Adding Some Tea

 Most of the time tea is used as the  hot or iced beverage to wash down fantastic slices of cake and cookies. Yet it is a great ingredient to any sweet treat ,giving any slice or bite an earthy smoothness.Any kind ,from chamomile to Earl and Lady Grey are great additions to a simple batter or dough.

New contributor and supervising video producer for New York Times Cooking gave three recipes in yesterday's New York Times Wednesday Food section. Mr Vreeland is an avid baker who loves to create all sorts of delicious cakes and cookies.His inspiration comes from that classic "The Great British Bake Off along with switching to tea and ditching caffeinated cups of coffee. These are wonderful recipes for a Sunday tea or brunch with friends but they're also great for a mid-afternoon or afternoon snack. Doing such lets people unwind and just enjoy the quiet , flavors and surrounding area.One cake , the recipe by Arlyn Osborne and adapted by another great Times Food writer Ligaya Mishan.has the spike of ginger along with the Filipino tea Salabat which is just simply boiling ginger root in water. It gets infused into the sponge along with ground ginger and honey.For a silky crumb sour cream is added a long with two large eggs.Lemon juice and zest are also added to cut the ginger's zing and give it brightness. The glaze mirrors the cake.It so made with confectioner;s sugar honey and lemon, Crystallized ginger is finely chopped and added for more zinginess.

Another New York Times Food section contributor Eric Kim gives his recipe for a loaf made with chamomile tea.It symbolizes the coming of fall while the glaze is a blend of  the summer flavors of lemon and strawberry Mr.Vreeland also compares the slices to a sunset which is fitting for fall. Two tablespoons of chamomile tea taken from the bag and crushed fine if coarse are used a long with fresh lemon zest.This is a buttery cake with half a cup of butter being used and two large eggs for body along with kosher salt. The glaze is freeze dried strawberries crushed through a mesh sieve to create a powder and into confectioner's sugar.Lemon juice is added to turn it into a thick glaze to be poured over the cake. Of course this is also the season for cookies.Carolina Gemen gives a recipe for London Fog ones made with Earl Grey and culinary lavendar.The tea is steeped into melted butter and lavender which Mr Vreeland avows as the most heavenly scent.The slick of butter laced vanilla frosting is reminiscent of the actual London Fog drink.This is where Earl Grye tea is mixed with steamed milk and a splash of vanilla extract.Brown sugar and twelve tablespoons of butter are also added to the dough making it for a smooth buttery bite. The frosting is butter milk and confectioner's sugar with a touch of vanilla extract.The cookies are decorated with lavender for a very pretty effect.

Tea is;t just for drinking.It's the perfect addition for these cakes and cookies. All kinds from salabat to Earl Grey to chamomile

A Cake Full of Flowers

Spring cakes should be light and beautiful, reflective of the season.What better than adding flowers whether the real thing or edible. They add to any bridal or shower cake along with making a lovely Mother's Day treat.

What can you use> An y fresh or even candy flours work.If you;re opting for fresh.Please use edible ones. No one wants to be poisoned by a cake decoaration. The same applies to the greens used.Think of decoatinga pretty white ro plae pink frosted cake with roses,nasturtium, chamomile, lavendar and hibiscus. if it can be made into a te ait's safe to eat. As for the greens, sprigs of basil and mint work however keep in mind these are strong smelling and could leave a tingle of flavor on the icing and cake. Bay leaves also are good and can sub in for rose leaves.How to attach them to a cake? Cut the stems off and then using florists tape to gather them together.it's just gently inserting the stems on an angle into the frosting. You make want to have a thick blob of it so the stems adhere nicely without the threat of falling off. Another idea is attaching it with a water tube filled with water so the flowers maintain their freshness.

Chocolate, fondant and marzipan also make for exquisite flowers as well.  You can easily buy molds for any kind of colored chocolate on Amazon or in places such as Michaels' A mocha cake would look lovely with a few dark and milk chocolate Bloons gracing one side. An engagement cake would look ;lovely with pastel colored chocolate,  which can also be bought at Michael's. Try to use  good chocolate like Ghiradelli's melting wafers for this. The better the candy , the better the consistency. Marzipan, that thick almond paste also works well for sculpting all sorts of flowers and leaves. Keep in mind you don;t have to go for authenticity here. Thin petal s will tear easily. Roll out and cut ones with a half inch thickness to them . Shape the petals by flattening them with the back if a spoon and them assemble to form flowers. Fondant  flowers are basically the same way. You can use fondant tools such as cutters and scissors to form leaves and petals.Keep in mind that dying both substances can be messy.Use a gel dye for all the flowers and greens.

Flowers on a cake add beauty. Try decorating your cakes with these for a refreshing ,pretty look.It's a salute to the garden.

