Culinary Resolutions

 With the New Year starting it's time to think about what you want to change or keep in it. It could regard appliances or expanding your global cookbook. What's on the agenda?

Will the new year bring a new kitchen? If you've been dithering about a whole new makeover make 2023 the year to do it. Take a look at other kitchens on line  along with consulting with  a reputable remodeling company. Keep in mind to plan now and start renovations in the warmer weather when it's easier to cook outside. What about appliances? Take a good look at your ovens and fridges. If you feel they need to be replaced then  consider a state of the art replacement  . This is also the time to take advantage of those holiday gift cards. Get that air fryer or electric wok for new ways to cook. Many stores like Target and Wal-Mart have some great sales on most kitchenware  right now so take advantage of them. Are you looking to expand your global cookbook like I am?Then comsider buying some new spices such as Berbere spice and Szechuan pink peppers. I know I want to try more African and Asian dishes in 2023 so that means using different ingredients like teff in my cooking.

What other resolutions should you make? Cleaning out. My spice cabinet is overbrimming with all sorts of herbs and spcies that I rarely use. Open it and they come cascading out. All that cinnamon and sage has to go. It makes for a easy reach when I do need my most used spices like onion and garlic powders. Another must do throughout the year is cleaning out the refrigerator. It's a good habit to get into. Get rid of all those little containers with leftovers from who knows when.  Another good habit to begin ih the New Year is using up leftoivers a day or two after they've been cooked. It means less cooking , especially during a busy week and emptying out the fridge . Also don't save those little dribs and drabs of sauces and condiments. You can combine ketchup and barbecue sauce for a new dipping sauce or something to slather on barbecue ribs and chicken. Those packets of soy sauce from your Chinese take out can easily be used in homemade Asian dishes while those Taco Bell sauce packets can be used in making homemade chili. 

There are so many resolutions to make culinary wise. Will it be an expanded kitchen ?A new ovn? Or just tidying upa messy cooking space? It's your resolution. Stick to it.

New Year New Treats

 How better than to start a New Year than with new and fun recipes. You don't have to look far. It's right at your fingertips .

Yesterday's New York Times Food section had some great ideas for parties and the morning after  for this weekend.One of the highlights and it should be the highlight of  any New Year's dessert table is the Paris Brest- Claire Saffitz a regular contributor and author of may a baking cookbook gave the recipe. This is a grand choux pastry filled with a complicated pudding like creme of hazelnuts  almond butter , vanilla, eggs milk and butter. The sweet was created in honor fo the famed Paris-Brest bike race back in 1910 by Louis Durand.It's a spectacular choux pastry cake which is both light and filling along with being an elegant end . Serve it after a dinner of lobster, oysters and filet mignon.It will require a lot of work which should begin on New Year's Eve. For something a little less intensive J Kenji Lopex-Alt goes the Nigella Lawson route  wiht a comforting  and simple chestnut risotto followed by gaily colored cream cheese pound cake.The rice is topped with cremini mushrooms and cut onions and celery.Arborio or carnaroli rice is cooked with chestnuts and white miso. Sour cream is surprisingly added as a topping. dessert is moist pound cake topped with raspberry preserves and whipped cream. Freeze dried raspberries give the bright pop of color.

There's even a dish for the day after. start 2023 with Melissa Clark's mushroom butternut squash strata. Squash seems like an unusual ingredient to add to a breakfast dish , usually laden with bacon toast, eggs and cheese. Yet it works. She also adds a mix of different muishrooms such as cremini, white shiitake and oyster cut into chunks along with one and three quarter pounds of butternut squash (this has a lovely sweet flavor.)There are also eight large eggs for richness as well as  three quarters of a cup of heavy cream or two and three quarters cups of  half and half . Shallots and sage give it a burst of green along with flavor.Yes there is a cheese. Ms Calrk adds in three quarters of a cup fo Parmesan and two cups of shreded mozzarella. There is no meat in this. You can add red pepper flakes for some bite.Stratas require bread and there is a  cubed French bagutte , added for testure and flavor. The mushrooms, and shallots are cooked first . The liquids are mixed together  with the veggies being added to it. The last is the bread cubes and the whole batter is poured into a prepared pan to be baked at 350 degrees Farenheit for an hour. It's then set under the broiler for a few minutes for a crispy top,

Start 2023 with new recipes. They could be for an elegant dinner , a cozy supper or a restorative brunch. All are perfect with their flavors.

Your 2023 Food Trends

 It's always fun to predict what's going to be hot and trendy in the New Year. What will 2023 bring foodwise? Will there be a hot new flavor? Or a new fusion cuisine that everyoine will rave about? There are some definite predictions that we'll br seeing a lot of in the next twelve months.

Regular contributor Kim Severson pondered this and investigated it in todays New York Times Food section. She interviewed the best food forecasters and waded through dozens of reports and news releases. Some predictions seem grim thanks to external forces like inflation, climate change and globalism. what trends willt hese give birth to? According to Jennifer Zigler, a food an drink director for the global market research group Mintel,, simplicity , versatility escapism and resourcefulness. There will be high end Jell-o shots, , bright naturally colored fare and packaging reminiscent of the Seventies.What will be the ultimate flavor of the year? Surprisingly brine. fresh bracing marine flavors are what our palates will be craving. There will be coastal cocktails garnished with crab claws and oysters.Actor Dan Levy and host of "The Big Brunch"  is making Clamato juice hot again. Another food trend is the ube a slightly nutty vanilla scented purple yam from the Philippines.It will be  in everything from waffles to pina coladas. There is also going to be a snack of 2023 too.It's the crunchy , yummy chicken skins. They're gracing nachos and on their own.Chefs are using every part of the chicken  thanks to rising costs. we also may be sharing food more too ,thanks to spending years apart. 

