Empire Of Peeps

It;s Easter season and that means one thing.Peeps, Dozens of them.Nesting in Easter baskets. Popping up on cakes and cupcakes. How did these marshmallows figures become a big part of the American landscape? It;s the American love of candy and fun.

Peeps became part of Easter back in early 1950's Candy maker  Ukraine born Sam Born created them in Bethlehem ,Pennsylvania. He was responsible for a lot of the candy we take for granted. His inventions were chocolate sprinkle and that hard shell ice cream coating that made Dairy Queen so famous. He also invented a machine that puts the sticks into lollipops too.In 1953 he bought the Rodda Candy Company. It was known for its' jellybeans and and a brand new Easter candy at the tim - marshmallow chicks coated in yellow sugar with brown wax eyes. Born'ss son ,a Lehigh University graduate with a degree in engineering figured out how to  mechanize the marshmallow creation process which shortened the time from twernty-seven hours to just six minutes. he also ditched the wings from the design which streamlined the decorating process. The original flavor was "just sugar" which is just as popular today as it was then. The company then expanded the Peeps into different flavors and even holidays.

Peeps is now an empire. There is everything Peeps now days. The company has partnered with Sally Hansen to produce chick yellow and bunny blue nail polishes. You can buy pajamas over tee shirts to wear while eating them. There are super cute Peeps pillows in chick and bunny shapes in all sorts of colors.(I have a pink bunny one) The Peeps empire has grown flavor wise. They've gone form just sugar to such sugary sweet flavors like Dr.Pepper, Rice Crispy Treats and Rice Krispie Treats. These and many other flavors only come in the chicken form. The bunny kind  is just made in the original flavor.Peeps has expanded out to include Halloween and Christmas too. Halloween has some fun ones , from ghosts to monsters to  pumpkins to Day of the Dead flower decorated skulls. Christmas has fun Peeps too, There are the gingerbread marshmallow man that taste like gingerbread along with trees and Christmas stockings. These are too sticky to put into stockings however there are Peeps sticks that are individually wrapped and taste like Mike and Ike (a part of the Peeps Enpire) that make great stocking stuffers.

The Peeps empire is vast. These little birds and bunnies are a big part of the Easter table. Try them in the original just sugar flavor or any of the others.

Ready For Easter Brunch

One of the most fun and delicious traditions is Easter brunch. It's a great way for family and friends to gather.Yet it does require a lot. The key is to be ready and well stocked for it.

One of the most important things to dois make a list of who is coming along with their likes and dislikes. If you have vegans coming remember to buy products like Morningstar Farms soy bacon and Just Egg egg substitute. Keep in mind that this last can also be used in baking. Also take into consideration kid's allergies. Keep the brunch free of nuts along with products that were processed where there were nuts.Gluten free is easy to get and create. There aremany gluten free flours so you can make everything from waffles to cupcakes .Once you have your list , ask yourself if the weather is nice enough for outdoor dining. You could set up tables and folding chairs set in various spits in the backyard or just have one set table. THis is also time to air out the good Spring linen tablecloth and napkins for indoor dining. Should there be a kid's table? Yes, They'll be a noisy , excited crowd after an Easter egg hunt fueled by chocolate eggs  Have fun favors you can get at your local dollar store or FIve Below or small cupcake liners filled with a Peep and jelly beans.

As for the food, you can easily ge tthe ham now along with any of the canned sides.Canned pineapple is a must have in many an Easter dinner so get it now before the stores sell out. Do you want to have an omelet bar? Try to buy eggs in the next few days, despite everyone using them for dying. Wal-mart has a good deal with eighteen eggs for only $3,13. You could get two containers with saving some for decoration. If you're planning on making egg cups make sure you have the right muffin pans for them. You  may have to buy a second one to accomodate a large crowd. If it's a true brunch , then it 's time to check your griddle to make sure it's working. the same thing for your waffle maker. That brings up the question do you have enough flour or Bisquick for waffles and pancakes? As for dessert , do you let guests bring their own creations or do you bake for the enire crowd? Now is the  time to buy the cake mixes , Dream Whip if you're making a lamb cake and confectioner's sugar for frosting. Also now is the time for buying the extras for baking like coconut and marashmallow for grass and bunny tails. Make sure your food coloring is usable and you have enough.

