Zucchini Zip

 Soon farmer's markets and backyard gardens are going to be overflowing with zucchini. This tasty veggie can be used in everything from an elegant ratatouille to  raw or grilled. There are some great recipes to appreciate this green gem even more.

Regular contributor  Ali Slagle wrote about this versatile veggie in today's New York Times Wednesday Food section. There is so many different ways to have it. Surprisingly it can be eaten raw. Fans can avoid the usual mushiness that unfortunately comes with cooked veggies. Think of it as a firmer cucumber and slicec it like one - into coins.For a prettier look cut in into batons or ribbons. Add a pinch of salt to mute the bitterness and bring out its' sweetness. Ms. Slagle suggests mixing it with feta or lemon and Parmesan for  a light summery taste. Another tasty idea is combining them with sliced tomatoes and mozzarella for a great side dish. It can also be used in place of pickles in a sandwich for crunch and flavor.Zucchini are perfect in sauces/ That mush turns to a caramelized jam making it perfect to meld with olive oil, cheeses and herbs. These sauces are perfect if there's an abundance of the squash. Usually two pounds of zucchini are used to make a sauce,Lemon can be added for brightness.A basil crop will come in handy too  since; ts a great flavoring for any veggie sauce.

Of course the best way to have them is as pancakes.They have a lighter and greener flavor than potatoes  which is perfect  for a hot weather meal. A good recipe is mucvar, the Turkish version.Eggs and flour are also added  a long with baking powder for lift. Feta crumbles are added a long with dill. Serve with a  cooling yogurt sauce that's rich with garlic. This is a great appetizer for an outdoor party.Ms. Slagle also recommends slicing the squash lengthwise.This creates thick batons which are perfect for grilling.Slather with miso ,flavored butters such as garlic or basil and then sprinkled with Parmesan.Zucchini is a perfect accompaniment when cooking meat. The veggie releases steam and keeps any meat from drying out. It s  a perfect add into any meatball or burger recipe (along with give both a good dose of green). Another good pairing is adding slices to any cooked tomato dish. It;s also a great sub in for eggplant when making ratatouille. It doesn't;t have that intense flavor and heaviness. It keeps the dish very light in flavor. 

Zucchinis are going to be in abundance soon enough. Have  them in salads and sauces. Try them in a crunchy crispy pancake. Enjoy them in ratatouille with a crusty French bread. They;'re all perfect thanks to this versatile squash.

French Fire

 Winter and French food tend to go together. There are plenty of rich dishes that will keep you warm when the temps drop. They are tasty and flavorful, full of protein and taste. The will warm you from head to toe - de la tete aux pieds.

If you want instant French food , then head to Lidl I love their potato gratins which are miniature pies full of cream and potatoes.

These are perfect , good on their own or with squash as I made them for a kind of Franco-American dinner.

This is a nice vegetarian option however if you want true French fire serve then with a hearty cassoulet. This is a mix of various meats and beans originating in the south of France, namely Toulouse. It can be made in a slow cooker. You can add fowl such as chicken or duck along with slabs of bacon and sausages. Use two kinds of pork for a flavorful dish, There beans too , namely both  cannellini and navy along with onions carrots and celery. Garlic is a must along with parsley and cloves. Another hot dish is pot au feu. Thisis a two part meal, with the broth cooked first and then the meats. it does take five hours on the whole, but a perfect dish to make on a snowy day. You can use beef shanks along with vegetables. It's served with a sauce of mustard and sour cream.

A wintry night in means good French food .it should be hot and satisfying. Make either pot au feu or cassoulet for a tasty dinner.

Verdant Sides

 Sometimes a Thanksgiving dinner needs some livening up. There should be splashes of color amongst the tans and browns along with a fresh harvest taste. It;s time to add some greens, purples and red to have a vibrant lively table.

Regular contributor Melissa Clark wrote about this and created recipes for her A Good Appetite column in yesterday's New York Times Wednesday Food section. Vegetables are an excellent addition to any table. They add nutrients and vitamins to a starchy, high caloric meal. Their flavor is also a nice change up too, providing afresh from the garden taste amidst all the bread and gravy. The first recipe is a springy green beans with lime and red onions. These have to be made right when you're ready to serve the turkey but  it's not a labor intensive dish.Herbs  such as coriander and lime juice bring them to life. Another Thanksgiving dish that gets a makeover is squash. It's sliced and de -seeded and then glazed with maple syrup. Home chefs can use any combination of squash - delicata, honey nut, butternut and kabocha. Charred lemon give it that zing that goes well with the maple which is also mixed with butter and pepper.  The lemons is first boiled This is spread over the squash and lemons and then pan roasted.

The other dishes are just as bright and tasty.Every Thanksgiving table needs a salad. WHy not have one that features ruby red cabbage highlighted with  walnuts and feta .Cabbage wedges are first roasted to bring out their sweetness. Feta adds creaminess and saltiness, a perfect foil for the cabbage's sweetness. Walnuts are added for crunch, Pomegranate seeds add crunch and more flavor. The dressing is a vinaigrette punched up with Dijon mustard. Another side which would even be great at any holiday party is a giant roasted vegetable platter. THis is perfect for those who like to pick and choose their sides.This is a roasted mix of purple, white or yellow cauliflower and winter squash such as kabocha, delicata butternut or honey nut. There's also broccoli or broccolini fennel and carrots. It requires three parchment lined sheets and the roasting times all vary for the veggies. Broccoli takes takes ten to fifteen minutes fed onions fifteen to twenty, fennel twenty to twenty-five cauliflower twenty-five to thirty-five, squash thirty to thirty-five and carrots thirty to forty minutes(actually airfrying them will be shorter timewise). The dressing is a garlicky yogurt, spiked with lemon juice,THis is drizzled on the veggies along with apple cider vinegar and hot honey (this is mixed with red chili flakes.). It's a pick and choose platter for fussy guests.