There is even a food word of the year.It's regenivore , meaning  a person who wants food from companies who are actively healing the planet through carbon reducing agriculture, more rigorous  animal welfare policies and equitable treatment of people who grow and process food. Also look for more packaging that reduces waste.Chefs will use more climate hero foods like teff and lupin beans. There's also going to be a lot fo thrift. There will be no shame in coupon clipping. Rising energy costs will find home chefs using their air fryers, microwaves and electric kettles.Private label supermarkets will also be offering shorter menus and more value. Japanese cuisine will be shining in the New Year. other cuisines will be more Japanese adjacent  meaning that chefs of that descent will be using flavors and techniques in foods that they grew up with. Kimika in New York is a prime example , marrying Italian and Japanese cuisines together. West African food is going to be popular too  with suya ,a three spice flavoring becoming popularSpace food will be seen on the menu in 2023 too. Tang makes a big comeback as does free dried ice cream. even Coke comes out with a space flavored drink (think lime).

Will these trends stick til December of next year. It's hard to say. Some stay . Sone don't. Just embrace  them and enjoy their flavors .

Rice Plus Anything And Everything

 O ne of the easiest meals to make right now is rice.It's a filling comfort food that can be mixed with anything and eveything. You can mix it with fresh or leftover ingredients.

Instant rice is the best kind to work with , especially if you're a novice home chef.It 's a quick cook and also lower in carbs and calories if you're actually watching your weight right now. You could go for brown rice for a healthier alternative. Keep in mind that that flavor is slightly nutty flavor that may overpower more delicate flavors and spices. The same thing with basmati rice which has a nutty, spicy and sometimes floral flavor.The second question is what do you boil it in? water works the best but if you do want more flavor then thinl any kind of broth, from beef, to chicken to vegetable. This on it's own is a good and easy lunch or dinner. Add some butter and Parmesan and it'a great instant meal.Another good aspect of rice is that you can make two cups just for yourself our five or six for a family meal. It all dpeends on what you use the rice for. A cup is great in leftover soup but if you're making  a dinner, with gresh ingrdients, then use five to six cups.Just gauge it/

What can  you add to rice? Sauteed veggies are good. Think onions, broccoli and mushrooms sauteed in garlic and olive oil. It's a refreshing version of fried rice and made vegetarian by the addition of all these different veggies. You can also add some sliced carrots and peas too. If you want to make it heartier add some chicken , beef or shrimp. These can be sauteed separately or with the veggies themselves. Leftovers like ham or turkey can also be added to any rice dish for a satisfying lunch or dinner. You can add leftover  gravy to moisten it and also give it more flavor.  Repurposed leftovers like cubed sweet ptoatoes, and green beans can be added  if you want or jsut make a stand alone rice dish with these for a tasty side.  Aspicy dish is good on a cold night. You can make a Spanish or Tex-Mex version with the addition of chili or some hot peppers.Add a dash of chili powder and a small can of tomato sauce along with a dash of cumin. If you want toss in  some cooked crumbled beef or shredded chicken for a kind of enchilada feel.

A bowl of rice is satisfying. It's also versatile. Make it anyway you want, with favorite veggies and meats.

Easy Cooking Days

 The week between Christmas and New year's should be an easy one.This includes cooking. eveything should be a snap. Easy to cook and easy to eat.

I felt this way after two days of heavy cookiing. I just wanted something simple to make with what ever was in the refrigerator. I had the Lucenre egg whites left over from cookie baking. I had spinach. Why not makeone of my favorites - a spinach scramble.

It's just mixing half a carton with a bowl of baby spinach leaves. I cooked it in Melt for a lovely buttery flavor. It's not elaborate.It cooks quickly in only minutes. Of course I had to have bacon.

A few slices of  Morningstar Farms bacon completes it. 

This was easy  cooking at it's best. No fuss, no triumverate of air fryer  microwave and stove going for hours. No army of pots pans, or dishes to contend with afterwards/It was filling and fun comfort food.

This is the week for simple cooks.. Don't sweat it . make your favorite no fuss no muss dishes. Treat yourself to some easy comfort food.

Cookie Making Part Two The Icing

 What makes a Christmas cookie cute? How it's artfully decoarated. However it does take skill and patience, along with a solid icing.

That's what I thought I had when I was all set to decorate these, those sugar cookies that I baked from a Wilton recipe.

I was more than excited to use my Wilton's squeeze bottle icings
These have to be heated in the microwave every fifteen seconds to get the icing more pourable


. It worked with the white and with the green somewhat. The red was another story. It was very runny and dripped off the cookies.

To be honest it was hard to work with the icings. They could be drippy or like paste. I used a small plastic knife to flood in the Santa and snowmen hats with the thin red icing.
As for the Chrsitmas lights I just filled those in with a squiggle of any of the three colors and white icing at the bottom to simulate the screw in. 

It took a while and several microwave heatings to decoarate all thirty  cookies. I was very lucky to have my three tier cookie rack from Wilton to put them. The cookies needed air so they icing could dry properly.

The icing set pretty nicely and adds a lemony flavor to the cookies. They look cute and are fun to eat. I just need more practice for my next batch.

What is a Christmas cookie without icing? Just a cookie. It needs a zing like Wilton's icing to give it some zing and oomph!

Christmas Cookies Part OneThe Making

 What is Christmas without festive cookies? That's what many are thinking as bakers of all levels pursue th tradition of making a plate. I went into the cookie fray  -

I wanted to use my new cookie cutters from Wilton . And what better than using them on WIlton cookie dough.

This is not a dough for the faint hearted.
Since I also bake vegan I had to sub in Melt for butter and used Lucerne egg whites for the egg. The rest is basic cookie dough. It does have to be mixed in two bowls. First i'ts reaming two sticks of butter with a cup of granulated sugar and one egg. Also three and a quarter cups of flour is sifted with a teaspoon of baking powder and a quarter teaspoon of salt.The flour is added to the mix one cup at a time until a sticky ball is formed. It's then dividing it into two rectangular loaves

Here comes the fun part  - rolling it out. This was a dough to be reckoned with. The rolling pin and table had to be floured over a few times


It's rolling it out to a twleve inch circle, (More square in my case) and 1/8th of an inch thick (more like half an inch in my case). It's then using the floured cutters to cut out the shapes

Thye look anemic and it took twenty minutes to bake as opposed to the usual eight to ten minutes
 This is them baked. The yield is around thirty. The dough became flaky and crumbly after four or five rolling out and it was impossible to cut shapes.

