This is definitely the month for cider. Usually most people have it just a chilled drink during this time of year. However it can be a vital ingredient to any fall cooking or baking. Its' taste livens up any dish , giving it a pop of unexpected flavor. A dash of cider is just a great idea for whatever you have in mind.
Surprisingly any meat goes well with cider. It can be used with turkey. duck and chicken, as a sauce or a marinade to flavor the meat. Mostly it's used in pork and ham dishes. which makes sense. For centuries Germans have been serving apple dishes as sides with these meats. To add cider to them is a no brainer. There is a great crock pot recipe that calls for slow cooking ham with cider for four hours and then roasting it in a cider bath. You can also braise pork loin in it for a both delightfully sweet and savory main meal. Wild meats such as venison can also be cooked with apple cider. too, mostly in pot roasts. If you're adventurous you can try cider as a marinade for this as well.
Apple cider is widely used in baking. Many farms across the country feature apple cider doughnuts amongst their baked products. These add a sweet fruity note and are almost impossible to resist. For a different spin make cider doughnut holes too for fun party snacking. The drink is also used in muffin recipes along with cake ones. Apple cider pound cake is a New England favorite , perfect for a Sunday afternoon tea. There is also the decadent caramel apple cake made not only with cider but also with a good helping of apples and caramel. You can also use apple cider in making spicy sorbets, a good dessert for warm Indian summer evenings.
Apple cider is perfect on its' own as a refreshing, chilled drink. However it's even better used as an ingredient in any kind of dish from dinner to dessert. Try it for it's versatility and to liven up your fall menu!

Spring Awakening
With Spring comes a new array of all sorts of things. Weather changes. Fashion trends emerge. Attitudes change . Gone is the gloominess and heaviness associated with winter. Everything now turns to a freshness that is welcoming With that is Spring cuisine. More fruits and veggies are being showcased. Different kinds of meats arre once again in the spotlight. It;s a refreshing spin and also a welcoming one . One of the biggest changes is the reemergence of asparagus. An old saying goes when you see i in the market, then it must be Spring. There's nothing like these deliciously tangy stalks bursitng with flavor and vitamins. Asparagus are good grilled, and along side any Easter ham or lamb. They are also phenomenal boiled and then topped with melted butter, Parmesan cheese and sliced hard boiled eggs. Another trend I'm excited about is the return of nectarines and peaches. We've been surviving on bananas and apples for so long. It's just wonderful seeing other fruits making an appearance. Of course Spring brings lamb. It's a staple for both the Orthodox,and Catholic Easter along with for Passover. Many cooks prefer just getting a aside of it for their holiday dinners. You can go a different route and serve lamb chops. This is great because it cuts down on leftovers. Another meat making a reemergence since Christmas is ham. Ham is almost always served in most German homes for Easter. however it usually is now accompanied by seasonal greens as opposed to the usual baked beans and potato salad. A favorite dinner is a fresh roasted ham with asparagus on the side. Spring is here and with it an emergence of fresh and tasty fruits and vegetables. There's also a different way of cooking too, with emphasis on lighter fare. Welcome the new season with the foods that are best associated with it.

Ham For The Holidays
One of the best parts of Christmas is the eating. This is especially true of Christmas Day when sumptuous feasts are served. usually there is turkey or crown rib that's the star. In German and most American households it's a large ham. It is the perfect meat to have because it's rich and delicious. it;s also wonderful for later eating.
Ham is a relatively easy meat to serve. It's already smoked and cured , doesn't require stuffing like poultry or special attention like some beef cuts.There are three kinds however, city country and . City ham is the one most shoppers buy. These have been soaked in brine and then either boiled or smoked. Country cured hams come from pigs that have been fed a steady diet of fruits and nuts. The meat is more flavorful. The hams are then smoked over fragrant hardwoods and cured cold for about sixty days. They are dryer than the city cured ones. Fresh hams are hard to find in any bog city grocery store. They are available in the e country where there are pig farms.Ham is relatively easy to cook. It does take a while For every pound of cured ham, it's usually fifteen to eighteen minutes in a 325 F. degree oven. A ten pound ham will take a good two and half hours to bake.up Country ham takes longer , with twenty to twenty five minutes a pound. Remember to baste your ham within the last hour to twenty minutes of cooking other wise the taste will be super salty. Another must is coating the ham within th e last hour too. You can use sugar, ginger ale , pineapple juice or honey.Don't worry if you have late arriving guests. Ham is also good served cold and thickly sliced in sandwiches.

