A Heady Glass Of Fall

 That nip in the air means a refreshing cocktail or mocktail to welcome in fall. It's time to use the flavors of the season in tasty sips that are great on their own or with hors d'ouevres. They're easy to make and perfect for those beginners throwing parties.Pears

Apples are the main fruit and flavor of this season.Of course there is cider both hard and soft.Both make the perfect base for a layered concoction, full of zest and spice. Get a few bottles of hard cider. A chilled bottle on its'  own is refreshing but add a splash of bourbon and ginger beer. Add some lemon juice for a refreshing zing. You can also create the classic Old Fashioned.It;s cider missed with bourbon and Angostura bitters. A dash of maple syrup sweetens it up. Cider mocktails are also refreshing and have a kick of their own. Mix up a sparkling one with blending in cranberry juice, ginger ale and a sprinkle of cinnamon. Everyone thinks that cocktails and mocktails should be served cold. Not true. They can be warmed, perfect for a chilly night around the fire pit. A hot cider mocktail should be served in a  mug to contain the heat.  It's making a simple ginger syrup using ginger and brown sugar. The cider and syrup are mixed and microwaved for a minute. A squeeze of fresh orange juice  gives it a citrus-y freshness.

Pears are another fall fruit that can be used I both alcoholic and non-alcoholic drinks. Try  a fresh pear cocktail for something delightful and different. The base is a citrus infused vodka (easily made by letting vodka sit with sliced lemons in a jar for two days). there is a tablespoon of agave syrup and three tablespoons hard apple cider. Lime juice gives it brightness and either sliced or shredded pear gives it that mild, sweetly woody taste. This can be made into a mocktail by using a mix of apple juice and plain seltzer.. You don;t want to use the flavor powerful apple cider for this  because it will smother the pear taste. A more sophisticated sip is a pear martini.Use pear flavored vodka, Le Poire along with four ounces of pear juice. (if you have a juicer then make the juice fresh). Add a splash of plain sparkling water and a splash of lemon. Serve in a sugar rimmed cocktail glass. A pumpkin martini is also a wonderful fall cocktail.It's mixing pumpkin puree,vanilla and vodka. Maple syrup or a simple one gives it sweetness while pumpkin pie spice provides color and flavor.

This is the time for fun and fancy drinks. Celebrate fall with these cocktails and mocktails. Enjoy them on a nippy night.

Lovely Fall Cakes

 Autumn may be known for it's home baked pies yet it's the cakes that stand out.They feature the flavors of the season , whether spicy or fruity. These are perfect for Sunday teas or even ending a holiday meal.

Maple is the flavor of the season - other than pumpkin spice. It's reminiscent of the sweet smell of turning and falling leaves.Add it to a Bundt cake for a different kind of flavor.A Bundt is perfect for the chill fall weather.It has a dense crumb and it's perfect as an afternoon snack or even breakfast with a good strong cup of coffee or tea. You could also bake a scratch maple pound cake  with a maple rum glaze on top. The glaze is a mix of dark rum, butter and the syrup.it's brushed warm over the cake and then left to soak in. for a fun party dessert try maple cupcakes with a bacon frosting, Yes bacon!  The cake is a simple scratch maple vanilla cake. The frosting is a cream cheese one and every cupcake is decorated with a few slices of homemade maple bacon.Maple bacon is made by lining up the strips on a foil  lined sheet pan. Maple syrup is brushed on each side and them brown sugar is sprinkled over the top sides. (Keep in mind this makes a great brunch side too).If you prefer cookies then think about maple shortbread.This is a wonderful marriage of butter and maple syrup.shortbread is an easy cookie to make and bake and it would be perfect after any Sunday dinner.

There are other flavors too for this season. Apple and pear reign supreme in the fruit area. Look to the French for inspiration. They bake a buttery apple cake that has a hint of rum in it.Chunks of tart apples are sunk into a rich crumb. dark rum is used but if you want to intensify the flavor then sub in apple cider for the liquor. As for the apples ,a tart sweet variety like Granny Smith work perfectly here. You could also use the Honeycrisp kind as well.  Cinnamon and apples go well  together. Try a scratch cake loaded with the two. You can also add walnuts for more flavor and crunch. for this kind of apple cake you'll only need two apples. pears are also the fruit of the season right now. A pear cake is a different and tasty treat, perfect for a weekend dessert.As with the French apple cake, pear cake has a moist buttery crumb that works perfectly with the fruit,. It's topped with a simple sprinkle of cinnamon sugar. (there;s no need for  a lush buttercream here.The pears provide all the flavor).Keep in mind that this luscious fruit can also be used in a dense Bundt cake, adding supreme flavor to a simple scratch recipe.

