The Elder Parent's Thanksgiving
Thanksgiving is a time for families and continuing culinary traditions. It becomes more meaningful as parents age. They still want to be part of the cooking and crowd yet there are circumstances that may be difficult. It may be hard to celebrate- yet there are ways of making it a bit easier.
Some older parents are still agile both mentally and physically in their eighties and nineties. They can be helpful in the kitchen and in the dining room. Have them do small chores such as peeling eggs for deviled eggs or uncorking wine bottles. They can also help in tasting and offering their opinion for different dishes as well as reminding you what spices and their amounts to use in family recipes.The important thing is not to tire out the older generation. If they want to nap before dinner, let them,if they oversleep let them. The meal will still be hot when they wake up. To keep a harmonious table, let them talk about what they want to talk about and have the kids engage with their grandparents and great grandparents. (this is a good time for the no phone rule at the table). Also keep an eye on what they eat. Those on dialysis should have more high quality protein such as the turkey and less processed foods such as Stovetop Stuffing. Make sure they eat some portion of veggies. Diabetics can enjoy the main meal but desserts can be tricky. Try a no bake low carb pumpkin pie that has low calorie brown sugar add for sweetening and a pecan nut crust. Father's Day is tomorrow and with it comes the usual barbecue and bottle of whiskey to say thanks. Yet, it's also a day to pamper the sire with tasty and luxurious dishes , from morning to night . Indulge your father with some delicious fresh from the kitchen and grill dishes. It's a better way of showing your gratitude.
A good day starts with a good breakfast. One good choice - omelets filled with dad's favorite ingredients.If he wants a bacon one then honor his wishes. Add a dash of healthiness and color with diced tomatoes and green peppers. Make a large three egg one or fry up mini ones that can fit perfectly between a sliced English muffin. Another spin would be a cheese one but instead of the usual cheddar try one filled with Gouda or Edam. Mix it with baby spinach leaves for a richer, more flavorful egg dish. A different yet lush spin is a breakfast souffle. This is a surprisingly easy bake. All you need is a can of the Pillsbury crescent rolls and turning them into cups. Eggs, and whipping cream are whisked together to form a sort of savory custard. Cut up a green pepper and saute in butter . Add the egg mixture to this and cook til half way done. Working quickly add the eggs to the cups , then top with bacon and cheese. Bake about fifteen to seventeen minutes. You can serve with a fresh fruit cup and a Bloody Mary or blood orange screwdriver.

A Feast For Dad
Tomorrow is Father's Day and it"s the day to not only shower the guy with gifts but also with food.There are many ways to celebrate.You could go grill, Dagwood or total bacon.Any way is sure to please the fathers and the men in your life.
Men love to grill and eat any meat grilled.This phenomena could be a vestige left over from our Neanderthal or Cro Magnon days.Nothing beats dogs and burgers with toasted buns.Add some cheddar strips along with a chile sauce and you have a great warm weather lunch.Steak is another barbecue must have.If you want to give Dad the perfect one choose a lean cut with little or no fat( you may want to go to a butcher for this) .Marinate in olive oil and dust lightly with freshly ground pepper and sea salt. Lamb is making a surprising come back and it is delicious when fire roasted.It can be served with the spicy Harissa sauce ,popular in North Africa or crusted with Parmesan and bread crumbs. Pork is another meat not really grilled that often and that's a shame. Grilled pork chops are wonderfully rich in flavor as well as being versatile. Pork too can be ground into burgers or marinated with a Chinese sauce that features the famed five spices. Finish the meal with s'mores dad style.Add crumbled bacon on the chocolate for a sweet and salty treat or make a bacon sundae.Startvwith vanilla or chocolate ice cream, add hot fudge and then toss on a few very crisp bacon slices

With Father’s Day tomorrow Dad deserves that special cuisine know as guy food. This ain’t your mom’s frilly watercress sandwich. This is hearty , meaty and artery clogging grub. Yet it’s the perfect fare for celebrating any dad - especially one who loves to eat - and all the wrong things too.
A good guy grub dinner is usually anything flame broiled (read charred and sometimes burned). There’s nothing like a juicy steak or ribs. Most men either like their grilled grub plain with just a sprinkling of salt and pepper or with a fiery hot sauce.. The same applies to ribs although there’s nothing like them with a tangy sauce . You can make one using bourbon whiskey (what else?) This involves tomato paste, ketchup and molasses along with liquid smoke for heat. It also has the bourbon along with apple cider vinegar for bite.Burgers are also a must but make them man sized using a quarter pound of beef. Make it juicier by putting a ball of garlic or onion butter in the center of each patty.
Men will not eat salads . That;s just a fact. The best side is a baked potato. These can be decadent with a ton of butter and sour cream heaped on them or diet with just a sprinkling of dried herbs. For hungrier dads, melted cheddar plain or mixed with chili is another potato topping that’s both hearty and tasty. As for dessert think cupcakes made with stout or beer.(There are several recipes you can download on the web) along with a liquor loaded icing. For more taste sprinkle bacon bits on top. This should satisfy any sweet tooth.

That Special Barbecue For Dad
Tomorrow is Father’s Day and that means creating the perfect meal for him. It’s usually a barbecue with him doing the grilling. Even this simple meal can be made special with just a few tweaks and twists. Just juice up the old dogs and slaw for a memorable lunch or dinner.
Hamburgers and hot dogs are the usual Father’s Day fare. Instead of the premade patties try making them yourself with fresh chuck. Even the kids can get involved, rolling them into balls and then flattening them with their palms. To make the hamburgers even tastier, add a few drops of Worcester or even Tabasco sauce. Another trick is adding a knob of butter to the patty’s center to create a juicy flavorful, interior . For hotdogs, try splitting the centers and adding Monterey Jack or a sharp cheddar cheese. The result is an oozy gooey cheesy treat that Dad will love. If you really want to treat him then think a grilled steak. Add fresh sea salt and ground pepper along with a brushing of butter to make the cut extra tasty and served with a baked potato fresh from the grill..

You can add some dark ale or stout to either chocolate or brown sugar cake batter for mancakes ( the male version of the girly cupcake). Finish off with an icing that incorporates a tablespoon or two of the same suds. You can also make an ice cream float using vanilla ice cream (a really rich flavorful kind like Edy’s or Turkey Hill) floating in a stein of stout. You could also try making a beer ice cream . Use a regular vanilla ice cream recipe. Cut back on the vanilla and add a cup of Dad‘s favorite brew to make an unusual yet memorable dessert.
