Zucchini Zip

 Soon farmer's markets and backyard gardens are going to be overflowing with zucchini. This tasty veggie can be used in everything from an elegant ratatouille to  raw or grilled. There are some great recipes to appreciate this green gem even more.

Regular contributor  Ali Slagle wrote about this versatile veggie in today's New York Times Wednesday Food section. There is so many different ways to have it. Surprisingly it can be eaten raw. Fans can avoid the usual mushiness that unfortunately comes with cooked veggies. Think of it as a firmer cucumber and slicec it like one - into coins.For a prettier look cut in into batons or ribbons. Add a pinch of salt to mute the bitterness and bring out its' sweetness. Ms. Slagle suggests mixing it with feta or lemon and Parmesan for  a light summery taste. Another tasty idea is combining them with sliced tomatoes and mozzarella for a great side dish. It can also be used in place of pickles in a sandwich for crunch and flavor.Zucchini are perfect in sauces/ That mush turns to a caramelized jam making it perfect to meld with olive oil, cheeses and herbs. These sauces are perfect if there's an abundance of the squash. Usually two pounds of zucchini are used to make a sauce,Lemon can be added for brightness.A basil crop will come in handy too  since; ts a great flavoring for any veggie sauce.

Of course the best way to have them is as pancakes.They have a lighter and greener flavor than potatoes  which is perfect  for a hot weather meal. A good recipe is mucvar, the Turkish version.Eggs and flour are also added  a long with baking powder for lift. Feta crumbles are added a long with dill. Serve with a  cooling yogurt sauce that's rich with garlic. This is a great appetizer for an outdoor party.Ms. Slagle also recommends slicing the squash lengthwise.This creates thick batons which are perfect for grilling.Slather with miso ,flavored butters such as garlic or basil and then sprinkled with Parmesan.Zucchini is a perfect accompaniment when cooking meat. The veggie releases steam and keeps any meat from drying out. It s  a perfect add into any meatball or burger recipe (along with give both a good dose of green). Another good pairing is adding slices to any cooked tomato dish. It;s also a great sub in for eggplant when making ratatouille. It doesn't;t have that intense flavor and heaviness. It keeps the dish very light in flavor. 

Zucchinis are going to be in abundance soon enough. Have  them in salads and sauces. Try them in a crunchy crispy pancake. Enjoy them in ratatouille with a crusty French bread. They;'re all perfect thanks to this versatile squash.

Squash All Ways

 November is a time for squash dishes. The chill weather calls for hearty yet healthy dinners. Nothing beats a warming pumpkin soup or a stuffed acorn squash. Best of all squash is an ingredient to use. Even novie chefs can create tasty dishes with it.

Even though Halloween is over you can still make tasty pumpkin dishes. The Piedmontese create a tasty pumpkin soup that rich with flavor. Can you use your Halloween pumpkin?Yes! Make sure the inside is scooped out (you can toast and salt the seeds in the oven)  and that the pumpkin is roughly chopped.If you prefer canned then it's a must that you use canned pumpkin puree  and not pumpkin pie filling. The last already has sugar and spices in it. It needs to be just pure pumpkin. it starts with caramelizing a chopped onion (this will give the soup a  lot of flavor) in a mix of olive oil and plant butter - or real butter. It's then adding the pumpkin and about a cup of broth. Add salt and pepper. As it's cooking slowly stir in any kind of milk (unsweetened almond works well) and then simmer for twenty minutes to half an hour. You can still in cooked rice later and serve with a splash of milk for more creaminess. Roasted pumpkin is another tasty way to enjoy it. It's just cubing a sugar pumpkin , one of the smaller ones and then first microwaving it. This softens the flesh and makes it easier to cut apart. Slice into half moons and then cubed.Toss them first in olive oil and then a mix of garlic powder and salt and pepper. Roast about thirty minutes in a 450 degree oven. This is the perfect side for chicken or turkey.

Acorn squash is another great fall vegetable. it's a great side easily microwaved and served with scoops of butter. It;s excellent stuffed and you can have fun with the stuffings. Try a turkey one mixed with ground turkey, baby bella mushrooms and diced apples. Season with fresh rosemary and garlic powder along with salt and pepper. A vegetarian version would be quinoa cooked with mushrooms,sage and a pinch of cinnamon. Stuffed acorn squash is usually roasted for half an hour in a 425 degree Farenheit oven. This is the perfect hearty dish served with a salad and crusty warm bread. Butternut squash is also another fall favorite. It can be the main or a side dish to any autumn Sunday dinner. Roasted butternut squash is usually cubed and then tossed in olive oil before roasting. You could add a variety of different spices but these can mask the earth sweet flavor. Just season with freshly ground pepper and season salt before roasting in a 400 degree Farenheit oven for about twenty-five to thirty five minutes. Keep in mind that any kind of squash makes for a good ravioli stuffing. The sauce can be a simple cream one or a butter and sage mix.

Squash is a delicious main dish or side to be served during these nippy days. It can be a side or a main dish. Try any of the varieties for good fall eating.

