Emergency Fridge

This is the time when colds and viruses hit. it can be debilitating, especially when either one comes on strong. You can't get out of bed. You barely can head into the kitchen and cook. This is the time for emergency stock ups. Have your kitchen ready when you can;t go to the store.

Two of the most important items to have are bouillon cubes and soups. These are the easiest to heat up and the easiest to get down. Plus there's nothing like hot liquid to soothe a sore throat. Another plus about bouillon cubes is that they can be used as the base for many heartier soups you can make. Bouillons are light and make a good snack too besides being for lunch or dinner. Add a few Saltines if you're up to it.It makes the cup more substantial and you won't feel so hungry afterwards. Any kind of soup is a good addition to your emergency stock up. Campbell's newest addition, Well Yes! has a wide variety of choices (this is my go to soup now), from tomato basil to roasted chicken with wild rice. These have a lovely homemade taste that's just comforting. What goes with soup? Crackers, Have plenty of Saltines on hand. These are tasty with a cup or even lightly spread with butter or peanut butter.Bread is another must have.A plain slice of toast is always welcomed when you're just coming back from a decreased appetite. Stick with loaves. Baguettes and rolls will become stale too quickly,

Another must have when you're sick is apple sauce. The pectin in it helps alleviate diarrhea and the sugars gives the body an energy boost. Make sure you have cinnamon to add to it. Bananas are another fruit that should be on hand. It replaces potassium lost from vomiting and diarrhea along with helping to strengthening the stomach lining. It's also an easy snack for the kids too. What else should you buy in case you get sick? Rice. It also calms the stomach if you have the flu.It's also one of the easiest foods your family can cook up and it can be used as a side for many dishes like stew. You may also want to buy frozen foods such as pizza and French bread pizza. It's a simple cook, one that even your tweens and teens can do. You can also have easy to saute foods such as chicken breasts or flank steaks, along with such versatile veggies as tomatoes and peppers. These last can be  cut, diced, and sliced and added into a variety of different dishes. Since you'll be feeling dehydrated along with just having a dry throat , get your favorite juices along with cola. The last really does help with upset stomachs and can settle any disturbances It also is just good as a semi frozen slushie when your throat feels extra sore. Teas are a must too. Stock up on your favorite blends. You will be drinking a lot of cups of them.

Don't be stuck with an empty fridge when you're sick. Stock up beforehand on the basics that you and your family will need. That way you can stay in bed and nurse  a bad cold, flu or sore throat.

Summer Carry Alongs

One of the worst aspects of summer driving is the driving itself. There can be endless traffic jams, even on a weekend. It's sitting in a hot car, sometimes hungry, almost always thirsty. If that's the case then have some healthy snacks and drink on hand.

It's horrible when hunger pangs kick in on a drive to the shore or mountains. It's tempting to pull over into a Parkway or Turnpike rest stop as  we have here in New Jersey. There's a wide variety of fast foods - from Popeye's to Cinnabon to Starbuck's to choose from. Yet most of these quick bites are loaded with salt, fat and sugar. They're also not that filling. If you're still on the road in an hour's time, those hunger pangs will return and it's back to looking for a place to eat. Some of the Turnpike rest stops do offer a somewhat healthy choice in salads and wraps. Yet, there could be the risk of salmonella or just old ingredients that have seen better days. Depending on the length of' your trip, buy sandwiches from your local grocery or make your own. You know what's in them as well as customizing them to satisfy your family's tastes. Fill sandwich bags with salted grape tomatoes, cheese cubes and crackers,Pretzels never go amiss.You can buy a small box of  pretzel stick snack packs . These are light and low calorie and will hold you until your destination.

One of the absolute must haves during a summer ride is water.A  cold bottle of either spring or carbonated is necessary. It not only keeps you hydrated but alleviates any hunger. It also will not leave you with a dry throat like some colas will. It's easy to buy a twelve or twenty pack and cool three or four bottles at a time in the fridge.If just pure water won't do it, then consider buying flavored ones. Stop & Shop has an excellent array, ranging from lemon to watermelon. Perrier has something similar with peach and grapefruit flavors. These are a refreshing change. Another good bubbly water is Poland Spring that offer all sorts of fun fruit combos like blood orange hibiscus and pomegranate lemonade. To keep the water from heating up in a hot car., invest in an insulated travel cup. These can be bought anywhere, from your local grocery to Dunkin Donuts and Starbucks. If you still want a sweet cool drink, then think San Pellegrino. These are tart tasting but revitalizing sodas that go very well with sandwiches and even picnic foods like cold chicken and salad.

A summer ride should not be a torture trip. Stock up with healthy foods and drinks to make the drive more pleasant. There's no need for a rest stop then. Just keep driving on that open road.