Give Thnaksgiving a burst of color with these veggie dishes. They're exciting and tasty. They're the perfect foil for all those tans and browns of the holiday table.

Squash All Ways

 November is a time for squash dishes. The chill weather calls for hearty yet healthy dinners. Nothing beats a warming pumpkin soup or a stuffed acorn squash. Best of all squash is an ingredient to use. Even novie chefs can create tasty dishes with it.

Even though Halloween is over you can still make tasty pumpkin dishes. The Piedmontese create a tasty pumpkin soup that rich with flavor. Can you use your Halloween pumpkin?Yes! Make sure the inside is scooped out (you can toast and salt the seeds in the oven)  and that the pumpkin is roughly chopped.If you prefer canned then it's a must that you use canned pumpkin puree  and not pumpkin pie filling. The last already has sugar and spices in it. It needs to be just pure pumpkin. it starts with caramelizing a chopped onion (this will give the soup a  lot of flavor) in a mix of olive oil and plant butter - or real butter. It's then adding the pumpkin and about a cup of broth. Add salt and pepper. As it's cooking slowly stir in any kind of milk (unsweetened almond works well) and then simmer for twenty minutes to half an hour. You can still in cooked rice later and serve with a splash of milk for more creaminess. Roasted pumpkin is another tasty way to enjoy it. It's just cubing a sugar pumpkin , one of the smaller ones and then first microwaving it. This softens the flesh and makes it easier to cut apart. Slice into half moons and then cubed.Toss them first in olive oil and then a mix of garlic powder and salt and pepper. Roast about thirty minutes in a 450 degree oven. This is the perfect side for chicken or turkey.

Acorn squash is another great fall vegetable. it's a great side easily microwaved and served with scoops of butter. It;s excellent stuffed and you can have fun with the stuffings. Try a turkey one mixed with ground turkey, baby bella mushrooms and diced apples. Season with fresh rosemary and garlic powder along with salt and pepper. A vegetarian version would be quinoa cooked with mushrooms,sage and a pinch of cinnamon. Stuffed acorn squash is usually roasted for half an hour in a 425 degree Farenheit oven. This is the perfect hearty dish served with a salad and crusty warm bread. Butternut squash is also another fall favorite. It can be the main or a side dish to any autumn Sunday dinner. Roasted butternut squash is usually cubed and then tossed in olive oil before roasting. You could add a variety of different spices but these can mask the earth sweet flavor. Just season with freshly ground pepper and season salt before roasting in a 400 degree Farenheit oven for about twenty-five to thirty five minutes. Keep in mind that any kind of squash makes for a good ravioli stuffing. The sauce can be a simple cream one or a butter and sage mix.

Squash is a delicious main dish or side to be served during these nippy days. It can be a side or a main dish. Try any of the varieties for good fall eating.

An Air Fried Fall

 Air fryers were every home chef's best friend during the sweltering summer months. It can still be a vital kitchen appliance during the autumn too. It's great for cooking up tailgate and foot ball party nibbles along with creating great dishes with the season's harvest.

Air fryers are perfect for any tailgating party.You could buy a travel one.Amazon has them for as little as $ 37.99 for the Elite one quart one. Keep in mind you'll also need a portable generator for it since air fryers require a lot of power.9although this can be saved for when you want to bring your air fryer on Spring and summer camping trips) What tail gating treats can you make? Chicken wings and thighs are perfect for it. They fry up crisply and evenly without all that fat. Coat the wings with seasoning and then cornstarch to  ensure a nice crunch. If you;re looking for a low calorie alternative then look no further than cauliflower "wings," These are the florets rolled in a fiery mix of cayenne pepper, hot sauce and smoked paprika. Worcester sauce and apple cider vinegar give the florets more zing as onion and garlic powders give them more flavor. Another fun , crunchy bite are zucchini chips. Again this is simply cutting the squash into very thin coins and then seasoning them with sea salt. They're then brushe d with olive oil and fried for a few minutes.You can serve these with a homemade ranch dressing. 

Other squashes can be air  fried for the main course or a tasty side. Butternut squash is the most versatile.You can cube it or air fry it whole , cut into two sides. The cubed way will produce a nice crispy bite, especially if they're well coated in olive oil or melted butter. You can also toss them in garlic powder , sea salt and freshly ground pepper.Give them a sweeter bite by dredging the cubes in a mix of brown sugar and cinnamon. This would be a perfect side for turkey or capon.  You can air fry the whole squash ususlly for five minutes. Brush the sides with olive oil or melted butter or margarine and season with just sea salt and freshly ground pepper. Again, this makes a great side for any poultry. Kale is another fall veggie that is perfect for the air fryer. Kale chips are not only a fun side with burgers and hot dogs but they're also a great snack. Use fresh and try to get the curly leaf variety. remember to thoroughly dry the leaves too after washing them otherwise you'll just have soggy chips. Don't include the ribs or stems in this., They're too tough to eat, even when cooked. Tear them into bite size piece s and then toss in olive oil. Sesaon with what you want, Add hot pepper flakes of you want a fiery bite or sprinkle some vinegar on them and salt for a salt and vinegar flavor.