A Need For Comfort

It's a crazy world out there between what's happening in the world and in the weather.It's time for comfort foods and foods that we can de-stress with , whether it's for a meal or a snack. It can be decadent or something relaxing.

Of course one of the best things to have is a cup of herbal tea.Not surprisingly it can help protect the body from stress as well as flood it with antioxidants to also reduce inflammation caused from stress. Chamomile and peppermint are the most recommended and every brand has a version, usually blended with green tea for more flavor. Other herbal blends are made from flowers such as lavender and rose. Lavender is the best for promoting a good night's sleep. Have a hot soothing cup in the evening. What foods can create the same calming effect? Turkey which contains tryptophan which makes you sleepy.It's also right up there with comfort foods ,especially when you have it with your favorite stuffing and homemade gravy. Pair it with green leafy vegetables that also help with calming. These are kale, collard greens, broccoli rabe and mustard greens. They're rich in folates which help the body manufacture neurotransmitters like seratonin and dopamine to regulate moods. Kale is good , both , cooked, crisped or raw. Try it like a spinach salad with bacon and sliced hard boiled eggs.Swiss chard is delicious with a mix of egg and vinegar,  all sauteed in butter.

Of course there are the old reliable comfort foods such as meat loaf and mashed potatoes.Think about making a loaf with ground turkey instead of beef for something different and for all that dopamine. You can still have it with gravy - but turkey gravy along with mashed potatoes. You could serve it with another comfort food Tater Tots. These are also great on their own , especially if you've crisped them up in the air fryer. These only take seventeen to eighteen minutes to cook up but the result is a crunchy on the outside , creamy on the inside bite that works well with different dips.Pizza is another one of those foods that can make us feel happy. Enjoy a meat lover's one from one of the best , Blaze. They also have variations that include  a cauliflower crust and topping with squash and even maple syrup. Of course homemade pizza is a great comfort food too. Everyone's childhood favorite is English muffin pizzas with sauce and cheese bubbling away on the muffin slices. You can also do the same with bagels too. Use the everything ones for a fuller flavor.Another home made comfort are chocolate chip cookies. You can stick with original recipe or toss in walnuts or almonds or sub in the chips with M&M's Have these with a glass of milk,  and a favorite book to get away from the world.

These are times to de-stress and stay inside. Have  a cup of lavender tea to warm up and relax or enjoy a turkey meat loaf They're perfect for an hour or two away from the cold and craziness around us.

A Soothing Holiday Drink Nana Mint Teas


This is the start of the hectic holiday season and with that comes frazzled nerves and a hectic schedule. The best way to unwind is with a drink. No, not the kind that's ninety proof but with a soothing mint tea.There's a whole new line out there that is the perfect way to unwind. That' what's so phenomenal about the flavors. They stand out in a very delicate, non-obtrusive way. I can taste the mint but also them. All of the Nana mints are perfect for breakfast  which is how I start my day.I also like them after dinner , especially if I've had a full carbohydrate heavy meal. The teas ease that full stomach feeling that comes with eating too much.

Fat Filled Fall Drinks

The temps dip and the first thing we reach for is --- a pumpkin latte. We down it like it's ice water on a hot day.The same goes for the peppermint mocha's which ride in on the pumpkin spice's coat tails.To be honest, all we're drinking is fat. Think of these quaffs as liquid cake and you might not be so quick to glug them down.

The average pumpkin spice coffee is anywhere from 300 to 400 calories. It's not much if you treat yourself to it once a week but have three or four times a week and then watch the weight gain. A better choice would be just a regular no bells and whistles cappuccino that comes in at only 120 calories. It's just as flavorful, especially when there's a dusting of cinnamon or nutmeg on the top.Another idea is a simple black coffee.It's actually better because you get to enjoy the rich flavor without the hindrance of chocolate or caramel syrup and whipped cream. Hot tea is another zero calorie choice. Starbucks subsidiary Teavana is also being offered in all their locations. Try a hot , fruity tea instead. If you're stressed a soothing cup of chamomile is a better beverage than a caffeine laden espresso shot. A real dilemma is hot cocoa. This is a comfort drink and fortifier after  a hard day at work on a busy Saturday and Sunday. It will be high in calories however they can be cut with the right choices. Skip the whipped cream and chocolate drizzle. Hot chocolate has a froth of its' own.Also  asked for two per cent milk instead of whole and keep the size down to a kid's mini cup.