Easter brunch is a great way to celebrate the holiday. Make sure you're ready for it.Preparedness will go a long way in making a memeorable meal.

Changing Up Spring Sweets

This is the season for baking holiday treats and sweets. Yet it's usually the same thing, from kugel for Passover to Easter themed cakes , cupcakes and cookies . What about changing ot up a bit? Put in a new recipe that the family will love.

Passover begins on April 5th this year and ends on April 13th. The usual desserts are ones made with out flour namely kugel. Yet it's time to break out of that classic mold. Why not serve a refreshing fruit salad or fruit cups instead. Make it colorful with pineapple chunks, kiwi slices and strawberries,Add blueberruies ,s liced grapes and tangerine slices for more sweetness. Now zing it up with a honey lime dressing. Another dessert not necessarily associated with Passover are chocolate covered strawberries. Dip these ruby gems in dark chocolate for a different kind of ending . Give them a dusting of kosher sprinkles to make them even fancier. The days are getting warmer so think about fruit sorbets.Create an easy three ingredient one by using fruit, honey or agave syrup and a squueze of lemon juice. It's pureeing the fruit and mixing with the sweetener and juice. Pour this into ice cube trays and then freeze. Take the frozen cubes and placed into a food frocessor. They're transformed into a cool creamy dessert. Think a a strawberry or blueberry sorbet for a refreshing end. You can also make a chocolate one too using both Dutch processed chocolate and cocoa powder.

As for Easter, yes those bunny cakes and cupcakes are cute but they can be a little boring. Why not end the Sunday meal with homemade ice cream spiked with chocolate eggs or the fun multicolored robin's egg malted milk eggs. You can make a vanilla or choclate ice cream loaf to be sliced and served with whipped cream.. It can even be served in multicolored cones for the little ones. Brownies may be known as an after school snack but they can be topped with a thin layer of icing and a Peep for a colorful end to your Easter dinner. You can use a box mix or try a scratch recipe.Another unusual idea are cake bites baked to look like small Easter eggs. You can use molds (which can be bought on Amazon) to create the shapes and then decorate them in pretty colors. Both kids and adults will love meringues. These are airy puffs of sweetness which can be made with vegan or non vegan ingredients. The non vegan is made with aquafaba or chickpea brine and tastes the same as the regular ones made with egg whites. Dye them pink with all natural beet root which gives them a candy pink color. Of course coffee flavored ones are great for the adults.

Change up your Spring treats with new and exciting recipes .Break away from the classics.Serve fun sweets for Passover and Easter

All Those Easter Leftovers

The day after Easter means ones thing -- leftovers. what do you do with all that ham, lambs and sides? What about that extra candy and sweets? Get creative ? THere's a ton of new recipes you can try with all that food.

Ham can be turned into tasty hot Croque Monsiurs or a cold, refreshing salad. For the French classic, you can cut the ham extra thick for a heartier sandwich. It would also go well in a grilled cheese too.As for a ham salad, prepare it like you would  a tuna salad. Add mayo along with chopped celery and onions. For added flavor serve on Hawaiian rolls. Their sweetness will offset the ham's saltiness. You can also turn it into a main meal by combining it with rotelli or elbow macaroni. Add peas, chopped carrots and broccoli florets to round it out. As for the dressing you can stick with just mayonnaise or create an Italian dressing to pour over it. What to do with that leftover lamb? Shepherd's pie is a nice way of repurposing it. You can even use those leftover mashed potatoes as the crust. Fill it with chopped carrots and onions along with celery and thyme. A lamb curry is also a great recipe for what's left of that roast leg. It's a great time to experiment that garam masala and curry powder. Serve with warmed naan and yogurt for a different spin on dinner.

