Pastina Caci E Pepe

what do you do with leftover pastina?There's a lot you cna do but a tasty variation is caci e pepe.  This is usally made with spaghetti but it can be made with any kind of pasta, from the smallest to the largest.

I had leftover pastaina from lunch. Dinner was going to be a hurried affair . What to do? Add a good blob of Melt plant butter and a good sprinkling of black pepper.

It was then adding two vegan cheeses on top for flavor.I used Vitalife 's mozzarella shreds and Parma vegan cheese.The dish was then cooked for twelve minutes in the microwave.  The end result was a fiery cheesey buttery spoonful of goodness.I linws this although I would add more pepper the next time around. Keep in mind you can do this with any plain leftover pasta. 

Caci and pepe is a nice change up from the usual pasta. Try it with any kind , from pastina to linguine for a different kind of dinner. It's a great way of using leftover pastina too.

Snow Planning

Snow has a way of changing a home chef's plans.What was going to be a day of baking and decorating turned out to be a day of food shopping. Now, instead of testing doneness, it 's planning on what to make for a day in.

That's the problem with weather - any kind during any time of the year. Winter can be the most challenging. I thought I was going to spend the day filling cupcake papers with spice cake batter and melting chocolate for glaze. Instead, I was trolling the aisles of my local Stop & Shop looking for ingredients for two to three days worth of meals.Unfortunately,  there was not much to choose from. People panic when they hear the word snow and dreary news forecasts don't help the matter any. The store was lucky it still had the basics, eggs, milk and bread on the shelves.Home chefs  may still get these basics, but not necessarily what they want or usually buy. Settle for what's left over. If there's no white bread, then choose whole wheat or rye. Rolls and bagels can even stand in for the regular loaf. The family may even like the change.As for eggs., many love the white kind but the brown is just as good.If there are no eggs left, then buy the egg substitutes, They work for omelets  and, scrambled  recipes along with being OK for many recipes.If the store is out of milk, think evaporated. It's a little thicker than regular milk, resembling cream but it still can be used in coffee and tea.

Ironically, it's freezers that can be a home chef's best friend. If you want to have a varied diet during bad weather, then it pays to stock up. Chopped meat is always a good buy because it's versatile. It can be made into everything from hamburgers to chili.Also, buy hot dogs and chicken nuggets for the kids. They'll either be bored and whiny from staying in all day or super hungry from being outside all day.Have steaks and chops for the older kids to enjoy. Pantries should also filled to anticipate days in. Make sure there is plenty of versatile ingredients such as rice and pasta. Rice can go both savory and sweet.Use it for a nice side with chicken breasts or stir fries or as the next.base for a creamy, raisin studded pudding. As for the pasta store several different types. Make a pastina soup one day and a penne or spaghetti the next.Another must have are soup mixes. These feed a large crowd along with having a lot left over for the next day. They also have a more homemade taste than the canned kind, although these are good to have too , for an instant lunch. Baking ingredients are a must too. Nothing keeps the kids occupied than baking cookies or frosting cupcakes. Homemade cake is a nice end to a hearty meal too on a blustery night.

These are the days when there's always a threat of snow. Make sure the kitchen, freezer and pantry are well stocked to anticipate several days indoors. It'll save from experiencing any shortages later on.

Creating The Perfect Pantry

What makes a perfect pantry? Is it canned goods like soup and beans? Dry goods such as flour and baking soda? Jars of this? Containers of that? Not surprisingly it is a manageable blend of  variety of different foods, Have the right amount and you'll never go through a shortage.

Canned goods are always important, especially now in the cold weather. Homemade soup is good but it pays to have several cans of prepared soup. They make a quick lunch or supper and can also be used in a variety of casseroles too. Always have everyone's favorite , from tomato to chicken and stars. Take advantage of sales at the local grocery too. If they have a twofer sale, then definitely get more of them, Packets of soup mixes are a pantry plus. They have the flavor of homemade soup without all the work.  Another pantry must are bouillion cubes. Get all three kinds, chicken, beef and vegetable, to make a variety of different soups and sauces.Sauce packets such as chili and Hollandaise are also worth having along with instant meat sauces for roasts. Jarred sauces can also be put into the pantry too.Canned veggies and fruits are a must too. The canned veggies come in handy if there's a blizzard and you can't get to the store. They can also be added to soups and soup mixes. The fruits are perfect for making pies and turnovers.

