Coziness with Oats

 There is something about an airy dish that homey and satisfying. Maybe ti;s because of the grain being the most basic but also the most everyday.It's also lent itself to being good as an ingredientfor baked goods and hearty breakfasts.

Regular author and top baker Genevieve Ko wrote about it and gave two recipes in today;s New York Times Food section As she puts it oats can work miracles. Cooked otameal has a comforting and relaxing scent like clean fresh hay.There's also a natural sweetness to them that regular flour doesn;t have.They add to everything, from creating sweet crunchy toppings to extra chewy cookies like oatmeal raisin and chocolate chip oatmeal cookies. Chef Ko gives two recipes with them - honey oat pancakes and oatmeal chocolate chocolate chip muffins. Both are great ways to start a chilly Spring morning. There are so many different typrs of oats to use. What should home chefs use? She recommends quick cooking and instant oats are ideal for the pancakes because they;re small and flat, perfect for cooking. They;ve been finely chopped and steamed before packaging . They;re already made into flakes. Keep in mind that instant oats are going to be thinner than the quick cooking kind. They'll give the finished product s a chewier texture according to Sarina Shatseen , a culinary content specialist at the flour company Bob's Red Mill.

The recipes are perfect for breakfasts(or even for a Sunday lunch). The honey oat pancakes have the oatmeals soaked in buttermilk along with flax, honey and salt for a good ten minute. The longer the mixture sits the creamier and tender the pancakes. Use this time to make eggs and bacon . After the ten minutes add two tablespoons of canola or any flavorless oil. Baking soda and flour are then mixed in . They should be cooked in butter for a richer flavor.. Serve hot with more honey and definitely more butter for the ultimate treat.The oatmeal chocolate chip muffins can be perfect for breakfast or just a mid afternoon snack with coffee or tea. Use quick cooking oats for these along with flour and brown sugar. Cardomon is also added, giving the crumbs a lovely flavor. There is also eggs, butter and whole milk to give the muffins body. After the wet and dry ingredients are mixed the chips are gently added in. They're baked at 400 degrees Farenhit for twenty minutes. Use cupcake papers and bake in a muffin tin.

Oatmeal cna be a great addition to anything for breakfast or sweet. Try it in these pancakes or muffins. They;re a healthy and tasty addition to any recipe,

Rice Plus Anything And Everything

 O ne of the easiest meals to make right now is rice.It's a filling comfort food that can be mixed with anything and eveything. You can mix it with fresh or leftover ingredients.

Instant rice is the best kind to work with , especially if you're a novice home chef.It 's a quick cook and also lower in carbs and calories if you're actually watching your weight right now. You could go for brown rice for a healthier alternative. Keep in mind that that flavor is slightly nutty flavor that may overpower more delicate flavors and spices. The same thing with basmati rice which has a nutty, spicy and sometimes floral flavor.The second question is what do you boil it in? water works the best but if you do want more flavor then thinl any kind of broth, from beef, to chicken to vegetable. This on it's own is a good and easy lunch or dinner. Add some butter and Parmesan and it'a great instant meal.Another good aspect of rice is that you can make two cups just for yourself our five or six for a family meal. It all dpeends on what you use the rice for. A cup is great in leftover soup but if you're making  a dinner, with gresh ingrdients, then use five to six cups.Just gauge it/

What can  you add to rice? Sauteed veggies are good. Think onions, broccoli and mushrooms sauteed in garlic and olive oil. It's a refreshing version of fried rice and made vegetarian by the addition of all these different veggies. You can also add some sliced carrots and peas too. If you want to make it heartier add some chicken , beef or shrimp. These can be sauteed separately or with the veggies themselves. Leftovers like ham or turkey can also be added to any rice dish for a satisfying lunch or dinner. You can add leftover  gravy to moisten it and also give it more flavor.  Repurposed leftovers like cubed sweet ptoatoes, and green beans can be added  if you want or jsut make a stand alone rice dish with these for a tasty side.  Aspicy dish is good on a cold night. You can make a Spanish or Tex-Mex version with the addition of chili or some hot peppers.Add a dash of chili powder and a small can of tomato sauce along with a dash of cumin. If you want toss in  some cooked crumbled beef or shredded chicken for a kind of enchilada feel.

A bowl of rice is satisfying. It's also versatile. Make it anyway you want, with favorite veggies and meats.

Instant Food

It's good to be a foodie in today's modern world. Everything can either be popped into a microwave or a toaster oven. We can add boiling water to a bowl and get everything from oatmeal to soup. It's downright amazing what can be rustled up in a minute or two.

There's a lot of meal ideas to be had from these "instant " foods. For a quick lunch or even Sunday night dinner, bake Pillsbury breadsticks and then serve hot with a just cooked jar of marinara sauce Add salad and you have a satisfying dinner. Another idea is taking leftover white rice and adding it to tomato soup. You could also had some precooked shrimp and crab meat for a seafood stew. Ramen noodles are a fast way of satisfying those hunger cravings. Toss in some ginger or soy sauce for flair.

Anyone's sweet tooth can be instantly satisfied. There are the logs of cookie dough that can be sliced bake d and eaten within a span of twenty minutes. Microwavable cakes (which taste like soft baked pudding) are now the quickie dessert of choice. You can even make yourself an individual baked apple or poached pear thanks to the microwave. Fruit can be easily cooked this way and you can make all sorts of healthy snacks and desserts with some creativity and a few minutes to spare. A caramel baked apple just requires it to be cored, stuffed with caramel and butter and microwaved on high for a minute or two. Instant bliss and happiness.

It used to be just the "Jetsons"had instant food. Not so in today's 21st century kitchen. Anything is possible. Anything can be whipped up in a minute or two to be gobbled down in a few seconds.
