Are You Cookie Ready

Yes it's that time of year when home bakers get nervous. It's cookie baking season  and that can cause more than a few shivers. Are you ready? Don't worry if you're not. Just take a deep breath and make a list.

The first list should be the list of cookies you want to bake. if' you;re super busy then think about logs or pull apart frozen cookie dough. Both Pilsbury and Lidl have these and these are the easiest to bake No fuss , no muss  -and no mess to clean up.The first has everything from sugar  to  peanut butter flavors while Lidl offers pull apart cookout]ie dough sheets in chocolate chip. Another quick bake is the Betty Crocker cookie mixes which come in such beloved flavors as snickerdoodle and double chocolate chunk . Of course some home bakers  want to make scratch  dough. Then make lists of what flours you'll need,.The all purpose kind is not only perfect for creating cookies but also for making rolls and loaves. If you're making as something as elaborate as macarons, then you'll need to write down almond flour. You may need gluten free too if there are family and friends with celiac disease. Also check your cabinets to see if you cocoa powder or bitter chocolate for both cookies and icing. Look over your  flavoring and icings. You may want  to add another bottle of almond or vanilla extract. Parchment paper is a must as well. This prevents cookies from sticking.

Another list you may want to make is tradition and new. Of course family will clamor for their favorites that have been around for years. These are usually peanut butter cookies chocolate chips and sugar cookies. There may be spritz cookies on the list. Some cookies look good like macarons and Lindzer tarts or cookies but these can be elaborate. Make a tester batch first one , to acclimate yourself with the steps and two to test out on the family. Family, especially kids may wrinkle their noses at the macarons and their too almond-y taste and the Lindzer cookies with their jam filled middles. For the last if they don;t like the jam but adore the cookie, then fill them with chocolate ganache. Icing is also an important factor. Kids usually love to do this. The question is do you make your own cookie icing or rely on food coloring gels for color. Cookie icing is a mix if confectioner;s sugar, water, a bit of corn syrup and vanilla extract. A touch of salt is added to bring out the flavor. Keep the colors simple, Use just red and green along with keeping a bowl of uncolored which will be a snowy white. Have little bottles of nonpareils and sprinkles handy as well.

Yes , it's cookie season. It's going to be labor intensive but also it's going to be fun. Breathe ,relax and create a list of what's going to be baked and what you'll need.

Your Cookie Guide

It's that time of year again. Cookie time. Every one wants to make a huge range during these weeks. Yet the question is what to make? Sugar? Sprtiz? Chocolate chip? What's the best and what's the easiest?

Of course the easiest is Pilsbury's Slice and Bake. This classic dough log is easy to bake and decorate. It's perfect if you have very little time  for the kitchen. Just scatter red and green sprinkles on them before baking  for a simple decoration. If you want an easy scratcvh cookie then go for a sugar cookie. It's an easy one that doesn't require a lot of ingredients. They're just sugar , butter and flour mixed together. They can be sprinkled with anything from  chopped nuts to candies. If you wanted you could add a drop of any flavoring from coffee(!) to lemon or almond. Many novice bakers get sugar cookies confused with the butter ones. There is a difference. The sugar ones are often rolled thin and then cut out ousing cookie cutters. Butter cookies are softer in texture when raw and the dough has to be put into a cookie gun or shooter. The taste is also more buttery. The famed holiday cookie, spritz falls in this catagory. They're also a cousin to shortbread except the dough requires an egg. Eggs. help the cookies keep their shape. The dough is usually dyed red and green for the holidays. These are perfect for a fancy dessert party.

