The Well Rounded Cranberry

 Cranberries are just for jellies or juices. They can be used in everything from stuffings to mocktails along with being the star of many a dessert. They're more well rounded than you think.

Cranberries should be a part of the Thanksgiving dinner. Ditch that slimy jelly though and rethink them. A great idea using them as a glaze for the bird itaelf. It's cooking two pounds of the fresh berries in a sweet savory mix of onions,butter sugar rosemary and the cranberries along with vinegar and orange zest.It;s cooked over a low flame until the cranberries burst.It's simmered and then strained (save the mash for a side).The glaze is then brushed over the turkey after two hours of roasting. This can also be used for chicken too. Cranberries can also zing up stuffing too.Used the dried ones or Craisins for a filling that;s also redolent with walnuts too.It's still perfect with gravy thanks to the the traditional sage and thyme added. For this tormbread or bread cubes can be used.Surprisingly these bright gems can also be highlight veggie dishes too. Try a kale and cranberry salad. It's even more tastier with the addition of almonds and goat cheese. A zingy Dijon -orange viniagrette dewesses it. Brussels sprouts can also benefit from it.Roast the two together with a maple glaze for a unique  side.

Keep in min that cranberries are also great in a dessert. They're perfect in a pie , in a mousse like form with the addition of gelatin , heavy cream and coconut milk. Another dessert that the kids would love are cranberry bars with cream cheese frosting.This is combining fresh berries with a cookie dough and then decorating it with a creamy topping. You could even add a sprinkle of Craisins on top for an even more festive look. Another fun cranberry dessert recipe is tartlets. This is mix of a buttery crust made just butter cream cheese and flour. The filing is a custardy mix of egg, cranberries, vanilla and sugar. You could add a glaze but a puff of whipped cream would really give it that gilded edge. What about those fun mocktails and cocktails? A fun mocktail is mixng cranberry juice with any flavored seltzer like Waterloo Seltzers. Try it mixed with  their cherry or blackberry lemonade flavors. There's the perfect amount of fizz and sparkle. Add a sprig of mint or a stick of mixed otange wedges and cherries.The most famous cranberry ccoktail is the Cape Codder.This is mixing vodka with cranberry juice. You could also make a cheery cranberry sangria with red wine and triple sec. Add some orange juice for a sweet citrus-y kick. 

It would be a shame to just have jellied cranberries. Try them in either savory or sweet dishes. Wnjoy them in any drink. They're an incredibly versatile fruit that's perfect in anything and everything.

A True Summery Sangria

The summer calls for sangria to accompany rich seafood paellas and grilled spicy  chops. It is the perfect drink also for cooling down on hot nights. Yet it doesn'thave to be cliched as it has been for decades.It can be as light and refreshing, great for the steamy season ahead.

Most people know sangrias as an almost Hawaiian Punch creation loaded with fruit. Eric Asimov  goes well past this in yesterday's The Our Column in the Wednesday Food and Dining section of The New York Times. Sangria, he discovered was usually served in a sprinkling of Spanish restaurants that opened up in New York after the 1939 Spanish Civil War. It was reintroduced after the 1964 World's Fair.What was introduced then is what Americans have been drinking ever since. Unfortunately it's more of an Americanized soda pop version of the drink, made with Rioja and a ton of fruit chunks. It's a lot different in its' native region, After all sangria (translates from blood in Spanish) has been around for 2,000 when the Romans cultivated vineyards in Spain.

Mr. Asimov has discovered a sangria that is perfect in true flavor. Thanks to bartender,Rafael Mateo, at the Spanish  Pata Negra in Manhattan's East Village. Mr. Mateo uses a base of garnacha instead of Riojo because it's not tannic, Layered onto that is rose and orange liqueur along with the surprising addition of orange soda for bubble and fruit flavor. Cut fruit is added only at the very end instead of being put in in the beginning and left to soak. There is another recipe, Sangria Penedes that would be perfect after a grill of lamb and beef chops. This has grapefruit  juice tossed in along with Mathilde or any other peach liqueur Cava and one peach , diced and added later for flavor and decoration.

Sangria is a great summer drink. If you're going to have it with a barbecue or paella , make up a pitcher of the real stuff. It's the perfect way to kick back and enjoy a warm summer evening.

Summer Sangrias

There's nothing like a sweet , fruity sangria to brighten up a summer party. It's a wonderful accompaniment to any seafood paella or even chorizos on the grill. However the punch is just as good with grilled chicken or kabobs.Another plus is you can customize it to your tastes or to what your guests like.Each time you make it , it will always turn out slightly different and unique.

Sangria recipes can be divided into two categories depending on the wine you use If you're opting for red, start off with a Rioja, Merlot or Shiraz. These will have a full body and have a rich flavor. Their taste won't be diminished by the fruit used.If you want to go the traditional route then use the Rioja, A true Spanish sangria will have cut up lemon, orange and apple slices in it however you can also toss in strawberries and raspberries for a different taste. Some recipes even call for a shot of Triple Sec or gin for added oomph.

A white wine Sangria is more for lighter fare.It should be just as fruity but with a delicacy the other doesn't possess. You'll need a dry Spanish white wine however you can also use a Riesling or a Sauvignon Blanc too along with a Chardonnay or a Gewurstraminer. Fruit should be lighter too. Use fresh chopped peaches along with nectarines along with lemons and oranges. You can also add a dash of peach schnappes, or any orange or lemon liqueur. Some enthusiasts add club soda or ginger ale to give it a sparkly fizz.

Sangria, whether it be red or white, is the perfect summertime drink. Either one goes well with a party time paella or a small barbecue. Sangria adds flavor and festiveness to any gathering and any dish.
