Snow Days Fun Recipes

 Snow days don;t always have to mean Zoom meetings or classes. It could be a day in making and balong fun recipes. It[s a great way to use up the day and even try new dishes and treats.

Of course pizza is always the recipe of chpice amongst everyone. Pizza dough is easy to make. It's just watrr flour , yeast , sgar and salt.It's also a good introduction to working with yeast. Once made you can have all sorts of fun with toppings.If you want a no fuss, then buy the pizza sauce that comes in the easy to squirt bottle (it looks exactly like  a ketchup bottle). Shredded mozzarella is good for an even cheese layer  but use cunks fo it if you want to create a traditional Margherita one.Everyone can create their own toppings. Make sure you have plenty of vegan and meat pepperoni, bacon bits, olives, peppers and for those into healthy eating - spinach and brooccoli. You could also make the extra fun  and easy garlic knots or twists. They're super easy to bake and thn dip into a zingy marinara sauce (for this you can just use the pizza sauce heated up in the microwave). Another fun dish? Chicken wings!!! Thy're made even easier in an air fryer. Just toss them in olive  oe vegetable oil first then give them  good toss in chili or garlci powder. Add salt and pepper to this for more ;flavor.

Of course a snowy day also means baking., Have a couple of rolls of Pillsbury cookie dough on hand for easy baking and eating. (also ave plenty of milk on hand for this as well) You can also buy cookie mixes too from Betty Crocker and create tasty plates of oatmeal and peanut butter ons. A fun snowy day activity is baking sugar cookies and letting the little ones (and bigger ones) decoare them with homemade or store bought icing and such decorations as sprinkles and mini chocolate chips.Bakibng a batch of cupcakes are another fun stay indoors activity. Use cake mix for an easier route. Again the frosting can be storebought or homemade. Have plenty of decorations on hand so the kids can have a field day with them. A snowy day can also mean a foray into candy making., Try your hand at fudge or peanut briittle. Fudge just requires chopped semi sweet chocolate pieces, condensed milk and a teaspoon of vanilla extract. You could add dairy or plant butter for a smoother consistency and better taste. Of course peanut brittle is a blend corn syrup, water and peanuts cooked and later mixed with baking soda, vanilla extract and butter. It's then poured onto a loaf pan an d let cool. (this cna even be outside).

The weather outside may be frightful., The cooking and baking insid will be delightful. Make and enjoy these treats on a frosty day home from school and work.

Holiday KItchen Hacks

 Christmas cooking and baking can be stressful. Home chefs and bakers may not have the time or the skill. Not to worry . There are hacks to use that can get anyone through this kitchen craziness.

First of all rethink that holiday roast. You don't have to cook an entire roast if there's only a few people. An easier version of roast turkey is turkey breast. It only takes about an hour or two to cook which means you don't have to wake up and start pepping it right away. A canned ham can do just fine if you don;t want to roast a fresh one.Another easy main course is rounds of filet mignon that can even be cooked up in the air fryer.Simplify sides as well. Frozen broccoli and green beans can be microwaved , chilled Christmas Eve and turned into tasty salads half an hour before the meal is served. Go for a simple vinaigrette instead of a fancy , more laborious dressing. Stovetop Stuffing is just as tasty as the more work intensive one where you have to tear bread and chop celery for. Instant mashed potatoes can be used and jazzed up with chopped garlic or minced scallions. Another easy side is microwaved sweet potatoes or yams. These only takes five minutes to cook per potato. Serve with melted butter.

What about those Christmas desserts? One super easy hack is going to your local bakery and buying a platter of cookies or a prettily decorated cake.  Some bakeries and stores such as Acme and Stop and Shop even sell in store  already baked and decorated Yule Logs or Buche de Noel. If you do feel like baking , remember there are Pillsbury Slice and Bakes. These are easy to prep and bake. Another plus is that you can go to their website and get decorating ideas.There is one where you can decorate cookies to look like Santa's bellies or Christmas ornaments. A yummy treat are sandwich cookies  with an easy buttercream filling.A two layer cake is always a lovely way to end a holiday meal. You can go with any of the Duncan Hines ones and canned icing. A tasty one is a butter cake with a rich cocoa frosting. What about a chocolate sheet cakes with mint icing? You can dust it with silver sanding sugar for a frosty snow effect. You could also bake cupcakes which are always a crowd pleaser and easy to bake and frost. Even easier is a trifle made with store bought pound cake, rum , fruit and Cool Whip. Layer and then pop overnight in the fridge.

