The Tastiest Of Burgers

 What makes a summer barbecue memorable? It's not the sides or the drinks. It's the burgers. If a hamburger is made and grilled just the right way , then people will be talking about it well into the winter. How to create the ultimate hamburger? There are a few tips to follow.

Regular contributor and chef J Kenjo Lopez -Alt gave recipes and tips for doing just so in yesterday's New York Times Wednesday Food section. Chef Lopez-Alt knows his patties . He's operated several well known burger joints(if they can be called that) along with wrote about them in a monthly column called Burger Lab for the food site Serious Eats.He shows haw even frozen patties can be turned into something delicious with the right cooking and  seasoning along with the right bun and fixings. He recommends using a light touch . Ground beef is an amalgam of proteins ,fat and water.The more a home chef works ro kneads the meat, more proteins bonds form, creating a chewier and tougher in texture burger. Skip such classic add ins as eggs , bread crumbs and herbs. Don;t season the ground beef either. Salt will break down the muscle resulting in a tighter patty  Season only the exteriors for an optimum texture and a nice, salty crust to bite into. How to cook them is simple. Use a high heat and brown For thicker or griddled ones preheat the grill. Thinner ones, do one side first then the other. Make sure they go into the buns as soon as leaving the grill.Also it helps to toast the buns right before too.

Chef Lopez-Alt gives there juicy recipes that are perfect for these upcoming August days. Try his diner burger recipe that is made with an indentation in the middle to prevent bulging as they cook. Cook in either a neutral oil or clarified butter (go for the butter if you want a richer flavor) for about five minutes each side. Add a slice of cheese - Cheddar is good here until the slice is melted, around  135 degrees Farenheit for a minute more. Add mayo to the buns for stability along with whatever looks good. He also includes a recipe for the popular smash burger style. This requires ground beef chuck instead of just ground chuck. They should be cooked on a large  stainless steel saute pan or skillet.Using a spatula ror a bowl, press down on the patties until the edges thin out. Use a scraper or the edge of the spatula to scrape them from the metal before flipping. Place immediately on toasted buns, adding shredded lettuce tomatoes, cheese and onions cut in rings if wanted, For the ultimate burger experience make thick backyard burgers SHape into thick burgers on a parchment lined cookie sheet. Cook them on a hot cooking grate or grill. The charcoal should be turning to ash already,Both sides should be cooked for five minutes.If fat drips into the flames, quickly move the patties or the cooler part of the grill. The buns should be already toasting on the grill already.

It's burger season. These three recipes are perfect for a dinner or lunch. They could even  be great for a party. En their juiciness and flavor on a warm bun with all the fixings!

A Late Summer Barbecue

 The weather's still warm. The grill is still viable. Why not celebrate the season with a late summer -early fall barbecue. Enjoy the taste of favorite summer treats while you can. They can even have a more fallish spin to them.

It's still warm enough to have hamburgers. You can easily go with beef , plant based or turkey. Yet if you want something different along with a nod to autumn then think pork based ones.Add sage to ground pork for more flavor along with bacon ground with garlic. Remember to make a two inch indentation with your thumb in each patty before placing over the flame to prevent bulging. grill them for five to six minutes on each side. What can go with this?Try an apple chutney from the season's first harvests. This is a kind of relish made with Granny Smitth apples, onions, and raisins. This are chopped and cooked in a mix of cider vinegar andd freshly squeezed orange juice. Spices such as hot pepper flakes and ginger are added for heat while brown sugar is added for sweetness. You could also put mustard seeds in if for flavor and color. Another idea is baked potatoes instead of  the ususal potato salad. pre cook them in the microwave for ten minutes before you put them on the grill. This ensured that they'll be fully cooked when you're ready to eat them.

What other dishes would compliment a late summer barbecue? Some gardens are still producing tomatoes. You can still whip up a salad with them with a nice creamy burata. Grilled toamtoes are also tasty side for any late summer barbecue. You can even give them a sprinkle of breadcrumbs for a take on tomatoes Provencale. They are just good rubbed in olive oil and garlic and then served on grill toasted Italian bread.Some gardens are still producing zucchini. These are wonderful too after being cooked on the coals. Slice them lengthwise instead of in coins and give them a light brushing of olive oil and a sprinkle of rosemary and oregano. What to drink with this? Try a French cider that's not as dense or heavy as  the regular cider that's just coming out now. The Duche du Longeville, a fizzy tasty quaff is too perfect with those late summer burgers. It'll chill nicely. If the night becomes nippy then bring out a thermos of flavored coffe or herbal tea. have these with grilled apples cooked in a foil pcket with brown sugar and butter and spiked with ginger and cinnamom.

Yes, you can still have a good barbecue depsite what the calendar says. Enjoy a late summer cookout with good food and good drink. There's still time.

Fasr Food Fast Yuck

 We've been told for decades that fast food is bad for us despite its' taste. Those burgers and nuggets were addictive as were those fries. Somehow these indulgences are as lacking in flavor as they are in nutrition nowadays.

 I discovered this in the last two days. I was rerouted more or less to the Jersey shore after trying to go Christmas shopping in Clark, New Jersey. I didn't mind the detour. I love hanging out at the Raritan Bay, enjoying the calm waters and briny sea aroma. I knew I'd have to stop and eat somewhere along the road because I hand't eaten since mid morning. I knew where to go. The Jon Bon Jovi stop on the Garden State Parkway always had a good choice of fast food. I knew I had wanted to go to Nathan's if it was still there. It was!!! I looked forward to their hot dog and crispy fries. I bought them along with a diet Coke. The diet Coke was the only good thing. The hot dog was so burnt and salty that I couldn't finish eating it . Nathan's fries were known for their crunchy outsides and the perfect taste of potatoes and salt. These were downright horrible. They were overcooked with a charred aftertaste and a strangely mushy and damp inside. These too went right into the garbage. Luckily they didn't disturb my stomach.

