Hot Days Cool Salads

 These days are unbearable to live in  let alone cook in. yet there's still a need to make a decent and filling meal. What to do? Turn to salads. they're quick, easy and coolly delicious.

Cathy Lo, a recent addition to The New York Times Food section created an excellent salad guide for today's section. She enlisted fellow food writers, Melissa Clark , David Tanis,Eric Kim , Ali Slagle , Genevieve Ko and Yewande Komolafe to contribute tasty and blissfully cold recipes to combat this hellish time. The twenty  salads are categorized into leafy, sturdy, pasta grain and bean based along with sweet and savory fruit.Any  would be perfect as a main meal or as a side to either grilled or air fried main courses. Those who appreciate a good green salad should look into making Ali Slagle's arugula salad with just a squeeze of lemon and a shave of Parmesan cheese.ERic KIm gives his crunchy greens with carrot ginger dressing. Fresh ginger gives it bite as it's drizzled over Romaine lettuce.A heartier dish is Yewande Komolafe's chicken with herb salad and nuoc cham. Shredded roasted chicken is mixed with shredded cabbage , cucumber and bell pepper and dresed with a sweet savory lime based vinaigrette.If you want a sturdier salad then think a shrimp salad with chopped red onions and a lemony mayo,. You could also make Genevieve Ko's  tofu and green bean salad with peanut dressing. made with hoisin sauce and peanut butter.

Pasta beans and grains add depth and heft to any salad. A blistering day could end with Melissa Clark's  pasta salad that has the classic ingredients of mozzarella and fresh sliced tomatoes. Cucumber and salami ribbons are also added to make it heartier. Want a more Middle Eastern vibe? Then try Dave Tanis rice salad that laced with almonds, pistacchios and currents, The dressing is a mix of tahini and lemon juice and zest.Add classic Middle Eastern herbs like parsley and mint Of course there is three bean salad.  Celery is also added for crunch ad the dressing has the spiky taste of Dijon mustard.  There is also Yewande Komolafe's millet salad along with Erik Kim's  chickpea one, the last enhanced with seaweed and mayo. It's summer and that means a good fruit salad to be served anytime from breakfast to dessert. Ali Slagle's stone fruit Caprese fits into all these . Cut up any stone fruit , from nectarines to cherries and marinate in  a mix of lemon juice, flaky sea  salt and sugar Drizzle olive oil over this when it's time to serve and spike with freshly ground pepper. There's also mango slaw and the classic watermelon and feta mix. You could also try Eric Kim's tropical taste pleaser of bananas, pineapple and mango Just season with lemon and sea salt.

Beat this hellish heat with a good salad. Try any of these recipes for a cool meal, side or even dessert.  It's a nice way to abide these wildly high temps.

Cereal's Other Side

Cereal has always served as THE breakfast food for one hundred and forty years.It's  a great starter for sure, yet cereal can be used in a variety of other recipes, both sweet and savory. It's not just for breakfast  but for lunch, dinner and even snacking.

Every American kid has memories of their mom making Rice Krispies treats. It was our first time in thinking outside the cereal box.Who would think that what we had for breakfast would make an awesome dessert? Even though you can buy these low cal treats, they're super easy to whip up.The basic recipe is melting three tablespoons of butter and one package or about forty marshmallows and melting the two ingredients together in a saucepan. Add six cups of Rice Krispies, mix until cereal is completely coated and pour into a buttered  13 by 9 two inch pan. Wait until completely cooled and cut into squares.  The fun thing about this recipe is that it can be varied. They can made gourmet by increasing the butter to half a cup or one stick. If doing this, then up the amount of cereal by ten cups. Vanilla is added for a richer flavor.  Marshmallow creme can also be used instead of the puffs. Go wild with additions. Most just toss in sprinkles and chocolate chips but there are some who would toss a handful of crumbled bacon into the mix.The recipe isn't exclusively that cereals' You can also make them with Cheerios, Fruity Pebbles and even the diet driven Special K. Any of these can also be turned into holiday shapes.  You can mold them into chocolate dipped footballs for a Super Bowl party or cute red sprinkled laced hearts for Valentine's Day.,

