Chefs Dishing

 If you want the real scoop on any restaurant or the industry , ask a chef. They have a million opinions on what should be done and what should have been done. They rate patrons as often as patrpns rate their dishes .it's interesting to hear just what the people who feed America have to say.

Regular contributor Julia Moskin complied thirty chefs opinions and observations in today's New York  Times wednesday Food section. It is compelling as to what those who influence food trends and cook dishes to suit diners' tastes have to say.Most strong opinions have to do with pricing and tipping.Many diners usually order the cheapest which on a dinner menu is a burger. If one person orders one for the entire night that's fine.If most of the patronage orders them , t en the restaurant has a serious losss. Restauranteurs also comment about the price of drinks versus the places of entrees. People will easily hand over eighteen dollars for one cockail but will grumble about spending money for a very expensive plate.This isn't just in New York or LA , this is throughout the entire country.

There's also an obvious culture shift .Hispanic chefs such as Ana Castro and Aaron Verdoza , amongst others complain that diners will pay two hundred dollars for expensive Italain food but will expect the samel quality and lower pricing for soul, Asian, African and Caribbean food. There's a definite and glaring disprepect for the chefs creating these dishes.Others reminisce about their time coming up. This attitudes goes into tipping as well. People were generous during the pandemic but not anymore.Diners won't tip if their water isn't instantly refilled or their meal took a little longer than usual to reach the table. Yet diners cannot be changed and they , especially locals and regulars are the backbone of any eatery's business. Would many chef's recommend the job to a younger generation? Not many. Thye would tell wanna bes to skip the culinary school which can be seen as predatory and take the culinary courses at their local community college. (If they're not happy they can always switch to another major) would they want their children in the inudtry? Absolutely not! As chef Kelly Whittaker puts it, if the kids want to go into the industry then the chefs have failed at being parents.

what does this say about the people who prepare our food?All chefs and waistaff need to be respected . Diners need to treat them with the same amount of care and acknowledgement as they do with other professionals.

Laboring To Feed Us

Today being Labor Day it's time to honor those who labor to feed us and our families. They include
the migrant farmers living in awful conditions with barely a roof over their heads and primitive bath and eating facilities. They work long hours tending and picking crops that eventually go into our meals.Then there are the supermarket clerks who check out our groceries. Some work five or six hours without getting a break, or only receiving a fifteen minute breather. Thank them every time you’re at their check out. Also honor them .Don’t go to the self checkouts . The more shoppers who do this eliminate the need for these workers. That means their jobs will eliminated and they will lose everything from a paycheck to their pensions.


Labor Day may mean a day off to you, but to waitstaff all over the US  it means a day of work. Granted they get time and a half and tips, but they’d rather spend this summer day with friends and family. They’d rather chill at a barbecue or beach instead of taking your order and serving them. Give them a bigger than usual tip. Keep in mind that busboys, chefs, cooks and fast food employees don’t receive tips. Treat them kindly, and tell them how much you appreciate their hours of work.

This day celebrates America’s work force. Honor those who are responsible for feeding and nourishing you.

Labor Day All Year Round

Happy labor Day to all my American readers home and abroad. It is a day of relaxation from work and in some areas the first week of school. Just remember that the people who grow and pick your food labor hard all year long. Many don't have the benefits or perks you have. Some are living below the poverty line.

Remember too that your servers and restaurant chefs and cooks work doubly as hard , almost never taking breaks or vacations. They work ten  - eleven  hour days creating all sorts of dishes, serving all sorts of dishes . Give them generous tips and reviews.. They rely on them for a living.

It may be your Labor Day just for the day but it's food worker's every day  of the year

A Labor Free Labor Day

Enjoy this day  free from work but also remember the people who make it possible for you to eat. Think of the farmers and their workers, those who have to toil in the hot sun so you can have fresh salad or juice.Keep  in keen consideration every worker at your grocery store. It is boring and tedious to stock shelves and taking inventories. Think of those who stand on the on their feet all day  baking those yummy cakes or slicing those drool worthy cold cuts that you love so much.

Remember those who serve you at restaurants, diners  and fast food joints. They have the hardest jobs, taking your orders , cooking dozens of  dishes and broiling tons of hamburgers. They do the work of ten people and get paid very little for it . Not only tip them generously but generously praise them as well. They more than deserve it.

Enjoy this day , relaxing on the beach or at the barbecue, but also remember those who in the food industry that make your life easier.