Don;t stress over Christmas cooking and baking.There are some easy hacks to make everything a cinch. Try them for some relief in the kitchen.

Making The Most Of Lenten Fridays

 Lenten Fridays can be a bit of a cooking challenge for observant home chefs. Meat is off the table so what do you do?  Go meatless for one day. There's enough recipes out there that are perfect for the weeks leading up to Christian Easter.

Eating less meat is good anyway. It's a chance to infuse more veggies into the diet. A simple but flavorful meal is ratatouille. This is a classic French Provencale dish of eggplant, tomatoes and onions. It can be varied to include bell peppers and squash coins. Its zinged up with such herbs as thyme and basil. Garlic is a must because it amps up the flavor. What's great is that you can make a lot for a Friday dinner and have some left over for A Saturday or Sunday meal. Make it special with a just from the oven focaccio or a loaf of garlic bread. You could even make a ratatouille pizza for something different. It's putting  all the veggies on the dough and adding sauce and shredded mozzarella.Pizza is another tasty idea, even without the pepperoni. You can add shrimp or make it more luxe with lobster. Shred and put boiled tail meat on the dough along with the rest of the ingredients. Another way to go is healthy with spinach and kale. You could also have it with just onions and scallions for a different , more allium flavor.

If you're tired of pizza then think vegan shepherd's pie. If you're wondering about the filling.don't. You can use the plant based Beyond Beef for the filling. Add some carrots and peas along with tomato sauce. The topping is mashed potatoes used as a crisp crust. Dot with butter for a more flavorful topping. You can also do a vegan beef or chicken pot pie. All it takes is Beyond Beef mixed with different veggies like tomatoes and zucchini , baking potatoes and white mushrooms. Tamari and rice wine vinegar give it zing. Veggie broth makes the gravy that is a pot pie's signature feature. Two sheets of Pillsbury Crescent dough rolls  create the flaky top. You can also make Beyond Burgers too. They're just as good as the real thing. You can go totally vegan by adding slices of vegan cheddar for a tasty cheeseburger. Make it a fun Friday night meal by adding French fries. Another vegan meat idea is Beyond Beef meatballs with spaghetti. It's an easy make because they come already made. You can also make them into tasty subs, another fun Friday night dinner.

Lenten Friday's don't have to be fraught. There are so many different veggie, fish and plant based meat recipes out there. You can choose any of these for a great and meatless way to end the week.

Sweets For Mardi Gras

What better way to celebrate Mardi Gras than with sweets. It's a tasty way to celebrate all the bad for you treats before heading into austere Lent. There are so many different ones that you can have a feast of them.

One of the most famous is the King Cake. This is more of a bread, originating in France and also popular in Switzerland and Belgium. The sweet airy breads are actually made for Epiphany , hence the name, and continue well into the Mardi Gras season. The recipe does involve yeast as well as some kneading. Some recipes have cardamon and cinnamon along with citron and raisins. These last can be omitted. A vegan version can also be made. This involves subbing in cow's milk with almond milk and eggs with egg replacers (which can be found in the egg section of your grocery store). Vegan butter is also used and again you can use Country Crock's plant butters.The cake bread is braided and baked and then iced with a simple icing glaze. The fun part is adding the Mardi Gras colored sugars of green which represents faith, purple for justice and gold for power. Remember to add in a gold coin or plastic baby as the traditional "gift". You could also make mini King Cakes using Pillsbury Grand Cinnamon rolls. These are fun because you can add a gift to each mini cake so everyone wins.