Tomato sauce and paste should be prominent on any pantry's shelf. These always come in handy for when you're making homemade sauce for pasta. The same goes for pasta, itself. Have a variety to suit all tastes. Spaghetti is the most popular and easiest to cook so have a few boxes of it at hand. Also on the shelves should be the versatile pastina and orzo style. These are excellent in both soup and sauces. Slip in a box of the drinking straw like bucatini and thicker fettucini. If you have kids or still hold on to those childhood faves, then have a few cans of Spaghetti-os too. The pantry should  have plant based oils . Olive and vegetable are the ones of choice, especially the last because it can be used for everything from cooking to salads to even baking. Cake mixes along with flour and baking powder should also be included as well as decorating items such as sanding sugar, food coloring and various types of sprinkles. Sweet sauces such as chocolate and caramel along with  jams and jellies need to  stored there in addition,.


A good pantry is a well stocked one, Make sure there are the basics to help you get through everyday eating. It'll make cooking and baking that much easier.it'll also cut down on how many times you go food shopping in a week.

Pastina That Italian Classic

If you're Italian, whether your roots are Northeern or Souterhn, you;ve probably had pastina soup when you''ve been sick.It's a wonderful and actually versatilepasta that tastes good either in just a simple broth or even with sauce. It's also a great staple to have if you have kids and toddlers . Pastina introduces the young ones to the lifelong joys of pasta.

Pastina means little pasta and are usually star shaped. These are tiny, about the size of pinheads when cooked. Most Italian mothers make them in chicken both as a good sick day meal or to introduce toddlers and babies to pasta Pastina is usually an Italian baby;s first solid food more eaten than cereal.It's usually made of wheat flour and some recipes have egg in them.The Turks make  something similar called Sehriye.Theirs add tomatoes and other veggies to pastina in a chicken broth.

Pastina soup is the easiest dish to make. Boil up some four or five broth cups in five cups of water and add an even cup of pastina. You can add cheese or butter later for more flavor or protein. There is also a great pastina and warm milk dish. This is an easy and comforting winter dish that involves the pasta bits, butter and a half cup of warm milk.I would try it with cream for a really rich , creamy texture and taste. There is also one recipe where you can sub in a beaten egg for a more tastier version. Pastina can be used in a variety of dishes using everything from pumpkin to turkey chunks to veggies,

Despite it's small size pastina is hugely versatile. Make it for a sick day soup or as a creamy comfort dish. It's a great pasta for  young or old, a tasty treat for everyone.

Sick Day Food

Every year around this time I write about food s for a sick day. I know it becomes tedious but ther'es a reason I write an entry like this. I'm a magnet for all sorts of germs and right now I'm fighting off the double whammy of a cold and a virus. The problem for me is what to eat without upsetting the apple cart (pardon the bad analogy). The thing is I'm probably not the only one with the question of what to eat when you' re sick.

Soup is always good. It calms a restless stomach and it;s easy to make. , especially the homemade kind. I always have to boxes of bouillon on hand for my family's recipe of pompeist. it;s Piedmonte version of chicken soup - a cure all for anything. That's made for any illness .it has gotten me through a lot of colds and viruses over the years. It'sa simple recipe of making chicken or vegetable broth. adding beaten eggs and then bread crumbs. Another good soup is pastina. You can make pastina soup thick or thin . It's better when there it's thick though, it's hardier and more nutritious.

Another problem is snacking. Of course no one wants to have guacamole dip after a bout of a nasty stomach flu (ewww, looks like soemthing you just got rid of anyway) however if you're hungry nibble. Thin pretzels or dry Saltines are fine. They're not greasy and satisfy your need for crunch. Have these with Coke or ginger ale . These last are perfect for helping sooth a stomach irritated by the ravages of a virus. A sweet snack is any Social tea or Lorna Doone cookie. Stick with plain bland, short breads and some hot lightly sweetened tea.Don't munch or fruit or ice cream until you feel your stomach is up to it. Wait a few days before heading back to old favorites.

The best bet for any cold, flu or virus is eat light but nutritiously . You'll still receive your daily dose of vitamins and minerals but in a lighter form.these will help you fight whatever nasty bug you;re battling and also keep you satisfied.