You can see how it got crumbly and how it sticks to the rolling pin despite all the flour used.

                                 This is the entire batch , waiting to be iced .I did do a taste test and it is a very pleasant almond flavor

Tomorrow will be the finishing touches to turn them into holiday gems. They will be transformed into multicolored holiday treats. There are Santas, snowmen and lights waiting to be decorated.

It's Panettone Season

 They're everywhere. In stores. Gracing bakery windows. On every Nonna's holiday table. What are these popular holiday treats?Panettone or panetung if you grew up in a Piedmontese household.

Regular contributor Julia Moskin wrote about thos beloved and historic bread in today's New YorkTimes Food section. This traditionally Northern Italian treat has become a global moneymaker with all sorts of variation over the world. The standard which originated in fifteenth Century Milan is a domed sweet bread with a golden crumb. scented and stidded with sugared fruit.It's in the same family as German stollen,Polish chalka and British fruitcake.It was made with expensive ingredients like eggs and butter, refined flour and sugar, spices from Asia and preserved fruit from the Mediterranean.Later on bits of chocolate were added and regional ingredients such as lemon from the Amalfi coast and hazelnuts from Piemonte. As Italy unified panettone became the national symbol of Christmas.It was beribboned and wrapped in fancy paper. However thanks to commercial baking the bread lost some of its' famed luster.They became dry and flat tasting thanks to cheaper ingredients like candied squash (!!!) and milk powder.

Luckily there is a renaissance of sort for the treat.There are more artigianle ones being made as opposed to industriali, that is it's going back to it's hand wrought origins instead of being mass produced.There's also the threat of outside sources such as  Peruvians, Argentinian and Brazilian producers like Bauducco and D'Onofrio where Northern Italian immigrants settled in the late 19th Century (especially in Argentina). The other problem is that panetoone from MIlan is protected like San Marzano tomatoes or prosciutto from Bologna. Luigi Biasetto, a top baker in Padua is leading an effort to have the bread declared as part of the world's cultural heritage.It is a difficult bread to create. Two separate doughs are required, each a challenging mix of high gluten flour. The first dough is slowly fermented to a specific level of acidity which takes twelve to twenty four hours, depending on microbial activity.It requires constant monitoring of temperature and humidity. rich ingredients , much like during panettone's early days are being added in. Gucci (yes Gucci) and Fornasetti are adding Belgian centrifuged butter and pure Madagascar vanilla. The king of panettone Ray Schvartzapel creates a more bready one  with cherries and pistacchios. There are even World Cup style panettone competitions.

Panetoone is such a cherished holiday treat. You can spend a lot or a little on it. Every slice is a wonderful bite into tradition.

Brisket For The Holidays

 Whether it's Christmas or Hannukah , brisket is the meat to serve.It;s' tasty and can be prepared a number of different ways. Another plus is that it's great for sandwiches the day  after.

What is brisket exactly first of all?It's a large cut of meat from the breast or lower chest of the cow.It is one of the nine beef primal cuts and one of the four main barbecue meats.It's relatively a tough cut because the animal works for moving. You can easily buy it at your grocery store but you'll get a better cut at your butcher's. The best way to soften the meat is slow cooking which breaks down the meat's fibers.If you want to make it for one of the nights then think of cooking it with brown sugar, tomatoes and red wine vinegar for a tangy sweet and sour bite. Serve with carrots and potatoes to round it out. You can also cook the meat first and them create a sauce to pour over it (which also would be good for hot leftovers the next day). Can you oven cook it? Yes! Rub it first with salt and pepper (or any rub).Doing this will create a craggy, crunchy crust that's a crowd pleaser. Then it's cooking it low and slow over night in the oven for twelve to eighteen hours. Keep the temp at 250 degrees farenheit.if it higher it will dry out the brisket and toughen it.Tent it with tinfoil for a tender bite and then leave it uncovered for the last three hours.

Brisket makes a wonderful alternative to ham and turkey for Christmas. Shake it up some by first rubbing it with a mix of garlic, onion and chili powders blended with Cajun seasoning and a teaspoon of liquid smoke.The spices are rubbed on the lean side of the flank and then sprinkle on the liquid smoke. Tightly wrap the brisket in Saran wrap and refrigerate overnight.  While this it chilling make the sauce. Take half an onion and two to three garlic cloves and mix with A1 steak sauce, liquid smoke and Worcester sauce. Add thyme, Cajun spices and cayenne pepper for more spice. This sauce is poured over th e meat and everything is cooked for  six hours.  (You will have to get up super early on Christmas morning if you want it done by one PM) save the pan drippings and cook for ten minutes in a sauce pan over a low flame.  What to serve with this.Roasted sweet potatoes would be good, especially if you serve it with a whipped cinnamon honey butter. Another tasty side is a tangy green bean salad, a change up from the traditional casserole.

Brisket is perfect for either Hannukah or Christmas.The cut is perfect for a family dinner or party. Try it at your holiday gatherings.

Are You Christmas Ready

 The big day is a week away. Are you ready for that day tha'ts not only known for gift giving but major cooking. Are you all set for that second or third batch of Christmas cookies?

To be honest it's tough to find good deals. Few groceries are offering discounts on such Christmas staples as ham and turkey. If you haven't bought yours yet, then think about going to Aldi or LIDL for a discount.The next question is what to serve with it. Ham is a bit easier, You could easily go German style and have potato salad and baked beans. As for the turkey , you could do a rehash of Thanksgiivng and have stuffing along with cranberry jelly and green bean casserole. If you're going this route decide if you want to use Stove Stop stuffing - which is easier - or homemade stuffing which is more labor intensive. For vegans and vegetarian have you bought you tofurkey or tofu loaf yet? These are becoming arder and harder to find on store shelves.Have a Plan B on the ready. Keep in mind you can create a festive loaf using Beyond Meat and then serving it with a mushroom gravy. Another Plan B meal is Gardein's Turkey Cutlets with gravy. These taste like the real thing and have gravy with them. Buy a few packages of these (there are four cutlets per package) for your dinner.

