A Picnic Of Leftovers

 With Easter comes leftovers. Everyone right now is inundated with ham and hardboiled eggs , not to mention Spring potatoes and soem kind fo veggie side. What to do? Use them on an Easter week picnic. Everything cna be repurposed in a tasty outdoors dish.

Of course there is ham and with it comes all sort of leftover ideas. The best for a picnic is slices on a good sourdough or baguette. You can layer it with slices of Gruyere along with either mustard or mayo.A ham salad is also a smart repurpose. This is a mix of cubed ham, mayo and chopped celery. Some add a  tablespoon of chopped dill o sweet pickle for tang and bite. That's up to you as is the addition of mustard. The best seasoning for this is simply  freshly ground pepper (skip the salt because th e ham has it). You could add celery seed which gives it a fresh green undertaste.Devilled ham is another picnic food you can easily make wth the leftover meat.Blend chopped ham with any oil or mayo. You could add celery for color or carraway seeds for a more robust flavor. Some add Worcester sauce to get that unique  Underwood Devlled ham flavor.Again it's up to you tastewise. Devilled ham is great on Hawaiian rolls but would also be good on thin slices of Italian bread too.

All those Easter eggs can  be repurposed too. A plain one with some salt is a nice simple appetizer in any picnic basket. You could also turn them into devilled eggs by peeling them and then cutting thm in half. Mash the yolk with some mayo and ketchup (or mustard ) and then refill the whites . Add a dash of paprika for some color. How to transport? You can use a silicon muffin tray or even an ice cube tray . Make sure they're at the top fo the cooler or have some kind of solid lid so they're not squashed. What's a picnic without egg salad sandwiches? This is a simple make with just the hard boiled eggs and mayo. As with ham salad you can add other ingredients like chopped green onions or mustard if you want. You can make the sandwiches at home or bring a container and rolls and wait until you hit the park or the beach. Those left ove veggies can also be turned into yummy salads too.Add a vinaigrette to those green beans or broccoli florets , mix and pop into a carry all container Slice leftover Spring or new potatoes, add some mayo and chopped celery and you have another tasty picnic dish.

It's the week for sunny picnic and good food. REpurpose those Easter leftovers into a tasty out door lunch. It's a fun way to njoy that ham and Easter eggs a second time.

Casseroles With Punch

 Mention caseerole for dinner and most will cringe or frown. It's not always the asked for dinner choice. Yet adds some punch and your family may change their minds about it.

Lasagna surprisingly is one example of this classic dish.It's usually layers of lasagna noodles, tomato sauce both ricotta and mozzarella cheeses and ground beef. You could easily sub in a bechamel or white sauce Piedmontese style or  make it Valdostana from the Val" D'osta. This last is layered with yummy fontina cheese and ham, This lasagna is rich with cream  instead of tomatoes  You could also zing up traditional lasagna by adding a good dose of chili powder or red pepper flakes. This makes it arrabiata style. Another pasta based casserole is backed mac. This recipe can be varied and you can have fun with it. The classic recipe is  a mix of elbow macaroni, butter ,flour ,cheddar and milk. Red pepper is sdded to these usually bland blend to liven it up. Yet you could also add breadcrumbs on top for crunch along with a sprinkling of bacon bits. You could also add chopped ham to baked mac as well. Subbing in a different pasta can also give baked mac some excitement. Think penne  for a different take. Add some Parmesan for a different flavor too.

Chicken casserole. is usually made with shredded chicken , cream of chicken soup and cheddar cheese . This is layered and usually topped with a mix of breadcrumbs . shredded cheddar cheese and melted butter. You could add some peas and carrots to give it a pot pie feel.Another idea is adding kidney beans. For a Mexican flavor use Montery Jack cheese instead of the cheddar along with a base of rice and beans.You could also add a can fo tomato sauce or pureed ones for an enchilada vibe. There's also beef casseroles, always made with ground beef, You can have fun with this. Try a Sloppy Joe one topped with Hawaiian roll.s This is a great Friday or Saturday night dinner suggestion. It's taking ground chuck cooked with onion, bell peppers , onions and crushed tomatoes. Ketchup,  yellow mustard and dill pickle relish add some zest to it along with Worcester sauce and chili powder. You cna add cheddar cheese of you want or Montery Jack. The dish is topped with those split rolls and then brushed with butter. You could add bacon ot this or try a mix of beef and prok for something different.

Zest up that boring casseroles. Add a new ingedient like red pepper or change up the recipe.with a new sauce. Do what you want to create a casserole that everyone will love.

OKlamoma's New Classic The Onion Burger

 Oklahoma is really known for its' oil fields and culinary creations like chicken fried steak. Yet there is a new classic that's equally delicious coming from The Sooner State .It's the onion burger and it's gaining in popularity.

