Your Own Ice Cream Shop

One of the most trips in summer is heading to the local ice cream shop. Yet these are becoming few and far between. Then there is the price. An average sundae can cost as much as six dollars just for two scoops with chocolate syrup. A better idea is making everything yourself .Besides it's more fun to create some sweet treats on your own.

The base of any ice cream shop is the ice cream itself. You can easily buy or make it depending on your schedule. Start with the basics  - vanilla and chocolate These work with any kind of ice cream dish. Vanilla and chocolate ice cream is easy to make.An easy vanilla recipe just calls for two cups heavy whipping cream, condensed milk and one tablespoon of vanilla extract. It's whipping the cream into soft peaks and then adding the remaining ingredients. There's no churning or even ice cream maker needed. Just place in a container and freeze for at least six hours or until firm. This also is the recipe for easy chocolate ice cream except there is also the addition of half a cup of unsweetened cocoa powder, whether regular or Dutch processed. If you want something a bit more adventurous then try a coffee which is great with chocolate syrup or a berry  - the perfect way to use up fresh strawberries or blueberries. For the coffee add  a chilled half cup of coffee . Sub in whole milk for condensed. As for an quick berry ice cream.mash berries and cook with a bit of water and sugar in a sauce pan. Let cool and add to the vanilla mix..

Can you make cones too? Yes! ice cream cones do require egg whites to give it to that stuff texture that holds up to melting ice cream scoops. You'll also need super fine sugar , whole milk, whole flour and vanilla extract. It's then cooking them in an oiled skillet not unlike a pancake. Once baked into little cakes they're then shaped with a cone roller (where you can find on Amazon).  Waffle cones are a bit more cakier thanks to the addition of one whole egg along with the white of another for a good stiff texture. .A quarter of a stick of melted butter is also added for richness.  You can't use a regular waffle maker for this You'll need a waffle cone maker to give you a thinner ,crispier cone.  what about waffle bones that hols more ice cream along with sauce and toppings. You can use a regular waffle maker for this  along with an  everyday waffle recipe. It;s then putting the hot waffles into a bowl to shape them. Any ice cream treat needs a good sauce for fun and flavor. CHocolate sauce just requires water sugar  , vanilla extract and sugar to create a thin syrup  that's also perfect in egg creams. A decadent hot fudge sauce requires     butter, corn syrup for texture along with heavy cream, vanilla extract and cocoa powder. Caramel sauce  is another yummy topping. For a truly rich one use six tablespoons of butter mixed with  half a cup of heavy cream granulated sugar and water along with a small pinch of  flaky sea salt for contrast.

Imagine having your own ice cream parlor with Tim's of homemade yummy treat, You can. It's easy to make your own ice cream and sauces, sugar  and waffle cones and bowls to create perfection.

What This War Means

Sadly we're in another war and one that affects everyone on the planets. Along with the destruction of all life, it has a serious impact on our food and crops world wide. Expect some major and drastic changes  to how we eat and shop.

The Ukraine has bee known as the bread basket of Europe but also of Africa and Asia too. Many countries , from Egypt to Sudan, Nigeria and Tanzania to name a few rely on their

wheat along with barley and maize.Lebanon will be severely hit because a good portion of their grains come from the area. The area is rich in sunflowers and sunflower oil is one of the staples in Chinese and Indian cuisines. From an agricultural perspective this does benefit some African farmers. There will be a need for grains grown locally and that means an increase in production. yet there's also an international ripple effect that touches us here back in the States. It's surprisingly a plus in all this darkness, Like African farmers US and even Canadian ones will step in and help with the supply chain as per Farm Policy News from University of Illinois. Another problem is that Russia is the biggest importer of fertilizer world wide. economic sanctions against it could easily result in farming and production products. (although we could always find another country to fill in for that).

Prices are already high  to begin with thanks to the pandemic and supply chain problems. Cold cuts are almost ten dollars for a package. Cookies are up thanks to the price of sugar. Dairy is going up too. what will happen a few months into this war. Could a roast chicken cost twenty dollars? Or will tomatoes be eight or nine dollars a pound? With hopes and prayers this conflict won't hast long thanks to  some kind of intervention. If not we may have to look to our own backyards for help. It is easy to live off one's land. It's time to think about growing veggies and berries. We can easily grow everything from those tomatoes to melons to even corn in our yards and community gardens. We may have to go vegan, eliminating dairy and meat, The problem is that soy prices may go up  which eliminate some vegan products. Again ,luckily for everyone mung beans are now a big part of vegetarian products like Beyond Burgers and Just Egg. We may not need to rely on purely soy products as a meat sub in ;

This conflict is not only vile and unnecessary but disruptive. It will affect every aspect  of the food chain , from farming to baked goods. Hopefully it will end soon with some kind of peaceful resolution.

