The Savory Side of Honey

 We'reused to using honey as a sweet ingredient. We put it in teas , breads and a variety of different desserts. Yet it can also be used in savory dishes too for a different spin. Using it gives a more mellow flavor to savory dishes.

Many home chefs will first  ask what's the better choice of honey - white or brown? From a nutritional point of view white, light or golden honey has more vitamins, minerals and antioxidants. Darker honey has a richer flavor which imparts an earthy sweetness on dishes. I use Carmel Honey's Company's dark Wildflower in both my tomato sauce and chili (yes!!). I like the depth it adds to both, especially the sauce. It gets rid of that tomato-y tang and mellows out the other ingredients, softening the sharp flavors of the garlic and other spices. It's usually a heaping tablespoon which should do it. If not then an extra teaspoon should do it both the sauce  and chili. Dark or light honey is also a great add in to different viniagrettes. It balances out the vinegar and adds a sweet earthiness. One great recipe is mixing light honey with olive oil and apple cider vinegar. Add salt  and pepper along with a mix of orange zest and fresh orange juice for a tasty dressing for  grilled chicken salad. The dressing gives the salad a Mandarin chicken kind of vibe. Add some fresh ginger for zing and sesame seeds for more flavor.

Honey and chicken pair well together. A fun weekday dinner idea is honey garlic chicken. It's a perfect meld of sweet and savory,Vinegar and soy sauce give the recipe that zing while light honey balances it out. To really spice it up add some sriracha sauce to it for some fire. Honey also works well as a glaze for both chicken and Cornish hens. One recipe involves  frozen orange  concentrate, lemon juice, garlic and thyme mixed with the sweet. There's also onion powder and soy sauce mixed in.It's an easy cook being boiled together in a microwave for two to three minutes (it may take longer depending on your microwave). Keep in mind that honey burns all too quickly and when you're oven roasting a chicken or game hens , baste with the honey glaze after about forty-five minutes in the oven. If the skin is burning but the meat is still raw, tent the chicken with aluminum foil to prevent burning. This will also keep cooking the chicken or Cornish hens. Of course there's nothing like honey glazed ham.It's usually pared with brown sugar for a sweet , crunchy covering that works well with the ham's saltiness.Honey also works with pork too, especially if it's paired with garlic and soy. it gives a crispness to chops and shoulders while still sealing in the juiciness.

Definitely use honey in your savory dishes. Its' sweetness gives mellowness to sauces while providing flavor to pork and chicken. Make it a part of your cooking for more variety.

There's Always Online Stores

It's a pain and a chore to go grocery shopping these days. There's shortages galore and you have to be savvy when a particular store stocks up. If worse comes to worse  there is online shopping and the various stores that can offer salvation.

One of the best places is Amazon. There has been some negative criticism regarding how the company treats their workers during this time and the heavy amount of  work  allotted to them. Yet it has a wide array of foodstuffs and items for any home chef and kitchen.I have been buying kitchen wares from them for years. The company has a very good selection of silicon bakeware .There's a wide variety of that , from loaf pans to smaller ones for decorative cakes and candies.  The company is also great for appliances. Air fryers are big and a godsend. Amazon has a wide assortment of different brands and they have their choices as to what's the best. You can always something that suits your needs. The same goes for toaster ovens - which they have many , from simple ones to ones with convection ovens included. If you want fancier gadgets like sous vides and immersion blenders, them Amazon, is the place to go for them. (but you can  also go to Target and Wal-mart too)  Another plus about Amazon is that they do have a wide variety of hard to find and unusual foods. I recently bought Berbere spice there, something I know I couldn't get in my local grocery store. I've also bought clotted cream from them, something I can only get at British specialty stores in Manhattan.

There are other places to go to for specific foods. The Carmel Honey Company is one of my favorites. I buy their wildflower honey for my tomato sauce and chili (yes, I use it for those. It's better than sugar). it was started by teenager Jake who wrote about honey bees for a school project. He became so involved that he started his own honey company  - lucky for us. It's a great source of natural honeys that can be used for everything from sauces (yes again) to cakes and muffins.  For vegan, Vegan Essentials has all sorts of foodstuffs from faux seafood to Beyond Burger if you can't get those at your local supermarket. The company also has Miyoko's  vegan cheeses and butters. These taste like the real thing and the website has a variety of different cheeses like scallion flavored cream cheese and cultured butter. It's hard to get any fancy loaves for family celebrations but Vegan Essentials does have tofu loaves like Field Roast squash stuffed tofu.  Flour is supposed to be up next when it comes to shortages. Not to worry. King Arthur has a wide variety of different flours (along with bakeware and baking gadgets). They also sell gluten free flours which is great for those with celiac disease.  Another good site for flours is Bob's Red Mill which also has nut flours as well along with all natural sugars.

If you can't find it in your local store, then go on line. It's an easy way to shop with out all the worry and the fretting.It';s just point, click and buy without the hassle.

A Teen Most's Sweet Mission

Most thirteen-year-old boys barely care about their rooms , let alone the environment. Yet there is one kid who is making a tremendous impact , thanks to  his curious mind and dedicated heart. Not only that he's saving bees as well as giving the food world an extraordinary new brand.

The young man responsible for all this is thirteen (!) year old Jake Reisdorf of Carmel, California. He was eleven at the time of creating  Carmel Honey Company, thanks to a school project. It was a "real world" homework assignment where he researched and wrote about bees it got him an A but also a passion for bees as he learned about Colony Collapse Disorder and  honey. The first is a serious disorder where a majority of worker bees disappear ,leaving behind just the queen and a few nurse bees to care for immature bees. Jake was curious about this and wondered what he could do to amend the situation. After all , there has been a scary decrease in the insect for the last few years.Everything from crops to livestock  will wither without them. Unlike kids his age who have a huge collection of skateboards, Jake put his money into hives and started his own apiary or bee farm.Soon he was selling honey and honeycombs. the profits going to research and educating the public about these vital insects.jake even travels to schools, giving lectures about the importance of bees Even the company website gives tips about attracting bees into yards and gardens.

The bees have also produced delicious types of honey as well. Carmel Honey Company sells honey and honeycombs. The first comes in four plant infused flavors. There is Meadowfoam which  has a vanilla taste and would work well over vanilla ice cream as well as sweetening vanilla chai tea.  Sage honey is another big seller and has a slightly sweeter taste than the average honey.Use it to make holiday mead drinks.There's also wildflower honey , made from the nectars of several different flowers indigenous to the Carmel area. This has a dark, earthy taste, that's delicious glaze for roast chicken or sweetening cocktails and even tomato sauce.. My favorite is the Orange Blossom which has a mellow citrussy tang to it.  There is a sampler pack of the four flavors  which would make a great gift for any foodie.Jake also sells the convenient Honey Stixs. These are long plastic straws filled with the wildflower\version. Each straw holds a teaspoon of honey. and is a great picker upper for those who want a better sweet boost than candy. Jake also sells actual honey filled honeycombs. a  must for any kitchen.It is rich , fresh honey that is a must ingredient for any holiday cooking, sweet or savory,

It's amazing how a school project turned ino a passion and a business. Even more amazing is the young man behind it, Jake Reisdorf. He will definitely be one of the movers and shakers of his generation!