Waste Not For Lent

 Today is Ash Wednesday and it's the start of the Christian Lenten season. It's the time before easter when everyone gives up a favorite food for forty day. Instead of that,  why not give up waste. It may even lead to a good all year round habit of conserving.

Home chefs waste a lot, especially foodwise. One of the best ways to be efficient is to write a thorough list before food shopping. Stick to it. Don;t buy excess. If a recipe calls for one pepper or onion then get it. Don;t buy the three packs or bags of the veggie unless you plan on using them all. Keep in mind that some veggies such as spinach are extremely versatile. Any leftover leaves can be turned into that delicious Italian classic soup, stracciatella. They can also be cooked with garlic and oil for a different sauce for penne or rotelli.It can also be used in salads too as as a dub in for lettuce in any recipe. Potatoes are also in the same category. Leftover ones can be used in soups to thicken the texture instead of a flour based roux. Mashed potatoes can be turned into croquettes for a tasty leftover. Even those peels can be turned into crunchy and crispy chips, perfect for snacking or as a side for burgers or wings.

What about meat? Ham can be ground into deviled ham which tastes much better than any of the commercial ones. The bone should not be thrown away. Use it in pea soup. It adds an incredible earthy sweet flavor .You can also boil it into ham stock which is a great base for corn chowder and lentil soup. Leftover chicken can easily be made into a tasty chicken salad. Just add mayo and tarragon to make it pop. It can also be added to noodle soup or just added to any white pasta sauce for a heartier bite. Leftover ham and chicken chunks can also be put on homemade pizza too for a more flavorful topping. This also applies to roast beef and London Broil. it too can be put into sauces and on top of pizza however you may want to try it as a hash for breakfast or lunch. Cut the meat into small cubes and use it with leftover potatoes and diced onions.It's fried up slowly so every piece is browned and caramelized. Serve with eggs sunny side up or scrambled ones. 

Waste is a sin. Learn how to make the most of your leftovers. Don't buy overage. Change your habits for Lent and a better future for your kitchen.

Big Meal Little Kitchen

Thanksgiving can be the most stressful meal to make for any home chef. Imagine preparing and cooking in an apartment, where space, especially kitchen is rare. Alison Roman will do just that. How? Consider it kitchen magic.

Ms. Roman's battle plan was the main topic of today's New York Times Food section. Ms. Roman, known for her Instagram pictures of drool worthy dishes, is a well known internet chef along with being a regular contributor to the Food section. Cooking is her life and she has turned it into alchemy. That alchemy involves cooking in a small Brooklyn apartment. Can it be done? Yes!!! There are clever ways to store food and serve it cooked.There is also a practical plan on when to buy and prep certain dishes along with recipes that can take you from the first course to dessert with ease.It pays to heed her advice. It starts with planning the menu, three days ahead (although you could start planning the weekend before). Then,, of course there is the actual grocery shopping. Ms Roman strongly advises
also stocking up on aluminum foil, plastic wrap, paper towels and resealable bags for leftovers. Also it's a good time to order the wine you'll drink too.  She recommends something sparkling and festive and later on light reds.The day before should be all about the prep, from tearing bread for the stuffing to making the crust for the pies and galette. Another must - going to bed at a reasonable hour to be ready for the big day. The next day she chronicles what to do from eating a sustaining breakfast with coffee to finally sitting down to the eat.

Ms.Roman has a good handful of recipes that anyone can make. Her turkey is dry brined with sheet pan (!) gravy. The brine is more of a rub made with salt ,pepper , brown sugar and red onions along with garlic and onions. Keep it dry brined for a day or at least eight hours in the fridge. The gravy starts with Ms. Roman's own Cheater's Stock or chicken stock with the leftover roasted bits from the turkey. An unusual ingredient, soy sauce is used for saltiness and vinegar is used for tang. What goes with this? Buttered stuffing with celery and leeks. This is a traditional savory bread pudding, made even better by using such crusty bread as sourdough or ciabatta and flavored with a typical stuffing ingredient  - celery and a not so traditional one - leeks. It's a buttery, crunchy delight spiked with celery leaves.Of course there has to be potatoes and Ms. Roman makes hers with sour cream, chives and dill. She also takes the traditional squash dish and caramelizes it with maple syrups. Some home chefs would stop there but she then adds red pepper and smoked paprika for zing. Hazelnuts are also tossed into the mix for crunch.There is the traditional green bean recipe but brightened with kale and shallots. Other sides are fancy canned cranberries zested with oranges or tangerines and red onion and a mixed herb salad with spicy greens such as arugula, mizura and mustard greens. The piece de resistance is the dessert - a deep dish honey apple galette with homemade crust. The crust is buttery with a slightly spiced apple filling, There are even sesame seeds sprinkled on for crunch.

Imagine making all this in a small apartment's kitchen. Ms. Roman has - and quite successfully. It can be made  in a larger with the same results - good food with good flavor.