Cakes are the perfect fall sweet and dessert go to.They finish off a Sunday roast dinner or make for a good snack alongside hot coffee or tea. Bake one now with the flavors of the season

Tea And Everything

 It's still steamy, hot weather.There's nothing like a tall glass of iced tea.It's great on it's own but it can be amped up with extras, from other cooling drinks to fruit. 

How to make a perfect pitcher of iced tea.it tarts with your favorite black tea.YOu can use herbal or green if you prefer but the best tasting really is black tea.Your best they is Earl Grey because the flavor has fruity under tones that work well chilled. Brew about five to six bags for a really strong drink. You can then let it cool add the tea and cold water. After that just add ice if you want an unsweetened kind.As for the sweetened variety , use simple syrup as opposed to just dumping sugar in .Simple syrup is easy.It's just cooking one cup of granulated sugar with one cup water. Bring to a boil and constantly stir until the sugar is dissolved. It keeps for one to two months and can be used for sweetening lemonade, cocktails and mocktails. What about stevia? You can use it if you are diabetic or want to lose weight. People in South Asia grown the plant in their yards and use the fresh leaves to sweeten tea.

A refreshing drink for any hot day is an Arnold Palmer, named for the famed golfer.It's three parts ,lemonade to one part iced tea but a tastier  version is half tea with half lemonade along with a glass filled with ice cubes. It started in a country club in Southern California when a lady saw Palmer sipping the drink at a country club restaurant. She wanted "that Arnold Palmer drink".It 's also called a Half and Half too. Another delicious ice tea variation is strawberry iced tea.This has either strawberry syrup or pureed berries in it. The recipe is similar to simple syrup but add two cups of pureed strawberries to it. Blueberry tea is another tasty drink. Just add bought blueberry syrup and add to taste. You could also float pineapple chunks in the iced tea too if you so desire.Pear and apple slices can be added to a pitcher for a different , fruitier take.If you want a different , kickier iced tea. splash in some rum. This is a fun cocktails for those warm summer night parties.

Nothing beats a glass of iced tea. Try it just plain or with add ins.It a refreshing sip on these still hot days,.

Homemade Hors'D 'Oeuvres

 A holiday party or Christmas dinner should start with a pretty platter of hors d'oeuvres. A nice touch would be creating a variety of tasty nibbles from scratch. There's a wide variety to choose from so you can have a varied plate.

One of the most classic hors d'oeuvre is the cheese ball. This is one of the easiest recipes to make.Use cream cheese as the base and mix it with a good cheddar. Sharp, tangy cheddar is the best because it willhave a nice zing to it. Grate the cheddar into the a bowl of cream cheese. WHat gives commerically made cheese balls their unique flavor is the addition of Worcester sauce and finely chopped green onions or scallions. Once these are combined start forming a ball using a spatula. Then use your hands. It's now time for the famous nut crust. Use a mix of chopped  nuts like walnuts , almonds and pistachios. You can serve it surrounded by Ritz crackers or something fancier like homemade crostini. Another tasty cheese dish is whipped ricotta on crostini. it's ricotta mixed with a bit of honey, olive oil and garlic. You can top this with a savory topping like a pickled tomato and onion or a sweet one like peaches and figs. For a surprise salty jold add a paper thin layer of prosciutto between toppings.

Phyllo cups are always a welcome bite at any gathering. Hoemmade ones are pretty easy to whip up.It takes only two ingredients - phyloo sheets that your local grocery's freezer section has and butter or a plant butter  like Melt. I'ts first brushing the sheets with melted butter and then just cutting them to fit muffins tins. Bake with a filling at 350 degree Farenheits for ten to twelve minutes. What to fill them with? Try various quiches fillings sich as the traditional quiche Lorraine which has ham or bacon and caramelized onions mixed with eggs. Vary these with spinach and asparagus.  You could also try a mix of cranberry and Brie or the cheese with sliced pears. Bite sized beef Wellingtons are another tasty and sophisticated holiday bite. This is taking beef tenderloin and  cutting it into small one inch cubes cubes.  Brown the tendeloin bits in olive oil until the meat is browned. Let cool and the wrap into puff pastry. Brush each square with beaten egg for a glossy brown crust and then bake for ten minutes in a 400 degree Farenheit oven. Serve with mustard. You can  add a layer of chopped mushrooms and onions if you want a more authentic Beef Wellington flavor.