Make the air fryer the most important appliance this fall. It's great for cooking up tailgating faovrites and delicious sides. Try it with autumn's abundant harvest.

A Summer Veggie Treat Zucchini Boats

 Zucchini is one of those versatile summer vegatables.It can be cut into coins and sauted in oil and garlic. It can even be put into breads, cakes and muffins. The best way of having it is in stuffed boats. These are just delicious with a simple stuffing. Best of all they're relatively easy to make

Zucchini boats can have any stuffing you want. I chose just a simple one of breadcrumbs, oil, scooped out zucchini flesh and cherry tomatoes.Melt plant butter is slathered on the zucchini to make the stuffing stiick. It also gives the boats more flavor.


It's then slicing them in half lengthwise and scopping out the flesh witha melon baller. Save the flesh.



Keep in mind zucchini flesh is really solid and and at times tough. Yet a melon baller is your best bet in hollowing it out


It's then chopped into little pieces and adding  chopped grape tomatoes to them.
Mix these with  about a quarter of a cup of  olive oil and a cup of bread crumbs.
Then it was time for the seasoning. I used oregano and garlic powder but you can use anything, from coriander to cumin or even chili powder for some zing and flavor.


Mux all thix together in a large bowl.The  veggies should be moist from the oil and nicely coated with crumbs.

Unfortunately these were too big for my air fryer so they were cut in half.
Cook first for 360 degrees F for four minutes. Check on them, The zucchini flesh should be a green white halfway through.
Cook for four more minutes at the same temperature 360 degrees Farenheit. The skins should be a bright vibrant green and the breadcrumbs a nice golden brown.
These tasted so good. The tomatoes and zucchini worked well together , especially with the spices. I loved these and plan on making it again , maybe with vegan pepperoni or bacon.They're also good as appetizers for barbecues and pool parties too.


Zucchini boats are a treat during this squash season. Jump aboard and enjoy them. They're a great dinner or even party appetizer.

My Garden My Harvest

 It's more than exciting to have garden to table ingredients. There's something about heading out to the yard and picking the freshest veggies or herbs.  They elevate any recipe, bringing a bright freshness to the dish.

This is why I went crazy with buying veggies and herbs this past weekend. I have an old fashioned garden center located on the Paterson - Hawthorne  New Jersey border It  has everything from lovely hibiscus and roses to a cornucopia of veggies and herbs.


This wild looking creature is a tomato plant. I can't wait for it to fruit  and yield  yellow pear tomatoes.They looked like fun to grow and they were' different than the traditional red one. The taste will be tomato with a slight citrus-y tang. Definitely perfect for salads.

Every Northern Italian grows squash. The Piedmontese are known for their delicately battered and fried squash flowers. Yet there's also the plus of actual squash. It makes a great side, cut up in slices or coins and sauteed in a mix if garlic, butter and olive oil.
This regal gem is rosemary. It'll be great topping  focaccio bread along with being added to homemade tomato sauces.Rosemary adds a zingy earthy flavor to anything and it can also be sprinkled on pizza to enliven it and also added to viniagrette dressings for more flavor.

I love lavender., this pretty jewel pictured here. There's always a lavender soap or shampoo in my bath and my body mists have a lavender blend fragrance. Yes, you can use it for baking too. I may try my hand at making lavender shortbread fro a different kind of summer cookie. It can also be used to make tea with the buds being placed in a tea strainer. It's then put into hot water.


This kingly giant is mint. Mint is great for adding to tea.It can calm an upset stomach and soothe frazzled nerves. It's also perfect in savory recipes. It can be added to summer salads for a refreshing change or hot dishes like peas to give them some oomph. I 'm going to give pea mint dip a try for my summer barbecue. It'll go well with homemade pita chips.

This marigold is just wayyyyy too pretty to ignore. I love them in my garden. The ancient Romans used them instead of saffron to flavor dishes. I just think they're beautiful.

The garden will be bursting this summer. There's so much to try and use in yummy dishes, There will be a fresh flavor to all those classic recipes.

A Need For Comfort

It's a crazy world out there between what's happening in the world and in the weather.It's time for comfort foods and foods that we can de-stress with , whether it's for a meal or a snack. It can be decadent or something relaxing.

Of course one of the best things to have is a cup of herbal tea.Not surprisingly it can help protect the body from stress as well as flood it with antioxidants to also reduce inflammation caused from stress. Chamomile and peppermint are the most recommended and every brand has a version, usually blended with green tea for more flavor. Other herbal blends are made from flowers such as lavender and rose. Lavender is the best for promoting a good night's sleep. Have a hot soothing cup in the evening. What foods can create the same calming effect? Turkey which contains tryptophan which makes you sleepy.It's also right up there with comfort foods ,especially when you have it with your favorite stuffing and homemade gravy. Pair it with green leafy vegetables that also help with calming. These are kale, collard greens, broccoli rabe and mustard greens. They're rich in folates which help the body manufacture neurotransmitters like seratonin and dopamine to regulate moods. Kale is good , both , cooked, crisped or raw. Try it like a spinach salad with bacon and sliced hard boiled eggs.Swiss chard is delicious with a mix of egg and vinegar,  all sauteed in butter.