Beignets are another Mardi Gras treat which can also be made all year round. Again this is basically a bread recipe, made with yeast and bread flour. Again it does require kneading along with another labor intensive step. Eggs and yeast are mixed together and then the bread flour is added. There's also shortening and frying in vegetable oil. They're then dredged in sifted powdered sugar. You could do a sprinkling of blended green, gold and purple sanding sugars to give them a Mardi Gras vibe. Vegetarians can enjoy their version. Again use egg replacers and vegan or vegetable shortening for texture.Use vegan evaporated milk such as Nature's Charm, made with coconut milk. It can be found at Wal-Mart and Whole Foods. Again, the vegetarian beignets are deep fried in vegetable oil. As for the powdered sugar, some vegans refuse to use it because there is animal bone char in it. You can create your own by mixing ground white sugar  or evaporated cane sugar and cornstarch. Can beignets be fried in an air fryer? Yes! They'll still be crisp and hot. They're cooked at about 390 F for three minutes each on each side.

Enjoy these sweet treats to be made for Mardi Gras. They're a great way to celebrate a decadent holiday. Enjoy them with a cafe au lait or Sazarec or Hurricane cocktail!

Making That Bread

With St Patrick's Day coming this Saturday , many home bakers , novice and experienced are planning on making Irish soda bread .It's one of the easiest breads to create. Then, surprisingly most breads are. They're an easy and fun bake.

Maybe Irish soda bread should be considered the gateway recipe for new bread makers.It is one of the easiest outside the packaged loaf mixes from Pillsbury and Krusteaz.Like cake, it  requires sugar, margarine,  and flour along with one egg. Irish soda bread does require just a teaspoon of the baking soda that gives it its' name along with buttermilk . Raisins are optional, but they do give it an added sweetness. There is some kneading but the best part is that it doesn't have to be proofed like yeasty bread dough. The baking soda acts as the yeast, allowing the loaf to rise.Irish soda bread is also considered a quick bread which is much easier to make., Banana bread and date-nut bread, two kitchen classics are other examples of quick no yeast breads.They both have dense heavy crumbs with very little air holes.Neophyte bakers may feel a bit anxious about making even this kind of loaf. Don't despair, There are some good mixes out there with Pillsbury leading the pack. Their mix can be made into loaves or muffins and come in a variety of flavors. Try the lemon poppy seed or cinnamon swirl.Krusteaz is another company that has some tasty and simple bread and cornbread  mixes, that include cinnamon swirl and fire roasted corn bread.

Once you've mastered quick breads you can now try your hand at yeast breads. What is the best yeast to use?You can't go wrong with Flesichmann's. One of  the bonuses of using it is that the website has a how too, along with info on what it is and what it does.Another good yeast for bread and rolls is King Arthur's. The company even sells sourdough starter. King Arthur 's also sells a variety of flours too, from wheat to gluten free to nut and coconut flours. Now comes the bread recipes.Start with one that has very few ingredients. The basic load recipe is one that requires active dry yeast, flour , and salt.The only liquid used is water which, along with the other dry ingredients .it makes for a nice light loaf.For the more adventurous there is Italian and French loaves that require their own pans. These sort of resemble corrugated roofing allowing the baker to make three loaves at a time.Some recipes call for the addition of olive oil or honey. When  you've mastered the craft think sausage or cheese breads.These are fun to make and the highlight of any dinner or picnic.

Bread is not that hard a recipe. Start with an easy one like Irish soda bread and work your way to the more challenging recipes. Once you start it'll be hard to quit.

The Season For Hot Pies

One of the best aspects  of fall cooking is creating delicious and filling hot savory pies. They can be rich with meat and gravy for meat lovers or chock full of veggies for vegetarians. Either way, a steaming wedge loaded with flavor is the perfect warm up on a nippy October day.

Savory pies can take a lot of work. If you're thinking of baking one ask yourself if you have the time to make a crust or just buy one.One time saver is buying already made pie dough  Pillsbury is your best bet.it's premade but has a nice homemade taste to it.However if you want create your own you can. There's absolutely no difference between a sweet pie and savory one crust unless you wish to add dry herbs for more flavor. As for the crust , that depends  on the home baker you talk to.Some use lard,others  butter, while some use a combination of the two. Vegetable shortening can also be part of the recipe as well. All need ice water. You can brush the pie bottom with beaten egg before beating. This can also be done to the crimped crust and pie top. If pie crusts aren't your thing, then think of shepherd's pie. This British classic is topped with mashed potatoes. For the ultimate classic taste use mashed russet potatoes  to top lamb or ground beef, peas and corn. Make a side dish of gravy to pour over the slices.