Hitting The Jackpot In Brigantine Laragosta Ristorante
Well the Atlantic City proved to be interesting, foodies. My Mom and I stopped by the Flying Cloud again and had really good food (sadly though the extreme heat made me sick and I couldn't enjoy it)The next day we were devoured by sand flies on Brigantine Beach. Cranky, hot, and chewed up, we drove around Brigantine Island looking for a decent restaurant. Low and behold we found a very very good Italian one. It was on a par with my beloved Marinella's in New York.
The name of the restaurant is Laragosta and it was started in 1984 when its' owner came from Calabrian in Southern Italy. They actually had a branch up by me in nearby Ridgewood NJ but closed. Too bad I would have loved to have tried it.The menu is rich and varied with all sorts, of pasta , chicken and fish dinners. After starting off with some garlic knots which were free we then settled on a simple lemon chicken in bread crumbs with a side of salad. It was refreshing and light. The meat was tender beneath a crunchy breading while the romaine lettuce proved to be the perfect base to a light lemon infused salad.I would hav e liked to have gone back for another meal but maybe on a second visit int he fall.
Another discovery was at Harrah's where my Mom and I stayed. it was at Temptations a cappuccino/ chocolate bar where we had the best hot cocoa in the world. It was Jacques Torres and it was exactly like what we had in Paris. Dense, rich without being too sweet. this was the perfect relaxer after a day of pure activity.
Despiter the getting sick and th esanflies we did have a great culinary time in Atlantic City. It was like hitting hte jackpotfood wise! Thnaks to Jacques Torres and the great Laragosta Restaurant.

The Party Days Of August
It's the height of summer and also the height of party giving. With summer get togethers you can throw away the formalities and loosen up. You can throw a big do but it can be just as relaxed as a casual get together.
What works? Grilled food. Hamburgers and hot dogs may seem like the easiest but you can also have kabobs and fillets too. You may also want to go with a cold plate such as Italian cold cuts served with cheese and fresh (however make sure you do this in a well air conditioned kitchen otherwise it can get too hot) This works for baked ham or chicken. Have simple sides such as cold potato salad or macaroni salad. Building a barbecue pit in the backyard and having a Southern style get together is another fun idea.
How do you end a perfect get together? Some would say ice cream but I think I'd rather go for a sorbet of different ices. You can buy buckets of ice at your local Rita's. Another idea is to layer ice with fresh cut fruit for a refreshing meal ender. If you're intent on serving cake then go with the lighter fare. Angel food cake whipped cream and strawberries are a lovely way to end a party. You can also have store bought meringues too. These are light and airy with the right amount of crunch.

The Flying Cloud Cafe - Atlantic City's Best Kept Secret
Mention Atlantic City dining to anyone and they'll tell you all about the great restaurants in the casinos. This is true. Recently AC has lured some big names such as The Old Homestead, McCormick and Schmick and Wolfgang Puck. However there is a perfect little gem situated on Brigantine Bay in North Atlantic City. It's called The Flying Cloud Cafe, named after one of the fastest schooners in the 1800's.
First of all the atmosphere is charming - certainly not what you'd expect in this gambling mecca. Located in a small circle of crafter's booths and restaurants, The Flying Cloud Cafe is isolated from all the glamour and glitz. It's more like a spot in Old Cape Cod or Cape May. Masts sway back and forth, gulls cry as they swoop down on the docks. There is the smell of the ocean here along with the aroma of good food. Of course The Flying Cloud specializes in seafood. My Mom and I had two wonderful dishes. She ordered the fish and chips while I had the broiled crab cake. The portions are generous, The fish doesn't have that usual cloying fishy taste associated with seafood. Her breaded tilapia was sweet and light while my crab meat was delicate and tender. We also received a large side of julienned fries which were perfectly crisp and browned. The Flying Cloud Cafe also gives this awesome cole slaw made with horseradish. This is not the usually sugary stuff but a crunchy mixture of sliced cabbage , dressing and zing. We saw other diners who enjoyed seafood salads and one who had a whole, perfectly boiled lobster.
Usually seafood restaurants have meager desserts. Not The Flying Cloud Cafe . We split a wonderful chocolate cake laden with warm fudge , caramel and walnuts. It was flanked by two chocolate drizzled clouds of whipped cream. This was a decadent end to an already rich lunch.
The Flying Cloud is located at 800 North New Hampshire Ave Number 3. (you can't miss it really),directly to the west of the Atlantic City Aquarium. Don't bother with the car. Take the number 3 jitney over there for a day of relaxation and good food.
