Extra Veggies, Extra Recipes

 This is the season where you could find a stray tomato or zucchini in your fridge. What to do? There's a lot of veggie recipes out there you can have fun with. It clears out the fridge and veggie drawyer along with providing a tasty dish.

Tomatoes are one of the most versatile veggies/fruits out there. They can star in a lot of tasty recipes. A favorite is the Piedmontese tomatoes and eggs.This is taking two or three Roma or Capri tomatoes  chopping them and then stirring them in a beaten egg mixture. A minced garlic clove is added for more flavor. Everything is then cooked up and served with sliced Italian bread.You can also make it Sicilian style by subbing in a chopped green bell pepper and cook the same way. A panzanella salad is an easy way of getting rid of any stray tomatoes. Just chop and add torn pieces of Italian bread. Drizzle with oil and you can add garlic and onion powder for more flavor. You could also add croutons instead of bread for a crunchier version.A fun salad is one made of all sorts of different tomatoes. If you had some cherries and grape along with vine ripened. ,slice and mix these together . Add a simple vinaigrette for a memorable and colorful side dish.You could also add a sprinkling of fresh Parmesan too.

Keep in mind that there are plenty of hot dishes to use on those extra vegetables. Use your grill for tomatoes, eggplants and zucchini, This makes for a nice side to any barbecue, especially if you're grilling chicken or fish like salmon. Just brush with olive oil and lemon juice and season with only sea salt and fresh ground pepper. Of course there's that year round classic ratatouille you can easily make on a stove top.It;s just taking those smaller eggplant or even zucchini, and cooking the  slices with chopped green peppers and tomatoes.You could  double the amount and freeze it for later on. It's also good reheated as the next day's lunch. Stuffed peppers are usually a winter dish but you can easily make them in your air fryer.Even if you just have one lying around you can create a tasty cooked meal with it. Add crumbled beef or plant based crumbles rice and whatever else you fancy. If you have some extra broccoli and cauliflower florets chop them and add to the stuffing along with olives and rice.It's an easy cook in the air fryer and a great way of getting rid of extra peppers.

Extra veggies lying around can be turned into tasty hot and cold dishes.It's a good way of using them up .It' also a great way of reducing kitchen waste/

Spins On Salads

It's time to rethink salads and sides now that it's barbecue and picnic season. Liven them up with different spins that complement not only the ingredients but the main course. Get bold and daring with non -traditional flavors that will add zing to an outdoor meal.

One of the most classic barbecue salads is cole slaw. This centuries old dish is usually shredded cabbage with a good dollop of mayo mixed with oil and vinegar. More adventurous home chefs toss in a handful of raisins or carrot slivers for color and sweetness.Forget those. A better - and less cloying recipe is subbing in the mayo with a tangy French or apple cider vinegar based vinaigrette. Either one brings out the cabbage's musky green flavor and keeps the crunch. Another idea is giving it an Asian flavor with the addition of super crunchy water chestnuts  and a dressing that features soy sauce, chopped scallions and ginger.Macaroni salad always makes an appearance even though it's not that popular. It's an easy make, Just boil elbow macaroni  cool and add   what else - mayo. A more preferred recipe is tricolore rotelli with wheat, tomato and spinach pasta is cooked and then cooled. I would ditch the mayo and use a dressing of olive oil, dried oregano and rosemary. Spike it up with cut up bits of salami , cut up black olives and grape or cherry tomatoes.It's a great side for steaks and hamburgers and you could add leftover cubed fillets to it for a next day  lunch or supper.