You probably also have all that leftover candy too. it may sound strange but you can add chopped jelly beans to a cookie recipe. You could also incorporate them into a fudge if you like a super sweet bite. What about those other super sweet Easter treats - Peeps. A really neat idea is Peeps popcorn balls. This is melting down those chicks and adding plain salted popcorn. To make them even more fun, put  a lollipop stick in them and have a new kind of treat. What about Peeps s'mores? Use that leftover chocolate along with the Peeps on a skewer(think rotisserie Peeps, heated to gooiness over a stove top. Serve on either plain or chocolate Graham crackers. You could also heat just the bottoms and place on cupcakes for a different kind of topping. if those bunnies and eggs  haven't been completely devoured, break them into little bits and serve over anything and everything. They're fun mixed in with hot oatmeal or cold cereal. A layer of them is an extra kick in an ice cream parfait or sundae.

Those holiday leftovers can be repurposed into new and exciting meals and desserts. it's a fun way to reuse them and enjoy them a second time.  Try them  to still celebrate the holiday in a new way.

Your Easter Treat Selection

Easter is only less than two weeks away and it's time to start thinking about treats. and dessert. What would be fun for an Easter Egg hunt? What would be the perfect ending to a ham dinner. There are so many choices.

One of the most traditional id the lamb cake or the Osterlamm in German. The American version can be made with any kind of cake mix while the German has a simple vanilla cake recipe. You will need a special mold such as this one.

This was my Mom's that I inherited.it's over forty years old and from Wilton. You can get something similar from Amazon for around twenty three dollars. There is also an Osterlamm mold for $37.98.  You will need to use Dream Whip because this gives the cake body.I've the cake in vanilla and chocolate .each had different icings , from traditional butter cream to chocolate to coffee for the chocolate. Decorating was fun, with colored vanilla buttercream for the outline of the ears and eyes  and the ribbon around the lamb's neck. You can also bake a bunny ro Easter egg Again these are fun to decorate. For a more sophisticated dessert, think a lemon or orange Bundt cake with a lemon or orange glaze. This is perfect with coffee and tea after a big meal.

Smaller Easter egg cakes are a cute handout at Easter egg hunts. You can add M&Ms and jelly beans to the decorations. A fun idea is having the kids decorate them at a trimmings bar and them give a prize out for the best looking one. Easter cookies are also a fun treat any any Easter gathering.Again egg shapes iced and decorated with colored icing, sugars and candies are a highlight to any gathering. Bunny cookies are another sweet treat. You could do a dusting of bright colored sanding sugar to resemble Bunny Peeps.Peeps can also be featured in cookies. Think about wrapping cookie dough around them for a gooey kind of treat.  You can also top plain sugar ones with them as well.Rice Krispy treats can be molded into fun shapes like carrots and chicks. You can also make the traditional squares and then decorate them with melted pastel chocolate, sprinkles and M&Ms.

There are so many different kinds of goodies to make for Easter. Pick something cute or something sophisticated.Either choice will be a holiday hit.

Those Bunny Bits

Everyone knows what to do with Easter leftovers. Make ham sandwiches and serve them with the leftover potato salad. Reheat the asparagus with butter. Slice the lamb for stew. Yet what do you do with all that leftover Easter candy? How much chocolate can one family eat? Luckily there are a few fun recipes to deal with those bunny bits.

All kinds of chocolate can be meted down and refashioned into bark. Think of melting those leftover  milk chocolate bunnies and hollow dark chocolate eggs to create a two tone or truffle bark. You can add the leftover over coconut from those bunny and lamb cakes , nuts and pretzels. You can also roll pretzel rods in the chocolate for dipped ones. A second roll in pastel colored sprinkles lends a festive air.Another idea is chopping up the chocolate and adding it to any ice cream. Think of a strawberry or raspberry gelato chock full of chunks or create you own version of Ben and Jerry's Cherry Garcia by combining cherry vanilla with cut up chocolate eggs or Kisses. What about those  solid creme, nougat and coconut eggs? Slice those and put a scoop of chocolate ice cream on top for a kind of Easter egg sundae. It's a fun way to get rid of those giant eggs that always seem to last forever.  If you were lucky to receive those huge Perugina eggs with the toy inside. then they're a double bonus. The halves make for excellent cups for ice cream, puddings, custards or mousses. Add whipped cream and some sprinkles for a truly decadent treat or dessert.

