The Joy Of Portabella Mushrooms

There is a threat of meat shortages. May steak lovers are worried about that , afraid they may not get a juicy bite. However they can go the vegan steak route. Try portabella mushrooms. They're the perfect sub in and much more humane alternative to a T-bone.

I recently discovered how delicious air fried portabella mushrooms are. In fact, I'm now thoroughly addicted to them.I  don't know why it took me almost a year and a half to discover that they and my air fryer are a perfect match. Not only that , they're easy to prepare and cook up.I was kind of leery about washing them and the amount of dirt that would come out of them. That was wrongful thinking. Not much sand or grit comes out of them and washing them again is simple. It's taking a paper towel and wetting it.Wring it out thoroughly and then gently clean the mushroom top or cap. Some of the "skin" will rub off, Not to worry : this will happen. Then turn the mushroom over and clean the gills, those divisions under the cap. You can run warm water on them to get rid of anything between them. Again gently rub the gills clean. Use a fresh wet paper towel  for each one. You can then pat them dry again with a new paper towel. I usually leave mine  wet. The better to absorb the spices and oil.

You can leave the mushrooms plain however spicing and flavoring adds to them. I usually first brush both sides with olive oil. It's then a liberal sprinkle of both onion and garlic powder and a sprinkle of dried oregano. A light pinch of sea salt and freshly ground pepper can be added too. It's then air frying them on one side for eight minutes at 370 degrees F. After the first eight minutes, flip them over and air fry for another eight minutes at 370 degrees F. If you 're cooking a bigger portabella, then cook at 400 degrees F. Another idea is to stuff them with a variety of different ingredients. One recipe calls for cream cheese, frozen spinach and bacon along with Panko breadcrumbs and sliced cherry tomatoes. Keep in mind that these are baked and not air fried. They're  placed on a grease cookie sheet and put into a 400 degree F oven for ten minutes. A lusher version subs in crab meat for the bacon. You can also slice the mushrooms and put them in tacos and burritos for a fun bite.

Portabella mushrooms are the new steaks. They are delicious air fried  or stuffed, served with spices or crabmeat. Try them and be addicted to their delicious flavor and meatiness.

For The King

Father's Day is tomorrow and with it comes the usual barbecue and bottle of whiskey to say thanks. Yet, it's also a day to pamper the sire with tasty  and luxurious dishes , from morning to night . Indulge your father with some delicious fresh from the kitchen and grill dishes. It's a better way of showing your gratitude.

A good day starts with a good breakfast. One good choice -  omelets filled with dad's favorite ingredients. If he wants a bacon one then  honor his wishes. Add a dash of healthiness and color with diced tomatoes and green peppers. Make a large three egg one or fry up mini ones that can fit perfectly between a sliced English muffin. Another  spin would be a cheese one  but instead of the usual cheddar try one filled with Gouda or Edam. Mix it with baby spinach leaves for a richer, more flavorful egg dish. A different yet lush spin is a breakfast souffle. This is a surprisingly easy bake. All you need is a can of the Pillsbury crescent rolls and turning them into cups. Eggs, and whipping cream are whisked together to form a sort of savory custard. Cut up a green pepper and saute in butter . Add the egg mixture to this and cook til half way done. Working quickly add the eggs to the cups , then top with bacon and cheese. Bake about fifteen to seventeen minutes. You can serve with a fresh fruit cup and a Bloody Mary or blood orange screwdriver.

Carrying this luxury vibe into lunch and dinner. If the man of the house is a steak eater, then grill a few T-bones or even more deluxe, a filet mignon. Amp it up by serving it with a rich and flavorful bagna calda sauce. This Piedmontese favorite is usually a dip for various vegetables yet it is the perfect sauce for steaks, It starts with anchovies, oil and garlic being cooked in a small saucepan. Mash the fillets down with the back of a metal spoon. This ensures that they will melt into a smooth, satiny sauce. Add four tablespoons of unsalted butter and cook for about five minutes. Pour over the steak. A variation is placing the steaks on toasted and buttered white bread. Lobster is another plush idea. Try barbecued lobster tails,These only take twenty minutes on the grill and can be served with just a slice of lemon or with a sprinkling of pepper flakes for a spicy turn. Bring in scallops and crab for a total seafood feast. What to end it with? Try a dessert of chocolate stout ice cream which is an easy cook and freeze. It's heating whole cream and adding dark chocolate chips and sugar . When the chocolate and sugar are all melted , then add a pint of Guinness,. Put through an ice cream maker and freeze until ready to serve. Add hot fudge sauce and whipped cream along with crumbled bacon for a read "dad" dessert.