Of course there are the old reliable comfort foods such as meat loaf and mashed potatoes.Think about making a loaf with ground turkey instead of beef for something different and for all that dopamine. You can still have it with gravy - but turkey gravy along with mashed potatoes. You could serve it with another comfort food Tater Tots. These are also great on their own , especially if you've crisped them up in the air fryer. These only take seventeen to eighteen minutes to cook up but the result is a crunchy on the outside , creamy on the inside bite that works well with different dips.Pizza is another one of those foods that can make us feel happy. Enjoy a meat lover's one from one of the best , Blaze. They also have variations that include  a cauliflower crust and topping with squash and even maple syrup. Of course homemade pizza is a great comfort food too. Everyone's childhood favorite is English muffin pizzas with sauce and cheese bubbling away on the muffin slices. You can also do the same with bagels too. Use the everything ones for a fuller flavor.Another home made comfort are chocolate chip cookies. You can stick with original recipe or toss in walnuts or almonds or sub in the chips with M&M's Have these with a glass of milk,  and a favorite book to get away from the world.

These are times to de-stress and stay inside. Have  a cup of lavender tea to warm up and relax or enjoy a turkey meat loaf They're perfect for an hour or two away from the cold and craziness around us.

Auga A New Kind Of Soup

 Everyone thinks soup are the most mundane food on the planet. Yet a new company is shaking up that belief. The Baltic area company Auga is creating interesting ones , full of good ingredients and flavors.  They're not the traditional canned ones. They're not even canned.

This is one of the soups that caught my eye at Stop & Shop. One it comes in a bag. You can reheat the soup in it if you';re in a hurry or don't want an extra pot to clean. It comes out very thick so it does need to be thinned out with about half a cup of water.

I tried the carrot soup first.

This was before I added the water. It looked like mashed squash and a bit too thick texture wise.. Adding water or even any kind of milk will make it silky and also reduce the intense carrot taste. There is coconut milk in it along with rice flour for thickening and sea salt and spices.  It just takes three  minutes to cook in the microwave.


                                It becomes lighter in color and thinner  even though it looks custardy, 

As for the taste, it tasted like steamed carrots with garlic. I add a huge tablespoon or two of I Can't Believe It's Not Butter since I'm used to cooking my carrots with butter. It tasted better and was a nice lunch. I also have the tomato but would like to try Auga's champignon or mushroom flavor along with their minestrone. The company has all natural "canned" (meaning plastic bagged) beans and veggies which also look interesting and healthy along with their organic eggs and milk. The company also produces breakfast products such as oatmeal cups.

Auga is shaking up the natural food market. Their soups are a nod to the traditional yet a departure . Try them for a fresher tasting bowl of soup.

July Fourth Wishes

Have a good July Fourth , whether you celebrate with a socially distanced barbecue or eating outdoors at your favorite diner or restaurant.

Keep in mind that America, like its' cuisine, is  multi ethnic with all sorts of flavors adding to the mix. Like squash , corn and beans we have the Indigenous Peoples who were first here, like the Europeans who brought hamburgers and fries, hot dogs and ice cream, like the African Americans who brought yams and peanuts and like the Asians who brought noodles and soy, we are diversified. 

 Our table is varied.

Sit down together and celebrate it. Enjoy this unique Fourth. Stay safe and full.

Fourteen Days In

There's so much talk of quarantine and basically life shutting down these days. It brings the question - what do you do for those two weeks - especially if you have kids? It boils down to  eating healthy and  creatin enough projects to keep everyone relatively happy.

The Coronavirus is part of the common cold family. It is stronger and deadlier yet it can be buffered by having a boosted immune system. Think of the cold diet, foods that can help alleviate the ailment. Try to have plenty of colorful veggies such as tomatoes, peppers and different kinds of squash. Onions and garlic are also must haves. Make a big pan of ratatouille which can be made in double batches for freezing and later eating. Another healthy dish is crockpot tomato sauce, made with fresh tomatoes and garlic, the last the more the better. Serve with whole wheat pasta for a different healthier spin. Since you may be stuck in with kids of all ages, you may want to have some fun food plans in place.Spaghetti is one dish.Pizza is another. It's so easy to create a healthy pie.Use liberal amounts of olive oil as a first layer before you put on any sauce. It's good for colds and sore throats so you may want to incorporate more into your cooking. A pizza needs a good sauce. You can buy the already made ones or make it on your own. Add a healthy array of toppings, from slices peppers to roasted garlic. Mexican food is another healthy cuisine. Make sure you add potassium rich avocados which help in boosting the immune system along with tomatoes and a variety of beans.