Just as seductive and loaded with calories are the frappuccinos and frozen hot chocolates. These are basically liquid cake. They are tasty and refreshing , especially after a warm fall Saturday morning spent on the soccer field.One with all the works is close to five hundred calories!!! That's  one hero sandwich with the works.It can also be two lean pieces of steak too. Even just limiting these sweet coffees to the weekends, can cost one thousand calories. Is the flavor worth it? If you want an icy pick me up settle for a cold brew. Again, Starbucks has theirs , and one in particular the Nitro Foam
Cascara which has only eighty calories and gives a satisfying kick. A plain cold brew is even better with only five calories a glass.As for iced tea, just have a plain  unsweetened one with a slice of lemon.Many tea and coffee shops can turn their hot brews into iced ones. Think about having an iced peppermint or jasmine for a refreshing break. Some coffee shops, such as Dunkin Donuts, still sell their frozen hot chocolate. Stay away from these lethal sips.Some can reach up to nine hundred calories!!!!. If you want cold chocolate, opt for Silk's Chocolate Cashew Milk boxes at ninety calories a box. These can be brought anywhere and are even a great drink at home.

Don't fall into the pumpkin spice latte trap. Pick a sensible hot or cold drink that has zero to very little calories. Remember , they/'re just as refreshing and comforting as their high calorie counterparts.

A Soothing Cup Of Tea

This election has not only been the most contentious in US history, It's also the most anxiety causing too. Many are worried as to what Wednesday morning will bring. The solution to all of this - a soothing cup of tea or any comfort food to settle nerves.

Nothing beats a calming cup of tea  the night before or even the day of a stress inducing event.The herbal ones are the best. One of my favorites is Twinings Nightly Calm. It's a non-caffeine herbal tea made with chamomile. It's a great tea too to have if you,ve got a nasty stomach flu or just ate too much. Chamomile calms the stomach along with boosting spirits - which may come in handy if your candidate loses.It also helps with sleep and insomnia. Another favorite is Celestial Seasonings Sleeptytime  Extra Tea. This is a great tea for those who have problems sleeping, Along with chamomile and spearmint it also has valerian, a natural sleeping aid. To sweeten it try the Carmel Honey Company's Honey Stix. These are plastic straws filled with the company's signature wildflower honey, a sweet earthy taste that pairs well with the tea. As much as you want to indulge in a chocolate and caramel laced latte, don;t. All that sugar and caffeine will make you more wired than a kid with a mouthful of candy,The same goes for hot chocolate. It is comforting to drink when you;re watching the election  however it'll keep you up until dawn Not the best thing, especially if you have a full schedule  or an all important meeting or exam on Wednesday morning.

Are there any calming foods to watch as you're cheering on your candidate or cursing his or her opponent? Turkey comes to mind, thanks to it being loaded with tryptophan. Eat four ounces of it for dinner for a blissful night of sleep. If you can't roast a turkey,, then head to your grocery's deli counter to get it. Serve it with jarred gravy on top of a sliced roll or bread. Sub in Stovetop Stuffing or Arrowhead Mills All Natural stuffing.Have it with a side dish of asparagus which also is a calming food.It not only promotes sleep but also lessens stress and anxiety. Swiss chard is another green guaranteed to calm an antsy voter. It's loaded with magnesium which can also de-stress the body,Surprisingly olive oil is another stress buster. Create a salad with it, greens and turkey strips. Add pumpkin seeds which also help.Grains, too, can lessen that agita over who's going to be in the White House. Have a slice of toast with butter and honey along with a cup of tea as you're watching the intricacies of the electoral college. A big bowl of cereal is another dish that will help you chill. Just stay away from the sugary and chocolate laced ones. Stick with the all natural kinds like Moms Best brand, Plain cereal without milk is a nice nibble too.

Tomorrow the fate and history of the country will be decided. It has been a stressful nineteen months. Destress from it with a sleep inducing meal or a soothing cup of herbal tea.

Dinner At Midnight

We all lead busy lives which means  strange eating habits and hours.That could mean roast chicken at midnight or breakfast at noon. It's hard to maintain healthy eating when your internal clock is screwed up.This usually means pounds gained and bad nutrition.

One of the worst work hours is the overnight shift. This is usually reserved for  hospital workers but it can also include delivery people, truckers and even bartenders who work into the wee hours.It's tempting to grab a full meal at midnight.when it feels like lunchtime. The best bet is to eat lean proteins such as chicken and turkey.Hard boiled eggs and cheese are also good choices. Crudites and dip are also acceptable "nighttime" shift plates. Have a variety such as pea pods carrots , peppers and broccoli for color and crunch. Eat fruit for dessert.Stay away from caffeine loaded coffee and chocolates which will keep you awake. Have a calming tea such as Celestial Seasonings Sleepytime tea instead of soda. This is loaded with  chamomile and spearmint which helps in relaxing.Low protein foods such as toast and jam or even orange juice can also make up a meal. It is tempting to run to an all night fast food joint or even a diner, but don't. The fat alone , not to mention the excess salt and sugar is unhealthy and will just lay in your stomach.Another must is making other meals just as light and low in calories.Think soup and salads, along with grilled chicken and grilled veggies.