What about traditional cookies? Shortbread is one and is also easy. Like sugar cookies it's made with only a few ingredients. A basic recipe has only one part sugar, two parts butter and three to four parts wheat flour. It's an ancient recipe that came from Auld Alliance with France in the 1500's. The texture is lovely and crumbly .It can be baked on a cookie sheet or in  the more traditional pie plate. A design is usually pricked in it, usually  it's the baker's initials Baked shortbread can be dipped in dark chocolate for an extra taste of luxury. Another classic is chocolate chips. People love these and every family has their own spin on them. The unique flavor cones form the addition of brown sugar which acts as the perfect foil  to the dark chocolate chips. Nuts such as walnuts can also be added. A variation is the tasty oatmeal chocolate chip. They 're made exactly the same way as chocolate chips except sub in rolled oats for the flour. Chocolate chip cookies can also be made with whole wheat flour too. If you're making oatmeal chococlate chip you cna also make oatmeal raisin cookies too. These also require brown sugar as well. Craisins can be used isntead of raisins for a tarter flavor.

These are some of the cookies you can bake for your holiday table. They're all relatively easy to make. even better they're easy to eat.

The Perfect Birthday Cake

One of the crowning moments of any birthday is the cake. It's usually a perfect two layer affair with a yummy filling , frosted with buttercream. Buttercream roses or marzipan figures decorate it.It's a challenge for many home bakers , yet it doesn't have to be. Any home baker can create the perfect birthday cake.

One of the biggest dilemmas home bakers face is what kind of cake to bake.Scratch or mix? Many purists will tell you scratch is much better for you health wise and taste wise too. However, if you're pressed for time, a mix is a lifesaver. If you want to make a scratch one, keep it simple with a vanilla or a chocolate flavors Make sure you have all the ingredients from the baking powder to the butter and eggs. Remember to have unsweetened  cocoa powder if you're making a chocolate scratch cake. As for mixes, Duncan Hines  brand is really the best. The mix produces the best crumb - moist and flavorful. Pilsbury and Betty Crocker are also very good. All have a variety of different flavors that include such fruit flavors as orange ,lemon, pineapple and strawberry. Betty Crocker has the  fun SuperMoist Rainbow Chip cake , a mix filled with multicolored sprinkles. Once you decide on what kind of cake you're going to bake, check your inventory of pans.  The best kind is nine inch metallic ones. These  produce perfectly baked and even layers , with no burning. Also make sure you have a cake tester which is crucial is determining when the layers are done along with a sturdy wire rack for cooking.

The filling is important too. Many home bakers just use the icing as the filling, which can be OK if it's not too sweet. Cream cheese icing is the filling of choice for classic Red Velvet and carrot cake as well as banana cake. For other cakes, pureed fruit and whipped cream make for a nice  not too sweet filler. Try a layer of fresh cream and raspberry for any chocolate or vanilla cake.Lemon curd is a great filling for a lemon or pineapple cake. It's an easy mix of lemon juice with zest blended with egg yolk, sugar and butter to create a kind of pudding. A strawberry cake would be made decadent with a chocolate mousse one., and then iced with a dark chocolate butter cream. As for the finishing touch, buttercream is the way to go. Fondant, a combination of corn syrup, shortening and powdered sugar, flavored with vanilla is heavy and will make the cake cloyingly sweet. Save it for making figures and objects. Go with buttercream. The frosting can be made in a variety of flavors from vanilla to raspberry to orange to even peanut butter. Again, make sure you have the instruments to make the perfect gateau. An icing spatula is a must  because it gives a smooth glossy finish to the cake. Icing combs will give the sides those perfect even lines that bakery cakes have. Make sure you have a good cake icer that has a variety of nozzles to make buds and leaves. A cake nail is necessary to make those big roses that grace every birthday cake. Also have a nozzle with a small tip for writing.

The perfect birthday cake is the perfect gift. It should have a moist cake, a delicate filling and a creamy , buttery icing. The combination will give you  a memorable creation that's worthy of any birthday wish.

Piggy Days

One of the easiest Monday meals a home chef can make is pigs in blankets. So simple, yet so tasty. Any novice or kid chef can make these.