Besides cooking healthy foods , a quarantine period can mean time to clean the kitchen if you're up to it. Cleaning the fridge helps. You can finally throw out those moldy cheeses and salads that you though the family would finish but didn't. It's also time to take stock of what you have and what you need for a healthier household. Make sure you have plenty of fruit  - actually more of that than cookies for the kids. We all know that oranges are great for colds and flu. They're rich in  Vitamin C and all those antioxidants. However apples are also good for treating all sorts of sicknesses. They're rich in flavonoids - which treat inflammatory problems. Another plus is that there are so many different kinds, from the sweet Mount Fuji to the deliciously tart Granny Smiths. Kids will love dipping apple slices in almond or peanut butter. These butters can be made at home for a fun family project. Both taste better homemade and it gives the kids a lesson in creating organic.Keep sweets at a limit. If the kids want to bake cookies, then stick to all organic recipes, one that call for whole wheat or nut flours and all natural sugars. As for candy - think healthy nut clusters loaded with raisins and dark chocolate chips. These are easy to make and they'll have fun making them.

Get ready for quarantines and having the kids on a full time basis. It means staying at home and eating healthy.  It means fun and nutritious projects with the kids.  Learn from this time together.

Thank You For The Food

As we become more and more woke - we need to give thanks where's it much needed - the indigenous people. They fed our earliest settlers and received only racism and loss of land in return.We need to be grateful for not only their sacrifices but also for their  contributions to our varied  American table.  They showed us  how to grown and collect squash, corn and maple syrup, They gave us salmon and wild turkey, tomatoes and potatoes, cocoa , avocados and coffee.

Yes, we should be thankful for having food on our tables and leftovers in the fridge. We should also be thankful for the first Thanksgiving and what the indigenous tribes generously gave us.

A  happy and thoughtful Thanksgiving to all, whether here in the States or those Americans around the world.

Good Nutrition Start Early

Baby Boy Sussex will be a child of two cultures - or more accurately culinary cultures.Yes, he'll be spoiled by a grandfather who has a fondness for sweets and will no doubt sneak him a toffee or two when he's older. He'll also grow up with a mother and grandmother guided by SoCal love of fruits and vegetables.That's the regimen that he and other kids should have for healthy lifestyle and a long life. It can work, if you start early enough.

When can babies eat solid foods? As any parent will tell you anywhere from four to seven months.This is when puree is introduced into the little one's diet. You can always buy jars of puree such as Stage One Beechnut's Naturals or you can make it yourself. The first is convenient if you don't have the time however homemade allows you control over what you feed your baby.There's also another reason - even though the jars may say natural or organic, they're not. The company  may load up the stuff with additives and preservatives - the last things any parent wants in his or her kid.Unhealthy fats may be added as fillers too along with thickening agents and starches. This means refined corn, wheat or rice is also part of the recipe.It's not only more less nutritious but also more expensive too. It's more cost efficient too. As they get older you can introduce them to different meals that can be not only packed full of nutrients but packed full of fun. Think broccoli tots or easy baked zucchini fritters. Homemade hummus with pita chips or crackers are also a good lunch  and let's the kids feed themselves.

Unfortunately there will be outside influences once the kids get into the play date and pre-K age. Meghan and Harry will discover that their little one may not want those bean sprout sandwiches and turn his nose up at avocado toast. School friends and even his cousins may influence him to gobble up Cadbury's treats and go wild with fairy cakes - cupcakes - at birthdays and holiday parties.Again it's time to make eating fun whether for a young royal or your prince or princess. A fun playdate and even birthday party treat is banana stacks. It's layering banana slices and low fat cream cheese on mini rice cakes. Dark chocolate or carob chips can be sprinkled on. Veggies such as squash are so vital to anyone's diet. However it can  be boring - and green to kids. Liven it up by turning  squash into pizza boats, chock full of homemade tomato sauce and vegan mozzarella cheese. Instead of cake  pops try corn  flowers. It's cutting cooked corn cobs into one inch thick slices and inserting sticks into them. As for birthday parties and holidays, homemade vegan cupcakes and cookies can do the trick instead of ice cream and candy.

As the Duke and Duchess will eventually find out raising a kid to eat healthy will be a daunting task. Yet they can rely on fun ways to serve fruits and veggies to appease a royal appetite. He'll have the  best of good foods .

One of the best foods of autumn is squash. This versatile veggie can be transformed into a warming soup, a hearty roast or adelicious side.The only problem -how can you tell which is which and what do you use the for. Luckily there is a guide to help you pick the right gourd.

Florence Fabricant created this for yesterday's New York Times Foo section. It is definitely a  keeper, especially for home chefs , new to cooking squash.. There is a description along with a picture for the twelve kinds which will be helpful for those thinking of serving it for Thanksgiving. The most popular and the most known is the acorn squash. This familiar round globe is covered in a leathery dark green skin.The skin or peel is not for eating. The flesh is fairly sweet and it's best for roasting or stuffing.Ms. Fabricant also recommends cutting it up in chunks and pureeing them.Another popular one is the butternut. Again, this is a popular one, usually a foot long in length. It has a fat bottom and light tan skin.It's sweet and nutty tasting and can be mashed or baked into a layer cake.Cute, round squashes are the carnival and cheese pumpkin. The first is reminiscent of the acorn and has a lovely maple flavor. The cheese pumpkin is more savory and can be incorporated into pies, soups or purees.Another sweet tasting gourd is the delicata.It has green and white stripes with a thin skin.The best use? Turn it into a creamy and thick bisque. The Honeynut is the newcomer in the family. It sprang from Cornell University's labs.It's a hybrid of the butternut squash, but sweeter and richer in taste. It would be ideal for desserts.

