A Vegan Greek Easter

 Orthodox Easter is this Sunday , May 2nd and with it comes a wide variety of different dishes. The highlight is lamb, whether a whole roasted one or a leg. Yet what about Greek Orthodox vegans or vegetarians? Can they have a satisfying , holiday meal? The answer is yes.

Baby lamb on a spit is has been one of the traditions in the centuries old meal. Yet this is abhorrent to vegans , vegetarians and any animal lover.A better main dish is spinach pie or spanokopita baked in a phyllo crust. This is sure to be a crowd pleaser, especially with a flavorful crust and filling. It uses one of the staples of Greek cooking - spinach.Mint, parsley and dill enhance the leaves fresh Spring flavor. Leeks onions and nutritional yeast are also added. This pie can be baked in an oblong pan pan and cut into the traditional squares. Another idea is baked tofu marinated in lemon and olive oil,along with a good sprinkle of Greek seasoning. You can buy this last or make it yourself. It's an easy mix of oregano, garlic and dill.parsley marjoram and thyme is also blended in along with cinnamon and nutmeg. This mix works well added to another Hellenic dish gone meatless - moussaka. This is lasagna using with sliced eggplant instead of pasta., Lentils and tomatoes are another tasty and vitamin rich layer, highlighted with onion and garlic. There is a bechamel sauce added , but you can make a non dairy one using soaked and unsalted cashews.

Since it is a holiday dinner, also offer one or two sides. You could just make a simple Greek salad using vegan feta. This can be store bought like Violife that you can find at whole Foods or online at Vegan Essentials. The non-dairy kind can be homemade.It's taking a block of firm tofu and blended with a mix of apple cider vinegar, nutritional yeast and miso paste. Lemon  juice, coconut oil and onion powder are also mixed in to give it that unique briny, salty taste. Rice filled dolmades or stuffed grape leaves will pair well with the spanokopita or moussaka These are grape leaves filled with rice , lemon juice , Spring onions and garlic. It's a quick steam in a pot of hot water mixed with olive oil. The last is added to prevent the rolls from breaking or the leaves from tearing. Beet salad is another great side. Dress boiled and sliced beets with just a lemon and olive oil vinaigrette. Spanokorizo is the perfect side to Greek marinated tofu. This is a simple mixture of rice and spinach with tomatoes or tomato paste. Mint and chopped dill are added for more flavor.

It is possible to have a vegan or vegetarian Greek Orthodox Easter. Make the delicious spanokopita or moussaka as the main dish. Try the Greek marinated tofu if you want more protein. Serve with tasty Hellenic inspired sides for the ultimate holiday feast.

Hot Baked Dishes

A cold weekend night demands a hot baked dish.It's a great meal to come home to, especially after shoveling or just sleighing.This kind of dinner is versatile too.You can try a hearty shepherd's pie one week and baked cannelloni the next.Either way, they're a great way to warm up an empty stomach. Lasagna is one of the most popular baked dishes.Kids go mad for it and it 's guaranteed you'll have few leftovers afterwards.The recipe is basic, starting with layers of wide noodles alternating between ricotta cheese and sauce.Some add chopped meat or for a vegetarian spin ,layers of roasted eggplant ,carrots and asparagus.You can also try the Greek version of moussaka.This is made with eggplant ,red wine and a variety of spices such as cinnamon and nutmeg .A béchamel sauce is then poured over it and then it is served.A real crowd pleaser is shepherd"s pie.This really isn't layered so much as it is topped off.A crispy mashed potato covers a rich lamb or beef stew. These are the most popular however there are other baked dishes that are equally delicious. Manicotti or stuffed baked crepes are another perfect oven dish.Like lasagna, this can have variations.Usually stuffed with ricotta cheese, they can also be filled with spinach.You can also fill them with ground beef too.Cannelloni is similar too ,made with roman cheese.A mid century classic is tuna casserole.Not many make it these day,heaven only knows why because it's just as good as any other dish.The ingredients are egg noodles,tuna, mushrooms and mushroom soup?Noodle casseroles don't have to layered like the others.Simply mix in a buttered pan and bake. The weather outside may be frightful but a baked dish inside is delightful.Make any baked dish from lasagna to shepherd's pie ,from moussaka to tuna casserole for a tummy warming dinner.It's the perfect antedate for a chilly weekend dinner.

One of the simplest ingredients can be used in both savory and sweet dishes? Want can be this versatile ?The spice that has been around for ages cinnamon.It can be used in both meat,vegetable or sweet dishes. It is a spice rack must have and for many good reasons. Cinnamon is pen of our oldest spices.It has been used for more than two millennia.It's names from the Greek kinnaamonen but the ancient Hebrews also had similar word.It can also be called cassia.It was introduced by Arab traders to Venice during the Middle Ages.It was also sold in ancient Rome where traders bought it fromIndonesians who even made rafts from the bark.It's the interior or the second bark that we use.Both the exterior and the interior barks are wetted and then dried.There are four different types,Alba,Continental,Mexican and Hamburg.The bark can be used to help prevent colon cancer and even herpes. Cinnamon can be used for almost everything from savory to sweet.The Turks and Iranians use it with rose water as well as with meats to desserts.It's one of the top ingredients in the Greek lasagna style dish moussaka as well as in squash and pumpkin recipes.Mostly the spice is used in dessert .It adds dash to apple sauce and also gives bites to chewy rolls.Cinnamon doughnuts are always a treat ,especially when they 're heavily dusted with cinnamon I also used in coffees and chai teas to give usually bland drinks bite and zest. Cinnamon is a wonderful spice and a must have in any spice rack. It can be used in both savory and sweet dishes ,creating interesting meals and snacks.Always have a jar on hand.