Easter candy can also be baked into sweet treats too. You can take all that leftover chocolate and turn it onto a decadent mousse pie. This is perfect for any milk chocolate (although you can do the same with dark too ).It's  melted  and mixed with mini marshmallows, milk and whipping cream, then poured into an already made pie crust. The entire pie is refrigerated for about three hours in the fridge.  Of course you can also add the chopped bits to cookies and brownies. Try a chocolate chip recipe but sub in sliced solid or Krispie  eggs. You could also sub in pastel M&M's too for a festive looking cookie.Brownies can also be stuffed with chopped candy too. You can use a scratch recipe or just a box of any brownie mix. Even marshmallow eggs can be used for a creamy chewy middle. Peeps can even be repurposed. Think fun Rice Krispie bars decorated with whole chick or bunny Peeps. You can also cut these up (if you can bear tearing up all that cutemess) and put them into the treats. The results are pretty rainbow colored bites. Chocolate can also be thrown into the recipe too.

Don't worry about all that leftover Easter candy. It can easily be repurposed into fun treats everyone will like. It will be like finding that candy all over again!!!

Your Easter Recipe Guide

Easter  is fast upon us and it's this week, Holy Week, that should be a balance of observance and preparation. Do you have the main curse settled? What about the sides? Will it be an Easter brunch or a potluck? Holiday dinner or  barbecue. Then there are the desserts. Is it all up to you or will it be a group effort? Will there be an egg hunt with treats too? It's time to start deciding and writing up lists.

One of the most important decisions is the main course. The most traditional choices are lamb and ham. The first is big in Mediterranean households, namely Italian and Greek.  Do you cook a whole lamb (which is not for the squeamish) or leg? If it's a small gathering , then a leg of lamb would be the best choice. Your butcher and some groceries can debone and butterfly it.Keep in mind that there are difference between New Zealand and American bred kinds. The American sort is meatier, fattier and sweeter than the other. You could also go with lamb chops too or the slightly tougher shoulder of lamb. Remember that lamb can also be barbecued. What should you serve with them? Fresh spring greens such as asparagus and peas. Ham is another beloved Easter main course. If you feel that it may take over your oven , then assign sides to guests .Another question to ask yourself, do you want it as part of a formal holiday meal or a brunch? That changes the sides. A more traditional dinner would have sides of roasted baby beet salad and possibly green beans with shallots and hazelnuts.Peas with mint are another lovely  side that's both fragrant and tasty. A brunch would not only have the ham as the centerpiece but also veggie laden quiches filled with asparagus and dandelion greens. Also make sure that there are mimosas and bellinis for the adults and juice and seltzer sparklers for the kids.

Easter is more a time of sweets, more so than savory bites. If you have the time, you can bake and ice a lamb cake.It is labor intensive work ( as my previous pictorial posts demonstrate) and it's easier to do if there are two people. Another festive and a bit easier  project is an Easter egg cake. It's just a one layer cake decorated with three or four dyed icings.  You can also buy an Easter egg cookie decorating set. Stop & Shop sells these and they come with already baked shortbread cookies, icing and candies for decorating.  This can also be part of the holiday activities for the kids. There is also the Peeps Coop  which has six already baked cookies to be assembled and decorated with bright yellow icing.  Sprinkles and jelly beans can be added for more dazzle.  As for the young ones, think about making Rice Krispies chicks and bunnies. It's making a whole sheet of the treat and then cutting the shapes with a cookie cutter. The mix can be tinted with food coloring  to make the pops more festive. Cake pops are another fun bite. Coat them in the various chocolates and dip in festive yellow and pink sprinkles. If the dinner is just adults , then end it with a light yet sophisticated lemon jelly roll dusted in confectioner's sugar. A raspberry trifle is also a sweet classy end to a ham or lamb dinner.