Dragonfruit Drama

 Dragon fruit or pitaya is a beauty of a fruit.A bright fuschia rind protects the black speckled creamy flesh. Yet as with all beauties it comes with drama. There's a war going on , leaving farmers with an excess and financial problems.

 Regular contributor Christina Morales wrote about the dragonfruit war between Floridian and Ecuadorian farmers in yesterday's New York Times Food section.dragon fruit is becoming popular, especially as a flavorer for drinks. Taco Bell uses it in their iced teas and Starbucks combines it with lemonade or mango juice in their refreshers. This would equate tremendous demands and top sales to those farmers in South Florida. Yet they were slapped in the face when Ecuadorian famers glutted the market with it. They extended their season which would be going into the Southern Hemisphere fall just as the June crops were coming into being. This overlap has been a major blow to the Americans whose budgets have been tightened by inflation and high labor costs.Dragon fruit grows from June to November, with the fruits grown at the end of the season being nourished by artifical sunlight along with lots of water, fertilizer and pruning.

The US has always had competition regarding the pitaya. It is grown in Vietnam and Peru besides Ecuador. Yet it's the Ecuadorans that are giving the farmers the most worry. In recent year the South Americans have provided a reliable supply in recent years, especially during the pandemic when the Florida farmers had to deal with labor shortages.It also has more appeal because it's larger than the Floridian ones. It's popularity has increased in the last twenty years thanks to it being nutrient dense according to Jonathan Crane , the associate director of the Tropical Research and Education Center at the UNiversity of Florida. The fruit also has a nice flavor. Think a not so sweet pear which makes it idea for all sorts of recipes from cold teas and refreshers to sorbets and even salads.The problem is that it's not as popular as other fruits which would create demand for it. Many farmers are now selling it directly, trying to make up for this excess.They  also had to deal with drought which ruined a good mumber of plants as well.

The dragonfruit wars are on hold now thanks to Hurricane Ian. Hopefully the fruit will gain in popularity and both American and South American farmers can benefit. It's a delicious tasty  fruit worth the drama

The Fall Baking Season

 Now that cooler weather is here, it's time to think about fall baking,. Many of us have been baked out , thanks to the pandemic and the quest for the perfect sourdough. Yet baking is much more than that. It's trying well loved recipes and putting new spins on old ones. It's a whole bake shop of different ideas.

Of course apples are big right now.Everyone is baking pies however apples can be used in a variety of other recipes too. A fun variation are apple dumplings. These are basically apples en croute with a cinnamon laced dough wrapped around them.  They're good with a scoop of vanilla ice cream or whipped cream. An apple galette is another delicious baked treat. Many home bakers balk at creating a fruit galette, thinking it's a fancy tart but it's really a free form pie. An apple galette is the perfect autumn dessert that can end a fancy meal or just a simple one. Apples can also go healthy with being a vital ingredient in muffins. They 're just sliced and grated into the other ingredients. Fall is also pear season. This elegant fruit can be the main ingredient of a tarte tatin, a buttery crusted pie with a caramelized interior. A tasty appetizer is a pear and Brie cheese baked en croute. This is a savory and sweet dish that has a Brie or Camenbert baked with spicy pear compote.

Spices play a big part in autumn baking. Everybody loves a kitchen redolent with the aromas of allspice , cinnamon , ginger and nutmeg .  These can be used together or separately in a variety of different baked goods. Together they create the ubiquitous pumpkin pie spice which is all over right now. Use them for what they were originally used for  - pumpkin pie. It's still a great way to end a meal whether  it's a Thanksgiving feast or just a Sunday dinner. The recipe can be varied. Home bakers can try their hand at pumpkin pie tartlets or turn the filling into a pudding and then fill in an already made crust.  Another spicy treat is a spice cake. Think of a double layered one with a cream cheese frosting (sort of like a carrot cake but without the carrots and raisins). This can easily be turned into a batch of cupcakes too, as a fun treat for a fall backyard barbecue. Cinnamon is another fall spice that's versatile in baking. A cinnamon cake is a nice alternative to a vanilla one and it can be served without icing or just with a simple dusting of confectioner's sugar. Cinnamon bread and rolls take the chill out of a cool morning and are an easy bake the whole family can participate in. Ginger and nutmeg are perfect in gingerbread along with clove and allspice. Add some cocoa powder to truly elevate this classic recipe as NIgella Lawson did with her gingerbread cake recipe.