Potato salad is another gloppy salad that sometimes gets drowned in mayo. The best bet is add other ingredients to give it more complexity. Add some sliced hard boiled eggs and celery for color and flavor. Another idea to zing it up by mixing the mayo with sour cream and adding chives and crumbled bacon. Think a variation of a baked potato for a hot summer's night. Use about three fourths cup of sour cream or even Greek yogurt to half a cup of mayo.Olive oil , too, works for a potato salad. It gives the salad more body and allows you to add such herbs as rosemary and oregano for a Sicilian style one. How to really change up potato salad? Roast the potatoes instead of boiling them. Preheat the oven at 375 degrees Farenheit and roast for about forty-five minutes until the potatoes are tender. Let cool for fifteen minutes before cutting and adding to the salad bowl. They work well with either mayo or olive oil. Add some scallions for color and bacon for crunch. Really change up the recipe with sweet potatoes. Their sweetness is offset by adding such savory ingredients as garlic and hot salt. Mayo may be too much so sub in Greek yogurt or sour cream mixed with a simple vinaigrette.
Salads are a mainstay for any summer barbecue or picnic. Liven them up with some changes. It'll make for an exciting meal and a turn from the usual boring side dishes of cole slaws and salads.

Grab Cooking

What happens when you're just too wilted to make a meal?Or if you don't want to trek through a heat wave to the grocery store? You grab cook. Look through your fridge, freezer and pantry and pluck out anything you can use to create a dish. It's a challenge but a fun one using whatever's on hand..

The ingredients to make a good grab dish should be veggies and meat. However cans of beans and sauce can also be included in the recipe.I tried this when I just did not feel like heading out in sweltering temps  just to get lunch. There was a can of chickpeas which was only bought for aqua faba (see yesterday's post), peppers and half an onion. Grape tomatoes,always a must have, looked appealing. Perfect to create a fun and colorful salad. The onion was finely chopped as was the pepper. The chickpeas  and tomatoes were added next as was the fresh parsley I had around.A simple vinaigrette dressing was all it needed and    voila  a refreshing , yet substantial lunch for a ninety degree day.Salads are one of the easiest grab meals because you can grab this and that to create a surprisingly hearty , yet ;light dish Vary the veggies.You can even use canned or steamed ones.Left over meats are great in grab salads. You could even make a chef's salad using last night's barbecue . Try ham in a broccoli and string bean salad. Grilled steak is good with just lettuce and tomatoes. Have ice berg lettuce? Grab it and turn it into a tasty wedge with bacon, tomatoes slices, and a home made dressing using mayo, oil, vinegar and anything else you find.

Grab meals can also extend to cooking too.Eggs make the best grab cuisine ingredient, Add three or four to chopped spinach leaves, tossed in some minced garlic and fry. It becomes a tasty omelet, easy  to make and easy to eat.Turn it into a sandwich by placing quarters on toasted bread. Sub in chopped green peppers and it becomes the filling for the classic Sicilian sub sandwich. Add a can of tomatoes  or fresh ones , some chopped garlic and you have the classic Piedmontese uovi e pomodori, a warm weather favorite.Make sure there's plenty of Italian bread for the last. If it's a cooler day you can combine whatever you can get your hands on for a tasty hodgepodge soup. Start with bouillon cubes and add  odds and ends in the soup pot.This is also a good time to use up those little scoops of rice or pasta.Desserts can also be part of grab cuisine. One of the most fun is the take on Eton mess. This classic British dessert  and a favorite of the brothers Windsor, is made with broken meringues, fruit and whipped. cream. I had leftover Nabisco chocolate wafers, a ton of strawberries and blueberries and whipped cream in a canister. Lsyer the cookies  even the broken ones with the fruit (you don;t have to have berries, bananas and pineapple work just as well),and top with a generous squirt of whipped cream. Sub in ice cream for whipped cream if you have any handy.

Grab cuisine is the way to cook during these impossibly hot days. Check your fridge, kitchen and pantry, grab what you can and create. You'd be surprised what you can make with whatever's around.

Adding Oomph To The BBQ

We're officially at the start of barbecuing season. There's something fun about outdoor cooking, yet those burgers, dogs and ribs can be boring. Spike them and the traditional sides with different and new flavors It'll make for an exciting meal at the picnic table.

