An Old Fashioned Barbecue

 Everything right now is either smashed or done cowboy style for the grill. These new recipes are good but there's something about the traditional ones our moms and grandmothers used. There was a certain fun to them tha't snot seen in today's dishes.

Of course there's barbecued meats. yet the ones of our parents day weren't marinated in fancy mixes. Most of the time steaks and chicken parts were treated like hamburgers and hotdogs. Just throw on the grill , then flipped over before servingYou actually get more of the meat's flavor by doing thish along with having a crispy coating. If you do want some flavoring the, just season with salt and pepper. That's it. You can go old school for the steaks and offer a bottle of Worcester sauce. You can also have a bottle of barbecue sauce handy for both the beef and poultry. This also applies to ribs. There's no need to whip up a fancy sauce for them. Toss them on the grill and then serve with the same barbecue sauce. Guests may enjoy dipping the ribs into a bowl of the sauce and it's actually  not as messy too. Treat corn in the same way too. It doesn't;t need to be fancy Mexican street corn. Just grill it for nineteen to twenty minutes, turning every so often to prevent charring or burning. Slather butter or margarine on a long with a good sprinkle of salt and then dig in, It';s a great way to really enjoy the corn's sweet flavor.

Going old school means enjoying simple salads and dishes that highlight the main course's charred goodness. Three bean salad is the perfect barbecue side.It;s so easy to make. The recipe varies from family to family. Some add garbanzo beans and switch out green beans and vice a versa. The best ones include red kidney beans, white kidney or Cannellini and garbanzo beans. You can add a teaspoons o finely minced onion for more flavor or a quarter teaspoon of onion powder. Dress with olive oil and red or white wine vinegar. It may need some salt and pepper but that's it. Chill for a few hours before serving. Other classic salads are broccoli and green beans. These are simple to make and you can even use frozen veggies. After steaming them just dress with oil vinegar and dashes of onion and garlic powder. Season with salt and pepper to taste.How do you end a classic barbecue? A Jello salad! This is mixing the powdered gelatin with cottage cheese and pineapple juice. Whipped cream is folded in then the crushed pineapple.. It;s chilled and then served as a sweet side or a dessert.It;s your choice.

Forget all this fancy new fangled stuff. Go old school with a classic barbecue. It;s makes for simple ,tasty and fun eating.

Eating Through The Heat

 It is summer and it is blisteringly hot. The heat affects the way we eat. There are days when having a meal seems a chore . Cooking is that way too. what can be done? There are several ways to beat the heat culinary wise.

If anything hydrate - hydrate - hydrate. Yes have planting of chilled or cool water yet there are also water filled foods that can  also help.watermelon  and cucumbers are two that are full of water. The first is very versatile. Watermelon makes an excellent dessert or snack, especially when it's been in the fridge for a few hours but it also makes a wonderful salad ingredient too. One of the more popular combinations is adding cucumber and feta crumbles, dressed in a simple vinaigrette. Another tasty dish that can easily be a side or a dessert is grilled watermelon. Before grilling cut the melon unto thick triangles and then baste with a  mix f honey lime juice and lime zest. Grill until grill makes appear. As for cucumbers a refreshing and old fashioned way to have them is sliced and dressed in a mix of sour cream and dill. You can sub in plain Greek yogurt for the sour cream if you want a lighter taste. Cucumbers are also good on their own dressed in a light white wine vinegar based dressing. You could also turn it into a cool green gazpacho.I't mixing pureed on es with plain Greek yogurt , olive oil and salt. A dash of white wine vinegar gives it some zing.