Celebrate the fall baking season with a buttery apple stuffed galette or spice cupcakes topped with a blog of cream cheese frosting. It's the season to create delicious pies, cakes breads cupcakes, and cookies. Have fun and be creative , as you welcome the cool weather with fresh from the oven treats.

The Perfect Cookbook For One

Cooking for just yourself can be problematic.Dinner usually consists of something frozen or taken out. It's even harder when you have diabetes.A lot of frozen and fast foods can play havoc with the body, especially if they're laden with hidden sugars and transfats.Now there's a new cookbook out that can help single home chefs.

Nancy S. Hughes, a recipe developer and consultant,  as well as being the author of other  diabetic recipe books, .has written a punchy and informative cookbook ,Designed For One (American Diabetes Association 2018) geared for those who live alone. This book really isn;t just for those who have diabetes.It can be for anyone living solo. The recipes are designed for just one person so there's no  dealing with overage.There is a chapter  about cooking for two in case a friend or family member drops by.The introduction has priceless shopping, prep information and tips. Novice home chefs will appreciate the tip on why fruits and veggies should never be stored in the same crisper as well as the one about how to wash ans store freshly cut herbs.There are also some good tips on shopping and food prepping too.Even experienced chefs may not know about the tip regarding spraying measuring spoons with cooking spray when measuring honey or syrup or the one about beating eggs in a jar The chapters are divided into dishes as opposed to breakfast , lunch and dinner,They're split into sections from fruits and vegetables to potatoes, pastas and whole grains to meats and seafood to accompanying sides. There is even a section geared to vegetarians under the heading of Meatless Mains, Yes, there is a section on extra easy desserts for one, without any tempting leftovers.

One of the biggest pluses that each recipe has is the chart abut how much fats, sugars, cholesterol and fibers are in them. Most of the dishes are low in fat and carbohydrates so there's no worry about going over any limit.The dishes are easy to whip up and they're perfect for novice chefs. A great lunch would be a Spring Green Pea salad where peas and chopped onion are blended with Spring greens , mayo, and hot pepper or even the super easy tomato avocado salad. An evening dinner or even Sunday lunch could be a pan roasted salmon with mango chutney and a side of tomato quinoa with pesto.A quick dinner could be a chili lime ear of corn with a coffee rubbed skillet steak. There's even yogurt dishes , such as the Anytime Banana Split Yogurt and the Raspberry Softie made with good for you yogurt and fruit, (and chocolate chips for the banana split yogurt )

Designed For One is the perfect cookbook for any solo home chef. It's  full of healthy and tasty recipes that make cooking for one fun.The food is so good  that you wouldn't want to share it.

Fall Salads

Fall isn't what it used to be. By now, the days would have had a definite nip to them. It would have meant hot meals and hot drinks. Not anymore. Thanks to global warming - and yes, it does exist -s we're having summery weather and balmy breezes right up to November.How to survive? Adopt a summer menu. Eat salads - fall salads.

Tossing together greens and veggies many be a tricky aspect right now. After all,  it's not the height of  summer when there are daily harvests. The tomatoes are riper and have that glow  only a summer sun can give. Vegetable choices are limited. There aren't any fresh ears of corn or bright colorful peppers. What to do? Work with what the stores do have. Yes, there are tomatoes. They're just  not going to be the gems of two months ago. Canned tomatoes can be used in salads but they may be a bit juicy, depending on what brand is used. Luckily California can give us greens all year round. You still can make a lovely mixed greens salad using tomatoes and spinach or arugula. Canned veggies are never as good as fresh but they'll do. Add some canned corn along with sweet peas for some color and texture. Beet salad is always delicious  and the canned kind can be elevated by adding freshly sliced onions. It's a nice addition to even a fall picnic or tailgating party. A  chilled green bean salad is another refreshing side , especially when it's dressed with a crisp , classic vinaigrette. Even canned asparagus can be turned into a salad. Use a citrus based dressing to give it some dash.