J Kenji Lopez-Alt wrote about this yummy treat in yesterday's New York Times Food section.The recipe comes from the Hamburger Inn in El Reno, Oklahoma located in the middle of the state.It was originally called "the Depression Burger" created by Homer Davis and his son Ross at the height of that era. The onion burger as it's now called has become beloved in recent years thanks to W. George Motz , author of Hamburger America and host of First WE Feast "Burger Scholar Sessions" on You Tube. He would shoot these popular patties through a chute through a kitchen window to waiting diners during the pandemic .He's just wrapped up a European tour, introducing the burger to an international crowd. What makes them so delicious. Blame it on a particular odor molecule,3-Mercapto-2-mentelpentan-1-ol or MMP. It produces an aroma like beef broth. Combine it with chopped beef and it makes the burger taste meatier. You do have to slice the onions paper thin, preferably with a mandolin to release this compound as well as thiosulfinates which also enhances the flavor.

what is the recipe? It's taking two medium yellow or white onions and ground beef.It's shaping the hamburger first  into round  well shaped patties.The onions are then put on top of the burgers, stacked like haystacks. Layer on as many as possible, the higher the better.DO NOT add salt to the onions because it will draw out any moisture. This can ruin the searing the process. Now it's time to cook them, with four burgers in each quadrant of the pan or grill. Use a neutral oil for this however cooking them in butter or a plant based butter will give it a better taste.Smash the burgers with a very sturdy spatula. Focus on the patties' edges to get that crispy finish, The middles should be slightly thicker.It's then scraping the edges off the pan and carefully flipping them onion side down.Use the spatula, tones or even  fork to tuck in any stray onion strings. Chef, Lopez-Alt recommends using King's Hawaiian rolls which have a sweet flavor..It's steaming these and then placing the burgers on top of them.. Add cheese and pickles if you want.

The Oklahoma onion burger may be the star of the summer.It's a yummy way to enjoy  burgers , enhanced with onion. Try it for a tasty change up from the usual ones.

Kentucky Derby Spins

 Today is the famed and much beloved Kentucky Derby. The event is known for racing but also for the classic foods from the Bluegrass State. As with all traditional recipes they just need some updating. They' still will be tasty but with a modern spin.

Mint julips have always been a must at the Derby and also got many through the humid Kentucky summers. Update them by turning them into slushies.It's a refreshing cocktail on a hot Spring or summer night.It's also an easy mix too. First freeze glasses for only fifteen minutes. It;s then blending ice, bourbon, mint leaves and simple syrup in a blender for about thirty seconds or until it resembles a Slurpee or Icee.  Gently slap a mint leave against your wrist to release the mint oils and place on top of the slush. You can serve with  spoons or straws. Simple syrup is an easy cook and it's great for also sweetening iced teas and lemonades too.It's just cooking up one cup of white granulated sugar with one cup of water. You don't have to wait to the water to boil. Just heat it up enough so that the sugar completely. You can add mint oil to intensify the flavor of the julip if you want. A few drops will do it.  another way to make your mint julip a cool sip is serving it in  home made ice cups. This is just filling up a regular size glass or cup with water and then placing another cup inside it . Freeze and then pour the mint julip slushie into it.

Hot brown sandwiches are a Louisville tradition having originated at the city's famed Brown Hotel. It's basically a turkey sandwich with a Mornay sauce made from eggs and  Parmesan cheese. Tomatoes are added and the whole thing is placed in the broiler.  The sandwiches are sometimes topped with bacon. It's a big sandwich, perfect for a hearty dinner or lunch. It can be streamlined by turning them into manageable sliders. Use King's Hawaiian rolls for a neat sweet taste to counteract the savory. Layer all the ingredients, turkey, tomato and bacon on the rolls. Put them in a buttered baking dish or pan and then pour the sauce over the rolls.Let stand for ten minutes covered with aluminum foil. It's then baking them for twenty minutes in a 350 degree oven for twenty minutes. Burgoo is another Kentucky classic that can have a different spin on it.  This classic stew that the settlers first ate is a mix of chicken , pork shoulder and ground beef. There's a variety of different veggies too like carrots and peas. You can easily make it and then top with a mashed potato crust. It's also a different spin on the British classic and could have been made by the English who settled Kentucky in the 1700's.

The Kentucky Derby is one one the most traditional events the US has. Yet it's time to update the foods associated with it.  There's still the classic taste but new spins for a new generation

Halloween Leftover Fun


This is the day and night when homes will be bulging with Halloween candy , whether gotten on neighborhood runs or left over at home. There's usually a lot to take in and eat. Sometimes all those extra goodies can still be around til the candy canes and holiday fudge appears. What to do with these leftovers? Repurpose! They can add some fun to any dessert or snack.

