Best Of The Irish

Ireland is known for it';s beautiful cliffs and country side, it's pubs and parishes. Yet it's also it's food that makes this Celtic gem stand out. Thanks to the amount of natural resources an Irish diet is full of rich, flavorful food.

One of the best Irish imports is butter. Home chefs and bakers alike rave about Kerrygold, an Irish but from grass fed cows.It is higher in butter fat than American butter, eighty-two per cent to the American eighty.The cows graze on beta carotene rich grasses which affects the butter's flavor.It also has a smoother ,creamier texture too which makes it perfect for spreading on any hot slice of toast or muffin. Aldi also sells an Irish based butter Countryside. NO matter which you wind up with  use in in sauteed or just to top veggies.Irish cream (not the whiskey of the same name) is very good as well. Whip the cream and use it as a special side to any plain cake.Do the Irish have good cheeses thanks to all these rich dairy? Yes! Most of the counties do produce good qualities of various kinds. Cheddar is big but there is also the Gouda like Wicklows Farmer's Cheese.Cashel Blue is another popular cheese, similar to Blue cheese with its' veins of mold.

Any breakfast lover knows that Irish steel cut oats make the best hot breakfast. They're made from whole oats groats which are the cats with the kernels intact. They make the oats more nutritious.They're coarsely chopped into pieces  resulting in a more chewier texture and a nutty flavor.They do cook longer than  the regular kind but are great with lush ingredients added to them. Add whole cream and stir in brown sugar or maple syrup.Yes you can bake with them. The final products will be a denser chewier product. Think using them in chocolate chip cookies. They'll pair well with the brown sugar and dark chocolate chips. Ireland has another home grown product - not of the land but of the sea.Irish sea weed is becoming a culinary must. It is used in everything from recipes to cold remedies and beauty products. There are three types, dulse, which is the most popular along with  carrageen moss, bladderwrack sea spaghetti and sugar kelp.They can be cooked, into side dishes , salads and baked into different products.

Ireland has the best products and produces the best foods. From their butter to their seaweed there's a range of flavors. Try them to experience Celtic goodness.

Sweet Treats For Mom

 With Mother's Day Sunday, it's time to think of tasty treat's she'll enjoy not just for the day but also for the week following. You could try your hand at making macarons to homemade fudge and peanut brittle it could have the fruit or the season or her favorite chocolate. Whatever you decide it'll be a sweet, memorable gift.

Moms adore fancy treats and sweets.If you;re good at bread making try brioche or croissants. The original brioche was puffy little rolls baked in individual tins with papers much in the same manner as cupcakes. Since they are a bread they will require yeast for rise along with six large eggs. These give them that classic golden yellow crumb and burnished bronze colored crust. You'll also need a stick and half of butter(preferably a good European one like Kerry Gold) for that rich flavor. As for flour stick with a regular one . You can make a whole wheat version of you want but the flavor won;t exactly be the same as the French ones. From there it;s just brushing the tops with an egg wash and baking. Croissants also have the yeast for rise along with plenty of butter.It;s basically creating layers by folding and rolling and then shaping into crescents. Macarons are another sweet Gallic treat made by using almond flour.  and both granulated and confectioner's sugar.The filling is usually buttercream but you can also do a jam one if you;d like ,especially if you;re making chocolate ones.

Candy is always a fun gift on Mother's Day.Instead of a box with the usual boring assortment. try making a pan of fudge. This is always a treat and it's so easy to make. It;'s just a blend of chocolate chips, sweetened condensed milk and vanilla extract. You can add walnuts or almonds if you want. For a bit of color throw in a handful of mini M&M's. A marshmallow fudge is another fun candy. Try Martha Stewart's that;s also made with real butter too. The addition of Kosher salt brings out the flavors too. peanut brittle may seem old fashioned but homemade brittle is a true treat indeed.it's a combination of granular sugar mixed with corn syrup cooked into a sticky liquid. After the syrup is cooked for twenty minutes butter is added a long with the baking soda. This is what gives the candy that bubbly airy mouth feel. The peanuts are added last. Many home candy makers prefer unsalted but salted works just as well too. Break into pieces and put in a pretty tin for a lovely Mother's Day gift.

Mother's Day is all about tasty treats. Bake her something. Make her homemade candy. She'll appreciate anything.

The Marble Cake To Do

The second day oof the baking extravaganza commenced. As often as I write about baking to be honest I haven't made a two layer cake in over thirty-two years. To be honest I can see why.

The bake started out OK.
Of course I went to my go to cake mix brand - Duncan Hines. I can;'t say enough about how consistent their cakes are. This is my first foray into two pan baking. I used I Can"t Believe It's Not Butter to grease the 8 inch circular pans. These are the best to bake with.

Marble cakes requires two packages, One is a yellow cake mix, the smaller white one is the cocoa powder that is to be mixed with a cup of batter

Below is the chocolate batter swirled with a knife in the batter. You can use a knife, I used a Slushie spoon which gave the two layers a nice swirl effect.

Now comes the fun part., Home made chocolate buttercream icing.
Again to be honest I borrowed from a few recipes on line and cobbled them into my own.
The most important ingredient is butter and I used the best  - twelve tablespoons of Kerry Gold
Second most important is the cocoa.I used Hershey's baking powder .abotu a cup to create a rich , fudgy flavor.

To give it smoothness and flavor I used Stop & Shop's whole cream. about  half the carton and two tablespoons of Neisnen Massey vanilla. I could have added sea salt to balance out that sweet, but that may create too much of a contrast. The icing was a pain to blend, even when using an electric mixer.
My kitchen and self were coated in this.
The end result was pretty good - a very smooth  and creamy fudg elike frosting that held its' own. I used an icing knife which is a must have for any home baker.

his is the perfect cake and frosting for a fun get together. It is labor intensive but worth it.