What about combining fall fruits and vegetables?. The first is easy to do. Apples , pears and Concord grapes blend very easily into salads. One of the most delicious is a Waldorf salad. It is a blend of chopped apples, grapes and walnuts.Celery is the base of it and this can be bought all year round. It is versatile, Add chicken to it and it's a lunch or dinner. Without it , it makes a nice side to grilled chicken or even  turkey burgers.Apples also pair well with spinach and kale, Combine them in a salad with walnuts and dried cranberries. Pears are also popular right now. A delicious one is where slices are mixed with Roquefort cheese and any kind of lettuce. Be sure to use three kinds of pear,  the sweet, large Anjou, the brown, textured Bosc and the bright yellow tart tasting Bartlett. One spin on it calls for avocado ,or the alligator pear but this can be omitted.The salad is  served with a mustard dressing. Grapes can be added to any salad, They bring an earthy sweetness that goes with any green. Fall veggies are kind of limited however there is a lot to do with carrots and cabbage. These can be the stars of a salad or  supporting players. A chilled carrot salad is a nice palate cleanser at a tailgate party. A vinaigrette dressed slaw is perfect at any fall barbecue or picnic.Add some sesame seeds for crunch and flavor.


Fall isn't what it used to be.We still have shorts and flipflop weather til Halloween. Hot days mean easy eating. Create a fall salad, head to the beach or the park and enjoy a summery October.

Spins On Classic Cakes

Classics are always in need of updating.This applies to almost everything, from main meals to sides to desserts, especially the last.Sometimes it takes a little tweak here and there as seen with snack cakes. Sometimes it takes a complete makeover like turning crepes into cakes.

These two updates were written in yesterday's New York Times Food section.Melissa  Clark wrote about sprucing up the classic snack cake in her A Good Appetite column.. We've all eaten them, whether from Tastikake, Entemann's or home baked.. She creates a more lux one, thanks to the inclusion of pears and a brown butter glaze.It has a moist tender crumb, not unlike banana and pumpkin breads.Instead of baking it in a loaf pan , it's baked in a cake pan, easy for cutting squares. What is great about this recipe is that it can be baked in muffin tins and given extra spice with nutmeg and clove. The icing is optional  if home bakers decide on this. Yet the cake is a  perfect treat, even as a dessert.  What gives it flavor and moisture are the pears.This is the season for them.Use the bigger Anjou kind. Don';t get the  smaller Forell or Seckell pears, These are two small and more intense in flavor than the delicate Anjou. Not only is there flour but also  three quarters of a cup of rolled oats,Toasted walnuts or pecans are also tossed in for crunch although these are optional. Four large eggs are used for body because there's no liquid in it, hence the dense texture. The glaze  is equally mouth watering.It's a marriage of butter and brown sugar combined with heavy cream that creates a kind of caramel. The cake would be perfect at any Sunday dinner or holiday table.

Another classic that's been updated is the crepe.They are good on their own, whether as a savory, filled with chicken or ratatouille or sweet with a filling of ice cream or with butter and sugar. Another regular contributor to the Food section,Samantha Seneviratne creates a chocolate hazelnut  crepe cake. She takes the basic crepe recipe and adds a cup of hazelnut meal. It is richer than a cake  thanks to the inclusion of egg yolks, whole milk and heavy cream. It does have to have body, one to withstand the intense heat of the crepe pan and two able to stand up to the cream.As with any batter it does have to be refrigerated before using, usually between two and forty-eight hours (it's actually easier to make the batter the day before  and spend the next day entirely on the cake's creation). Home bakers don't need a special crepe maker for this. A skillet will do just as well, however remember to use about three tablespoons of batter for each crepe. If there's too much , the result is thick, unwieldy layer. There should be twenty crepes. The chocolate cream is a mix of high quality chocolate (think Valrhona brand) along with good quality cocoa powder (Droste would be the best choice for this) along with milk. Brandy or coffee is added, the choice is up to what flavor is wanted.Stacking it is easy, Lay on the cream then a crepe and stack. The cake is decorated with whipped heavy cream and more hazelnuts.

Classics need to be updated every no and then. As with the snack cake and crepes, the update is a yummy new classic, full of flavor and moisture. They are so good, the original recipes will hardly be missed.