Chocolate based treats can be used in everything from cookies to icing to ice cream. If you have left over Hershey's Kisses or the bite size Reese's Peanut Butter cups, then make those peanut blossom cookies. This is a great way of getting rid of them and they make a fun treat with warm milk or hot tea on a cold day. Reese's pieces can be repurposed as chips in the famed treats with their name. This is a chocolate cookie studded with the bits. Remember, these can also be put into homemade brownies for a fun surprise. The popular Mounds Bar can also be used as a cookie ingredient,The dough, however isn;t the typical cookie one, but rather a stickier, more brownie like one, that has melted chococlate chips in it. Other candies that go well in a cookie are KitKats and Almond Joys. Forget Whoppers, those malted milk balls, The malted milk centers dry out and  turns to a  cement texture which  makes for a dangerous kind of snack.Another idea is chopping up the chocolates and adding them to either chocolate or vanilla ice cream for fun add ins. They can also be used for toppings too, especially if you're thinking about making an ice cream pie . Fold into cream cheese icing for a neat addition to any cupcake or cake frosting.

The chopped candies also can be used in salty snacks too. Try doing a popcorn crunch using them and freshly popped kernels. It's then laying both on a foil covered baking sheet and pouring melted chocolate bark over them.Let harden for ten minutes and then break into bite size pieces. Pretzels can be subbed in along with potato chips or Cheerios. These can also be made into balls with the addition of melted caramels and marshmallows  Famed Momofuku Milk Bar bakery pastry chef, Christina Tosi, creates a heavenly mix of leftover goodies , butter,milk powder and pretzels. It;s first mixing brown and white sugar and then melting the butter in a large bowl (use a microwave for this). These are combined along with the milk powder and broken pretzels. Spread this mixure on a lined baking sheet for twenty minutes at  This is then baked for about twenty minutes in a preheated 275 degree F oven. Afterwards, let cool and break into pieces. Toss them with whatever chopped candy you have and serve. Another idea is adding the pieces to Nutella or Hershey's chocolate spread and spreading on croissants for a fun snack. The candy can also be added to smooth peanut butter and served on bread or Hawaiian rolls for a sweet nosh.

Bowls of leftover candy? More like the ingredients of fun snacks. Repurpose those Halloween treats into new and fun treats for the whole family!

It's All Baloney

One of the classics of the American lunch scene is bologna or baloney.It's graced many a sandwich and has been on many a picnic. This also fed many an office worker  and school kid too over the decades.

Baloney or bologna is as many cold cuts, from, no surprise - Bologna Italy. It's derived from mortadella, the delicately flavored larded and pistachio-studded sausage. America bologna or baloney does not have this, instead it is finely ground pork, although now it can be made from beef,  and even chicken and turkey. There are also soy and venison versions too. It's distinctive flavor comes from a melange of such spices as black pepper, nutmeg, coriander, allspice and myrtle berries.Most Americans are used to eating German bologna or fleischwurst which only has garlic in to season it.There is a polony type, eaten in Britain and South Africa, which is made with a mix of beef and pork. The cold cut is big in Central and eastern Europe too, where it is called pariser and made with either, poultry , beef or pork. Not surprisingly, there is also a halal version made with turkey, chicken or ham. Home chefs can also get a ring version of bologna. This is a smaller ring and usually used in making hors d'ouevres. Many Yanks had their first taste thanks to Oscar Mayer, the famed meat company started by Oscar and his brother Gottfried in the late 1880;s Now they even have a jalapeno (!) baloney for some interesting eating.

Many love a simple baloney sandwich. Nothing beats it, fresh cut, from Boarshead or packaged from Oscar Mayer on a Kaiser roll that's been slathered with a good mustard.It's good on white bread, such as Pepperidge's Farms; but even better on their pumpernickel and rye.Of course, there is fried bologna which many people love Try slicing it into strips and then add barbecue sauce for a take on pulled pork. Serve on Hawaiian rolls with a side of pickles or cole slaw. You could also try it the way great Cajun chef, Emeril  Lagasse , baked with Dijon mustard and brown sugar. This involves a six and a half pound bologna ( the ones you see hanging in a deli or butcher shop) and baking it for five hours ,plastered with the sugar and mustard.These give it a nice crust and makes for a tasty sandwich after, which is what Chef Lagasse recommends.Bologna can be made at home, using chuck roast or ground beef along with liquid smoke, garlic, and onion powder. everything is gorund together with ice water and then formed into a log.Afterwards, it's wrapped in plastic wrap and put into the fridge for twenty-four hours. The wrap is then removed and baked in a 300 degree Farenheit oven for  half an hour. The heat is then reducue to 250 and slow baked for an additioonal two and half more hours.


Baloney or bologna is the classic cold cut.It's delicious any way , from fried , baked or just cold from the container. Slap it on a favorite bread or roll.,  Add  a lick of mayo or mustard, then enjoy, it in a tasty sandwich.