What about some protein? If you can stand being in front a hot grill then think of kebabs. These are easy to make and fun to eat.also it's a good way of combining meats and veggies in one bite. You can vary the proteins with having chicken one night and steak the next. As for veggies, cherry tomatoes, bell pepper slices and mushrooms also work along with onion quarters. An  easy marinade for both chicken and steak is one made with olive oil, lemon salt and pepper. Another marinade is a base of plain Greek yogurt with lemon juice and olive oil. spice it up with cumin oregano and paprika. if you want an Asian flavor then think a soy sauce based one with a dash of Worcester and  red wine vinegar to zing up beef kebabs. Keep in mind that you can already buy already prepared meats like rotisserie chicken and use it to create tasty and easy wraps. This is an ideal supper. Add romaine lettuce and Caesar dressing to shredded rotisserie chicken for a light meal that combines veggies and meat all in one bite.

Eating through a heat wave is not difficult. There are many light meals that can fill you up without heating you up. Try them for a cool and refreshing lunch or dinner.

The Ritual Of Carne Asada

Carne asada is more than just a meal. In the Northern Mexico , in the Sonora region it's a family gathering. With it also comes ones of the best dinners, so different than what is often thought of Mexican food. It is tacos and guacamole but much more traditional and delicious.

Pati Jinich, the great host of PBS's Pati's Mexican Table and winner of two James Beard awards. wrote this fascinating piece in today's New York Times Food section. She visited families who hosted these weekly dinners before the lock down shook the world. You have to be invited to these and invitations are few and far between in this area  on the Gulf of California.  Chef Jinich also got to interview cooks, growers, ranchers, and butchers along with farmers merchants and even artists for her television show. What is surprising is that it's not the most expensive cut of meat that's used but more a fresh tasty piece of meat. The traditional cuts are unfussy and unfriendly. Think diezmillo or chuck roll or palomilla or top sirloin. These cuts are commonly cooked low and slow but in Sonora sliced thin and cooked fast over a high heat. It's usual for people to opt for one cut or the other but most choose both. The meat is cooked over mesquite on an open charcoal grills. The grill grate is first cleaned with a white onion and then greased with a chunk of beef fat.

Tomatoes, onions and chiles are also grilled. This lets their juices run and they are then mashed into a roasted salsa. After them comes the meat. seasoned with only sea salt. How to test if it's hot enough. According to local chefs hold a hand out a beer can's length above the coals for four or five seconds. If; it;s less ,it;s too hot and the heat has to be reduced. Too long and it's needs to be hotter. There are other recipes that round out the meal. Chef Jinich includes a fire roasted salsa  that's so simple to make. Yes, there's guacamole but without the lime.Hers has two kinds of chiles, both Anaheim and serrano, along with a lot of cilantro. There are also refried beans. These are pinto beans cooked with dried Colorado (also known as California and New Mexico) pepper. Any kind of Mexican cheese can be added, from
asadero, quesadilla, Montery Jack or Oaxaca. The beans are actually cooked twice, not really refried. They're first boiled with the onions and chiles , then blended in a blender. It's then cooking them in a casserole dish with the grated cheese. As a side there's a grilled corn ,asparagus and spring onion salad. The veggies are grilled first then cut and the corn kernels shucked off the corn cobs. This is where the lime juice comes in  with the dressing.Maggi, a kind of soy sauce is added for unami notes along with Worcester  sauce and vegetable oil.

A carne asada is a special meal in Sonora. Try these recipes to recreate all the wonderful flavors and aromas of Northern Mexico. They're a tasty reminder of a great dinner with friends and family.

Dining Out Or In For Father's Day

Two big events are happening this weekend. Restaurants are opening and it's Father's Day. Now here's the question. Should you celebrate at Dad's favorite restaurant or have something at home? Can the family head out or is better to have a backyard bash?

There should be reservations already in place if you are planning on taking the man of the day out. There are some eateries who will take last minute reservations along with a handful who don't even need reservations. Eating out again is a big deal - and fun. After all it's a chance to dress up , comb the hair and put on sandals other than flipflops. Then there's sitting down and actually ordering a meal. Being waited on is another nice perk along with being served food that you haven't cooked yourself or comes in a container in a paper bag.There's also the thrill of ordering anything you like, from steak to shrimp as opposed to being stuck with what's being cooked in the air fryer or crockpot. Another plus of eating out? Desserts!!! Dad can choose anything from a whipped cream embellished slice of chocolate cake or a fancy mint leaf crowned sorbet in a fancy glass. Instead of a Keurig cup, he and you can have cappuccino or espresso. It's just a nice time out even though you may be dining out in the parking lot.

