Summer Salads

One best thing about a barbecue is the array of sides salads than can be made. Any green veggie, protein and extra can be added to compliment burger or barbecued chicken. You can stick to the traditional r vary the recipe. That's the fin of salads.

One classic side salad is potato. I've had several variations over the years from the herbal Sicilian to a true German one. One of my favorite is a family recipe, one that my Mom actually picked up from a Swiss co worker when she first started teaching sewing. It's almost ninety years old but the flavor is just as impressive as it was in the late Thirties. It involves boiling Yukon potatoes letting them cool and then slicing them. Chopped celery and sliced hard boiled eggs are added in while the dressing is a blend of oil and mayonnaise.A tablespoon of vinegar gives it a nice tart jolt while capers and green olives provide the saltiness. Another one is my brother''s version that has one or two cubed apples. It gives a bit for sweetness especially if the amount of capers and olives are decreased. Sicilian style are my cousins' forte (thanks to their mother).Capers tomatoes and olives are added to boiled and sliced Yukons along with a zingy dressing made with olive oil, vinegar vinegar and r and equal parts of oregano and basil. Serve this with grilled steak for a truly tasty meal.

Bean salads are another barbecue classic that everyone loves. The classic one holds string beans, chickpeas and kidney beans. Chopped onions can be added for more flavor and bite. It's the dressing, though ,that;s so memorable. Its; a simple oil and vinegar mix with the addition of sugar. To go with the sugar use only apple cider vinegar . Red wine would be too overpowering in this. Of course just a plain chickpea salad is a treat. Add some parsley or mint for a Middle Eastern vibe and a simple vinaigrette. This is perfect if you're making beef or chicken shawarma on the grill. A kidney bean salad is also good.Give it a chili vibe by adding some chili powder to a robust red wine vinegar and olive oil dressing. Jalapenos and chopped bell peppers and tomatoes can added. Of course that left over barbecue can be repurposed as an add in to any salad later on. Think that plain salad with shredded chicken meat or cut up steak in that Campari tomato salad. These are nice ways to end an evening.

It's summer/ Almost. Celebrate with a good old fashioned barbecue side salad. Stick to tradition or make your own. The end result is always delicious.

Frigid Night Hot Cheese

Cheese is the ultimate comfort food and what better to have it  hot and bubbly on a cold winter's night Thrtr' something about the goodness  steamy and oozing onto bread veggies or meat.Fromage is the ultimate chill chaser and it's perfect for these days ahead.

The people who do hot cheese the best are the Swiss. Fondue is not only a fun winter party food , it's also hearty and rib sticking,. Do you need a fondue pot to make the edish? No, but it does help. Usually most have copper bottom which aid in melting the cheese  perfectly. Amazon ha a wide range of them so you can buy one for a relatively decent price. The cheeses are nothing fancy, reflecting the Swiss love of everything homey and hearty. The recipe is a combo of two cheeses not one,. It; mixing The mild and addicting Gruyere with Swiss and adding in dry white wine like Reisling or Sauvignon Blanc. You could use a good Swiss wine such as Chasseleas or Roussette de Savoie. Garlic is also added for flavor aking with a pinch of nutmeg and salt. Crusty ,w arm French bread chunk are dipped into it biut you can also have potatoes and even apples(they have the same consistency to hold up tot he hot mixture). A smiliarn dish is Welsh rarebit made with cheddar cheese stout or ale and butter Worcester sauce and mustard are added for zing and it's pureed over toast. However you can also use thick slice of sourdough bread too.

What about the American classic grilled cheese and its' Gallic cousins croque monsieur and croque madames? These ooey gooey cheese treats have been warming cold stomachs for ages. A good grilled cheese starts with a good cheese or Swiss , and sturdy  slices of white bread (although you can Alsop use wheat ro seven grained too for a nuttier flavor)Butter the inside of the  sandwich while slathering mayo on the outside this gives the exterior a golden brown crispiness.. You could go the diner route ad add a slice of tomato to a few slices of bacon for more deliciousness. For some zing think about subbing Montery Jack in for the cheddar. The sandwich's French cousin the croque monsieur us an excellent Sunday brunch sandwich or a hearty week day bite. Gruyere cheese is used for the filling as is thinly sliced ham. It's fried in butter and topped with a bechamel or white sauce and grated comte cheese. If you can't find Comte, use Parmesan or Beaufort cheese. A great brunch variation is the croque madame which has a runny egg on top. This is the perfect  breakfast for dinner weeknight sandwich and more filling than Eggs Benedict.