Have you started on your baking? What about what to serve after  Christmas dinner? Luckily there are some small deals on baking ingredients so take advantage of these. Do you have enough flour for all those batches? What about the other baking basics like eggs and sugar? Buy two dozen eggs if you feel you'll need a lot for baking cookies and cakes. Sugar,  like flour , goes fast. Buy a four pound bag instead of a two pound (you can always use the extra for every day coffee and tea. Do you have enough confectioners sugar. That too goes fast, thanks to it being turned into butter cream and royal icings. Another must check are deocorations. Do you have enough food coloring in both liquid and gel. Remember that some icing recipes work better with colored gels than liquid dye. Are there enough sprinkles and sanding sugar? Now is the time to stock up before you actually start baking and decorating. what about that Christmas dessert? do you want to go with a fancy cake like a red velvet or a trifle. The second is an  easy and fun boozy mix of a cake like pound cake layered with pudding, cream and fruit. You can douse it with rum for even more kick. 

Are you Christmas ready? This is the week to make it so. It's not too late to plan a sumptuous Christmas feast followed by a lush dessert.

Congo Plaintains - The Perfect Holiday Snack

 Thunk Congo Plantain chips when you want something different and tasrty for your holiday party. These fun chips are a nice change up from the usual holiday party bowl fare. There are three different type that  are fun to mix with theother flavors.

I LOVE these chips!!!! I'm a big plantain fan and these are far better than any regular potato chip. They're really a first for Congo a food company that sells such exotic fresh fruit as fresh plaintains,. dragon fruit (!) and cassavas. They also sell coconut water in a coconut with a straw (somehow perfect for ringing in the New Year!)dark chocolate and coffee.

It's the chips that stand out (although I do want to try their chocolate, coffee and cassava) . There are three types, the salted which has a slightly potato tastes. Then their are the maduros or  fried ripe ned ones that have a sweeter flavor (TRy this with ice cream ro in a trifle for an exotic taste)and a garlic flavor that's sooo addictuve.Keep in mind that plantains are rich in potassium and fiber. They're great energy boosters and another plus during these times - low in cholesterol. 

Have Congo Plantain Chips in your party bowl this holiday season. They're a great addition to any gathering. They're also jst a great snack on their own. Try them for something tasty and different.

Candy Treats

 Onr of the best aspects and even gifts of the holidays is hoemmade . As easy as it is to eat, it's tricky to make. Luckily there's help to guide you through in making the three most popular - fudge, caramel and nougat.

Regular contribtur and baking cookbook author , Claire Saffritz wrote about these goodies in yesterday's New York Times Food section.For any of these candies she strongly recommnends a candy thermometer, along with a heavy saucepan that won't cause scorched candy and a kitchen scale for exact measuring. The first and easiest recipe is fudge.Hers is a rich blend of cocoa powder and dark chocolate chips, butter and whole milk. There's also corn syrup and honey along with granulated sugar, vanilla extract and salt. Home confectioners must cook the fudge into "soft ball "phase, meaning the candy forms a soft ball when dropped into water. The mixture should be cooked at 235 degrees Farenheit and stirred constantly. The sugars and cocoas are first  cooked separately  and then combined. .Once the fudge hits the soft ball phase then take it off the heat and poured in a pan lined with parchment paper and cooking spray. It'll keep up to a month.

Caramels start with sugar, cream and butter . Ms. Saffitz also infuses the cream with coffee to counteract all that sweetness.Unlike with the fudge, don't stir the mixture and wash down the saucepan walls with a wet pastry sauce to avoid any crystallization.It's cooked until the hard ball stage which is putting a good drop of the mixture into cold water and seeing to become a hardy chewy ball. The hardest candy to create is nougat. It's an eleaborate mix fo egg whites, sugar and nuts. The pistacchios are toasted first then the egg whites salt and sugar are whipped in a stand mixing bowl (think meringue) After this heat the corn syrup, sugar and water together . Cooked honey is also added in and hotne finally the meringue mixture , This really is a two person venture with one mixing the egg white while the other watches and stirs the syrup. This last is added to the mix and it's beaten until the nougat is voluminous. The nuts are then added and the candy is poured into a parchment paper lined pan to set. Let it set for six hours to overnight before cutting into squares.

There's nothing like the sweet treat of candy as a gift. It's a great present, full of homemade ingredients and careful cooking. Make a batch of fudge , caramel or nougat for your holiday sweetie.

The Delicious Best

 There are a lot of lists right now , extolling the best of this year. From best cars to best actors everything is being ranked.Ot's no different with food. The year produces favorite recipes and dishes. What are the best?

The New YorkTimes Food section asked the same question and came up with an interesting list in today's issue. There are four catagories, one featuring top restaurants and dishes,most popular recipes, standout cookbooks and memorable wines. what were the hottest eateries and dishes? The restaurants were all Manhattan based ,Yoshino was voted one of the best with its' French food ideas woven into traditional Japanese dishes. There is a vichysoisse filled with hairy crab and a heap of ostera cavier on it. He takes tamago, a sweet egg omelet and puts burnt sugar on it like a creme brule. Claud offers FRench bistro cuisine with escargots  refashioned into buttery panko crumbed croquettes. The indivudual dishes are heavenly too such as the rice balls at Cafe Spaghetti and the quenelle de brochat at Le Gratin. There were also budget bites such as the Rowdy Rooster that features a mashed potato sandwich (!!) and Sanmiwigo's Dumpling House withtheir variety of their dumplings. The recipes are just as tasty. Home chefs should try brothy Thai curry with silken tofu and herbs or Greek chicken with cucumber feta salad. There's also a good stuffing recipe and a sticky coconut and rice.