This is the time to make decisions for the holiday ahead.  Choose what dishes and treats will work for you and buy their ingredients. Then shop for the dinner ahead. It'll be easy with a list and a clear vision of what you want to make and bake,

Easter Monday Picnics

The Easter weekend is a great time to get together with family and friends. There's church  services, egg hunts, fun dinners and wonderful desserts. Europeans extend the holiday to Monday where it'sa time to enjoy family and friends on the first outing of the season.

If you and your family or friends are lucky to have Monday off, then take advantage of the weather. Even if it's a rainy or snowy day, have a lunch together with the leftovers from Easter Sunday. Nothing beats ham sandwiches and they can either be thick slices of it , carved from the holiday roast or made into deviled ham. This last is easy . Take about two cups of coarsely chopped ham, along with  about three tablespoons of mayo and put into a food processor. Pulse until smooth You can add Dijon  mustard or celery seeds for some kick. Some add a drop of maple syrup for sweetness but it's really not necessary . Homemade deviled ham tastes best on a crunchy baguette. but can also be good on whole wheat bread too. Use up any potato salad leftover that went with the ham and throw in some pickles or gherkins,If you've had a snowy or rainy holiday, then use the holiday ham to make a hot and satisfying hot pea soup. The ham bone will definitely add to the flavor

Any extra hard boiled eggs can be made into a tasty egg salad. Add some tarragon for more flavor and color.. You could also just bring the eggs and then peel and salt them when you're hungry. If you didn't cook for Easter , then think about buying an already roasted chicken . It can be sliced and eaten as or made into sandwiches. Buy some potato or macaroni salad too for a more substantial lunch. An Easter Monday picnic is also a good time to sneak some fruit into the diet after a weekend of candy and cake. A nice apple or pear  along with grapes is a refreshing change from all those jelly beans and Peeps. You can also bring granola or Kind bars if you're planning on hiking or playing ball.

Extend the holiday weekend if you can. Turn Easter Monday into a picnic day, full of fun and food. Spend it with friends and family

Healthy Easter Treats

Easter is coming and that means a sugar high that will last the month of April. Yet is there such a thing as healthy Easter treats? Yes but there's some work involved. Are they worth it? If it is a fairly healthy then the answer is yes.

Peeps abound right now,The seductively cute chicks and bunnies beckon us to take a bite. Yet they're full of sugar and artificial coloring, not a good thing for raising an all natural kid. However there is a bright spot. Peeps can be made at home. What you will need is honey, unflavored gelatin, vanilla extract and a pinch of salt. For the colors get India Tree Natural Dyes. This is a great company specializing in chemical free spices and decorating ingredients . Use their dyes or pretty sanding sugars which can be bought at La Cuisine or Amazon along with Chef Shop and Far Away Stores..The recipe can be tricky because home chefs will be working with a 270 degree F syrup that has to be beaten with the gelatin. Cookie cutters can be used to make the chicky and bunny shapes. If you are adept at decorating you can make the chicks using a piping bag and different tips.

Chocolate is an Easter must. Everyone loves filled eggs and chocolate lollipops. Instead of coconut  and marshmallow eggs, think about chocolate dipped fruit. Use strawberries, bananas and even grapes. You can also make different kinds of chocolate treats using  70 to 80 per cent dark chocolate .If you still crave coconut , think about making nests. This is a simple haystack recipe, toasted flaked coconut melted with dark chocolate. Instead of the usual mound, flatten with an oiled spoon with a deeper indentation in the middle. You can even fill them with all natural (yes all natural) home made jelly beans. It involves more gelatin however you can add all natural juices such  as lemon and orange to flavor them. To make them healthy use Stevia , an all natural sweetener along with the dyes from India Tree. There is one caveat, Creating  them is labor intensive and you do need jelly bean molds which can be bought , again, at Amazon.Have an assistant to help out especially with filling the molds.

Yes, you can have healthy all natural treats. They may be extra worth but the results re well worth it, Having kids eating chemical homemade, and best of all, less sugary, Peeps, chocolates, and jelly beans