Feasting On Your Feast Day

Onamasticas or name days are kind of like having a second birthday. There are favorite foods and gifts to be had , along with praying or acknowledging the saint you were named after.It's a reflective day but also one filled with treats.

One of the most famous name days is St Patrick's on March 17th, Of course , everyone celebrates that day with beer and corned beef. Yet it should be a special day as well for those named Patrick or Patricia.The second most famous name day is St. Valentine's, February 14th. It's a day for romance and sweethearts but should also be observed for the Valentines and Valentinas out there too.Name days are big throughout  Europe  along with being observed in Latin American countries and Hispanic households here in the States.The Germans equate a name day  with a birthday so there's cake and gifts. Bulgarian children bring chocolates and other treats to school to share their day with classmates. Hungary has similar traditions except men receive wine on their saints days while kids get special treats to dole out to  friends.If you;re in Italy expect a cake to honor your day while in Slovakia enjoy a  big do that can rival a birthday.Spain and Hispanic America used go all out too for onamasticas however now they're more quieter. Not so for the Russians/ They are another nationality that go crazy on name days. There are big parties with lots of food and drink, rivaling birthday parties.

 Name days are not really celebrated here in the States , save for some families who carry on their ancestors' traditions. Today is St. Elizabeth's Day so both my Mom and I celebrate .We just had a nice lunch at The Olive Garden and enjoyed their latest dessert - chocolate lasagna cake. (you read right,It's a chocolate sponge cake layered with cheesecake and a rich fudge layer) Saint's days don't have to be elaborate affairs. The summer onimastica parties can be a small barbecue featuring the honoree's favorite foods. Try filet mignon or a T-bone for a lux treat. For a little more fun cook up some kabobs with chicken  and a variety of veggies. End with a small cake. Again, this doesn't have to be an elaborate iced creation, Think strawberry short cake or a peach or berry cobbler with fresh whipped cream or creme fraiche. The meal could  also end with a chocolate fondue too,dipping the fruits of the season along with marshmallows in melted chocolate. For fall and winter onamasticas. try a chili pie or maybe individual Cornish hens with stuffing.End the meal with a home made apple or pear galette topped with vanilla ice cream. Give the honoree a small ballotin of fine chocolates for a nice gift or a gift certificate at the local coffee shop.

Name days are meant to honor not just the saint but the person named after him or her. Celebrate with a favorite food or dinner out .It's a day of  honoring but also of feasting as well.

This Book Cooks This Book Rocks

Old fashioned cookbooks are hard to find. Nowadays, they're embracing the latest trend or cuisine instead of focusing on the basics.A new cookbook, however, is  shining through all that. It promotes using farm fresh ingredients  with old fashioned cooking methods. This makes for some delicious dishes for both humans and even their canine companions!

This unusual cookbook is This Book Cooks (Artichoke Publishers, ) by Kerry Dunnings,who is also a food columnist, culinary consultant as well as a food judge and recipe developer. She is a Ben Franklin award winner for a previous cookbook, Tasting The Seasons. Chef Dunnings is refreshingly  different in that she uses old fashioned cooking methods to create yummy dishes, There is no mention of microwaves anywhere, nor plastic containers.either. She also has a 365 day ecological challenge.It involves growing your own fruits and veggies along with making the daily diet more colorful. This last is done by incorporating  a larger variety of fruits and veggies into meals.  There's also a section on repurposing  - a good idea to pass onto the younger home chefs in the household. This saves on waste and promotes household sustainability There is also the old fashioned challenge  that involve making foods such as cakes and cookies form scratch and of course getting rid of that microwave . This last can be considered a danger be cause of electromagnetic radiation leakage.

Since this is really an old fashioned kind of cookbook, the recipes are blissful   throwbacks to early 20th Century cooking Yet they also are  pretty trendy too. There is a spicy spinach and polenta lasagna that could be seen in any hip Manhattan eatery while her Oriental Flank steak is reminiscent of a cozy Saturday night dinner at home. I love her marinated beef tenderloin  recipe. This is a labor intensive one that requires  marinating, rubbing and saucing. It is a flavorful one  also, with a pineapple marinade, followed by a savory dry rub and sweet and peppery barbecue sauce. Of course she had delicious veggie recipes too, such as baked spinach and cheese and her spin on ratatouille featuring potatoes. There Is a great section on not only homemade human treats but canine ones too..Chef Dunnings gives us healthy whole wheat treats made with all natural wheat germ, wheat flour and molasses along with every pup's dream peanut butter treats. For us people there  is her mother's Old Fashioned  sugar cookies and pear cake, made with the ripe fruit , apple cider and cloves for an aromatic dessert. Chef Dunnings has a tasty ginger stuffed date recipe that would be perfect at any Christmas dessert table.

