Weddings Now

October was usually the time for lovely fall weddings however that's all changed. The pandemic has forced us to look at how we gather and throw parties.It's not a question of what shall we serve but rather how can we do it without getting guests sick. There are ways of maneuvering  around the restrictions. 

In the old pre-pandemic days there used to be wedding receptions full of endless courses.There was the sushi bar followed by the pasta buffet. Everyone took from bountiful trays of hors d'ouevres and appetizers. a fun idea would be different food trucks set up along the street or in the wedding venue's parking lot. This is a plus because everyone likes what food trucks produce, The bride and groom can have their favorite foods served, whether it''s pizza or tacos. Several trucks can be set up because they're not that expensive per person. have hamburgers and corn dogs along with pizza and bulgogi, if you want a truly international affair. As for dessert, ice cream trucks are fun but just a bit messy. People will be wearing relatively fancy dress and the last thing anyone wants is a drippy cone or Popsicle. A better idea is a cupcake truck that doles out mini wedding cakes. These can be a variety of flavors too or the happy couple's favorite ones. You can also have already made meals that have been boxed in fancily decorated cardboard containers or plastic tubs. Fill them with  filet mignon sandwiches or lobster rolls. For a side think a small cup of grape tomatoes with a side of dressing. As for the cake, it can be cut in front of everyone and then instantly boxed to take home.

Can there be a relatively normal sit down dinner? Yes but keep it very small. Limit it to the immediate family and the  bridal party. This is reminiscent of weddings of the past where only a few were invited. The family can become involved , especially if the reception is held in the parents' backyard. You could bake a large ham or roast beef and serve it cold, if you 're involved in the wedding. leave it to rest for thirty minutes  - about the length of the ceremony. Slice it right away so that not too many people handle it or are around the meat. As for sides , think scoops of potato or macaroni salad in individual ramekins to cut down on contact.If you want some kind of salad, think hollowed out Roma tomatoes filled with cottage cheese. The cheese be glammed up with the addition of chopped red, yellow and green peppers along with oregano. Decorate with parsley sprigs. Should you have a traditional cake  with just a small group? Yes!!!! Bake a simple two layer with just butter cream frosting and flowers. If you feel it's not enough . then go for a southern tradition and bake a groom's cake. as well. This is usually the groom's favorite flavor, namely chocolate but it could be any flavor - except the wedding cake's. It can be decorated with the groom's favorite team colors or reflecting his hobbies.

Weddings and how we celebrate them will be different for the course of the pandemic. Make the best and most of the day with delicious foods. They can be from food trucks or from your kitchen. What matters is that they celebrate a day full of love and hope.

Eating Raw

Nothing is worse than a hot kitchen during a heat wave. No one wants to cook, broil bake, or even microwave .Yet what do we eat? Eat raw. There's nothing wrong with sticking to fresh veggies or fruit  to survive these scorching days.

Forget the cooked breakfasts. Save those for the cooler days or eating out. Cold cereal with fruit is the way to go. Eat healthy raw however. Think puffed rice or puffed wheat with chilled low fat milk. For a more healthier spin use almond, coconut, or soy milk. Add the harvest of the season for more color and nutrition. Think  of tossing in a few berries or sliced peaches. Another cool breakfast idea is a granola parfait.Layer vanilla flavored Greek yogurt with layers of granola and different fruits. You can also sub in cottage cheese for the yogurt It's a filling, protein packed way to start the day. Granola is another tasty and healthy way to begin a hot summer's day. It's the star of many a farmer's market, with many homemade varieties for sale..It also makes a good snack through the day too. If it's too sweet, then think a fruit cup for breakfast. Combine different types of melon with chopped peaches, plums and strawberries. Most of us can't function without  a cup of coffee or tea. Luckily there are already cold brewed coffees from Starbucks along with packets of teabags that can be brewed in cold water.

Most people turn to sandwiches for both lunch and dinner. The problem is that they get old fast. Look to the south of France for inspiration. One of the best recipes to create during these steamy days is the pan bagnat. It's slicing a French  boule or rounded bread (a baguette also works here) Take out the middle - which you can eat as a snack with peppered olive oil, . Brush the insides and lid with olive oil You can then have the first layer of peppers, then sliced onions followed by basil leaves. Finish with tomato and ham slices. Some pan bagnat recipes allow for tuna fish  instead of the meat You can make it as hearty or as light as you want. Add some flourishes such as sliced black olives or capers. A similar make is the Scandinavian loaf bread. This is taking another round bread (which you can easily purchase at Panera) , slicing it in half and filling it with a hard boiled egg and a mix of cream cheese, cornichons , dill and red onions. It's then adding salmon and sliced beets.Omit the egg if you don't feel like using the stove top.If you're not into sandwiches, then try salsa crudo. This is like bruschetta but poured on freshly cooked pasta.Take four cups of chopped tomatoes and mix with one fourth cup of minced basil.balsamic vinegar garlic  and olive oil. Mix and let stand thirty minutes before pouring on any cooked pasta.