Cereal can have a savory side too.Rice Krispies can easily be used in breading chicken or fish. It's taking one cu and a quarter of coarsely crushed pieces mixed with flour and seasonings such as salt and pepper, dried parsley and a kick of cayenne. You can also use cornflakes - usually one and a half cups for three pounds of various parts. The recipe can either be deep fried or a healthier baked.. The chicken is first dipped into melted margarine first then rolling them into the crumbs. The result is a crunchier texture that works well with the bird. Fish can also be coated in the cereal. It's actually healthier because the coating doesn't absorb as much oil, creating a lighter, less greasier piece. Cormflakes can also be used. Both have to be mixed with flour to get that exact texture or the batter could fall off during frying.Cereal can also be used in other recipes as well.The ancient grain version of Cheerios (this has quinoa and millet along with amaranth) can be turned into a croquette. Asparagus , zucchini,carrots and pepper are added along with goat cheese to the ground up rings. They're then coated in bread crumbs and fried to create a tasty and unusual dinner.

Cereals aren't just for breakfast. They can be turned into savory and sweet meals and desserts everyone will like.  Just think outside the cereal box.

Going To The Grain

Grains are one of the most important elements of a good diet. However not many people incorporate them into their diets. Why is a good question. They can be made into several tasty dishes that are nutritious and support our body's needs. Not only that, there is a wide variety to choose from and throw together with some veggies and meat to create a healthy lunch or supper.

Whole grains or seeds contain all the essential parts and naturally occurring nutrients of the entire grain seed,They can range from the lesser known amaranth to the ever popular wild rice. In between are the more common, corn, rye and barley along with teff, triticale  sorghum and triticale. grains can be used as fillers or even stuffing. For some such as the rices and millet, they can be incorporated  into puddings and even cakes for dessert.Grains are always a plus for any diet. You can reduce heart disease, diabetes and colon cancer along with obesity.

If you're new to cooking with whole grains then start with simple recipes. Stuffed peppers are always easy and a fun dinner treat. Stuff with rice or quinoa along with tomatoes  Quinoa can also be made into stuffing as well as tabbouleh. Try rye in soups or breads .Barley is always good in soups but it can also be used in risottos and chilis. For mores exotic dishes use the grain from North Africa , amaranth can be eaten like popcorn, or cooked like grits.Millet , another good for you grain, can be made into a light ,fluffy pilaf or baked into healthy biscuits , muffins and breads.

Discover the goodness of the different grains out there. They can be easily made into tempting and tasty dishes. Try one or two to wet your feet or all of them  for a better diet.

A Happy Healthy Cookbook

Some would think it would be hard to live on a whole grain, gluten free diet. That is farther from the truth thanks to a new cookbook. The author, , renown for her wholesome and healthy cookbooks, Jill FInlayson, has come up with a whole batch of  tasty and good for you dishes. These range from breakfast to desserts, from snacks to sides to whole meals. This is the perfect must have for those who want to eat healthy witohut giving up flavor.

The book is entitled The Complete Gluten-Free Whole Grain Cookbook by Robert Rose Publishing. It is not only a comprehensive cookbook but also a great guide for grains; Ms.Finlayson explains what grains such as millet and sorghum are along with their history. All grains, whether as unusual as Job's tears (a sort of millet) to the common (oats) also have storing tips as well as nutritional data. This helps in choosing what dishes to make as well and how healthy you want to go. She also has a few pages solely on the benefits of a gluten free diet, such as it helps protect against certain cancers as well as heart diseases.

Just when you think this is going to be a purely tasteless recipe book,think again.Ms. Finlayson has some excellent recipes for every meal. Start the day off with her hot amaranth cereal. She has pancakes,both the buckwheat type and blueberry wild rice ones. For dinner or even lunch try her turkey chili made with turkey. There are also jambalaya  along with the spicy Indian beef biryani.  She also has a brown rice risotto and a gluten free pizza crust, The desserts range from a simple brown rice pudding to   wine soaked cornmeal cake. Health food, no , healthy food and perfect for any gathering from a family dinner to party, yes,