Then today i had lunch at one of my local McDonald's near me in Garfield NJ.I had always got a decent burger there (to me the best McDonald's is down in Hazlet on Route Thirty-Six). Tired of eating red meat I thought I'd get the chicken nuggets. Bad idea. They were over crusted and the flavor only improved when I peeled off the coating. Even the accompanying sauces couldn't help. At least the fries were decent, being thin and crunchy. I've got to admit.I was not used to two days  of stupendously bad fast food. I don' know if it's the staff overcooking or just not caring how the food turns out. Maybe fried fast food is becoming a thing of the past as chains like Jersey Mike's offers freshly made sandwiches that require little frying - save for their bacon. it could also be that newer burger chains like Shake Shack and Habit Burger are offering better made hamburgers that taste like they came off the back yard grill. Also many people are embracing vegetarianism and eating Beyond Burgers and Impossible Meats. There probably will be vegan chains that will eclipse the established ones.

All in all it's very surprising about the overall poor quality of fast foods. They have to improve or lose customers like myself to chains offering at least better tasting fare. If not, they face a dismal future.

A Dash Of Heat

Sometimes all it takes is a pinch of this or a dash of that to zing up a meal. This elevates any bland dish and makes it amazing. It could be an herb or spice, a chopped jalapeno or serrano.

Winter stews are always in need of some punching up. Yes, they're hearty and rib sticking but they can be a bit tasteless. Think about adding something as simple as freshly ground black pepper. Just doing this adds a bit of heat and color. For a bit more color, think pink peppercorns. These add a different kind of heat , similar to chilis and have a sweet fruitiness too.If you want a different flavor, dried ginger give any stew an Asian vibe with a more eye opening fire. This would be a great throw in if your stew has more cabbage and carrots in it. It can also be added to chicken stew too. Don't be afraid to flick a teaspoon into your stir fry either.  It's a nice way to balance out the other flavors. Another fire ball of a spice is smokey paprika. Many home chefs just associate it with dusting it on top of deviled eggs or giving color to roasted ham. Yet it can give layers of flavor and fire to even the simplest of dishes. One of the best recipes is chicken paprikash. This incredibly flavorful dish from Hungary , calls for hot or sweet paprika but you can also use the smoked kind. They're made from the same  crushed dried chilies but the smokey version has been smoked dried with oak. The flavor will just be heightened a bit more, highlighting the other ingredients such as tomato paste and sour cream.

Chilies also add to various recipes. There are so many different kinds that you can vary the same recipe with each one and get a different result each time. Most home chefs use jalapenos . They're fun to stuff with bacon and cream cheese or breaded and air fried. Yet, jalapenos can be sliced and mixed into all sorts of dishes.Try some in a meat loaf recipe. This is a great way to zing up a usually bland dish and transform it into something special. Serve with a side of guacamole or sour cream. Jalapenos can also jazz up any kind of burger.They can be mixed into the ground meat or layered with cheese and bacon for a hot of heat. Chopped jalapenos can also bring up the heat on crockpot chilis too. Other chilis such as the temp rising serrano can do wonders with simple cheese dips and even the famed artichoke one. Serrano chilies come in a variety of different colors and are smaller than jalapenos. The piri-piri is another spicy jolt that's used mostly in South African cooking. Piri piri or peri peri chicken is a delicious and fiery way to zing up an ordinary dish. It's usually a marinade that coats and soaks the meat for twenty-four hours before cooking.You could also use it for wings and thighs too,

Bring the heat to your winter cooking. Any dish can be zinged up with spices and chilies. Try them to liven up a blandly cool dish on a chilly night.

The Return Of The Sandwich

It seems a classic is returning to lunch boxes and menus across the land.What is it? The basic sandwich.It could be that people are tired of all those salads or are just sick of wraps.The stuff of a good midday meal has returned and with a tasty vengeance. The marriage of filling and bread ,originated with the Earl o Sandwich who asked for two roast beef slices between bread slices during a gambling spree.From then on it's graced tables, making a quick and easy lunch.Unfortunately i has been vilified in previous years because. It was deemed not nutritious because of the cold cuts used along with the condiments.?However.Nothing beats a well made sandwich whether hot or cold.Thanks to chains like Jake's WayBack and Red Robin, hot sandwiches are coming back.These are not just burger joints.They do have fun burgers that have slices of , rich cheddar,avocado and tomato on them, along with flavored mayo and apple wood smoked bacon.If you do want a fat free sandwich ,then nix the bacon and cheese.A grilled chicken sandwich is another good choice and again both places can customize it to suit your needs. Even homemade sandwiches are becoming on trend again.Thanks to Boar's Head, sandwich lovers and foodie's can create a really good sandwich.The company has low sodium versions of some of their most popular meats.This is perfect for ham lovers who just won't give up a good old fashioned ham on rye.Italian cold cuts are the best for heroes.If you're worried about the nitrates, then just treat yourself to a homemade everything hero once or twice amont.Another idea is sticking with one kind of meat like mortadella or sopressata and layering sliced tomatoes and arugula on it.Add low sodium cheeses too if you want.If you still want a hearty sandwich but love the sandwich ,then think about soy meat.Granted, they're not as flavorful as the real thing but they can sub in nicely,for ham, turkey and roast beef.You can also just have a.simple tomato sandwich.Toast the bread ,slather on the mayo and add thickly sliced vine ripe tomatoes. The sandwich is back.Celebrate with a burger from a chain or one you made yourself.Savor it, enjoy the meshing of a good filling with a tasty bread , bun or roll.Welcome this old friend back into your life.
