Your Summer Comforts

 We all have them - summer foods that make us feel good. It could be charred hot dogs straight from the grill plopped on a buttered roll. It could be a host of Boardwalk(this is Jersey after all) treats from taffy to cotton candy to candy apples. It could be s'mores or just a gelato from a neighborhood shop.

Mine relies on the garden. pomodori e uovi or Piedmontese tomatoes and eggs.To me there is nothing better than this - the marriage of eggs and ripe tomatoes, enhanced by freshly minced garlic.it has to be eaten with a big hunk of Italian bread, just to stop up those tomato juices.

Halloween Home Parties

 Halloween may be different this year but you can still have the same fun and foods. The parties will be smaller and there may only be family around. That doesn't mean a boring night. Make it fun. Make it delicious.

You can start with breakfast with some scary and tasty dishes. Think sausage links wrapped in dough to resemble mummies. Add some maple syrup in ramekins for dipping.Another idea is taking bacon and arranging it in a spiderweb shape.You could places this over an omelet for a delicious background. Cook the strips in the circular pattern and then gently lift onto a large plate or eggs. Eggs can also have a creepy vibe. Add a trickle of ketchup and a dash of hot sauce to simulate blood. Serve orange juice in jack o' lantern decorated scooped out oranges or make virgin Bloody Mary's kid style, with a glass of tomato juice complete with celery stalks. leave out the spicy Tabasco and Worcester sauces. You could even have a breakfast dessert with cinnamon raisin bagels  topped off with squeeze bottle cream cheese. Ice the bagels so they look like wrapped mummies and use blueberries for the eyes. As for lunch , make it fun too. English muffin pizzas can take a frightful look by cutting the mozzarella cheese in ghost shapes. Add olive bits for eyes. Coffin sandwiches (!) are another Halloween themed lunch , Get a dark bread such as pumpernickel and cut into coffin rectangles. Fill with favorite fillings and serve with potato chips.

Of course it's the evening when the festivities amp up. Imagine a spaghetti dinner with your meatballs staring up at you. These are meatballs with mozzarella rounds and olive slices put on them to resemble eyeballs.  Another bone rattling dinner or party idea is a spinach dip , made to resemble old moss studded with tombstones. This last is simply cutting tortillas into tombstones and baking for three to seven  minutes in a 350 degree F oven. Even more gruesome are handburgers. This is not a misspelling but patties formed in the shape of little hands. You can mold them yourself or use a hand cookie mold both Etsy and Amazon sell this). Cover in ketchup when served.What would go with these? Severed hot dog fingers. Cut out pieces of the tops to resemble nail beds and score the dogs at equal distances to resemble knuckles. Accompany these with cheese eyeballs. Use cream cheese mix with powdered ranch dressing, forming into one or two inch balls. Make them bloodshot with a sprinkle of paprika and top with sliced olives. How should the evening end? With a candy apple bar , of course. Have already coated and sticked  apples in front of bowls of M&Ms, cinnamon sugar , sprinkles and gummy worms. You can also use crushed or broken Halloween candy too for decoration. Bat brownies are another fun and sweet treat. Bake brownies and cut them into rounds. Halve chocolate wafer cookies for the wings and decorate with candy eyes and red icing for the fangs. 

Yes, Halloween will be different this year. Yet the parties and the gruesomely fun food will be the same. Go wild for breakfast, lunch and dinner and celebrate this fun holiday!!!!

Time For Summer Treats

It has been a strange summer with restrictions on both coasts along with shark sightings off of New York's Long Island. Yet we can still celebrate summer with the foods and treats we love so well.

August is the time of so many harvests.Tomatoes are still in abundance. Nothing says summer than a tomato and mayo sandwich on white bread. You could give this classic a Mediterranean twist by replacing the mayonnaise with olive oil and a good sprinkle of oregano. Of course this calls for a heartier bread such as Italian or French.Another summer favorite is Neopolitan bread salad  or panzanella which calls for tomatoes , cucumbers and onions. Another summer favorite is corn. Grilled corn with seasoned butter is a summer staple and one of the best sides. Lemon or herbed butter works as does honey butter. Add some flaky seas salt and fresh ground pepper for bite. Unfortunately most of the peach orchards are closed to families right now. You can still buy baskets of them at local farms and your supermarket. A plain one is good just on it's own but you can also slice and peel them for crumbles and pies. You could also make a peach sundae by splitting one in half and pitting it.Add vanilla ice cream and top with honey and toasted oats.

Boardwalk foods have always been a summer must.Some are open and take advantage of what they have to offer. A typical favorite is fried clams. You can make these at home using corn flour and cayenne pepper.Sausage and pepper sandwiches are another seaside must eat, especially in New Jersey. Use fresh green peppers and any kind of sausage from sage to vegan and fry up together. Core and julienne the peppers and then saute in oil. Add the sausages along with salt and pepper. Generously heap onto hoagie rolls. Cotton candy and candy apples are what really make those Boardwalk trips memorable.If you can go just for those however you can easily get them at home. Amazon has the best array of them , ranging from $57.00 to $400 in price. Get the most affordable along with the flavored sugars and cones. If you have qualms about making it, watch the many YouTube how tos on how to use the machine and swirl the floss onto the cones. Candy apples can be bought on line at Nandy's Candy's  of Jacksonville ,Mississippi if you can't make it to your favorite boardwalk. You can also make the coating at home using light corn syrup, granulated sugar and red food coloring.It's boiling  all three into a syrup and then dipping the apples into them. You could add coconut flakes the way the boardwalk stands do.

It's the summer and despite it all , it's a time to enjoy hot weather favorites. Grab that buttery ear of corn or chomp into that candy apple. It's all part of the fun that's the season.

Boardwalk Treats

Any New Jersey kid will tell you boardwalk food rules. Not matter where you go on the Garden State Coast Thea's some kind of seaside amusement area that has a large variety of fun foods ,. You can get sausage an dpeppers, fried Oreos and boardwalk staples cotton candy and candy apples. It a fun way to end a day at the beach.

I recently reconnected with boardwalk food at Keansburg Amusement Park. Technically the place isn't really a boardwalk and it's not on our state's oceanside.It's on the Raritan Bay with amazing views of Manhattan Brooklyn and Staten Island. However the park has the some kind of fun, (and somewhat seedy) allure of any of our other boardwalk like Seaside Heights or Wildwood. The food is relatively the same. A lot of Italians have had business since the boardwalk's early days in Altantic City so there's always pizza and calzones. Seafood also always predominates and almost every Jersey boardwalk has a raw bar where diners can also chow down on fresh fried fish and chips as well as crab legs, and raw oysters. These and other fast food places sell beer too, a boardwalk staple.

Sweets play an important part in boardwalk cuisine, Zeppoli, those yummy fried Sicilian dough balls, had their own stand at Keansburg. I was tempted to buy a bag of the fresh made, freshly sugared treats however got waylaid by those classics: candy apples and cotton candy. No trip to any boardwalk would be complete without them. I had a Granny Smith that was perfectly enrobed in a crunchy candy coating and topped with fresh coconut. The cotton candy was typical sweet and sticky,but fun to inhale. Other treats were ice cream along with waffles Italian ices (both are staples) and fried anything. Most boardwalks also have a homemade candy booth where there's everything from homemade fudge to saltwater taffy,along with molasses pops and haystacks .

Boardwalk food is a summer treat that has to be experienced. Anything from pizza to fries , to ice cream or fudge is spend to a fun day at the beach. If you're in Jersey visit our boardwalks for some culinary treats.