What were the best cookbooks fo this year? There are so many to choose from. If you;'re big on barbecue then buy Kevin Bludsos with Kevin Noah's Bludsos BBQ Cookbook: A Family Affair In Smoke and Soul. A Healthy Christmas Feast

 This is the season for tasty treats and bad choices. We tend to eat too many fatty , salty , cured and sweet foods. Yet those party nibbles to Christmas cookies can be made healthy. It's have fun while eating better.

Hosts are all over the charcuterie board. Who doesn't love salami and cheese yet there  are better alternatives.What about a veggie board? This can be fun and colorful.Cut veggies in long pieces which are perfect for dipping. Yes, you have to have celery.It's crunchy and great with any low calorie dip. Also have three kinds of bell peppers, yellow, red and green for a rainbow effect . Broccoli and cauliflower florets are musts too. There can be tomatoes, Cut the bigger ones up into wedges. Add some olives and artichoke hearts too. what about the dips.Hummus can be fun but also think a low calorie Greek yogurt  spiced up with some garlic and onion powders. You can also make a simple vinaigrette with red wine vinegar and a good olive oil. Add some thyme and oregano for more flavor. What to do about latkes for Hanukkah? They can still have that crispy fried crunch and rich flavor. Just air fry them instead of deep frying and use just egg whites instead of the whole egg. You could also use Just Egg as well which is a very good egg sub in.

Christmas dinner is another lush eating experiences. There's usually a glazed ham or a butter rubbed turkey on the table.Instead of a sugary coating on the ham, think a simple one made with  a low sodium veggie broth. Bast e it with this every twenty to thirty minutes. As for that butter rubbed turkey, think a plant based butter like Melt which will still give it a nice browned skin. Another idea is serving  fish like salmon.Try a soy and garlic glazed one for a healthy and different spin on your holiday dinner. For sides, think a healthy hot broccoli salad along with sliced carrots. Desserts can be healthy and good for you too. Since it's orange season think about air frying them for a different kind of dessert.It's slicing the oranges in half and first spraying them with some kind of cooking spray. The butter flavoreed one would work well here. Then brush the tops with honey and cinnamon. Air fry them for eight minutes at 360 degrees Farenheit. If you want cookies a healthy gingerbread fills the bill. Use more spices than sugar for a lovely Christmas flavor along with whole wheat flour and a plant butter like Melt. Sprinkle with brown sugar if you want them to have some crunch.

Healthy holiday eating can be just as flavorful as the fat and sugar laced recipes. They offer a better alternative. Try them for a good for you Christmas and Hanukkah dinners and desserts..

NIgella's Chocolate Christmas Cookies

 Nigella Lawson is a worldwide respected cook and cookbook author. You'd think her recipes were perfect. Unfortunately that was not the case with her chocolate Christmas cookies.

I had high hopes for this recipe. It came to me in her daily newsletter. It looked simple and yummy. 

These are some of the ingredients along with my new super big cookie spatula from Wilton. It was an easy enough recipe.I followed it to the letter.They're a chocolate shortbread, made with two and a quarter sticks of butter, two cups of flour , 1/3 cup of unsweetened cocoa and1/2 teaspoon baking soda and one teaspoon baking powder.  I made them vegan and I wonder if this could have been the factor in them not turning out the way they recipe had them?

I used my beloved Melt plant butter , not thinking that it would make a difference but maybe the cookies needed animal fat to get that finished cracked look.

                                                       The dough looked OK, when I was making it.

The texture was how she described it , slightly sticky. I took off walnut sized pieces of dough , roilled them and then flattened them.
To me they baked , well- OK  Maybe I made them too big -  my fault , maybe they needed more time in the oven .

The tasted pretty perfect - sort of like Nabisco's once famed chocollate snap cookies. It was time to make the e icing for them.

 This was a mix of confectioner's sugar, cocoa powder and vanilla  cooked with already boiled water.


It was supposed to be a thick glaze with two tablespoons of the cocoa, 1 and a half cups of the confectioner's sugar and a teaspoon of vanilla extract mixed with 1/4 boiling water. It turned out to be a chocolate syrup.

It was a runny mess on the cookies. however I now have the recipe for a great homemade chocolate syrup(which was mixed with Bubly strawberry seltzer and almond milk for an over the top strawberry egg cream. YUM!!!!)

This is the end result.A syrupy mess that slid off the cookies and puddled underneath them.The Wilton decorations just rolled off. Some hardier ones stayed , fortunately.


And a day later 

It's funny I followed everything to the letter and they came out wrong. Tasty but wrong. 


Is it worth following  a Nigella Lawson recipe again? It's an iffy answer. 

I think I'll stick with American recipes now instead of going with the British - sorry to say.

Holiday Decorations

What's Christmas cookies ,cakes and cupcakes without decorations? They turn ordinary baked goods into works of true art. Yet which route do you go? Homemade or store bought? You could try a little of both.

One of my favorites is Wilton. I LOVE this company! They carry everything from pans and spatulas to melts and fondants.Yet it's their icings and sprinkles that are perfection. I already have my bottles of easy squeeze bottles for cookie decorating. (which you'll see in another week)

                                    I got the basic Christmas colors of red and green along with white.

     I can;t wait to start baking and decorating. This will be used on the classic sugar cookie. I may already start with an aquafaba (chickpea brine) royal icing.ust mix it with water, lemon juice or cream of tartar along with a pound of confectioner's sugar. white gel food coloring is added for brightness. I still haven't decided on the flavoring yet. Maybe I''l try orange extract for half the icing while flavoring the other half with lemon extract

 For my gingerbread iced cupcakes I will use Wilton's gingerbread sprinkles, which are actually gingerbread crumbs and for my take on Nigella Lawson's  decorated chocolate shortbread (Monday's treat) I will use the red, green and white holiday sprinkles.
Both can also be used on cakes and gingerbread constructions too for a festive look.

Get decorating!!!!! Ice those cookies and cakes. Put a puff of frosting on those cupcakes. Create pretty designs for your holiday baked treats.

Different Kinds Of Bakers

 There's no doubt that this is baking season. There are many sorts of home bakers out there. The traditional, the health conscious and the vegan. The question is what kind are you.