Now for the fillings. Again it can veer towards the traditional or vegetarian.Meat pies started as a way to reuse leftover roasts. You can do that too although you can also buy any kind of filling fresh. A traditional one is beef. This is a hearty one, perfect for a chilly night. The filling can be London Broil bought from your supermarket's deli or even beef tips. The last will require some braising in a Dutch oven before adding it to the pie.Another way is ground beef for a less chewier version. As for chicken, any part is good. Try mixing the white and dark meat for more flavor.It can be shredded or cubed. You can also do the same with leftover turkey too.Braver home chefs may want to experiment with a fish (!) pie. A rather decadent one for dinner parties would be the lobster one, rich with Pernod and cream. What do all these pies have in common? Vegetables which are the basis of a vegetarian pot pie. Potatoes are a staple.Usually the smaller Yukon Gold ones are the best along with peas and sliced carrots. The onions are always sauteed before adding. To make a meatless pie  a bit more heartier add some cauliflower and broccoli along with mushrooms and sweet potatoes.

A hot savory pie is a great dinner on a chilly night. Make your own, rich with meat or veggies. Then savor the steamy goodness they can bring to a fall supper table.

A Special Cake For Mom

One of the best gifts is a homemade one for Mother's Day. Any mom would appreciate a tasty treat that she didn't bake. Think fun cupcakes or a daffodil cake. If she's into fruit than a great pie, or if she's fancy a plate of macarons with a ganache filling. There's a variety of sweets that can be created for mom's special day.

If you're not a pro at baking, then go for the mixes. Between the big three cake mixes, Duncan Hines, Betty Crocker and Pillsbury, you can make any kind of cake.Duncan Hines has introduced serving for one -  mug filled with either cake or bread. This is the easiest bake - just the mix and three tablespoons of water - - it just takes a minute in the microwave and voila - a perfect treat. She can have her choice of flavors from a decadent chocolate lover's cake to  banana bread. There's even one minute muffins, blueberry ,apple cinnamon and corn, in a mug too for a neat breakfast in bed. as for cakes and frosting , all three brands have not only mixes but frostings too. As for decorations Betty Crocker has these various sprinkles including Cupcake Gems that are gold and silver sugar crystals. Sprinkle these on a plain cake  to amp it up to something special.You can also have fun with the mixes too, thanks to the brands offering dozens of recipes on their sites. Try a poke cake with either pudding or Jello for a fun surprise or a skillet cake , layered with whipped cream and fresh berries.Pillsbury has a easy to bake ice cream cake recipe that just requires cake mix , ice cream and whipped cream.It's easy to assemble and decorate.

More experienced bakers can definitely whip up a scratch cake with no problems. One of the prettiest is the daffodil cake,  a marriage of angel food and yellow scratch cakes. The frosting is a mix of pineapple juice and Cool Whip which is a lovely , mild flavor to go to the cake. Of course , nothing beats the taste of a scratch marble cake. This would make a great dessert with a scoop of French vanilla or chocolate ice cream.It's also good just on it's own with an iced coffee and mom's favorite Sunday crossword. A homemade pie is always a nice gift.Supermarkets such as Stop & Shop and Acme are still selling Granny Smith and Fuji apples and these are the best for a homemade apple pie.  If you want something fancier then think a homemade lemon meringue with a slightly browned meringue crown. It's a great end to a Mother's Day barbecue. Another tropical tasting treat is a Key Lime pie, the perfect union of sweet and tart. What mother wouldn't like a plate of fresh from her oven macarons. Yoou can make them like the ones from the famed Ladueree Patisserie, with flavors such as chocolate, salted caramel and even rose water.Fill them with a rich chocolate ganache or almond buttercream for true luxury,

Nothing beats a homemade treat for mom's special day . Surprise her with home baked treat. It's a sweet way to thank her for she's baked for you.

Following Directions Or Not

As any nervous or perfectionist home chef  will tell you directions are crucial in everything - well sort of.Sometimes you have to go on your gut feeling about a certain recipe or cake. There are times when being a bit of a rebel helps in creating the perfect dish.