Happiness is anything hot and cheesy. Make a warm fromage dish to combat this winter chill. It's a nice and tasty way to combat the cold.

A Tweak Here, A Tweak There

Sometimes even the most delicious of recipes needs a little oomph.A tweak here , a dollop there can elevate any recipe from tasty to memorable. This is what makes a good cook, whether in a restaurant kitchen or in a home one.

This is my mantra. If I can make a recipe better,I will. Dishes and meals should not only be filling and nutritious but extraordinary . Even simple breakfast dishes can be turned into ambrosia with a tweak. Takes eggs for example. Even the simplest dish involving them can be boosted up by a dash of tarragon. Add this versatile herb to scrambled eggs for a nice brunch main dish. It can work wonders in an omelet au fine herbes. too.One of the best tweaks is adding club soda to beaten egg before scrambling. This results in the lightest, fluffiest scramble ever.I've also added whole cream to eggs which resulted in a more dense, custardy but insanely delicious dish. A cup of chopped ham also added oomph too.Waffle and pancake batters can also benefit from tweaks. Add a healthy dose of nutmeg or cinnamon  for a spicier , earthier flavor. Almonds and pecans are another great add in, giving both crunch and texture. Syrups can  be made special too. Add a squeeze of orange juice or  for a different spin. Drop in some blueberries and strawberries right before serving for color and flavor.

Lunch and dinner recipes always benefit from a tweak. Everybody loves a grilled cheese however make it like a croque Monsieur for a truly memorable meal. Instead of baking it in an oven or broiling it, fry it in butter . I do my own spin on it by buttering the inside, subbing in Gruyere along with a layer of sliced ham. The traditional recipe claims that  bread should be dipped in a flour and egg mixture before assembling but I feel this takes away from the crunch and flavor. Another favorite to tweak is the savory Italian bread pudding. The recipe has been in my family for decades. It's a flavorful layering of Italian or french bread, and Swiss cheese , baked or steamed with a good helping of beef broth. The last has been replaced by vegetable broth to be more vegan. Cabbage is added for crunch and color. Now I've been experimenting with aged Swiss will will give this usually mellow dish bite. Homemade Italian sauce is always deserving of a little twist. With mine , there comes a generous amount of oregano and vegan Iitalian sausage. The last is loaded with peppers so it gives the sauce a great zing.I love it on refried polenta but it can be perfect gracing rotelli too.

Tweaking here and there is perfectly fine.It add zings to everyday recipes, giving them pizzazz and zing. Go  off the beaten path and revamp that family or favorite recipe.

The Perfect Cake The Swiss Roll

One of the most perfect cakes is the Swiss roll. This is a simple cake with a complex look. It is a great cake to make for a Sunday dinner or to bring as a  dessert. It can br made in a variety of flavors with a variety of fillings . It is one of the most customised cakes any one can create.'

Swiss rolls came into being during the Victorian Era and was quickly incorporated into teas. Its' origins were not in Switzerland but probably in the Czech Republic or Austria where baking hit its' height during the 1800s.It was also called a jelly roll in American recipe books and magazines. This version was more of a fancy cake made at home for holidays or for  weddings The French Christmas favorite, buche de Noel is  one of the most famous examples of a roll cake. .The  recipe is a simple one. Bake a square of sponge cake let cool, butter on a filling and then roll it. It does take a knack to do the latter. however and you may want help for your first cake.,

Most Swiss or jelly roll cake recipes use a simple sponge cake as a base. A sponge cake has a well beaten batter similar to an angel food cake. It should have the texture of a sea sponge with air pockets laced through it.As for the filling, raspberry seems to be the one of choice .Most bakers use a raspberry jam however you can also use marmalade too for more zing. Some also use a butter cream however a light touch would be a  slightly sweetened whipped cream.. You can decorate it with a simple dusting of  confectioner's sugar or with puffs of cream. If you want a lusher roll then ice it completely but again  use a lighter whipped cream.A regular buttercream may be too much and too sweet in taste/.

The Swiss or jelly roll is an easy but elegant cake to make. It's a nice ending to a dinner party or made as a gift . It's perfection and prettiness rolled together,