Fall's Fruity Desserts

This is one of the best times of the year for baking .The weather is  blissfully cooler and perfect for making  all sorts of desserts.It's also the time for a variety of fruits such as apples and pears. Combine the two and you have a yummy array of delicious treats. There are enough recipes where you can create a different sweets every day.

Apples are the most popular fall fruit and they 're also the most used in desserts. The most commonly baked apple dish is pie of course, Everyone loves a home baked one but you can also vary it by making a pomme tartin, a French version of the American recipe.This is a layer of  sliced apples on a decadent buttery crust. You can also make it with pears or with another fall fruit, the fig as well. Baked apples are a tasty and quick treat. These can go adult with a sauce of red wine and butter or kid  with the apples being stuffed with caramel and nuts.This is also the season for an old fashioned apple cake.It can be baked as a regular old fashioned scratch cake or a crumb topped coffee cake.

Pears, figs, cranberries and grapes are other fall fruits that are great in desserts. Like the apple,the pear is the most versatile. A New Season , A New Diet

What better time of year to change your diet than autumn. You can  rid yourself of the excesses of summer and gear up for the gorging of the holiday season. right now you can take advantage of what the farms  have to offer. There are many heart healthy foods out there  that are going to be fresh picked.It's also a good time to tweak your diet  and lower your cholesterol and blood pressure.

Fall means bounty and luckily there are a number of veggies out there that are ripe for the picking .  Kale and squash are reappearing in big numbers right  now. The first is one of the most versatile greens ever.It can be made into everything from a snack to soup to  salad. One of the most popular is kale chips - a simple recipe that just requires baking leaves until they are crisp and crunchy. Kale can also go into soups as well. Try it instead of spinach in an Italian wedding soup. Supermarkets are almost overstocked with squash. You can enjoy an acorn one, brimming with olive oil and garlic or a butternut one, cut into cubes or mashed.

Pears and grapes , other heart healthy and also cholesterol lowering fruits, are also gracing markets. You can just eat a pear plain but also try it baked. Add some low fat Greek yogurt sweetened with dark honey as a side. Black grapes are big right now as well. These can be added to sauces to give them sweetness as well as to salads. Black grapes or deep purple ones are perfect for making fresh grape juice as well as homemade jams (without all those preservatives.) Of course we all know that seasonal standard , the apple is big. There are so many varieties  to chose from, from Gala to Granny Smith.. These can easily be added to a salad to give it zing or baked with some cinnamon and wine for a simple but elegant dessert.

Healthy Fall Party Foods

This is the time of year for all sorts of get togethers- from tailgating dos to Halloween parties. It's also time for harvests too, full of  healthy fruits and veggies . Combine the two to get fun and nutrition. You'd be surprised at what can come out of a healthy menu.

Tailgating parties are a must this time of year. However they;re usually a leftover from the summer barbecue. The menus revolves around barbecued everything . This may be good but a bit unhealthy . Try adding some veggies to those kabobs such as fall faves like Brussels sprouts or carrots. Beets are big right now and you can make a regular salad with sliced ones or a slaw full of shredded beets.This is a nice offset to those brats and dogs.If you're planning on an at home party then think about another seasonal favorite- artichokes, These can be stuffed with breadcrumbs or just have the leaves dipped in a vinaigrette  as a nice hors d'ouevre . Artichoke hearts are also a good topping on homemade pizza as well.

This is also the time for fruits as well.Of course every Halloween party planner is probably planning a bob for apples games. You can also vary it by having a bob for pears instead. Both are good in mini tarts or in regular sized ones too. Any get together would benefit from an old fashioned homemade pie too. Try a sweet potato one because this is also the season for them. These can als be made into pudding as well and served with a creme fraiche. You can also make a fudge with them or bake them into chips.Cranberries are another fall treat. These can be baked into cookies and muffins, and mixed with nuts , makes an interesting after dinner nibble.

This is the season for fun fall parties. Inject some healthiness in them by adding the fruits and vegetables of the season. They can not only be good for you too but also tasty in some great recipes!