We love coffee. It's just that simple. Yet we hate making it, going for easy ways, from Keurig pods to instant. These are OK, but not so flavorful. Now there's a new coffee - appropriately called Steeped that's sweeping java lovers off their feet.

A Variety Of Burgers

One of the best recipes to have fun with is the hamburger.It can be made a variety of different ways  with different ingredients for oomph and surprise. It can be basic, it can be spicy. It can even have a tangy sweet flavor. Best of all, it can be made by anyone, from a novice to an experienced home chef.

The basic burger is made from a pound of  good ground beef mixed with one egg and half a cup of bread crumbs. The egg is whisked with salt and pepper and then the meat and bread crumbs are added.it can be mixed with a fork or hands and then mounded into balls. From there , they're flattened into patties and either are fried or grilled. If you want more flavor think about cutting the beef amount in half and adding ground pork or just completely going with pork. You can also do the same with ground turkey to create a healthier burger. As for flavorings. this is the fun part. Go crazy. Try a jalapeno burger with the addition of sliced jalapenos and tomato sauce. Garlic and cilantro can also be used too. Speaking of garlic, roast it and add it to the ground meat. It's so flavorful that a bun is not necessary.Onions are another flavoring that can make a burger sing. Mince them very fine before adding for a deliciously sweet and earthy flavor. Caramelizing them  also lends a great depth of taste too. Its just cooking the onions in oil before adding them to the beef.

A burger surprise is always a fun meal. Try any kind of cheese , from cheddar to American. Remember don;t use slices, instead get the bricks and cut them into cubes. These are easy to insert into the patties. Another idea is grating the cheese or cutting it into small bits and flecking it through the burgers. Bacon and hamburgers are a no brainer together .Imagine a burger stuffed with it. The bacon should be thoroughly cooked and crumbled first. You can also add cheese for a fun spin on a bacon cheeseburger.If you want to get the kids to eat nutritiously , you may want to sneak in some broccoli or carrots into their burgers.One of the hottest recipes around is the Paleo influenced avocado stuffed ones. It's a  a perfect marriage between the unami based meat and the sweet , buttery fruit. It's mashing the avocadoesas you would do for guacamole and then slathering the mash  on one thin patty. Another patty is put on top and the edges are them sealed. After grilling, the burgers can be topped with any leftover mashed avocado. The burgers can be served in tacos and with salsa for a neat twist.

Have your burger your way, You may want a garlic infused one or one with a surprise in the middle. It'sup to you,. Any burger is a good one.

A Low Cal Thanksgiving

Is it possible to lose weight on Thanksgiving? Surprisingly yes! If you cook lighter variations of the holiday plates, you can actually shed a pound or two. It's creating tasty dishes without the excess.

Turkey in itself , is a low calorie meat.Three ounces of boneless skinless white meat is only ninety calories and ten calories of fat. A drumstick with the skin is 285 calories.,If you're a big lover of the crackly skin you may want to just have the wing. It's 229 calories , a little less than the legs. Many people love the skin part and don't want to give it up. If that's the case, go easy with the sides and desserts.f you opt for just the white meat consider making it tastier along with moistening it with gravy. One quarter of a cup of  homemade gravy is only 64 calories.  What compliments the meat and gravy? Stuffing, of course Is it possible to make one that's lighter? It can be.  Instead of bread use bread crumbs mixed with that healthy whole food  mushrooms. You can also sub in toasted  low calorie bread cubes too. These can be nicely paired with apple slices for a unique sweet take. Think about a stuffing made with breadsticks or pretzels sticks. Kids will get a kick out of the last. The pretzels do have to be soaked in a bowl of hot water for five to seven minutes to soften them. You could also try farro which is a wheat grain too.Cook it with caramelized onions and porcini mushrooms.

Those tasty sides can also be made without all that fat and richness. The classic green bean casserole is 160 calories . That's not too bad. however ,a cup of steamed is only 44 calories. They can be steamed with lemon and ginger for a zesty tangy side. They can also be steamed with red and yellow pepper strips and sliced carrots for a colorful  and healthy dish.Sweet potatoes are a Thanksgiving must. Bake them with marshmallows along with brown sugar and you're looking at  120 calories. That's fine if you only have one serving but most people have two at least. A better alternative is roasted, which are only 68 calories. Serve with I Can't Believe It's Not Butter. What about mashed sweet potatoes? They share almost the same amount of calories as the candied ones.  The biggest fat bomb is mashed potatoes. One serving is a whopping 400 calories! Can they be made with less calories? Yes. It's just a matter of using skim milk for whole and a butter substitute like Smart Balance or I Can't Believe It's Not Butter. If you feel like it's still lacking in flavor then add chives. Thye not only add color but also some flavor. You could also add garlic too if you want' some oomph along with fat free sour cream or plain Greek yogurt. Mashed cauliflower, an Obama favorite is another alternative.It's only 100 calories per serving. Make it with buttermilk and garlic for a flavorful side.

Thanksgiving can be a time for low calorie eating and losing weight.It's just a matter of smart choices and equally as smart cooking. The meal will be healthy but still tasty, the perfect holiday feast.
