Warming Spices

 How to make a dish even hotter? Add some heat. It could be sliced jalapenos or a heaping teaspoon of red pepper. This makes for a blood warming meal that will get you through the cold days ahead.

Of course chili is one of the hottest dishes to make. Many make it with just a one alarm rating yet it can be made to be super hot. A five alarm is a fiery change.This means adding more spices and peppers to your already established recipe. Jalapeno is added a long with teaspoons of chili powder ,cayenne pepper and red pepper. if it's too eye watering it can be cooled down with individual dollops of sour cream or guacamole. Another Mexican favorite mole sauce can also be spiked up another levelIt a dark chocolate sauce made with such cocoa .Usually made with cumin and tomatoes. it can be varied with a good kick of ground red pepper. It's usually serve with chicken or beef but can be good with vegetables too. if you want to add more heat then thick about jalapeno cornbread to any of these dishes. Add half a cup of fresh sliced one for an extreme bite or pickled ones for a lesser zing.

Pasta can be fiery too. Arrabiata sauce can bring in blood warming fire. It's a red sauce, rich with tomatoes and the extra kick of red pepper flakes. A teaspoon o them  toasted in butter should bring out the flavor and give the sauce the appropriate taste. If you want you can add any protein too to give it more oomph. Think chicken beef or shrimp. Keep in mind that pizza sauce can also be made arribiata. Add some spicy pepperoni too or ventricina ,a spicy Italian salami as topping.  for a really elegant hot dish , make lobster arrabiata . This is made with two three pound lobsters and four dry red Chiles. The lobsters do have to be roasted first and the meat and juice added to the creamy sauce. It's usually served with spaghetti but also works with any of the "long" pastas like fettucini and linguini.Indian food is also full of heat. Try a chicken curry that combines ginger - another biting spice and chili flakes to create a blood warming dish.Again ,if it's too spicy then serve with Indian flatbread like naan or roti.

If you want to be toasty hot during these cold days, then cook with heat. These dishes will keep you warm .They're not only not but also delicious.

International Heat.

There's nothing like a spicy dish, spiked with heat to warm you up on a winter's night . Most cuisines have different spices to warm up any kind of main course and sides.what's great is that you can easily replicate these fire crackers or even create variations of them.

One of the hottest spice mix going these days is harissa. This  sauce took off a few years ago and it's still going strong. It's an easy make that involves a variety of different chilies from the New Mexico kind to chili de arbol to a tomato paste spiked with lemon juice, apple cider vinegar and garlic.Coriander and cumin are also added. Spoon in a dollop to hummus to zing it up or spread on grilled veggies .You could also add it to eggs like the North African recipe shakshouka. This is a tongue zinging poached eggs in a mix of vegetable broth,harissa and feta cheese. This is the perfect brunch dish on a cold wintry Sunday, washed down with a soothing mint tea. A fiery tomato sauce can also be used for a pasta dinner. Pasta arrabiata or angry sauce is another way to warm the palate.It's a rich tomato sauce that can either have oil or butter as its' base and a good dose of red pepper flakes.Most home chefs use a tablespoon of them but you could add a teaspoon more for an angrier sauce. Don't just use it for pasta. It can add an exciting bite to pizza and dipping sauce. Try it with wings and drumsticks too.

The Sichuan province in China has given the world some of the best - and most hottest dishes. This south central province is known for its many tear inducing recipes. It may clear your sinuses but it will also delight your palate.Many home chefs are a bit scared of the recipes, fearing they may be too complicated but they're actually not. Try the tasty ants climbing a tree. This nature sounding recipe is a cellophane noodle stir fry with vermicelli noodles and freshly grated ginger for heat. For more tingliness try the mix called mala wei. This is a combination of Sichuan peppercorns and dried chilies. Ginger garlic and chopped scallions are also added to round out the blend. The cuisine is really not all fire , but a combination of it along with sweet, sour and salty although many of the dishes are eye watering. Closer to home there is Mexican cuisine.Fajitas are a snap to make at home. Bring the fire by adding a spicy mix of different peppers, from jalapenos to Ahaheims to steak and chicken ones. End with the sweet flames of Mexican hot chocolate.It's the classic drink with an added kick of both cinnamon and cayenne pepper. It's the perfect way to end a fiery meal.

It's cold outside. Time to warm the palate up with different spices from different countries. They're a tasty way to bring on the heat during a frosty season.

Add Spice To A Cold Night

There's a nip in the air nowadays. It leaves us shivering and wanting something hot.Why not bring heat to the dinner table in the form of different spicy dishes?They could be classics revved up or exotic fare peppered with different blends of spices. It makes for an interesting and delicious chill chaser.

One of the most classic spicy dishes is chili. This can be tailored to everyone's tastes. You can create a mild one with just some cumin and cayenne pepper. For more fire , add spicy sausages and jalapeno chilis.Ancho chilis can also spike it to another level.  Another way of creating a tongue toasting dish is  creating the chili the night before and letting the fire from all the spices kick in.Make a huge batch  and then freeze some for easy future meals during the busy Christmas season. Another spicy dish that can be made in huge amounts and frozen is arrabiata or translated "angry" sauce. This is a classic Southern Italian one that goes great with any kind of pasta from penne to angel hair. Its'  heat comes from the addition of crushed red pepper flakes to any tomato sauce. You can also add the pepper to meatballs too for more bite.

Indian food is know for its' variety of spices and dinners.Curry is always a crowd pleaser and can be made with traditional blends  of cayenne, curry spice itself along with cinnamon and paprika.For true flavor try dahl. This is a mixture of fresh ginger, jalapeno and lentils mixed with tomatoes and served with naan bread.Another cuisine known for its' heat is the Chinese Sichuan. Located in the center of the country, the region is famous for its' varieties of fiery peppercorns. Try making spicy dumplings spiked with them or better yet a peppery chicken or beef dish.The cuisine is big in chilis too and these figure prominently in a boiled beef with hot sauce.This last is so hot that the recipe does come with a warning.

As the temps drop ,it's time to create dishes that warm the heart and body. Try a fiery chili or a spicy Sichuan dumpling to shake off that cold. It's and fun and tasty way to get toasty.