Fathers treat their families all the time. Treat them with a day full of delicious foods and drinks. They 're worth it.

We've been constantly told that fast food is bad food. Everyone from doctors to diet gurus warn of its' side affects. Yet some places do offer healthier , sometimes lower calories . Can these smart choices help in shedding pounds? Possibly.

Many of us love Wendy's . It's  fast food that tastes almost like home made. You can eat healthy here. Their famed baked potato is only 270 calories if there's nothing loaded on top. If you want something  to top it then go for the free sour cream and margarine. The bacon cheese potato is 480 calories.. Have it with their Honest iced tea which is thirst quenching and diet perfect at only five calories. Wendy's also offers salads. One of the most filling and good for anyone watching his or her weight is the Power Mediterranean Salad which is only 250 calories for a small portion. This is a mix of  quinoa, chicken feta and hummus. If you,re craving more meat then settle on their Buffalo ranch slider at 220 calories or their grilled chicken sandwich which has 270. Dieters can  even have their beef and eat it too.Wendy's has a junior double cheeseburger that's only 280 calories. Are the other famed fast food restaurants that calorie conscious? Chck-Fil-A and KFC do have food that can fit into a regimented meal plan.KFC has a combo of grilled chicken and mashed potatoes for 430 calories. Chick-fil-a has unbreaded chicken nuggets for only 240 calories for five pieces.

Other fast food places can also be advantageous too. One of the best for low calorie food with a lot of flavor is Sarku. Their miso soup is only fifty calories, a perfect lunch on a cold, rainy day. They also offer shrimp and sushi which are surprisingly hearty fare despite the lightness. Th shrimp comes with white or brown rice along with a good scoop of green vegetables. Their California roll sushi is only three hundred calories but packed with flavorful shards of crab meat and avocado. Panera Bread can also offer some low calorie  foods, despite the fact it primarily sells calorie rich breads,. muffins, and cookies. Yet their breads are between 120 and 160 calories a slice - however, it's hard to just stop at once slice. Their loaves are beyond delicious. Luckily the chain offers smaller versions of their soups and salads along with half sandwiches, Their  halved Mediterranean veggie sandwich on tomato basil bread is only 220 calories. Wash it down with ten calorie Spindrift raspberry lime seltzer. Finish it with a mouthful of their coconut macaroon at only 140 calories. Or have the last with a five calorie espresso for a quick afternoon pick me up. Panera's flavored coffees are only twenty calories a cup and you can probably get it iced as well as hot.

Fast food can also be a dieter's food. It's just choosing wisely with your mind - not your stomach. Then you can enjoy a meal out without any guilt

Mousses Light And Springy Dishes

The temps are rising . The breezes are balmy. It's time to put away all those heavy winter roasts and gravies and think fluffy and light. Mousses whether it';s made with sweets or meats or eve veggies are perfect to serve right now. They're airy , perfect for a warm Spring day or night.

Mousses can be both savory and sweet,. although most people only associate them with just chocolate. For a lovely sophisticated dinner with friends think about making a caviar or crab meat mousse. Both are relatively easy to make, Remember however that the savory ones require gelatin to hold them together. because they are intense, the seafood kind can be served spread on Melba toast or rye squares. You can also make a pork mousse along with  beef ones. The last is served cold and is a great way to use up left over roast beef . Cut up left over chicken for a different kind of mousse,,perfect for a dinner with just a salad.Veggie mousses are also tasty, especially alongside  cold sliced meat or leftover roasted chicken or turkey. Try one with carrots and spinach  or tomato one with basil,Tomatoes have their own gelling properties so you can make an easy one without gelatin.

Sweet mousses are another Spring treat. They can be made light and airy, different than a heavy cake or ice cream. The most famous and popular is chocolate. You can add mint or espresso to vary the flavor.. Another treat is the lesser known vanilla mousse. It's made with the beans scraped straight from the pod and is easier to make than the other. This lighter than air dish would work well with a raspberry or blueberry coulis. A strawberry flavored one is a refreshing change , especially if you have fresh berries to work with. You can also make a raspberry one too or for something more sinful a blackberry one. Add some freshly whipped cream for some more fluffy decadence or a side of fresh fruit.

Mousses are an airy alternative to heavier dishes. Celebrate Spring with this bits of tasty poufs of flavor. They're light on your tongue but heavy on flavor.,