Looking for super cute? Then try the squash with the super cute name. Jack-Be-Little. This orange or white ball can be filled with soup, a gratin or even a custard. It is mild tasting, perfect for a strong main dish.Craving sweet potatoes?Try the gourd with the exotic name - kabocha. Its' nubbly rind can be eaten with the flesh. Roast pieces or use in soups and stews.Another exotic cucurbita is the Japanese kuri.This is an anomaly in the squash family. Its' flavor is more like chestnut. This makes it perfect for stirfries and stews. The creamy white mashed potatoes is an albino version of its' cousin, the acorn. The inside is dense and scooped out to be fluffed with butter and salt.Ms. Fabricant also recommends halving them and serving with cheese. Spaghetti squash is the most popular with gardeners.Ir's an easy, problem free grow in almost every summer backyard garden.  It's oval and yellowish - about the size of a football. Its' name derives from its' string like flesh that can serve as a sub in for pasta. Then there is the sweet dumpling.It resembles the carnival squash but is green and white in appearance.The skin is thin and edible and can be roasted , stuffing or baking.

Squash is a must have at any fall meal. Cook or bake it for a delicious side or dessert. It'll add color and flavor to the meal.

Squash For Dessert

Now is the time for all things squash.It's can be sauteed with garlic , baked with butter, and stuffed with breadcrumbs. It can also be the basis of cakes and sauce too. Now you can have it with a cup of coffee or tea for a sweet snack or dessert.

What can you do with this curcurbita? Surprisingly you can roast it in sections and serve with ice cream or even spiced whipped cream. It's just  cutting them into sections and de-seeding them so that they resemble cantaloupe, ,baste them with melted butter or coconut oil and then sprinkle on either pumpkin pie spice blend or cinnamon .Roast in a 400 degree oven for forty-five minutes to an hour. Serve warm with spiced whipped or butter pecan ice cream (or both!)Mash it and it can become an ice cream topping - squash sundae anyone? This requires a cup of brown sugar along with orange juice and a tiny pinch of salt, cooked with the veggie and then mashed into a thick compote.Squash bites are another sweet treat.These are Middle Eastern inspired , spiked with saffron and turmeric and mixed with a dough of mashed almonds and pitted medjool dates. The butternut squash has to be zoodled or spiralized which creates fun orange stripes running through the bites. Ground cardamom seeds are also used for more flavor. It can be put in a dehydrator however if you don;t have one , try a low oven at 125 degrees F for about half hour to forty-five minutes.

Of course you can bake squash into bars and cookies. A great recipe for bars is one topped with streusel, in a kind of marriage between coffee cake and pumpkin pie , It's a cake bottom with a pumpkin pie like filling, thanks to the cinnamon, nutmeg , and ground ginger. The streusel is a yummy mix of butter, cinnamon and brown sugar and pecans. A fun way to get the kids to eat relatively healthy is to make squash cookies.The butternut squash is cooked and mashed, again spiked with ginger and cinnamon. The gourd can be a star ingredient in many different kind of cakes too. A fall dinner party can end with an elegant layer cake , highlighted with only maple and filled and frosted with a brown sugar Swiss. meringue. A great snacking cake is the butternut coffee cake. It's a spiced up pecan loaded version of  the regular kind which would be fun at a  brunch or weekend picnic. Another fun version is a butternut sponge roll filled with a fluffy light cream cheese frosting. Again maple and walnut give the cake added flavor. A different birthday party treat is butternut  squash cupcakes with caramel cream cheese frosting.It's basically the same as the other cakes but in cupcake form with caramel sauce added.I'd use Smucker's salted caramel  to give it a savory kick.

Squash is primarily a side or a vegetarian main dish. Yet it can be made into a tasty dessert using fall flavors. Try it as an ice cream sauce, cake, cupcake or cookie, Get to know its' sweet side.

A Diet That Can Change Your Life :Always Delicious

Can a recipe book change the way you eat and the way you look? Absolutely!! Always Delicious is a book that can help in not only shedding those pounds but stopping those cravings.It guides home chefs towards a healthy and tasty way of cooking.It's a win-win situation.

Always Delicious (Hachette Book Group 2018) was written by Dr. David Ludwig and his wife, Dawn. Some may recognize their names from their first success, Always Hungry.  Dr.Ludwig oversees the New Balance Obesity Foundation Prevention Center at Boston's Children Hospital. He has also fought for policy changes in how junk food is advertised to young children. His wife , Dawn, created the Natural Epicurean Academy of Culinary Arts in Austen Texas. Like her
 husband, she has written and taught about bringing more  nutritional ingredients into the home kitchen. This book has their philosophies along with recipes that are far from the usual diet fare.The first few chapters are explanatory , along with guiding readers to the three phase program. This discipline first jump starts weight loss where grain products, sugars and potatoes for a few weeks. The second phase is reaching your new body weight set point where all natural and ancient grains are reintroduced back into the diet.Non starchy vegetables like yams and squash are allowed. Phase three is designing your personal prescription for life.The Ludwigs recommend adding modest amounts of more processed carbohydrates.It's basically forty per cent fat , twenty percent protein and forty per cent carbohydrate. There is an extensive and detailed list of what tools and gadgets to have  along with advice on fresh and seasonal ingredients. Chef Dawn also recommends decorating dishes with colorful flourishes like carrot roses. and scallions.