A traditional baker will use  traditional ingredients. They're not going to worry about gluten, fat or aninal products. They're full on going to use  refined flours and sugar along with a rich amount of butter and eggs to make the best cakes and cookies. If your;'e this kind of baker then think of fun cupcakes. Start with a basic cake recipe and then go from there. Tint a buttercream icing green and pipe it into triangles on top of each cupcake for a Christmas tree. Add mini M&M's and holiday sprinkles. You can also try fruitcake in the form of cupcakes. This is riff on the tradtional recipe.It's made with basically the same ingredients, especially the different spices , rum and fruits. Theicing is an almond marzipan one. Keep in mind this is a boozy treat reserved for only adults. As for cookies traditonal bakers go for one loaded with sugar. The prettiest ones are the spritzes , made with a cookie gun. The recipe is a whole cup of butter which gives them that shortbread taste and feel.  They can be decorated with everything from sanding sugar to sprinkles. Of course chocolate chip cookies are on the must bake list. Make them even more lush with giant chocolate chips.

What happens if you want to be a healthy baker? This is where healthy and vegan intercept. The two sorts won't use real dairy. This is where plant butters like Melt come in. This tastes like the real thing and is great for cookies. Melt is good for baking only and not for creating fluffy frostings.. It can come off as runny, with the icing slipping off the cake's surface. Use Miyokos Plant Butter or Earth Balance for a stiffer , firmer topping instead.Many home bakers are flummoxed when it comes to omitting eggs. Not to worry.Many vegan home bakers incorporate Just Egg in their cooking and baking. This egg substitute is primarily made from mung beans and canola oil. Three tablespoons equal one egg and can easily be subbed in. You can also use the powdered Vegg egg substitute. This also works OK in baking. Other egg replacements are applesauce and flaxseed. Nut milks are usd too, to replace dairy . Almond milk works the best because it has the best consistency. what about that all important ingredient sugar? Stevia and agave syrup work just as well as the refined white stuff. Also try maple syrup or honey too. Both give  a warm earthy flavor  to baked goods.

You cna create tasty treats whether your a traditional, healthy ot vegan baker. There are all sorts of recipes out there. Use them for a fun holiday table full of delicious cookies and cakes.

A Buffet Of Party Nibbles

 This is the season to party. It's time to welcome back guests with festive and delicious bites for a festive and delicious times. What to serve? There's a guide that will help you.

Regular contributor Ali Slagle wropte up a great guide with all sorts of recipes in yesterday's New York Times Food section.She offers several different categories , from dips and spreads to cocktail snack mixes and one bite wonders. There's also boards and bowls that are great if you have hungry guests or ones with big appetites, along with crackers and chips.Pick one or two from each category for a varied and flavorful party menu. The dips are wonderful combinations of something creamy mixed in with salty or sweet. Forget the traditional onion and sour cream. Try molten feta with nuts. This is a dreamy mix of oven warmed feta covered with such nuts as hazelnuts, walnuts or almonds. Olive oil and honey is also drizzled on top along with thyme.serve this with charred pita wedges. A stand out and unusual dip os the one made with  charred tangerines.It's  first taking  olive oil, honey, thyme and pepper flakes and simmering them together. The tangerine slices are added and cooked until charred. They're then stirred in the oil and served on baguettes with ricotta cheese. Of course there have to be party nibbles The  easily made crunchy ove roasted chickpeas with za'atar sounds like a great nibble along with the caci e pepe popcorn. This is just tossing warm popcorn with Parmesan and black pepper.

There also the one bite wonders that woudl even make a great appetizer to a Christmas dinner. Stuff olives with havily herbed raisins. You can also try them with blue ro goat cheese , anchovies , almonds or garlic cloves. A perfect antepasto is pear wedges with prosciutto for a take on the classic dish with melon. A really lush nibble is caviar potaot chips with lemon cream. This is a contribution from another Food section writer , Melissa Clark, This is stirring lemon zest into creme fraiche and then layering it and caviar on potato chips.Boards are very popular and you can easily go with the classic charcuterie one. Add pate, smoked fish such as salmon, along with such new additions as dates  and guava paste. If you want simple then copy one of Manhattan's oldest bars. McSorley's first founded in the 1880's Put out a plate of sliced white Cheddar with Saltines, spicy brown mustard and sliced white onion. You could fry the crackers in butter like Gabrielle Hamilton. Every party should have a bowl of chips. Try the latest Korean craze honey butter potato chips. Mix butter with honey and then top a chip with it. You could also melt it and dip the chips in the m Bake them at 300 degrees Farenheit for ten minutes. You could also do the same wirh Italian cold cuts like prosciutto, pepperoni or pepperoni.

The perfect party should have the perfect nibbles. Try any of these or other mentioned in the guide. They're fun bites for you and your guests.

The Versatile Shortbread Recipe

 One cookie is a Christmas baking must - shortbread,This Scottish classic is a tasty nibble, full of buttery goodness. What makes it even better is that the recipe is versatile. Yiu can add other ingredients to make it different and even savory. it's an amazing recipe in any home baker's arsenal.

Regular contributor , food stylist and chef Yewande Komolafe wrote about this delcious bite in today's new York Times Food section. She gives the basic recipe and six variations incluiding the hot recipe this season, the savory shortbread. This article is a keeper and perfect for those holiday parties and cookie exchanges. The basic remedy is a blend of two cups of unsalted butter which gives the dough its' rich flavor and deep golden color along with five cups of flour, two cups of sugar , two large egg yolks and two teaspons of kosher salt such as Diamond Crystal. You can double or triple the recipe if you want to make three of the recipes. The first one is a fancy but simple one. It's taking the crumbled shortbread dough and rolling it into logs.each log surface is brush with egg white and then rolled into colored sugar spread out on a sheet of parchment paper. They're then sliced and baked at 350 degrees Farenheit for twenty two minutes. This is a good way of using red and green for a festive, fancy cookie.A different spin is spiced chocolate marbled shortbread. This is a yummy mix of the two flavors enhanced with ginger and citrus zest.