The Green Kitchen

Everyone is hyper aware of global warming and what it can do to the planet. They are cutting down on ordering on  line along with buying locally grown produce. Yet to fully go green, home chefs have to rethink the way they clean,and cook. Nowadays that's pretty easy.

Water is always at the crux of conservation. One way to save is only boiling a cup of water for one cup of tea or hot cocoa. Boiling more just is a waste of energy. Another idea is keeping bottled tap water in the fridge as opposed to running the tap until you get cold water. The water is already chilled and good to go. You can keep bottled water in the freezer during the hot days of summer. One you don;t have to keep opening the freezer door to fetch ice cubes. The ice inside melts providing refreshing, thirst quenching sips. (have a few of these ready for those trips to the beach too.) Vegetables and fruit always have to be washed. Instead of rinsing them with running water , just place them in a large pan of water  and use a vegetable scrubber on the skins.Another chore we have to do every day is washing the dishes.If you have only a few from one meal, wait until the next to wash everything. You could also put all the dishes, cups and utensils in the dish rack and spray them clean with your sink's spray nozzle.Also don't prerinse dishes and cups before putting them in the dishwasher. The machine usually does a good job of it.

Not surprisingly how you cook on can also help in saving the environment, One of the easiest actions is using pots and pans the same diameter as the burner. This will not only save energy but also money.  Electric stove owners can save $36 annually while those who have a gas stove will save around $18. Also reduce  the amount of heat needed. Don't force a boil or try to cook something fast. That's what the microwave is for. Also a microwave can take up less energy than any stove.however it does have a lot of drawbacks. A better medium would be conscientiously using the stove and oven. Don't preheat unless you have to Another energy conserving idea is cooking several dishes together. This means one thing - more yummy sheet meals where the mains and the sides are all roasted together on one pan.Then there's the cook's tic of opening the door to see if everything is browning or baking well. Don't. It's a bad habit that allows  heat to go out. Instead always keep the oven window clean so  you can see clearly through it.Check the oven door seal too. A poorly fitted or degraded one can leach heat and energy  A good test is slip a piece of paper between the seal and the door.If it goes through then replace the seal or buy a new oven.

A green kitchen is a good one. You're making an effort to not only save the planet but also money. The ecology is helped and so are you,

Lamb The New Easter Dish Again

Easter cooking can present a dilemma to many home chefs. Will they go with the traditional ham or try  lamb , another truly traditional main course? That's the conumdrum facing many. Ham is delicious and can provide with enough leftovers for a week. Lamb,  is rich tasting, marrying ancient and modern times together. It's also becoming trendy thanks to a more adventurous American palate.

Kim Severson explores the two in her column in today's New York Times Food section. She herself grew up on Easter ham dinners, thanks to a mother who was raised on a dairy farm that also raised pigs. Serving ham was a no brainer.It also provided her family with more than enough leftovers for a variety of different dishes, from sandwiches to pea soup.However it is time to try lamb. It's making a comeback with a newer generation who are into Eastern Mediterranean and Middle Eastern dishes and flavors. Most older Americans have an aversion to the meat ,preferring beef and pork. One of the reasons why is that US soldiers were fed rations of lamb because the meat was so abundant. There were fifty-six million sheep  in 1946. Now there is only about six million.Lamb chops themselves,  are still considered a luxury item, only being served at high priced restaurants or special dinners at home.Leg of lamb can be tricky to cook and many home chefs just cooked it and slapped some mint jelly on it, hoping for the best.Today lamb is gaining in popularity with people buying lamb shanks,
lamb necks, and ribs.There is even a lamb ham that's also gaining in popularity these days.

How should you cook lamb? Ms. Severson goes back to her Italian roots and tries a Roman style Spring lamb with sugar snap peas. She gets three pounds of young lamb from the shoulder or the leg and  cuts it into uniform two inch cubes. After seasoning the cubes with salt and pepper, they're cooked in lard or olive oil. it's an easy cook, putting the cubes in batches and sauteing them. Rosemary and garlic are added along with sifted flour. White wine or Champagne is poured in along with water. It's simmered for an hour. At this point take some of the sauce from it and mix it with four large anchovy fillets (it reminds me of fileto Piedmontese - where anchovies are cooked with steak juices to create a mouthwatering sauce). The sauce is then poured back into the pan and over the lamb cubes. Ms. Severson throws in a  sugar snap pea salad with Calabrian peppers and fennel. This is a spicy accompaniment with a dressing made from the peppers and their oil.Lemon zest, shallot and garlic are also added along with fresh lemon juice.The snap peas are julienned while the fennel is thinly shaved. Shaved pecorino is then sprinkled on top. I would add fingerling potatoes roasted in garlic and olive oil  to round it out.

Ham may be associated with Easter but lamb now is giving the traditional meat its' run. It is versatile and delicious, perfect for the holiday. Try it and taste its richness and lux flavor.