The recipes are geared for the phases. Some are for all,  while others are just for the first, second or third or a combination of the two.The book is also divided into chapters revolving around the three meals. There are also ones on soups, salads and Buddha bowls , snacks and appetizers along with desserts and beverages. Chef Dawn has also included a chapter on rubs, sauces and marinades which aid in creating a flavorful main dish. No matter what phase , the recipes are tasty Breakfast can be a bacon-cheddar quiche, a perfect dish for a brunch or apple spice pancakes.  Home chefs will enjoy making the entree of summer squash  casserole that is topped with a creamy Parmesan cheese sauce. A hearty cold weather lunch or dinner dish is the Sicilian Fava Bean Soup that is rich with fennel celery along with tomatoes. Slow cookers recipes shine here too.Beef chuck roast is turned into a yummy shredded beef cooked with a sugar free Worcester sauce that's also included in the book.Side dishes are also tasty. Families will love the cauliflower couscous riced in a blender until it has the consistency of couscous.. Roasted chicken or beef would benefit from the herb roasted root vegetables.  Desserts are the tasty chocolate dipped fruit and almond coconut macaroons.Dieters will love the decadent peppermint hot chocolate and in warmer months blueberry lime mint fizz.

Eating For Health

It's time to eat right as we ease into cooler weather. We need to boost our vitamin and antioxidant intake along with decreasing all those carbs and other bad stuff. The benefits are great - less aches and pains along with fewer cough and colds.

The fall harvest is full of beneficial veggies and fruits. Squash is in abundance right now. It pays to incorporate it into our meals three or four times a week.It is chock full of Vitamin C and magnesium which help to destroy free radicals throughout the body.It is also loaded with Vitamin A , namely caretenoids which give it that rich orange color. These also give us lutein and zeaxanthan which helps in preventing the degenerative eye disease, macular degeneration along with strengthening the eyes. It's also inflammatory which help prevent against fevers and even gout. Brussels sprouts are another fall favorite making their debut for the season in many grocery stores. These mini cabbages are other good veggise to eat right now. Like squash they are loaded with Vitamin C but also folate and fiber. The first reduces heart attacks along with being a key factor in the formation and maintenance of DNA -necessary for developing fetuses. Fiber is a dietary must. It keeps the lower intestine working along with lowering cholesterol. Even though tomatoes are past their season, you can still buy vine ripes and grape varieties. They are chock full of magnesium, phosphorous and copper (!) which promote everything from healthy skin to  bone strength and prostrate health for men.

Healthy eating can have a fun side. Raisins, always , a fun nosh are loaded with all sorts of good things. They have catechins which scavenge the free radicals floating in the body that wreak havoc on organs and cells. they also reduce the chance of diabetes and hypertension. Pair them with almonds for a sweet, chewy, snack. Almonds are full of calcium and potassium and have as much antioxidants as broccoli! They also build strong bones and teeth as well as artery walls. Nut fans should also consider pecans too. They're high in iron and manganese along with promoting digestive and heart health.They also reduce breast cancer risk and strokes Dark chocolate, the darling of foodies and chocoholics ,is about the most fun of all the good for you foods.It's shot full of antioxidants as well as a great source of energy.It also raises the good cholesterol HDL while lowering the bad kind LDL. It's excellent for the brain because it increases the bloods' flow to it. Any form of dark chocolate contains theobromine which hardens tooth enamel. The best part about  fun, healthy foods is that they can be combined to make fun treats. Dip raisins and the nuts in melted dark chocolate to form tasty clusters that are not only a treat for your taste buds but for your entire body too.

Eating healthy has so many benefits. It staves off the minor diseases and prevents the major ones form occurring.  Bring these foods into your diet for better living.

A Good Role Model

In the male-dominated world of restaurant cooking there is one woman who stands out. Dominique Crens is that woman, the one who is not only taking the restaurant world by storm but making a tremendous mark on the culinary world.She is not only being recognized by colleagues but also by Michelin as well.

Julia Moskin had the lucky chance to interview this dynamo for today's New York Times Food section. Chef  Crens has risen to the top, an almost meteoric rise. She has been honored by the French government for her contributions to gastronomy and culture along with being on the cover  of Gastronomique En Vogue. She was also profiled on "Chef's Table" on Netflix. Unlike others in her field, she has also delivered TED talks on defining success as well as spearheading a movement of chefs intent on bringing agriculture to Haiti  Of course there is going to be jealousy and questionings.It's surprised some American food lovers who are more familiar with April Bloomfield and Barbara Lynch. She is stunned herself at this rise and adulation. She was even going to decline the title, Best Female chef" because of its' sexist overtones. However, Chef Crens reconsidered it, realizing she could do something the cachet that came with it.