Shortbread can also be the base of bars and rounds. Chef Komolafe has a great recipe for strawberry jam bars with cardamom. This is taking the shortbread dough and first adding cardamon to it. The dough is sep

arated.One half will be pressed into a cookie pan while the other is refrigerated. Any kind of fruit jam  like strawberry or raspberry is layered on to it . It's then topped off lemon zest  chopped nuts like almonds, walnuts or pistacchios. The reserved dough is crumblred on top of this and it's then baked for thirty five minutes. It's then cooled for half an hour and dusted with confectioner's sugar. Another yummy treat peppermint patty shortbreads. This is using the recipe as a base and topping it off with mounds of homemade marshmallow and homemade chocolate ganache. Crushed pepper mint candy decorates it.It's a labor intensive recipe with the mounds resembling that cookie classic Pinwheels, but so worth it. An easier recipe is the shortbread combined with salted caramel and peanut butter. The unicorn in all of this is the savory shortbread.Chives, black pepper and cheddar are added and the dough is cut into strips..They're bent and then baked. Imagine these topped with egg salad or devilled ham.

Shortbread is the most versatile of all the cookie doughs. Try it in it's classic style, savory or mixed with other ingredients. All are delicious.

Themed Christmases Part Two

Yesterday the holiday cuisines of Britain , Australia and Jamaica were explored for a themed Christmas dinner. Now it's time to get other ideas for a holiday meal, complete with after dinner treats. They're tasty and fun, perfect for celebrating. 

One of the most delicious palates is the French. True French cuisine derives from Catherine de Medici's  Northern Italian influence on her husband's Henri II's  court. Canapes, small slices of toasts or puffed patry are topped with such Gallic treats as charcuterie slices and dabs of Brie and Gruyere. Escargot in a garlicky butter sauce and foie gras follow howevr if these are too much then think of a comforting chestnut soup. This is a mix of pureed , boiled chestnuts , whole cream and vegetable stock, spiced with a bay leaf. The main course varies according to region. The Perogord region in central France prefer a roast duck while most of the country love a good roast ham. France is known for one of the most famous Christmas desserts - Bpouche de Noel or Christmas log. This is a delicous marriage of flourless chocolate cake or sponge to a chocolate whipped cream topping. Make it more foresty with marzipan mushrooms and a trail of cranberries on the plate. Greek Christmas tradtions are steeped in centuries of tradition. You could easily make their braised lamb shanks with a tangy feta and anchovy laced salad. The Greek Christmas cookie kourambiethes are sheer heaven in every bite.These are buttery balls liberally dusted with powdered sugar.

If you want a "meat" themed holiday dinner then think Argentina. The best beef in the world comes from this interesting South American country. enjoy a good grilled slab of beef wtih chimichurri or salsa verde. They also have a heavy Piedmontese influence (Pope Francis is one such Argentinian with roots near San Maurizio Canovese). The meal is a Piedmontese classic with veal in a tuna and anchovy sauce. It's called viteela al tonno and it would even make a great New Year's day dinner. enjoy it with a gplass of anana fizz, a heady mix of cider or sparkling wine  and pinrapple juice. This comes bottled but you can make your own version with pineapple juice , and sprakling wine. Finish with a pan dulce or panetone, This is great end to a dinner and a good evening snack too. Now you cn get it with chocolate chips for an even tastier bite.Another warm weather country with a Christmas bounty is Nigeria. You could start off with beef or a roast chicken served with a tasty side of jollof rice. Make your version with tomato and curry with cooked long grain rice. Ginger, green peppers and onions are also added for a flavorful mix.Dessert is a coconut patty made with flaked coconut and powdered sugar.

A themed Christmas dinner is a fun trip around the world. Have one country or mix it up with two or three. The end result will be a tasty and memorable meal.

Themed Christmases Part One

Are you dreading a boring Christmas dinner? Then think beyond the usual fare. Have a themed holidsy dinner with different foods from around the world. It's a fun chamge up that's even more exciting than those Christmas gifts.

Most people would choose an English style holiday meal thanks to Charles Dickens' "A Christmas Carol". The 1843 ghost and redemption story hints at a great feast of turkey and steamed pudding and it can easily be replicated here. In fact their holiday meal was probably the basic for our Thanksgiving. Along with the bird there is stuffing, gravy , brussels srpouts and cranberry sauce. You could give it a Northern English falvro by subbing in Yorkshire pudding a savory whole pan popover for the stuffing. You could also serve a great joint of roast beef too instead of the turkey. The steamed pudding which is actually a cake is really the star of the whole meal. This dessert is really a steamed cake made with the usual batter ingredients of eggs, flour milk and sugar along with vanilla for flavoring. It;s poured in a large parchment paper line bowl which itself is placed into a sauce pan halfway filled with water. It's then steamed for two hours , Afterwards its' inverted upside down and is covered with brandy and a sprig of holly.The pudding is set afire and served flaming to the table. Custard or ice cream is usually served with it.

Another idea  and this depends where you are is the Australian Christmas barbecue. The Aussies go wild with the grill  since the holiday falls at the beigninng of summer Down Under. It's bring out the burgers and dogs along with chicken kebobs and shrimp. Cold oysters are another treat if you want to be authentic. They also make a potato gratin or scalloped potatoes,This dish is good even with any kind of Christmas main course. It's layering sliced potatoes with butter, cheese and cream and topping it off with crunchy bread crumbs or even crushed potato chips. WHat to finish off a big summer meal ? A fruit trifle is a popular choice.It's layers of any kind of fruit, gelatin or custard and fresh whipped cream. If you're really ambitious try the Pavlova, named for the early Twentieth Century Russian ballerina Anna Pavlova.  This layered cake of meringue, again fresh whipped and usually strawberries is a light and airy showstopper. Another warm weather Christmas meal is a Jamaican one. The main course is ham while the sides are a fun baked mac and cheese along with a fresh salad. Dessert is a yummy sweet potato pudding which is the crustless version of the pie.

These are just the beginning of an iinternational Christmas. Pick one and run with it. You can have fun with a traditional meal or a summery barbecue. Go wild. It's Christmas.