I had to go off course when I baked gingerbread today. It was the Pillsbury brand and usually their directions are pretty exact. Everything went well I add the required one egg and one cup of water. I beat it close to eighty strokes, making sure all the lumps were broken and the batter was silky smooth. I poured it into a throwaway cake pan - I used one that fit their requirements 8" by 8".Then I baked it in a 375 F. degree oven for the required twenty-five to thirty minutes. At the end of that time I tested it with a cake tester, expecting to see a clean probe. Nope! The middle was still runny!!! That was a shock. There is always panic and the instant thought of "what did I do wrong? Was it because I used an aluminum foil pan as opposed to a metal or glass one? Of course, I put it back in for another fifteen minutes. After forty-five  minutes in the oven, I did the test again. The probe came out relatively clean. I was happy.At least I wasn't going to serve a cake with a raw middle.

What could have gone wrong? Was it my oven? I don;t think so. Mine is almost brand new. What I think did go wrong? It could have been a misprint which does happen from time to time. Initially, I thought that twenty-five minutes to half an hour was too little time for a thorough bake. A scratch version would take an hour to thoroughly rise and cook through. Surely someone from Pillsbury's test kitchens must have realized this when they tried out the mix and wound up with a runny inside.If this is the case for many home bakers just go with your gut feeling. Always have a cake tester handy as well. These are invaluable  in seeing if any cake or cupcake is done. They help to prevent a half baked baking project, vital if you're making a special occasion cake. Toothpicks and even a straw from a broom can stand in if you don't have a tester yet.  Another great help is reading the directions a few times to make sure you'll get it right. Sometimes we transpose numbers. and those stick in our head. We think  the cake or cookies need to be baked for 25 minutes when the directions actually reads 52  to 55 minutes.

Should home chefs and bakers follows instructions. In most cases, yes.. However follow your gut instinct if you think your recipe isn;t quite right. It results in a thoroughly baked cake instead of a half baked disaster.

That Holiday Baking Guilt

Yes, it's that time of the year when all home chefs are expected to magically transform into bakers. That's great if they have a lot of time along with having a knack for turning their kitchen into a Keebler tree. As for the rest of us? Uh oh, here comes that holiday baking guilt.

We all feel that our families deserve the best especially around the holidays. We want them to have the best presents, the best Christmas meal, the best time ever.In other words, a nearly impossible experience only exacerbated by giving them store-bought cookies to go with that Christmas morning hot cocoa or leaving Oreos out for Santa. There are a couple of solutions here. One is the classic  Pillsbury Slice and Bakes which gives the same homemade taste without all that work. As we can all attest the chocolate chip ones taste exactly like the Toll House recipe.The chocolate is gooey, even hours out of the oven and the cookie itself has rich brown sugar taste.There is also their sugar cookie flavor which is perfect if you have little artists who love to decorate. The snaps can even be turned into sandwich cookies thanks to the addition of a super easy cream cheese filling. It's just the cheese (or Neuchatel if you want to go fancy ) confectioner's sugar and a small drop of vanilla. Roll in red and green colored sugar for a fun holiday look.

Of course the second, easiest of the easiest holiday cookie solutions is bakery cookies. Some, such as the century old B&W Bakery in Hackensack, New Jersey have an amazing array of recipes that have been passed down from the bakery's original German owners. What I love about them is that they don;t follow trends. You're not going to see anise curry cupcakes or pistachio basil macarons. These are just simple butter stars and plain almond macarons.
You can see just how home made looking the butter stars are, with just a drop of green or red sugar in the middle, affixed with a simple egg white wash or glue. They are mouthfuls of pure butter and sugar, light, crisp and delicate. B&W's macarons' are the perfect holiday cookie, too. These bite size rounds have just the right amount of sweet chewiness with the perfectly laid back taste of almonds - and nothing else. I don;t feel guilty when I serve these to family and friends as a holiday treat.To me they're a holiday tradition, Also, with the cookies already taken care of, I can concentrate on wrapping and cleaning,No guilt there, just relief that I have more time freed up.

If you;re too busy to bake, don't. There are a few alternatives to scratch cookies, from Pillsbury to your favorite local bakery.Everyone can still have tasty sweet treats and be happy. No need to suffer any regret from not making the perfect cookie.