After all, she can use her name to influence and promote topics she is passionate about. Unlike other chefs, Chef Crens is outspoken on such hot buttons as immigration, religion, entitlement and even entitlement. Ms. Moskin describes her as thoughtful, out spoken, authoritative and soft hearted. Another aspect that also makes her stand out is that she is basically  home schooled, learning from her mother and not at a culinary school. She talked her way into Stars under chef Jeremiah Powers and then a stint in Indonesia. Along the way she honed and refined her skills, earning praise and followers. Her food and style are unapologetically artsy, personal and at times, risky. Chef Crens uses both the lush and the unconventional. There's foie gras, abalone and king crab mixed with such foraged ingredients as sea buckthorn and even plankton! Her featured  squash recipe is made with a persillade of pumpkin seeds, sage, parsley and lemon zest. What is unusual about it is that Chef crenz chars the squash as if it were peppers. It;s then cooked more in a pan and sprinkled with coarse sourdough breadcrumbs.toasted in melted butter.

Dominique Crens is a nova in the culinary world Yes, there are stars but she stands out as the brightest and the most unusual. She is at the forefront of a new wave of culinary innovators.

Making Your Pasta Blush

Homemade pasta is exciting on its own. It's fun to make and a treat to taste. Now imagine adding color and more depth to it and you have a truly interesting dish.It's easy to do  - and brings lunch or dinner up another notch.

David Tanis experimented this and wrote about it in his  A City Kitchen column in today's New York Times Food section.Handmade or home made pasta is one of the simplest preps ever.It's just a mix of eggs and flour, mixed together and then kneaded to form a thick dough. It's usually then rolled out and cut or put through a pasta machine to be cut into ribbons or sheets.The result is a yellowy spaghetti or fettucini ,a perfect base for a homemade marinara or creamy Alfredo sauce. Yet is it enough? Does it need more?Mr.Tanis believes so and has a number of suggestions. A colored pasta not only zings up the dish but adds another layer of flavor. Green pasta can be made with pureeing fresh spinach or chard to the recipe. It gives the usually eggy tasting dough a garden fresh taste. Herbs, always included in any Italian dish, can be respun into a batch of angel hair .Add parsley , rosemary and sage to any dough for a speckled , light green result  that's perfect for any Spring dinner.Saffron not only gives a rich , golden hue but also a distinct flavor that 's great with any seafood sauce.

The recipe that Mr/ Tanis gives is for a peppery, red pasta, redolent with Hungarian paprika.cayenne and pimenten.It's a rusty looking pasta that he teams up with sweet vegetables. The reason behind this combo is that the two opposite flavors compliment each other,All together there is a heady dose of hot spices in the dough.It's zingy enough  so it needs a mellowness to tame it down a bit. Mr. Tanis pairs it with butternut squash along with pancetta for some meat and saltiness. Ricotta gives the sauce  a creaminess. This could also be reversed and made into a ravioli with the squash mixture inside a hot pepper dough.Another idea is serving it with an arrabiata sauce for sheer heat or with lobster for a spin on seafood version. Today's masterful recipe could also be reversed with a butternut squash pasta and a spicy sauce.It's just as easy to make as the hot pasta, and the result is a lovely orange fettucini or bucatini,if you like red colored pasta without the heat , then try a tomato based  or red pepper based one. The first requires two tablespoons of tomato sauce added while the second just needs a small unseeded pepper. For a scarlet pasta, try adding half a cup of cooked beets.


Pasta doesn't doesn't have to be bland both in taste and in flavor. Whip up a batch of spicy red or Springy green for a different spin on a classic dish.It's fun and colorful.

Fall Celebrations

Autumn is a wonderful time for all sorts of celebration and feasting. It's one of the most beautiful times to get married or engaged. Parties can have an elegant yet rustic menu, featuring the best of the season.. The foods can be farm fresh  taken from local providers to be  spun into a delicious feast.

Even if you're planning on a fall wedding for next year, take into consideration the harvest the season can bring. Many caterers are following the farm to table movement so their choices for you will have interesting dishes. Instead of the usual catered fare like lasagna or chicken with rice it will be  butternut squash soup, Savoy cabbage wraps and possibly a venison or pheasant main dish.A wedding cake may be a take on an apple one, redolent with cinnamon instead of the much used chocolate or vanilla.There could even be mini pear tartlets too, featuring another fruit of the season.As for toasting, think an apple wine - and yes it is a real drink. Celebrants could go for apple champagne, however it has to be made at home using the right fermenting ingredients. A somewhat safer choice is the French hard cider which has a champagne like sparkle and bubble. Make sure there is the non alcoholic kind for teetotalers and kids.Have pear and apple cocktails and mocktails too.

A celebration can also be done at home. Plan accordingly to suit the number of guests. Turkey or ham is a good choice for a big at home gathering. A German style roast pork is another excellent idea.If it's a smaller get together think possibly game fowl such as quail or pheasant.Sides for both types of parties could feature wild rice stuffed squash or a wild rice casserole. Cabbage season is getting into gear and it can be turned into a variety of different dishes from hors d'oeuvres to hot salads. Try it as pes coi, the Piedmontese polenta stuffed rolls or simply shredded and sautéed in butter. If opting for the pork roast , try an apple onion saute to accompany it.This can be made in large quantities for a crowd and can be made in a crockpot . Dessert can be as simple as apple and pear galettes or rustic apple pies. Want something a bit more elegant? Apple cake with cream cheese icing, topped with a spun sugar dome or crown. This can also translate into cupcakes too.

A fall wedding or engagement is a magical affair. Create wonderful dishes featuring the harvests of the season for it. They'll make celebrating either one even better.
