Are You School Ready?

 Even though it;s the steamy days of August it's time to look ahead a few weeks to the new school year? Are you ready for those pre made lunches and dinners on the run? If not , you should be.It'll be chaos in the kitchen if there;s no plan.

Starting any school year can be nerve wracking. It's not just school starting but also soccer season along with continued music and art lessons from the summer. That means quick dinners that are easy to heat up. Should you start making them now? No but you can make up some componies now. Thsi si a great time to use those tomato harvests to make sauces, both for pasta and pizza. Yes you can make a pizza sauce with fresh tomatoes. They're usually Roma tomatoes cooked with olive garlic sauce, sugar , garlic powder and white vinegar. An easy Friday dinner is spaghetti and meatballs or homemade pizzas with a toppings bar. Those tomatoes can also be turned into a delicious homemade salsa using two kinds of tomatoes, namely ROma and any other kind. Fresh onions and jalapenos are also added. Imagine this one fun weeknight supper of brick layer  nachos full of ground beef and bacon along with cheese. You could also freeze zucchini slices or zucchini noodles  - zoodles for dinner later on.This is also true for eggplant slices .Make sure that the zucchini is cooked first and cooled before putting into into the fridge.

What about those older kids heading off to college. Most freshman don;t have kitchens in their dorms so you can get them a microwave. Some schools have what's called a microFridge unit - a small area that contains a fridge, microwave and sometimes a freezer, This does allow students to create nutritious vitamin packed lunches and dinners. Before they head off to college , go food shopping with them. Show them how to create good dinners using healthy and inexpensive veggies and meats. show them how to test for ripeness and what meat cuts offer the best values for the dollar. If the kids are college seniors them they'll probably living in their first off campus apartment. Make sure they have the right gadgets and tools. They should have a good immersion blender for creating soups and sauces. A crockpot is  a must because they can make stews and chilis in the ,morning and have a hot meal when they come home for dinner. Sheet  pans are also ah must have because they can make an easy dinner with all the trimmings just on one pan. These als double as cookie trays if they want to bake.

This is the time to start planning. Make some sauces now. Test your college senior's knowledge on cooking. it'll make for an easy transition into the  new.schhol season

Casseroles With Punch

 Mention caseerole for dinner and most will cringe or frown. It's not always the asked for dinner choice. Yet adds some punch and your family may change their minds about it.

Lasagna surprisingly is one example of this classic dish.It's usually layers of lasagna noodles, tomato sauce both ricotta and mozzarella cheeses and ground beef. You could easily sub in a bechamel or white sauce Piedmontese style or  make it Valdostana from the Val" D'osta. This last is layered with yummy fontina cheese and ham, This lasagna is rich with cream  instead of tomatoes  You could also zing up traditional lasagna by adding a good dose of chili powder or red pepper flakes. This makes it arrabiata style. Another pasta based casserole is backed mac. This recipe can be varied and you can have fun with it. The classic recipe is  a mix of elbow macaroni, butter ,flour ,cheddar and milk. Red pepper is sdded to these usually bland blend to liven it up. Yet you could also add breadcrumbs on top for crunch along with a sprinkling of bacon bits. You could also add chopped ham to baked mac as well. Subbing in a different pasta can also give baked mac some excitement. Think penne  for a different take. Add some Parmesan for a different flavor too.

Chicken casserole. is usually made with shredded chicken , cream of chicken soup and cheddar cheese . This is layered and usually topped with a mix of breadcrumbs . shredded cheddar cheese and melted butter. You could add some peas and carrots to give it a pot pie feel.Another idea is adding kidney beans. For a Mexican flavor use Montery Jack cheese instead of the cheddar along with a base of rice and beans.You could also add a can fo tomato sauce or pureed ones for an enchilada vibe. There's also beef casseroles, always made with ground beef, You can have fun with this. Try a Sloppy Joe one topped with Hawaiian roll.s This is a great Friday or Saturday night dinner suggestion. It's taking ground chuck cooked with onion, bell peppers , onions and crushed tomatoes. Ketchup,  yellow mustard and dill pickle relish add some zest to it along with Worcester sauce and chili powder. You cna add cheddar cheese of you want or Montery Jack. The dish is topped with those split rolls and then brushed with butter. You could add bacon ot this or try a mix of beef and prok for something different.

Zest up that boring casseroles. Add a new ingedient like red pepper or change up the recipe.with a new sauce. Do what you want to create a casserole that everyone will love.

Salisbury Steak - Simple But Hearty

Fall and especially November demand hearty dinners that stick to our ribs. What better than a Salisbury steak along with gravy and mashed potatoes. It's a meal that's easy to make plus the whole family will enjoy it. Salisbury steak is what every November dinner should be - satisfying and filling.

The dish was actually the creation of a Nineteenth Century doctor, James H. Salisbury who preached regularly about the benefits of chopped lean beef. He advocated eating a ground patty three types of day to prevent certain illnesses. In 1897 he came up with his "cure all' , ground meat suffused with eggs, breadcrumbs, onions and spices, pounded into patties and then fried. This could be served with other foods or strictly on it's own . In a way the Salisbury steak was a precursor of the hamburger although the Germans already had something along those lines.

Salisbury steak is one of the easiest meals to make. The original recipe hasn't changed since Dr. Salisbury invented it. It takes one to one and a half pounds of ground beef along with breadcrumbs,egg and onion soup. Mix these together and fry in a skillet. The sauce is easy. You can have just brown gravy premade or make up the one that usually goes with the dish. This consists of ketchup, water Worcester sauce and mustard along with flour and the onion soup. You can also spice up the recipe with chopped mushrooms and then serve with a mushroom gravy. A perfect side is homemade mashed potatoes but Salisbury steak also goes well with buttered egg noodles too.

Treat your family to Salibury steak for a good hearty meal. It's perfect during these chilly nights. It's simple , and fast to make , yet oh so good.