This is the time to keep the kitchen as cool as possible. Eat raw.It's an easy and healthy way of dealing with these ultra sultry days of summer.

Nepali Cuisine Spice And Mountains

Many only know Nepal for Mount Everest, the world's highest mountain top, yet it's also a fascinating, ancient country/It lies between China and India, and there's no doubt of their influence on the cuisine. It is tradition mixed with the exotic, two cultures fused as one in an interesting blend of spices.

Nepal sits on the top of India so it's no surprise to see certain Indian dishes in the cuisine..Dal, a staple of New Dehli and Bombay is made here as well.It's a spicy but easily replicable soup of lentils and spices.It's served with bhat or cooked grains along with rice. Sometimes vegetable curry is also served with it for a more  satisfying meal. A more Nepalese dish is dhindo.This is a kind of polenta being cooking with clarified butter or ghee and water. Buckwheat can also be added to the mix for more nutrition, Aachar or a tomato pickle is often served . This is a  kind of ketchup , but with zesty zing of cumin and mustard. Timur, or Szechuan pepper is also added to give the sauce more kick. There is  the chutney, made super hot by adding chili peppers and ginger to a sweet mango and tamarind mix. Most of the people are vegetarian , due to Hinduism and Buddhaism so most meals have yogurt as the main dish.Those of Pahari background enjoy yak meat.

The Chinese influence is felt very strongly here. There are momo, Tibetan style dumplings with Nepali spices. They were originally filled with buffalo meat but now have chicken and vegetarian fillings.Fermented soy and bamboo shots are also used.The janajati or indigenous people are big on buffalo and pork while another group, the Magars eat nothing but pork. Along with different ethnic groups different locations have different dishes Thakali cuisine, located between the Himalayas and the lowlands are big on sheep. Their meat is air dried and then eaten. The Thakali also make a kind of blood sausage rhat is also dried. These are added to curries  or sautéed in ghee and sometimes dipped into timur-ko-chop, Szechuan pepper, salt and local herbs.Newars, the urbanized people of Katmandu have huge feasts  that feature fried tofu or even cottage cheese. Their festival foods would not be out of place in a restaurant featuring nose to tail cuisine either. They are big on fried liver and tongue as well as stuffed lungs. Tea and beer usually round out any Nepali lunch or dinner.

Nepal is known for beautiful and exotic scenery.It is also know for interesting foods that reflects the cultures around it. It is full of variety and spice as it has been for centruies.

Healthy Office Eating

Where's the one place where you can gain the most weight? Your office.Thanks to a combo of boredom, nerves and every kind of food available your cubicle or office becomes a buffet .Unfortunately ,it 's usually the wrong kind,full of sugar and salt not to mention fat and empty calories . How to avoid those workplace pounds? Eat healthy. Saying that is easier than doing it.Any office starts the day off with yummy glazed doughnuts or cream cheese topped bagels.Thera 's usually so e one's birthday or shower to celebrate and that means gooey , rich cake.Forget the lunches or snacks that involve every bad ingredient possible. A healthy way to start the work day is opting for a whole grain or pumpernickel bagel with a low calorie cream cheese if your office has it.Some offices will start their meetings off with these along with fresh fruit and cottage cheese.Have a few pieces with a scoop of the cottage cheese. As for lunches ,opt for light like grilled chicken and salad.Skip the sandwiches and go for the wraps along with again ,fresh fruit. Office snacks and parties will always ruin your waistline. Snack machines offer All sorts of varieties of chips and sweets along with the ubiquitous soda and ice cream machines. The best bet is bringing sandwich baggies of almonds ,fruit chunks and veggie pieces. These will keep you full but without all the extra bad stuff. You can even add some Greek yogurt mixed with lemon or lime along with herbs.This makes a nice dipping sauce and also a great source of calcium.Another great carry along snack is the Back To Nature crackers or cookies.These don't have all those artificial ingredients and less calories.As for birthday parties , think about a wafer thin slice as opposed to a slab.Another idea is one of those fruit arrangements in the shape of a cake.It's just as festive but without all that sugar. Eating healthy at the office can be a tricky job. Yet it can be done with the right foods. You just have to work at it and you'll have healthy workplace eating habits.