Cookies Cookies Everywhere!

 This is the time of year that home chefs start looking at cookie and treat recipes . There are so many? what to choose. Do you go with a variation of one recipe?Or go across the board with a wide array of different ones.

That's the dilemma I'm facing right now. My plan is gifting family and friends with tins of homemade treats. The question is what to put in them.I  am planning on baking two or three sugar free versions of such classics as shortbread and brownies for diabetic friends. Baking such is going to require sugar substitutes like Splenda which I'm not happy with using. I'd rather go for the all natural Stevia and I have  been looking into recipes for cookies requiring it.From there  its on to the traditional ones. I know I want to make the rolled out sugar cookie ones that require royal icing. As for the royal icing, the traditonal recipe calls for egg white as the binder however I'll be using chickpea brine or aquafaba for that. Of course I'd like to make regular shortbread.It's a Scottish holiday tradition where the family initials are fork printed into the dough. Am I going to dip some of the shortbread triangles in chocolate to create my family's classic devil ears (so named by my Mom noticing how our cats' ears flattened and turned into "devil ears " when they hissed at each other). Yes! Shortbread and dark chocolate are the perfect couple so that recipe is a go! Another idea I've been flirting with is savory shortbread. I love this idea of taking the sugar out and putting in  Parmesan and rosemary for flavor. These would be great topped  with a dab of tapanade or cold cuts.

Other cookie ideas that are tempting to try are homemade Oreos.I'm looking at the recipe and thinking it coulbe an easy bake and bake. The filling is a no brainer.It's a vanilla butter cream. The idea of adding a pinch of espresso powder  to it for a different spin sounds good too. Of course my cookie tins will have chocolate chip cookies Again I may change it up by using dark chocolate M&M's instead of the usual chips. This gives the cookies a festive holiday look. Will I try a big chunky chip too? It would be different and there are some friends who love a cookie that's more candy than dough .Oatmeal cookies are always a welcome treat in any cookie tin. I plan on using my Mom's Fannie Farmer Cookbook recipe for lacy oatmeal cookies. They were one of my childhood favorites with the cookies having  a crisp, delicate edge and a warm buttery flavor. Another recipe which I want to try is a moon or whoopie pie. This is more of a cake than a cookie with a dense marshmallow buttercream filling. I think it's a fun change up from the traditional and it would be a different way to end Christmas dinner.

There are cookie recipes everywhere. The question is which to try  -what's in your comfort zone? Pick three or four and stick with them, The result will be a tasty array of holiday treats,

Simple Lunches

 Lunch is often t he meal t hat's overlooked,especially if you're working from home. It's either a smoothie or a cup of yogurt and a drink of some sort to wash it down. Yet' that's not a meal.  A simple lunch can get you through the afternoon.It's a tasty mid day break that's both filling and tasty.

Cold days deserve a hot meal. A simple lunch is an easy canned soup. Gardein and Campbell's Well Yes are perfect for this. Gardfein's has a variety of plant based ones along with chili for a satisfying good for you middday meal. Their  version of Italian wedding soup is just as flavorful as Progresso's which is made wirh beef meatballs and chicken broth. The company also has a really good gumbo too along with beef and chik'n ones that are also loaded with veggies rice or noodles Well yes is going in this vegan vein too. They introduced their version of plant based chicken noodle and rice soups. A true plus about Well Yes is that  they have indiviual  microwavable cups of  soup. This is perfect if you're eating by yourself . For those who want classic then think about Campbell's tomato soup. or chicken noodle Both make for  a fun lunch . especially with a big stack of Saltines. A homemade soup is easy too. Heat smaller sized pasta like orzo or pastina in any kind of broth. Within half an hour there's a delicious hot meal that's soothing and filling.

An easily made hot sandwich is always a good lunch. You couldgo with a simple grilled cheese or the fancier Croque Monsieur. white bread is used but you can also go with whole wheat or even brioche bread. This is buttered liberally on one side. You could use mayo as many home chefs swear by this. as for the cheese most go for the good old fashioned American but if you want some zing then use a sharp, zingy Vermont cheddar.It's then frying it ona griddle or fryer for a few minutes on both sides. For a lusher lunch try the French bistro classic the croque monsieur. This is a yummy  amped up version of grilled cheese complete with an easy Bechamel sauce. Don''t be fooled by the name. The sauce is an easy cook on the stove top, using milk butter and flour. Dijon  mustard and nut meg are added at the end and whisked in. (Keep in mind that the sauce can be made in advance and also the extra is good over any kind of veggie). It's slathered on toasted white bread followed by a layer of ham and shredded Gruyere cheese.  The sandwich is then cooked for about five minutes in a 425 Farenheit degree oven. You can make an air fryer version of this and add the bechamel sauce later.

An easy lunch is easy to make. A hot soup or sandwich fills the bill. They make for a rewarding mid day meal.

Can Fruitcake Ever Be Updated?

 No one really bakes fruitcake for the holidays. It seems relagated to christmasses pasts along with bubble lights and silvery strands of  tinsel. Suppose, though this centuries old classic could be updated. would people want a slice? Yes.

Regular contributor and author of several dessert books, Claire Saffitz posed this question in yesterday's new York Times Food section.fruitcake has been much maligned over the decades with the former late night host Johhny Carson once joking that there was only one fruitcake in existence  that made the rounds  from family to family. everybody in the States grew up on the English version, which has a spicy , molassses flavor and a rich , tender crumbs thanks to a long aging process.It's basted or "fed" with high proof alcohol and then tightly wrapped for weeks or even months. Homemade and commercially baked ones are studded withh those unnaturally colored red and green  glaceed cherries . Sugared pecans usually formed the roof of this creation, Creating a cake of this way was a way of preserving both fruit and cake in  times when there was no refrigeration. The cakes were also coated in jam and then sealed with royal icing  which also helped with keeping it for months and even years.

Luckily Ms. Saffitz's version skips all that. what she presents is a cake batter that has almond paste in it. Adding this will help with keeping the fruitcake moist for one to two weeks.