However it can be more comforting to celebrate Dad in the backyard. It's safer that's for sure if only a close few are invited - or just those living in the house. You can still have the fancy restaurant food , either with take out or making it yourself. An easy but lush lunch or dinner is grilled steak with a coin of herbed butter on it. Herbed butter is a easy make. It's taking plain butter (dairy or plant based) mixed with lemon juice, finely chopped parsley and a variety of other herbs such as oregano, basil, or rosemary. The butter can also be used on toasted Italian or French bread too. Another fun dad dish is a beer burger. This is combining a quarter cup of his favorite beer with chopped beef, Worcester sauce , garlic and onion. Serve with sliced tomatoes and lettuce along with a slice of Swiss cheese. Instead of the usual , gloppy macaroni salads, try grilled veggies as a side. Grill corn and asparagus along with eggplant. You can also use the herbed butter on these or on that other fatherly favorite grilled baked potatoes. End the meal with chocolate stout cupcakes with buttercream icing or double chocolate s'more's using chocolate graham crackers and eighty to ninety percent dark chocolate instead of plain graham crackers and milk chocolate bar.

Father's Day is a time of celebrating. That's the important aspect, whether you dine in or out. Make sure the fathers in your life have a good meal and a good time.

Summer's Bounty Still Going Strong

Even though everyone is talking about fall,getting ready for school and Halloween (!) it is still summer.  There  is still time to cook outside and enjoy what's left of the warm weather bounty.Put away anything fallish  - at least for a few weeks.

Tomatoes are the most popular foods of the summer.. With the way our weather is nowadays, the red gems will be growing until October.Take advantage of them in any cooking method possible.One of the easiest and most delicious is pasta crudo. This is simply cut  fresh tomatoes mixed with olive oil, balsamic vinegar, and olive oil. It's a raw sauce that's "cooked'  when added to hot pasta.Another summer dish that's perfect for this transition period is ratatouille. This Provencale treat is making good use of tomatoes as well as any bumper crop zucchini and onions. Melissa Clark has elevated this recipe to resemble a prettily colored pie in her column A Good Appetite In Wednesday's New York Times' Food section.. Her take was a Southern tomato pie but amped up with caramelized onions and sliced eggplants. It's more of  rich quiche thanks to the egg and Gruyere cheese added.If you just like tomatoes, then make them Provencale . This is a skillet full of sliced tomatoes  sauteed in garlic and olive oil. The tomatoes have generous mounds of spiced breadcrumbs on them.There is also tomato jam for those who want a spicy condiment to their meats and veggies. It's an easy cook, with boiling and simmering Roma tomatoes with such spices as cumin, cinnamon, ginger, and cloves.

Many home gardeners are also reaping those ripe squashes and zucchini right now too. One of the easiest recipe is sauteed squash coins that make a great side to grilled chicken and fish.It's just simply slicing the gourds into half inch thick rounds and sauteing them in a mix of olive oil,butter and minced garlic. Kids will love zucchini boats, the perfect meal after an exhausting first day of school. Make them really fun by adding a lasagna filling with a ready made tomato sauce.It's just scooping out the squash's middle after they've been cut in half, leaving a quarter of an inch of flesh on all sides. After brushing the boats with olive oil. it;'s just layering on the cheese,store bought sauce and ground beef or tofu. The boats can also have a Mexican twist by subbing in the sauce with such spices as chili powder, cilantro and cumin. There may be some peppers growing yet in your garden. These make great snacks, when they're sliced and  deseeded however they're great stuffed with rice and ground beef.Hollow them out , and also add tomato sauce along with Worcester sauce.Garlic and onion powder are added to give it zing.

Don't follow the rest of the crowd.It's still summer. There's still time to enjoy the bounty of this glorious season.