I did.
I used Pilsbury crescent rolls wrapped around Sabrett  all beef hot dogs and Morningstar Farms veggie dogs. I had three  extra rolls which I left as crescent rolls.
It was just thwack against the sink, unroll, wrap and bake.
All it took was fifteen minutes at 350 degrees Farenheit. These can be served with any dipping sauce or stuffed with cheeses for a really festive dinner or hot snack.
These will be saved for later with some yummy jam for a nice, munch with hot tea, along with a good TV show.

Pigs in blanket are the perfect Monday meal. They're  a snap to prepare, a snap to make and a snap to eat.

A Comfy Oscar Party

Oscar night means Oscar parties. For many of us  - including those who weren't nominated  - it means watching them at home, with a favorite meal or snack to nosh on.Nothing beats enjoying favorite nibbles while watching favorite stars win.

Pizza is always a fun party food. It's so much better coming straight from the oven.If you don't want to  go through all the steps, there are the instant ones like Celeste's that offer pizzas for one. These are big enough to be shared for two.For those who love the idea of a fresh from the oven pie, try Pilsbury's pizza dough. It's already made and just needs to be rolled out, topped and baked, Top with such toppings as an all meat that includes salami, pepperoni and capicola, or a veggie one that has peppers onions and olives.another variation is English muffin pizzas. These are super easy to make and super fun to eat. These can be made in a toaster oven although they do come out crisper if they're baked in the oven. Want something a tad more glam? Think bruschetta. This is an easy make that just involves cutting up plum tomatoes and mixing them with basil, olive oil and garlic. You can add a dash of balsamic vinegar for some tartness. serve o toasted rounds of Italian and French bread.

A fun home party food is pigs in blankets. Take regular hot dogs and cut them into thirds. Wrap a crescent roll around them and bake  for thirty minutes. dip into sauces such as forty karat mustard , made extra golden like Oscar himself with the addition of curry. Also try a homemade honey mustard one made with wildflower honey and a spicy barbecue one. One of the easiest and tastiest - and my favorite is homemade guacamole and chips.Use the blackest ones  to create the dip. These are the ripest and will produce an ultra creamy dip . I like to use vine ripe tomatoes for a dash of color
and a jolt of needed sweet and tart. Remember to drizzle some olive oil in to give the texture some smoothness. Of course, the night is all about movies and that means popcorn. Go old school with air popped , then bathed in real butter. A sweet fun variation is kettle corn. It's an easy recipe that just involves adding sugar to kernels and oil and then popping over a low flame.Use white sugar for a popcorn ball taste or brown sugar for a caramel corn one.

Oscar nights mean Oscar treats, full of fun and flavor.Make your faves or try something new and adventurous. sit back, nosh, and root for your favorites to win.

There 's nothing like a hot roll or bun on a cold morning. Even better is when they come straight from your oven or toaster oven. Making these warm and yummy treats is easy. All you have

Pilsbury is the granddaddy of all frozen buns and rolls. They still make their popular ready to heat cinnamon rolls , this time with the extra kick of Cinnabon cinnamon. If you want to make them more decadent , add some raisins or even almond slivers before baking, You can also add little pats of butter for a moister , buttery taste. You can also take frozen biscuits and brush them with a mix if melted butter , cinnamon and sugar to get a lighter version. A fun breakfast treat is making monkey bread using these too.. Coat with cinnamon and sugar and bake together in a ring.

If you want from scratch rolls and buns, then use the classic Bisquick. With this you can create anything form hot muffins to scones. Even better is that the recipes allows you to add fruit such as dried cranberries, cherries and raisins. It also allows you to regulate the size of the bun. You can make super ones or tiny ones , depending on your family’s tastes. Flavorings can also be tempered to suit what everyone likes. Any Bisquick product is easy to whip up. Biscuits only take fifteen minutes to make and five minutes to bake.
A hot roll or bun is the perfect antidote to a frozen morning. There’s nothing like its’ fresh taste and warm, melting texture .It ‘s a nice way to chase away. those AM chills.