What about those nine to when the day is done work days?Quitting time is anywhere from eight PM to midnight.Do you succumb to hunger and fatigue and go to a restaurant? Do you hit a fast food joint for a bag of burger, fries and a malt? No! Eating a heavy meal after seven PM can bring only not only high blood pressure but an increased risk for a heart attack. Stick with something light but filling. Sandwiches work. Try a peanut butter one. Peanut butter is full of tryptophan and protein , perfect for making you drowsy after a long, grueling day. One filled with turkey and avocado is another good choice.You could also try a kale and walnut salad. Add some strips of turkey or chicken to give it more oomph. Eggs too are another choice. One, they easy to whip up, especially scrambled or soft boiled with some whole wheat toast and two, they're light but satisfying. , Keep away from any fried foods. As tasty as that fried steak sounds, hold it off  for lunch.Wine is off the table too.You may think a glass of red or white is the perfect way to end a hectic day. It's not, creating sleep disturbances that can screw up your next work day.Stick with iced tea or flavored seltzer to go with your meal.

Strange dinner hours can wreak havoc on a life and a diet.Stick with light meals, full of foods that will relax you after a long stressful day.Work hard, eat easy. It'll keep you going during any grueling work day and night.

Hot And Herbal Natural Teas

November practically screams for a good hot cup of tea. This is when the weather gets nippy and we greet both mornings and evenings with frost on the ground and a bite in the air. What better than to start or finish the day with a healthy mug of herbal tea? It's  soothing and comforting , the liquid version of a security blanket.

Herbal teas have been around for millennia. The ancient Egyptians first came up with a flavorful tisane called kerkades. This was hibiscus sepal brew that's still made today in some countries. The Jamaicans still make this but add ginger , sugar and rum, usually for the Christmas holidays. The Chinese were and still are the masters of herbal tea brewing.They use it for medicinal reasons,but you can just use it to just melt away  the day's cares .Most home brewers use  a mix of herbs and fruit. Other just rely on already made teas from such companies as Celestial Seasonings. These are good  and have a wide variety of flavors, from chamomile to peppermint. However you have a wider range with a home made herbal brew.

If you want to go truly natural, then try blending your own . Home brewers stick with the tried and true such as ginger and chamomile. Fresh  made ginger tea is not only good for waking up in the morning,it's a great drink for  after a full meal. Take a fresh ginger root and either cut the knobs  into small chunks or thin slices.Put these in your  mug and pour boiling water over the pieces  letting it steep for a few minutes, Chamomile is just as easy , Dry the flowers and put about two teaspoons into a cup or mug. Steep for a minute or two. You can also make citrus based teas too, using either lemon, orange or lime peels mixed with your favorite green or black tea. For any herbal tea, don't add refined sugar. Dark or wildflower honey is your best and healthiest sweetener.

Herbal tea is the nice  accompaniment either on a chilly morning or during a frosty night. Brew up a cup and enjoy its' all natural flavor. It's not only soothing but good for you too.

Ahh Tea!!!!

With fall's busy schedule just around the corner, it's nice to just kick back with a good cup of tea. There's nothing as soothing as a hot mug after a wild and stressful day. The best part is that there are regular and herbal ones that are perfect for unwinding .Just soak a bag , wait for it to brew and enjoy a mini vacation from life's daily problems.

Herbal teas are great for those days when you just feel like running away. You can easily buy loose leaves at tea stores like Teavana or just pick up a box of Celestial Seasonings at your local grocery store. Mint tea is not only yummy but also relaxing.Peppermint tea is a great way to end a day. It's also soothing also on a stressed out stomach. A hot mug helps to relieve any heaviness after a big meal. The same goes for spearmint. Chamomile is another tea that helps to "de-stress" and cure digestive problems..Its' lovely flowery flavor reminds one of sun kissed gardens and sunny days too.

Exotic teas are also fine way to end a work day. A ginger or cardamon infused brew can revive you for an evening out or give you a second wind to deal with family. Red tea or rooibos, from South Africa is a sweet almost root beer tasting one that goes well on its' own or with natural sugar. Fruit teas or tisanes made with peaches, apples and lemons along with dried oranges and limes are also good. Again a cup of one of these is perfect before bedtime or with a good book. They're also tasty with a plate of simple shortbread cookies on the side.

Teas are the perfect escape after a hard day at work or at school. Stock up on a few flavors for the busy crazy days ahead.They're the perfect antidote for stress.
