Eggcellent Scrambles

One of the simplest cooking joys is scrambled. eggs. They 're not only a treat to cook because of their easiness but they a treat to eat too. Scrambled eggs are the ultimate comfort food. Best of all they can be eaten any time too.

Regular contributor Ali Slagle gave recipes and tips o them in today's New York Times Wednesday Food section.Scrambled eggs are truly the ultimate feel good food. They;re good just plain or even with the addition of spices. Ms.Slagle gives some tips and ideas to make them even better.One is adding cornstarch (which diners may do to get that creamy consistency). A good creamy scramble first starts with a slurry that has corn, tapioca or potato starch.,Any of these keep the eggs' proteins from linking and tightening together under hrat.Even of they;re overcooked , they won;t have that rough, almost omelet look and feel. Another idea is to elevate their taste.Cook the butter (for a really rich flavor use Kerry Gold) until brown bits appear it gives the eggs themselves a slightly nutty taste. without affecting the texture. Spices also add a variation of flavor too. Earthy ones are cumin and coriander while smoked paprika gives them a smoky flavor,. For true bite  try crushed pepper or cayenne. She doesn't;t mention it but adding aux fine herbs elevates the taste making scrambled eggs a French bistro  vibe.

Another great tip is turn off the heat early left in a hot pan too long they can go from creamy to chalky and dry , especially if they;re left too long in the pan.The residual heat from it can overcook it.One key to keep the texture tender I to plate them even before they're done. Don;t  worry about ingesting raw parts.The eggs 's heat will gently cook them more.Ms. Slagle also recommends adding something acidic to balance their richness. This could be a squeeze of lemon or lime or even vinegar. Chopped fresh tomatoes are always good, (they'll b e more like that classic from Piedmonte uovi e pomodori. Just add a bit of garlic) ,Kimchi ,  and pickled onions also work nicely as does ,sharp and salty feta cheese.Keep in mind that scrambled eggs are not just for breakfast, although on toast they make a quick and great breakfast for dinner. Fold them into flour burritos and also add beans cheese and veggies and then freeze.These make for a quick dinner.There is also a recipe for migas,a Mexican scramble cock full  of shredded cheddar or Mexican cheese cumin  ,noon and jalapeno,Shredded tortillas are also added for more body.

Scrambled eggs are the perfect dish. Using these tips they can be turned into the perfect anytime meal. Crack a few eggs and create a tasty breakfast, lunch or dinner,

Warming Spices

 How to make a dish even hotter? Add some heat. It could be sliced jalapenos or a heaping teaspoon of red pepper. This makes for a blood warming meal that will get you through the cold days ahead.

Of course chili is one of the hottest dishes to make. Many make it with just a one alarm rating yet it can be made to be super hot. A five alarm is a fiery change.This means adding more spices and peppers to your already established recipe. Jalapeno is added a long with teaspoons of chili powder ,cayenne pepper and red pepper. if it's too eye watering it can be cooled down with individual dollops of sour cream or guacamole. Another Mexican favorite mole sauce can also be spiked up another levelIt a dark chocolate sauce made with such cocoa .Usually made with cumin and tomatoes. it can be varied with a good kick of ground red pepper. It's usually serve with chicken or beef but can be good with vegetables too. if you want to add more heat then thick about jalapeno cornbread to any of these dishes. Add half a cup of fresh sliced one for an extreme bite or pickled ones for a lesser zing.

Pasta can be fiery too. Arrabiata sauce can bring in blood warming fire. It's a red sauce, rich with tomatoes and the extra kick of red pepper flakes. A teaspoon o them  toasted in butter should bring out the flavor and give the sauce the appropriate taste. If you want you can add any protein too to give it more oomph. Think chicken beef or shrimp. Keep in mind that pizza sauce can also be made arribiata. Add some spicy pepperoni too or ventricina ,a spicy Italian salami as topping.  for a really elegant hot dish , make lobster arrabiata . This is made with two three pound lobsters and four dry red Chiles. The lobsters do have to be roasted first and the meat and juice added to the creamy sauce. It's usually served with spaghetti but also works with any of the "long" pastas like fettucini and linguini.Indian food is also full of heat. Try a chicken curry that combines ginger - another biting spice and chili flakes to create a blood warming dish.Again ,if it's too spicy then serve with Indian flatbread like naan or roti.

If you want to be toasty hot during these cold days, then cook with heat. These dishes will keep you warm .They're not only not but also delicious.

Zeal energy Mix Your Perfect Boost

 Everyone needs a boost and it usually comes in the form of an energy drink. Most are just bad for you.Even worse they have this cloying taste and aftertaste. This isn't the case with Zeal, an energy mix that comes in yummy flavors.

An Oasis Of Cool

Hot weather and heat waves are good for bringing families and neighborhoods together. Like blizzards the extreme weather proves to be too much, especially for the elderly. It's time to reach out and help in big and small ways.

The recent heat wave had everyone reaching for bottles of ice cold water. During our next heat wave - and we will probably have more  - reach  out to neighbors and even those with young children. Make sure that they have water and offer to take them shopping or share a 24 or 12 pack with them. Check in on older relatives and friends to make sure they're cool and hydrated. If they have just fans and limited air conditioning, then invite them over to chill and relax. You can easily make  homemade lemon or limeade or iced tea.  Flavored water is also a nice treat. If the air conditioning is a bit much then sit out in the shade or in the garage. This is a good time to buy a fridge for the car port. Store water in there for when you and the family need it. Also , if you're feeding feral cat colonies or just a few strays, have bowls of iced water for them too. Animals can have heat stroke as well. Also put their food in cool, shady areas.

Hot summer nights can be unbearable too. Again invite elderly neighbors over for a cooling drink and maybe a bite to eat. It is easy to make any fruit ade. It starts with a simple syrup - one cup of sugar boiled in one cup of water. From there mix three cups of fresh  lemon juice with four cups of water. Serve with a lot of ice.Change it up with lime ade. Another cooling idea is buying ice cream or Popsicles for everyone. Everyone - no matter what his or her age  - will enjoy a frosty sweet on a 96 degree F night. It's a communal way to keep chill and along the way  a chance to hear interesting back stories. Another way to keep neighbors , family  and friends cool is inviting them over for a no cook dinner. Introduce them to hummus, salad Nicoise or gazpacho. All three  dishes require no cooking , only mixing and blending. You could even have a minimal cooking meal such as pasta crudo which is a great way to use the veggies of the season.

Make your house and yard an oasis of cool. Invite friends , family and neighbors over to enjoy frosty treats and company. Us these hellish days for heavenly connections.
