in the house.

it always pays to have ginger around. This is great in combating nausea , morning sickness and that icky feeling you get when you have a virus. The Ginger People have a wide range of products. which you can ge t on their site or buy them at Amazon. my favorite product (which I even keep in the car is) are the Double Strength Gin Gins. These are wonderful hard candies that can be used anytime. You can even pop a few after dinner to relive that bloated , full feeling. Gin Gins are also good for a sore throat. The candy acts like a lozenge and the ginger helps with that itchy, raggedy feeling. They're also good , melting in a hot tea.

Another standby is the e lemon. My grandmother used to suck on them to relieve nausea as well.Freshly made, not too sweet lemonade is another natural way to cure queasiness and tummy upset. Lemon in hot tea is a good stomach ache and cold remedy . Always have some or a bottle of reconstituted lemon juice around. Another nausea stopper are plain soda crackers like Saltines. They're also the best thing to eat when you';re suffering from a hangover.

Just remember certain foods aren't just for curing a broken heart or helping you get through stress. They also act as medicines when you're just not feeling physically fit.