Huel As Fuel

Eating right is hard. It's trying to get the least amount of calories and the most amount of nutrients plus a good dollop of flavor. What food has this? Huel protein shake. This is for the person on the go  who wants to have the proper amount of vitamin and minerals.

I had heard so much about it , I decided to give it a try. I ordered the vanilla and chocolate along with the flavor pack and shaker,
I bought the premixed vanilla and paired it with the cinnamon apple. It wasn't bad flavor-wise. Huel's drinks also come in chocolate and berry. Surprisingly it's made with pea protein along with tapioca. There's also flax seed and oat powder too along with a host of vitamins and minerals. Another plus is it's full of fiber too.
This is the chocolate that I zinged up with chocolate mint.

Huel has some neat flavor packs, from mocha to chai, and from strawberry to caramel and even chocolate.
This is the Huel shaker. It just takes two cups of the powder, some ice cubes and a cup of water. It makes for a well rounded meal with only four hundred calories. I plan on drinking it to lose some weight for shorts and bathing suit weather.
Huel right now is being sold only on line where twenty-four bottles are $89.00 but will last a month if you're careful. The bags are almost four pounds in weight and give seventeen servings per bag. It's $56.00 for it but it's the same as for a day's worth of groceries.

Huel is definitely the way to go if you want a full meal loaded with vitamins and minerals. It's an easy eat and perfect for the active days ahead. Try this delicious mix of flavor and nutrients for a boost .

Hot Fruit

As much as we love to take a bite out of an apple or pear, there's something about  cooked fruit that's  lush and satisfying. Heat brings out the flavors, caramelizes the inherent sugars and creates a custardy texture. It turns an ordinary drupe, pone or berry into something special.

Apples are big right now. Many feel the best way to cook them is baked into a pie. It's a delicious way to have them, especially when the pie is warmed up and served with whipped cream or vanilla ice cream. However if you're not a big fan of crusts, there are two suggestions. One is a galette,a more rustic , yet surprisingly elegant tart. It's an open pie ,with the crust folded only an inch in, showing off apple slices usually arranged in a swirl pattern. The crust is the same as any lard based one and the filling's ingredients are the same as an apple pie's - cinnamon. sometimes' that's omitted so the cooked apple taste shines though. Sometimes the entire galette is brushed with apricot jam to give it a beautiful shine. The second idea is just make the filling - kind of like a chunky apple sauce in your slow cooker or crockpot. It can not only be served as dessert, but omit the cinnamon and serve it as a side to pork roast or pork chops.Of course baked apples are always a lovely fall dessert. You can bake them with brown sugar , cinnamon and butter but for a more sophisticated spin try them Piedmontese style with a filling of Marsala , butter and a pinch of sugar for each apple. For a fun Halloween party, think baked apples stuffed with caramel and chopped walnuts.

Pears are another fruit that are delicious when cooked. One of the most popular recipes is poached. Usually red wine is added along with orange peel in the cooking to impart more flavor. White wine can also be used. The fruit can also be baked in a galette, Try it with a buttery tart crust instead of a pie crust. Grocery stores are still selling peaches right now. Go for them, to get the last taste of summer. One of the most delicious is pesche ripiene Piedmontese. This is a big dessert in all of Piedmonte. It's stuffing sliced pitted peaches with crushed amaretti cookies with the chopped peach stones and butter. They're then baked with peach liqueur such as Schnappes . They're so delicious that you don't have to serve them with whipped cream although some home and professional chefs add a dab of marscapone cheese next to them. Peaches can also be baked as well with cinnamon and some kind of nut. This makes a great side to butter pecan or vanilla ice cream. Cranberries are the quintessential fall berry. Yes you can cook them into a sauce that goes well with turkey but they also can star in a sweet trifle recipe. Layer them with buttery pound cake slices and a cream cheese/whipped cream filling. This would even make a great holiday dessert for Thanksgiving and Christmas.

Cooked or baked fruits are more sophisticated way to serve fall's bounty. They become more complex and flavorful, thanks to baking or slow cooking. They go beyond being apples and pears, peaches and cranberries and transform into memorable tastes.

Red , White And Berry

Berries are everywhere right now, from straw to blue. Most foodies eat them plain or with a good dollop of whipped cream yet they're versatile in everything, from salads to all sorts of desserts.Try them in barbecue sauce or in a fresh summer salad.