Funfetti Confetti Cake

Cake is festive. That's a universal truth. It usually symbolizes a party , especially if it's a colorful one, dusted with a rainbow of sprinkles. Now those sprinkles are inside the sweet treat, giving a more festive look.

Julia Moskin wrote about a new party classic - confetti cake in yesterday's New York Times Food section. Whatever you call them, whether they're candy confetti, sprinkles ,jimmies, or hundreds of thousands, they are big right now.Pro bakers and even mixologists are using them on  everything from cocktails to croissants.They're even used to decorate phone cases,scented candles and even press on nails ! Now they're exploding all over cakes, turning bland white cake into a Jackson Pollack canvases. Why now?Most bakers were kids in 1989s when a new product burst upon supermarket shelves.Pillsbury came out with Funfetti Cake,a vanilla cake mix that came with multicolored sprinkles.The twist was that they were going to be baked into the cake. They'd melt into streaks and dots of vibrant color which made them into an instant hit. Funfetti cake was then a definite must for every home party.Copycats soon abounded.A year later, Betty Crocker came out with Dunkaroos, a snack pack of cookies with sprinkle laced icing. Even Dannon Yogurt jumped in on the craze.In 1992 they came out Dannon Sprinklins, with candy confetti packed separately in the lid.

Now there are grown up versions of the cake all through Manhattan.Pastry chef , Christina Tosi, of Milk Bar in New York was one of the first to produce colorful cakes. Her passion for sprinkles started when she was young and it was with , of course, Funfetti. She cleverly turned the cake batter into cookie dough. Her current take is still the number one requested dessert, and at the NoLiTa outpost of MilkBar, there's even a wall of sprinkles. She's also put them in homemade tahini ice cream sandwiches and mandelbrot, the twice baked almond cookie.Chef Yeh loves them so much that she even had guests throw them at her wedding.Fancier bakers around the city have even put them in croissants and macarons along with giant Funfetti wedding cakes Some are even making their own hundreds of thousands. Sohla el- Wayly of the Hail Mary Diner in hipster Greenpoint makes her own. These are vanilla and rose flavored, made with egg whites,confectioner's sugar and food coloring. She pipes them in long, skinny lines on parchment paper, allowing them to air dry. They're then  "plastered" on the diner's tall vanilla cake giving it a wild , eccentric quality, like something from the Mad Hatter's tea party. The best bet is to go to your grocery store's bake shop where you can buy medium sized cups of multicolored sprinkles. some even have holiday colors, like black
and orange for Halloween and red and green for Christmas.

Sprinkles amp up a cake's fun factor. Go crazy with them and create an explosion of color with every slice.It's a fun way of celebrating cake.

Halloweenies And Fright Burgers

It's the start of Halloween week and that means one thing  -fun food!! It 's getting creative and coming up with ghoulishly good treats and meals. Make these scary dogs and fright burgers for dinner or for a weekend of parties! They're sure to be loved by big and little trick or treaters across the board.

Hot dogs are one of the best mediums for All Hallow's fun. They can be dressed in as  costumes just as  real dogs can. One of the most fun is mummy dogs, These are simply taking a sheet of Pillsbury crescent rolls and first pressing the perforations to seal them. Take a knife and then cut each dough rectangle into ten thin strips.Also, cut slices of American, cheddar, or Monterey Jack cheese into four pieces..  Wrap four dough strips around the dogs and cheese and leave a 1/2 inch space for a 'face'. Bake for thirteen to seventeen minutes or until golden brown. Use a toothpick and mustard to draw on faces.Serve with any kind of mustard , from honey to spicy Dijon. For a healthier spin use soy dogs and soy cheese. You can also make your own gluten-free dough too.Another cool ghoul idea is monster fingers. It's just simply cutting the franks so  they look like fried, boiled or - really creepy - grilled fingers.Slice a square top layer off so it looks like a nail bed. Then slice two lines an inch below the nail and three lines midway to resemble knuckles. Make it look even gorier by putting a thin line of ketchup along the nail bed and maybe a little oozing out of the "knuckles".Serve on pita rounds cut square  to resemble bandages.

Burgers are another versatile "dress up" dinner. They , too, can be turned into yummy mummies. It's just taking any of your favorite sliced cheese  and  cut it into strips.
