Potato Bars

 Potatoes tend to be the heart of any holiday table, yet they're often ignored for more fancier mains and sides. However you can make them shine at a holiday table.How Set up a potato bar. Yes!~ Baked potatoes can shone just as brightly as any charcuterie or sea-cuterie platter.

More than a century later a baked potato is still a big hit. Who doesn't love a split one with a fluffy white flesh along with a huge , melting part of butter.It's also good with other topping like the traditional sour cream, chives cheese and bacon. Chef Kim has spent the last year baking giant spuds, he recommends them to star at at any party.It start s by setting up a bar It appeals to all sorts of cultures. As chef Vishwesh Bhatt wrote in his cookbook "Potaotes are a great equalizer for many cuisines.They can be adopted to many different tastes and cuisines,

What would work in a potato bar? An aglio e olio one appeals to those who love the simple Italian pasta dish. It starts with a baked potato dolloped with a mayo and garlic mixture, Lightly drizzle with  extra virgin olive oil and red pepper if you want some zing. Microplane a cloud of Parmesan over each one for a tasty,flavor. There is also an Indian-ish recipe from Cehf Kim's fellow writer Priya Krishna and her mother . Chiles and chaat masala - a dried powder made from dried mango powder , black salt and dried pomegranate seeds. There's also onions and ginger for more flavor and bite.Green Chiles or Serrano Chiles are used.Mr. Kim celebrates his Korean heritage with his caramelized kimchi potatoes.it stands in for bacon as it;s sauteed with butter. and then browned much in the same way as onions or cabbage is. Sharp cheddar tops it along with a dollop of sour cream and a sprinkling of chives. Sweet potatoes get their due here too They;'re topped with goat cheese whipped ream cheese and hot honey, a mix of regular honey and Chiles.Rosemary and nuts top them off for a different flavor.

A potato bar? Why not. It'sa different and fun way of enjoying this powerhouse staple Try  them with all the different ingredients.

Know Your Probiotics

Probiotics are important to a healthy body  and keeping well. Yet many have no clue as to hat they are or hat they can do for us. Most think that yogurt is the only food that has these "little bugs". They're sort of right but not quite.There are other foods too, tasty ones that can be easily incorporated in any diet.

What are probiotics exactly? They can b e defined as microorganisms that provide health benefits when consumed. The term itself came into existence around 1980 however  the study of it reaches back to the early 1900's thanks to Nobel Prize recipient,Elie Metchnikoff. Dr. Metchnikoff was a Russian zoologist who suggested that the dependence of intestinal microbes on food makes it possible to adopt measures to modify the flora in our bodies  and to replace the harmful microbes with useful ones. The idea has been around since Roman and ancient Greek times when early healers noticed the benefits of such fermented foods as cheese and pickled vegetables. Centuries later
scientists analyzed the eating habits of  the  long living Bulgarians and inhabitants of the Russian steppes . They ate  yogurt daily, filling their guts with fermented lactose. Modern day eaters can benefit from probiotics as well.It's instrumental in calming down IBS  - irritable bowel disease along with treating diarrhea in adults and children.They can also stave off the flu and cold as well as being beneficial to oral health. Do these clusters of microorganisms have any risks? They will cause bloating and gas in some people along with causing some discomfort  for those with bowel problems.

Probiotics are an easy add in to any diet. You may want to start with Activia Yogurt, long known for their probiotics.The company offers regular and Greek along with fiber filled yogurts and yogurt drinks in fruit flavors like strawberry , cherry and blueberry. There are other like Fage that also help. Yogurt can be subbed in for sour cream as well so even dips and tacos can be made a tad more healthier. It's not just yogurt that's beneficial. Fermented foods such as sauerkraut and kimchi are loaded with it. Both can easily be made at home too.You can not only eat healthier but also more vegan thanks to another probiotic  food, tempeh, This meat substitute was originally from southeast Asia has a nutty  taste when cooked.It can be made as a burger or diced and mixed with brown rice.Of of the most famous probiotic foods is the Japanese miso.It's basically fermented soy along with barley and brown rice. Other grains can be used too.It's fermented down into  a red,  dark brown  or white  paste with a buttery texture Like other probiotic foods miso should be added to the broth right before taking it off the range otherwise the microbes get cooked and killed.You could wash all this down with kefir,a microbe rich drink made from milk and kefir grains.It's just mixing the two which leaves you with a rich creamy drink with a slightly alcoholic taste. A water kefir can also be made using sugar, water, coconut milk and grains.

Probiotics are important to good gut and body health. You can go the yogurt route and get these important microbes that way.You can also discover the rich world of other probiotic foods by cooking miso soup or by making a nice glass of milk kefir.It'll expand your palate as well as helping your body.

Kimchi Homey And Exotic In One Dish

Kimchi is a Korean classic and staple.It's also making its' way into America kitchens too.It's relatively easy to make and it can be used as an ingredient and as a side. Best of all you don't need an ancient recipe to make your own You don't even have to bury it in your back yard as once dictated.It's as simple to make as salad or pickles.

David Tanis explored this in today's A City Kitchen in the New York Times Wednesday Food section,Kim chi is Korean soul food, (no pun intended).Once made it can be used as a side with Korean barbecue or with steamed rice.It can also be added to ramyun noodle soup.There is even a soup, called jigae or chigae  that has the pickled cabbage as the main ingredient along with pork belly. Kimchi is also used in making the shrimp laced noodle cakes, giving them a tart kick.True Yankee foods can also be livened up with it. Ladle it instead of chili on hot dogs.Trya big dollop with pork chops instead of the usual sauerkraut.It can even be used in a paella as Chef Russ Moore did in his restaurant Camino in Oakland CA. He is half Koran and uses his mother's recipes to create interesting fusion dishes.

Kimchi is made from various veggies/ No one recipe is the definitive one. Mr. Tanis gives us one that has mustard greens and bean sprouts. The  must add in are Korean anchovy sauce,gochugaru , Korean red pepper flakes and red pepper paste or gochujang.sugar is also added to temper the taste. You can make an instant one which only takes five minutes or traditional one which is now stored in the fridge for a few months. Some purists do bury their kimchi in the ground. Many believe that doing so give it extra flavor however there is some called a kimchi fridge.It sort of looks like a wine cooler or mini fridge and can store two or three containers along with wine or beer too. (when not storing kimchi it can be used to chill and store.alcohol). Now is the time to make kimchi, winter cabbages are the best to use as a base. You can even try Savoy and Chinese cabbages together along with adding cabbages, mushrooms and even onions.

Kimchi may be a Korean standard but it's soon to  an American one too. It's a tasty blend of spices and veggies , perfect for noodle dishes and soups. Create your own blend of this side.It'll add and expand your culinary experience