Of course berries are used in baking. Strawberries, raspberries and blueberries are popular this weekend  because of their patriotic colors. Melissa Clark wrote about them in her A Good Appetite column in Wednesday's New York Times Food section, She arranged them in festive red and blue stripes in a buckwheat (!) cake made with buttermilk  The fruit adds a nice tartness because it's been baked and absorbed by the crumb. Another fun Fourth idea is making either a chocolate or vanilla sheet cake , icing it with whipped cream and decorate with berries to create the Stars And Stripes. It's a fun end to a barbecue. The idea can be carried over to cupcakes. Cupcakes can also be filled with a mix of chopped fruit and cream or pudding for a neat surprise. One of the easiest desserts to make with any berry is the crisp. It's cooking the fruit with a crunchy topping of brown sugar, butter and cinnamon.Usually made with apples the recipe can be expanded to include blackberries, blueberries and strawberries. Cobblers are another great summer dessert that highlight any berry's juiciness. They're a bit more involved than a crisp , resembling a cake but they are still easy enough to bake on a hot summer's day. For a cooler treat think berry infused sorbets or old fashioned ice cream with whole cream and fresh produce.

Not surprisingly berries can be used in savory dishes as well.Salads always benefit from them, whether as a tangy dressing or a zesty addition, One tasty mix is taking half a pound of strawberries and mixing them with honey, apple cider vinegar and olive oil. Use it for dressing a grilled chicken and spring green salad. Blackberries and even blueberries would not only add some sweetness but also color to a steak salad. Toss a few in with some chopped  bell peppers and grape tomatoes for a spin on a classic salad. Any berry can be used in barbecue sauce.Imagine a raspberry barbecue sauce slathered on ribs. The sauce is easy to make. Take a cup of raspberries and blend with a variety of sweeteners such as brown sugar, molasses and light corn syrup. Garlic , red pepper and onion flakes zing it up.The base is balsamic vinegar and olive oil. It's pureed and strained through a sieve to get rid of the seeds. Ever think of blueberry ketchup? Yes, it can be made, In fact one of the original recipes was made solely from them. It's a mix of the fruit along with shallots, brown sugar, vinegar, garlic and ginger. The flavor is bright and fruity, sort of jammy  yet perfect for those grilled burgers or for giving those cookout some zing.

Get red white and berry this July Fourth and for the rest of the summer. Use blueberries in a ketchup. Strawberries in a crisp. Blackberries in a salad. It's the season for them so enjoy them.

Healthy Substitutes

Not too long ago I wrote about being a low fat foodie. Now once more I'll write about it again because instead of losing weight I've ballooned upwards. It is not easy loving tho e wrong food. Like loving the wrong person, it slowly can kill you.

What to do?

Try to eat healthy. Easier said than done, especially when summer is also the season of snacking. It's so easy to go to the boardwalk or state fair and let loose on a lot of fun treats. Keep the junk food frenzy down to a minimum. Share a corn dog or a frozen custard with someone. Split that cotton candy or double loaded chili dog.At these places it's hard to find relatively healthy food. Opt for the candy or caramel apple (well the apple and the nuts and/or coconut covering it aren't bad) or go for ice or lemonade.Avoid anything deep fried like Oreos, Mars bars, and even ice cream. A problem with heading to the Jersey shore is that there are all these great home made candy stores offering hand made treats. Instead of a pound of fudge , go for the quarter pound. At least you'll get the rich chocolate-y taste without one - the large amount of calories , and two - expense. Salt water taffy is only 30 calories a piece so two pieces as a treat won't hurt. There is also the sugar free kind. A lot of candy stores sell lollipops which are another fat free sweet. Go for these as opposed to those rich molasses paddles dipped in milk chocolate.

Sometimes being at home is worse than being out. There's nothing like relaxing under a favorite tree or by the pool with a snack tray at hand. The problem is you've have to say no to the chips, dips and mojitos. Besides anything too salty will make you retain water. Stick with unsalted pretzels, baked potato chips and salsa. As far as a cooling drink, think freshly brewed iced tea or lemonade. Any soda(except diet) will add calories and make you feel bloated. Also stay away from any presweetened teas. These rich drinks surely put on those summertime pounds. Candy is another no no as we all know. It may be an energy booster during these hot days when you feel lethargic. Still there are calories there.Craving sugar? Go for any kind of berry whether straw blue or black. Eat a fresh sliced peach or watermelon to give yourself a lift.

Another summertime treat to avoid are those iced coffees. Yes they're addictive but loaded with fat. If you want an iced one, forgo the mound of whip cream and syrup barristas decorate the drink with. Opt for black (which is delicious)with a lot of ice. If you need one to spike up your energy levels get the carbonated kind.

It's tough being a foodie on a diet but you can do it. I'm struggling as I write this. Luckily I've nixed the Hershey's nuggets for strawberries and a tall ice filled glass of freshly brewed ice tea. If I can do it, then you other foodies out there can do it too.
