Nibble In The New Year

 New Yea'rs Eve demands party food even if it's a party of one. Think fun appetizers and hors'douevres  for a fun ringing in to the New Year.. You can have a wide variety of bites from a mini charcuterie to saucy dippables .It's up to you to decide.

One fun thing is to create a charcuterie or sea-cuterie board. It doesn';t have to be grand. if there's only three or four  - or even two then think a good salami sliced along with slices of prosciutto and mortadella. Have slices or cubes of cantaloupe for a lovely savory - sweet flavor, along with  rounds of toasted Italian bread, crackers, olives and sun dried tomatoes in oil. I would also  include cubes of mozzarella and Parmesan too for fun snacking. A sea-cuterie can have chilled shrimp with  sauce along with crab cakes  You could include herring - a German tradition of ensuring good luck for the New Year along with anchovy fillets. Rice crackers wouldn't go amiss here. You could also have slices fo brown bread for the herring and Italian or zFrench bread for the anchovies. If you want to add canned salmon along with tuna in olive oil ,do that too.It's your board  so have fun with it.A cheese cuterie board is also fun too. Try different varieties of cheeses from Edam to Gouda. Have the centerpiece baked Brie in puff pastry. With this have apple and pear slices and various breads and jams that will go with the fromages.

Hot bites are always welcomed. Air fryer wings and /or drumsticks are perfect nibbles to ring in 2025. have them just oiled and then salted and peppered. These are the best. crispy and fried  and then dipped into a variety of sauces. Have little ramekins filled with barbecue, lemon  butter, and honey mustard.  Serve with little scoops of macaroni and potato salads. These with the chicken actually make for a filling meal. Mini or English muffin pizzas also make for tasty appetizers. These are so easy to assemble and then bake in whether a toaster oven or an air fryer. if there;s more than two people then set up a  toppings bar. Have olives  ,pepperoni,  sliced mushrooms and anchovies. Another fun idea is a basket of fresh from the oven garlic knots . You can get already made pizza dough or make your own. If you're making your own , the give the dough and hour to an hour and a half to rise. These can be baked in either the oven or air fryer. You can sprinkle a bit of Parmesan in for more flavor.  You could have a plate of olives or artichoke hearts as a nice accompaniment.

I'ts New Year. Ring it in with tasty nibbles. They can be cold or hot, but make sure they're delicious.

This company has the most amazing array of salts. I love their liquid salt from their Fossil River collection. This has several flavors such as cucumber, garlic and truffle. I used the garlic to make a garlic bread that was lighter than the usual loaf  because the bread was spritzed with an infusion of garlic. It was also lightly salted, which heightened the taste. There is also a cucumber infused liquid salt that can be used lightly on salads.Another favorite is the Fossil River salts that are mixed with everything from herbs to rose petals!  This last one I can see sprinkled on shortbread to heighten the buttery taste as well as for decoration. Selina Naturally also mixes their salts with Szechuan pepper and regular peppercorns separately. This is perfect for sprinkling over any meat, whether chicken or steaks  for some kick. Try the wasabi and sesame infused salt over fish and tempura for an interesting meld. of tastes.  There is also a grilling salt that would go well over any rib eye steak along with their applewood smoked salt. Paella Both For Land And Sea

Paella is one of those dishes that works well in the summer.It ISA versatile dish that can use both land and. Sea ingredients.It is a dish that can be made on a grill or even a fire pit.All in all it's a great dish ,chock full of tasty ingredients ,flavored with spices. This delicious dish was the subject of an article in today's New York Times Dining section . The piece written by Dining regular John Willoughby tells of a yearly contest between his writing partner , Chris Schlesinger and restaurant owner Valerie Burgo of South End Formaggio of Boston. Mr. Schlesinger is known for a seafood paella while Ms Burgo is famed for her land inspired paella.There is even an audience that tries out both.Either way ,both is a winner.There's nothing like a flavorful paella ,redolence with spicy meats and al dente rice.This last is a special Spanish style one that rapidly soaks up the liquids. This gives the rice a chewy external while the inside is creamy and moist What is the difference between land and sea paellas.Ms Burgo uses rabbit which is seared before being added to the dish.This maintains the meats smokiness throughout the dish.Other meats include chicken ,the traditional spicy Spanish sausage, chorizo along with jam on .A seafood paella is redolent with shrimp and clams.Chicken and choriz is laso used as is the traditional bomb a rice.Mr Schlesinger adds a scraped garlic garnish to. His along with a savory mix of saffron ,sherry and cumin.The best part for both is the crust at the bottom called rak rak. This is a crunchy addition to already tasty dish.. Paella is one of the best summer meals out there.It is a delicious mix of spices meats and rice.Whether you make it land inspired or sea influenced ,it is a veritable dish of the gods.Make it any way this summer, and enjoy the cornucopia of different flavors.

Sea salt is one of the hottest food items right now. This gourmet specialty is everywhere, seasoning everything from popcorn to ice cream.Now there's a way to make your own.You can have your own. Version of fleur de sell orMalden's Surprisingly it's a simple procedure. it was the topic of an article in today's New YorkDaily News (I'm TheTimes Dining section a rest tonight)Making your own sea sal T is easy ,even if you have to use the waters right off of Manhattan.Take the seawater first thing in the water before the swimmers arriveRun the water through cheesecloth to eliminate any sand or gritThen put int o ashallow glass baking pan.You can dry it out in a low temp oven for days or outside for two or thee weeksOnce thieves are dry ,scrape from pan and store in an airtight container. Making your own salt. a shallow you to customize it.You can add lavender as some fancy French companies do. Try an apple wood one by adding soaked chips to the dryig process.There is also a recipe for lemon salt, popular with chefs in London right now.Thos requires both le,on juice and lemon zest added.Squueze over the drying salt and process in a warm sunny place like a window sill.SSpice up your salt with dill or Rosemary for something to add to salads.Drip some vanilla extract over the still. Wet salt for a dessert kind sea salt is hot right now.Customize your own with different flavors or just create a plain one.It's a neat way of having this trendy foodie item.

Salt of the Water

Does anyone love sea salt as much as I do? This is a centuries old condiment that's reaching new heights in the 21st Century. If you haven't tried it before , then try it now. There's something magical about these amazing grains and where they're harvested. Not only that but sea salt is better than regular salt because just a few grains of it flavor a whole plate. You don't have to go wild with your salt shaker and coat everything. Just a few briny nuggets are good for giving your food that extra oomph. Natural salt, although lacking in iodine, does have other valuable minerals such as potassium, magnesium, calcium and sulfate.

Unlike plain table salt , sea salt comes in a variety of colors and shapes.There is the delicate Sicilian salt, Sale Antico, which is a very fine flaked pure white salt. There are the grey sea salts of France that have natural iodoine in them. There is the much desired Fleur de Sel. from Portugal (I know, the name sounds French)This is the "baby" salt, or the first bloom of salts that forms on the tops of evaporation ponds. This is a great addition to cooking along with salads. My favorite is sea salt from Maine with it's crunchy nuggets and salty sweet taste.

Nowadays you can go everywhere from your local supermarket to Williams and Sonoma to online salt stores and buy the salt of your dreams. I usually head to Williams and Sonoma where they have an excellent array of American and European salts. I like the British Malden's as well but any kind is just great.

Make the switch from regular table salt to sea salt. You'll wonder why you didn't much sooner.