Hamburgers are a staple at any cookout. The best kind to make are the ones with chopped meat. With this you can add anything and everything to make them tastier. One crazy idea is putting an ice cube in the middle of a patty. Why? It melts, giving the burger a nice  juiciness .It won't have that dry crumbly, sticks in your throat texture. If you 're making these , remember just stick to salt and pepper as seasoning. Nix the onions. You want to have the full , flavorful juicy meat experience. Another filler is butter, which not only makes the hamburger juicier but also richer in taste.Use a knob of butter for a Wisconsin butter burger style let it melt on top. Another method is  first make balls out of the chopped meat, then add a teaspoon or small knob of butter.It would then be flattened and ready for the grill.If you and your family and friends like spicy burgers, then add a anywhere from 1/4 teaspoon ton one teaspoon of chili powder.If you want a different kind of heat, then add a drop or two of sriracha. Burgers can also get a lift by what 's placed on top of them. Instead of the usual tomatoes and lettuce, try a slice of avocado, or better yet, guacamole. Just spread on a thin layer so that the rich flavor doesn't overpower the burger. Another , healthier choice is wilted spinach and kale that's been sauteed with garlic and red pepper flakes.

Ribs are always on the menu at almost evrey  barbecue. The usual rib sauce consists of mixing ketchup with molasses and zinging it up with a dash of hot pepper. Instead think about adding bourbon to the mix. This requires two to three tablespoons  of it mixed in along side  apple cider, vinegar, and apple cider.Apple butter is added to this as a fruity sauce with a kick.Another variation has garlic and tomato sauce mixed with orange juice and ketchup. Sides are just important at a barbecue as the main dishes.Cole slaw is ever present at any cookout or picnic. Instead of glopping it with mayo, try a homemade salad dressing such as French or ranch. A healthier spin is using plain Greek yogurt zinged up with roasted garlic and lemon. Roasted corn is always welcome. Give it a Mexican twist by sprinkling cotija cheese on it.If you can't find this tasty Mexican fromage, then sub in Parmesan. It's first rubbing the ears with butter and then sprinkling the grated cheese on them.Potato salad is always a big treat. Instead of the usual German  - which is very good - try the more Mediterranean Sicilian style. Instead of mayo add olive oil and rice wine vinegar.Green olives and red onions round it out. A variation of this has tuna capers and a squeeze of lemon.Make it and pretend you're at the beach at the Taormina coast.

Barbecue season is here. Don't settle for the ordinary. Go out of the box and create a memorable,exciting cook out.

The ALl ENcompassing Eggplant

Nothing beats the versatile eggplant,Other than the tomato, it's one of the few veggies that can be roasted, baked and sauteed, along with a variety of other methods.One can be cut up for a variety of dishes from baba ganoush to ratatouille..Sliced and breaded versions were even called "poor man's oysters." If anything , they should be called the flexible veggie because of the many ways of cooking them.

It was the subject of Mark Bittman's The Flexitarian column in today's New York Times Dining section. Mr. Bittman gives us a cornucopia of different recipes, along with ways to cook them. It should never be peeled unless roasted and charred . Since its' flesh is highly absorbent, , Mr, Bittman recommends using a fragrant oil for frying or sauteing. Eggplants also come in different varieties as well, from the traditional deep purple bulb to the long thin lavender and green Chinese ones.

Mr Bittman also provides us with a good scope of recipes. The easiest , as well as being, the tastiest, is a charred one that leaves the meat , soft and custardy. This is mashed with garlic and you could serve It on rounds of warmed Italian bread. The Sicilians are big on eggplant., since it grows in copious amounts on their island. Try it as pasta alla Norma, eggplant in tomato sauce and finished with insalata ricotta. You can also use the long, narrow and sweeter tasting Chinese eggplant for caponata.Since it is also a Middle Eastern veggie, Mr Bittmans includes the Turkish Baingan Bharta where turmeric and cilantro is used for flavoring.

Eggplant is a veggie that can be made a variety of different way and styles.Try it as a creamy dip one night or as a hearty ingredient in a pasta. It will never bore.
